Baked French Toast

I say this over and over again..but recipe creation is by FAR my favorite part of my job at Anytime Fitness Corporate. BY FAR.

Today’s recipe is a twist on a childhood favorite…baked french toast! For this I used whole wheat bread …and you can absolutely use gluten free, if necessary. The eggs I used were straight from Blake’s Dad’s house in Kansas. They have a huge free range chicken coop with like 50 chickens!  Click HERE for the recipe!

I get a lot of questions about what I do at AF. Well- I recently did a little position shift. For the past 6 months I was the social media community manager…Yes I helped managed all of AF’s social (facebook, Twitter, IG, Pinterest, etc.)!  Who would have ever thought that social media would be a 2+ man job. So if you ever tweeted at AF…that was me who responded. I am actually still managing the Twitter and Pinterest accounts as we search fo my backfill. Furthermore, I still (and always will) create content (recipes, workouts, etc.) for the Anytime Health blog…because I love it!

Today- I am a marketing campaign coordinator. I still wear a lot of hats, but am really liking what I do. Here is what I do (copied from my LinkedIn)

-Support the development and execution of all marketing campaigns, by promoting member acquisition for thousands of Anytime Fitness franchisees through direct mail, digital, and other activities.
– Facilitate and track enhanced direct mail buys for franchisees during key promotional periods.
– Manage Warrior Dash partnership by coordinating marketing materials with Anytime Fitness franchisees and fostering a relationship with Red Frog Events.
– Assist in campaign development/marketing material creation and manage social media platforms for Waxing The City.
-Coordinate Anytime Fitness Corporate Staff Wellness Program (Ingredients), by scheduling and managing 3-5 events/month that promote team-building and well-being.

That’s sort of what I do in a nut shell.

Oh yes…how could I forget. I teach yoga sculpt to the corporate staff every Wednesday at lunch (out of the goodness of my heart). Like yesterday…I had 27 students in my class! I just love the energy a big class brings.

I made a quesadilla with no cheese..is that legal? I could call it an Almond Butterilla, but I don’t think that translates into Spanish very well 😀

Fer reals…I got this mmagnificentidea from one of my blogger friends Monique from Ambitious Kitchen who recently moved away from Minneapolis (who is going to be my Lake Calhoun walking buddy?!?!) to Chicago. She made a Peanut Butterilla with strawberries and bananas. SWOON.

You guys- HAVE to try this. The warm banana melts in your mouth and the almond butter oozes…Oh, have mercy (Full House anyone?!).

I used a whole wheat tortilla, but you could use corn or a gluten-free variation if you want! 

Such a great afternoon pick-me-up or breakfast. 

Side note: Sister boy and sister were giving me a hard time about pomegranates because I told them that they are “in season right now.” They said…how do you know? And I said…because I’m a food blogger, duh.

I guess I converted him to being an almond butter fan. YESSSSS! Speaking of almond butter…I finally caved and got myself a Costco membership. BEST DEALS EVER ON ALMOND BUTTER. My all time favorite brand of almond butter is Maranatha and they seriously have the best deal I’ve ever seen on AB – $9.99 for a giant, 24 oz. jar of it.

I’ll take 97, please.

If you don’t have a Costco membership you could always get some Maranatha or Justin’s off of Amazon. 

In case you were wondering how I made my quesadilla…I only put fruit on one side and then folded it over.

Basic Ingredients for Almond Butter Quesadillas with Pomegranate

  • 2 large tortillas (I used whole wheat, but you can use any kind)
  • 6 tablespoons almond butter
  • 1 large banana, sliced
  • ⅓ cup pomegranates
  • coconut oil cooking spray

How to make Almond Butter Quesadillas with Pomegranate

  1. First, preheat a large non-stick pan to medium/high heat. Rub with coconut oil.
  2. Then, prep quesadillas by spreading on about 3 tablespoons of almond butter on each tortilla (make sure to leave about an inch to the side so it doesn’t ooze almond butter everywhere when you close it.
  3. Top HALF (see photo below) quesadilla with sliced banana, pomegranate seeds, and cinnamon. Then, fold the tortilla in half.
  4. Cook quesadillas for about 3 minutes on each side or until the tortilla begins to brown.

We’ve got an amazing weekend of hiking and wedding shenanigans planned. I’ve been to Mt. Rainier, but it was a brief trip so I am excited to explore a bit more! We’re going to do a day in the city, too, which I have never done!

Anyways, let’s talk pumpkin breakfast cake. You guys LOVED the Banana Breakfast Cake SO MUCH that I decided to get festive and make a fall version.

So dense…and so delicious!

It’s made with 100% whole grains, no refined sugar, and a lotta love. It’s sweetened with banana and maple syrup…the perfect fall flavor combination.

Get super fancy and top your slice with some homemade cream cheese frosting (3.5 oz cream cheese + 3 tablespoons maple syrup) and then a sprinkle of pumpkin seeds for crunch.

Basic Ingredients Chocolate Chip Pumpkin Breakfast Cake

  • 1 medium banana, mashed
  • ½ cup pumpkin puree
  • 2 eggs, large
  • 1 teaspoon vanilla extract
  • ⅓ cup maple syrup
  • 1 and ¼ cup unsweetened almond milk
  • 3 tablespoons coconut oil, partially melted
  • 1.5 cups white whole wheat flour
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • ½ cup dark chocolate chips

How to make Chocolate Chip Pumpkin Breakfast Cake

  1. First, preheat oven to 350ºF and grease a 10 inch cast iron skillet with around 2 teaspoons of coconut oil.
  2. Next, mash 1 banana in a medium-size bowl until it’s smooth and become almost like a liquid. Add in the rest of the liquid ingredients and whisk until combined. Set aside.
  3. Place all dry ingredients in a large bowl and mix. Add in liquid ingredients and combine.
  4. Then, pour the batter into your cast iron skillet and bake at 350ºF for 35-40 minutes or until a tooth pick comes out clean.

I’ve been meaning to share some personal “news” with you for a couple of months now and I guess there’s no better day to do it than today. I’m quitting the blog.

I’m single.

While I know that I don’t owe it to anyone to share my personal life on FFF, I feel like I owe it to myself to share it with you. FFF is suppose to be a place to inspire you to be the best version of yourself. The best version of YOU or ME doesn’t come with just the good. It takes difficult times in life to really make you who you are and this breakup is one of them. After 3.5 years, Blake and I parted ways in May and it wasn’t an easy thing for either of us to do. Sometimes when you’re running a thousand miles and hour and flying by the seat of your pants, you let that little word called relationship slip away. Sometimes two people who were once so in love can grow in different directions and not even realize they’re drifting until life happens. I don’t and will never regret a single moment from our relationship because I truly believe that every single person comes into your life for a reason, for better or for worse. 

I remember when we had just broken up, I felt like I was dying inside and that nothing would ever make me sparkle again. My amazing friends and family kept repeating one thing to me- TIMEEEEE. My response at the time was- FUCK YOU TIME IS BULLSHIT. Seriously though, they were right. Time is my friend and I am happy. While I spared you a lot of details, I wanted to let you know that I am doing great. Heartbreak isn’t easy. It sucks, but life is good. I am loving every single second of my new and singular life. I’ve got my own apartment and no one to worry about but my plants (which I kill on a weekly basis). I’m drinking boat loads of coffee, exploring Minnesota’s beautiful state parks, going to bed early, taking naps, laughing, and having a LOT of girl time. 

Before we shift the mood to OATMEAL…Just remember, social media can make any person’s life see admirable and PERFECT and I know that I am guilty of abusing it in that way.

4 interesting ways to bake an egg

So…I am still pretty much obsessed with baking eggs in the oven. It looks like everyone else is too because “How to Bake Eggs in the Oven” has been one of my most popular posts since the day I posted it. So clever, yet so easy…and SO DELICIOUS.

I rounded up my 4 favorite eggy recipes that incorporate either a unique way of baking the egg or interesting ingredients to mix with an egg.

I’m still adding to my collection of interesting ways to bake an egg. I’ve never poached an egg…(in general) OR posted fried eggs, eggs sunny side up, or even hard-boiled eggs. I have a ways to go
before I really conquer the art of the egg. 

What am I doing this week?
A lot of stuff! I teach yoga sculpt on Monday after work, Tuesday after work, and Wednesday at lunch.  Woot! Teaching is my me time…I just love the energy I can steal from my students :) What I’m most excited for is…the fact that my whole entire family is flying in on Wednesday night (Mom and Dad from Cleveland and Sis and Bro from Boulder) to spend the weekend with mwauh! I am taking Friday off to spend some much needed time with my family. The weather is suppose to be nice (in the mid 40s’

On top of the family being here, I also had my GFI (Group Fitness Instructor) prep class on Thursday night and lots and lots of recipes to make this weekend for some Designer Whey sponsored posts coming up in April.

On the back-burner and moving up the chain in rapid speeds is Team Beachbody. I am around 95% sure that I am moving forward with becoming a Team Beachbody coach and need to solidify some things before I dive deep into that with you guys :)
