I  remember in college, I would go back and forth between making myself chicken fajitas and shrimp stir-fry for dinner. They’re two dishes where I know I’m gonna get my veggies, protein, and a good amount of carbs. Plus, they’re really easy to make and I love Mexican and Asian flavors! It’s been a while since I’ve made anything Mexican, so I figured I’d take the challenge of using Gold’n Plump Tex Mex Chicken Patties in the most creative way possible —> In a fajita casserole! 

I know you all love casseroles because my highest viewed posts are either peanut butter related or casserole related. Hey, I don’t blame you. They’re my favorite too!

For this easy casserole, all you have to do is chop your favorite fajita vegetables into bite-sized pieces. I used a green pepper, red pepper, purple onion, and jalapeño pepper in my mixture. Feel free to get really creative and use what’s in season or in your garden!

Next, it’s time to thaw your chicken patties. These chicken patties actually come separated into 2 packs of 3 (individually frozen and vacuum sealed for freshness). For this recipe, I used 1 pack of 3 patties so you can keep the other one for later. You can either let them sit on the counter for a few hours or thaw them in the microwave for a few minutes. I only let mine get about 2/3 of the way thawed.

Speaking of these patties. They have SO MUCH FLAVOR! I made them a few weeks ago and ate them like normal burgers and instantly knew they would be delicious in a breakfast recipe! They’re made with boneless skinless chicken thighs and add-ins such as hot pepper cheese, diced green chiles and jalapeños, and other authentic Tex Mex seasonings. #allmyfavoritethings Search Gold’n Plump’s map to see where their products are available near you! .

Next, it’s time to line your baking dish with the patties. Mine fit two long just fine. Then, I cut the 3rd one in half and fit them snug next to the full ones! On top of the chicken patties goes the vegetable mixture! I simply tossed the veggies in some EVOO, salt, pepper, and fajita seasoning. Nothing fancy, but tons of flavor!  

Don’t forget to spray the bottom of your casserole dish with some cooking spray! I use coconut oil cooking spray.

Finally, to finish off the casserole I cracked 10 eggs on top (that’s how many fit). The beauty about this dish, is that depending on the size of your casserole dish, you can add in another chicken patty or use more/less eggs. 

Place the casserole in the oven, uncooked, for around 45 minutes and boom, you’ve got yourself breakfast and leftovers! This seems like the perfect brinner if you ask me.

You will most likely have some excess liquid form after baking. Simply spoon or dump the liquid out.

Basic Ingredients for Chicken Fajita Breakfast Bake

  • 3 Gold’n Plump Tex Mex Chicken Patties, thawed
  • 1 green pepper, diced
  • 1 red pepper, diced
  • ½ medium red onion, finely diced
  • ½ jalapeño pepper, finely diced
  • 1.5T EVOO
  • ½ tablespoon garlic powder
  • ⅕ tablespoons fajita seasoning
  • 10 eggs, large
  • salt and pepper, to taste
  • coconut oil cooking spray

How to Chicken Fajita Breakfast

  1. First, preheat oven to 375ºF. Then, spray a casserole dish with coconut oil cooking spray and set aside.
  2. Begin by thawing 3 Gold’n Plump Tex Mex Chicken Patties ALMOST all the way through.
  3. While the chicken is thawing, prep veggies. Dice 1 green and 1 red pepper into bite sized pieces. Finely dice a red onion and a jalapeño pepper. Then, place all veggies into a medium-size bowl. Pour in EVOO and sprinkle on fajita seasoning, garlic powder, and salt and pepper. Give it a good mix.
  4. Assemble your casserole by placing the Gold’n Plump Tex Mex Chicken Patties on the bottom. You may need to slice them depending on the size and shape of your dish. Then, pour in the veggie mixture. Finally crack 8-10 eggs on top.
  5. Place casserole dish in the oven and bake at 375ºF for 45 minutes or until the eggs have cooked all the way through.

Is it bad that I sometimes base friendships off of the foods people like and dislike? For example…if you like peanut butter, I automatically like you. If you like olives…you’re going to have to work really hard to make me like you. Honestly – my biggest fear in life is that my children are either going to despise peanut butter or worse off, be allergic to it. Unfortunately I’d be there mother and HAVE to deal with that. #firstworldproblems

The good thing is that I haven’t met many people who voluntarily don’t like peanut butter. It’s the food of the gods if you ask me

Can we talk about the ripeness of bananas for a hot second?

Not too green, not too brown…just right. I like my bananas perfectly yellow. That’s IF I’m eating the banana by itself or on top of something. Anyone who says they like green bananas is just…FILLINTHEBLANK. I heard that if you eat eat a green banana…you can straight up eat the peel, too. No idea if that’s true or not, but it is Friday so I thought I’d share that fun fact. When it comes to extremely ripe bananas…I gag at the thought of eating it on it’s own. I don’t want chewed up banana fed to me by a mother bird. However, when it comes to mashing an overly ripe banana for sweetness in baked goods or smoothies….I’M ALL FOR IT.

Peanut Butter Banana Oatmeal Bake

Ingredients

  • 1 very ripe banana, medium
  • 2 eggs, large
  • ⅓ cup peanut butter, creamy
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • ½ cup unsweetened almond milk
  • 1.5 cups rolled oats
  • ¼ cup oat flour (or any kind of flour)
  • 1 teaspoon baking powder
  • pinch of salt

Instructions

  1. First of all,preheat oven to 375ºF and spray a medium-size baking dish or cake pan with coconut oil cooking spray. I used a 1.5 qt. baking dish, but a 9×9 inch cake pan will also work!
  2. Now In a large bowl, mash 1 very ripe banana until liquidy. Then, add in eggs, peanut butter, vanilla extract, maple syrup, and almond milk and mix until smooth.
  3. Add rolled oats, flour, baking powder, and salt, and mix until everything is thoroughly combined.
  4. Transfer batter into baking dish and slice a few bananas on top.
  5. After this,Bake at 375º for about 30-40 minutes (it will depend on the size and depth of your baking dish) or until firm.

Easy Banana Protein Mug Cake

An easy, quick fill-you-up snack packed with protein!

I feel like I’m at the grocery store all the time. To be honest though; most of the time it’s just to get more zucchini, sweet potatoes and bananas. I’m bananas for all three.

Btw, completely off topic: have you ever tried Chick fil A’s spicy southwest chicken salad? I’m obsessed. With all the possible toppings it’s 420 calories (plus dressing.) I’m not a huge fan of all the extras, so mine comes out to just around 300 calories + 80 calories for the dressing. And I always toss in roasted sweet potatoes. Not too shabby for getting 34g of protein.

If you know me, once I get hooked on something, it’s all I want. For days. And dayz. Chick fil A I’ll keep ya in business.

This mug cake.

A way to keep myself on track is quick and easy snacks that fill me up. Whether it’s before/after my workout or in the middle of the work day. I need something with substance to keep me going.

I’ll bet that most of you have all the ingredients in your kitchen.

Three simple steps to heaven:

  1. Pour ingredients into large mug.
  2. Mix ingredients.
  3. Microwave.

It is that simple and so satisfying. I typically eat this a few hours before my workout or when I need to satisfy my sweet tooth.

Ingredients

Scale
  • 1 large banana, mashed
  • 2 tablespoons quick oats
  • 2 tablespoons vanilla protein powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon baking soda
  • 1 large egg white
  • 1/2 teaspoon vanilla extract
  • Optional: 2 Tablespoons semi-sweet chocolate chip morsals

Instructions

  1. Spray a large microwave-safe mug with non-stick spray. To the mug add the oats, protein powder, cinnamon, baking soda, egg white and vanilla extract. Mix together well. Add in the mashed bananas and chocolate chips.
  2. Microwave on high for 1.5 – 2 minutes, or until set. Mine took just under 2 minutes (75 seconds.) Allow the mug cake to slightly cool before digging in as the cake will be very hot.
  • Prep Time: 3 minutes
  • Cook Time: 2 minutes
