minestrone soup recipe james martin

August 11, 2026 by Lee Hersh Leave a Comment

Some recipes are loved because they bring together wholesome ingredients, comforting flavours, and plenty of colour — and James Martin Minestrone Soup is a wonderful example of a hearty homemade soup that’s both nourishing and satisfying.

A generous selection of fresh vegetables is gently cooked in olive oil to create a flavourful base, with onion, carrots, celery, courgette, and green beans providing plenty of natural sweetness and texture. Garlic, chopped tomatoes, oregano, and vegetable stock are then added to create a rich, aromatic broth that makes every spoonful comforting and full of flavour.

Borlotti beans add a satisfying source of plant-based protein, while small pasta gives the soup its classic minestrone character. As everything simmers together, the vegetables become tender and the pasta absorbs the delicious tomato and herb flavours, creating a wonderfully hearty bowl that’s ideal for a cosy family meal.

Fresh basil and grated Parmesan provide the finishing touches, adding freshness and a savoury richness to the soup. Served alongside warm crusty bread, this colourful minestrone makes a complete and comforting lunch or dinner without requiring complicated cooking techniques.

Whether you’re looking for an easy weeknight dinner, preparing meals ahead for busy days, or simply want a warming vegetable-packed soup for colder weather, this recipe is wonderfully versatile. You can adapt it with seasonal vegetables, different beans, or alternative pasta shapes depending on what you have available.

Hearty, colourful, wholesome, and packed with classic Mediterranean-inspired flavours, James Martin Minestrone Soup is a comforting homemade favourite that turns everyday vegetables, beans, pasta, and herbs into a satisfying meal the whole family can enjoy.

goats cheese tart mary berry

August 9, 2026 by Lee Hersh Leave a Comment

Some recipes are loved because they turn simple ingredients into something elegant and satisfying — and Mary Berry Goats Cheese Tart is a beautiful example of a classic savoury tart that’s perfect for relaxed lunches, light suppers, and entertaining.

goats cheese tart mary berry

A crisp, buttery pastry case is filled with slowly caramelised onions and fresh thyme, creating a naturally sweet and aromatic base for the creamy filling. A simple mixture of eggs, double cream, and milk is poured over the onions before generous pieces of soft goat’s cheese are added, giving the tart a wonderfully rich texture and distinctive savoury flavour.

The goat’s cheese becomes beautifully golden as the tart bakes, while the creamy custard settles around the sweet onions and delicate thyme. The combination of crisp pastry, creamy filling, caramelised onions, and tangy goat’s cheese creates a balanced dish that’s equally delicious served warm or allowed to cool to room temperature.

Whether you’re preparing a light weekend lunch, planning a dinner party, looking for an elegant picnic dish, or simply want a dependable homemade tart for the family, this recipe is versatile and easy to adapt. It can be served alongside a crisp green salad, roasted vegetables, or seasonal tomatoes for a complete and satisfying meal.

For an extra twist, the tart can be customised with roasted red peppers, spinach, rocket, or other fresh herbs. You can also experiment with different cheeses or pastry options depending on what you have available, making it a useful recipe to keep in your regular cooking rotation.

Buttery, creamy, savoury, and full of comforting homemade flavour, Mary Berry Goats Cheese Tart transforms everyday ingredients into an elegant centrepiece that’s ideal for sharing. It’s a timeless tart that’s simple enough for a family meal yet impressive enough for special occasions.

pasta alla norma recipe jamie oliver

August 8, 2026 by Lee Hersh Leave a Comment

Some pasta dishes become timeless favourites because they transform a handful of simple ingredients into something deeply satisfying — and Jamie Oliver Pasta alla Norma is a perfect example of a vibrant Sicilian-inspired meal that’s rich, comforting, and full of Mediterranean flavour.

pasta alla norma recipe jamie oliver

Tender aubergine is cut into generous pieces and cooked until beautifully golden and soft before being combined with a rich tomato sauce infused with garlic, oregano, and extra-virgin olive oil. Perfectly cooked pasta is then tossed through the silky sauce, allowing every piece to absorb the sweet tomato and roasted aubergine flavours. Fresh basil and creamy salted ricotta add freshness and richness, while a final drizzle of olive oil brings everything together.

The combination of silky tomato sauce, tender golden aubergine, fragrant basil, and creamy ricotta creates a beautifully balanced dish with layers of savoury, sweet, and herbaceous flavour. The aubergine provides a satisfying texture while the tomato sauce gives the pasta its vibrant Mediterranean character, making this a comforting meal that still feels fresh and colourful.

Whether you’re preparing a relaxed weeknight dinner, cooking for family and friends, or looking for a vegetarian pasta dish that’s full of flavour without being complicated, this recipe delivers excellent results using straightforward ingredients and simple cooking techniques. It can also be adapted with chilli flakes for extra heat, pecorino instead of ricotta, or additional seasonal vegetables for a personalised version.

Rich, rustic, colourful, and bursting with Sicilian-inspired flavour, Jamie Oliver Pasta alla Norma is a delicious homemade classic that turns humble aubergines, tomatoes, pasta, and herbs into a satisfying meal you’ll want to make again and again.

Healthy Oatmeal Recipes – Fit Foodie Finds

January 5, 2024 by Lee Hersh Leave a Comment

Have you ever thought about how versatile oats are? Whether you prefer old fashioned rolled oats, quick oats, or steel cut oats, there are so many different ways to use oats. We love using oats here on Fit Foodie Finds! We love overnight oat recipes, stove top oatmeal, baked oatmeal, and we even use rolled oats in some of our favorite savory recipes. This post is a one stop shop on all the ways you can use the oats in your pantry!

Healthy Oatmeal Recipes

It is no surprise that we love oats here on Fit Foodie Finds! I would even go as far to say that old fashioned oats are a pantry staple that we ALWAYS have on hand. Yes, we use old fashioned rolled oats (mostly) in our overnight oatmeal recipes and stove top oatmeal recipes. It is one of our all time favorite ways to eat oats. However, oats are so versatile and offer so much more than just a tasty breakfast option!

We incorporate oats in SO many of our recipes—> healthy oatmeal cookies, apple cinnamon baked oatmeal, red curry meatballs, peanut butter energy balls, and so much more!

Benefits of Oats

Why buy oats? They are a delicious whole grain that you can incorporate into a savory or a sweet recipe. There are many benefits to using oats and by-golly they are easy to prepare and are very affordable! Some of the health benefits of oats are…

  • Oats are a gluten free whole grain. If you are gluten free, you can incorporate oats and oat flour into many recipes. Just make sure the oats you buy say ‘Certified Gluten Free’ so that there is no cross-contamination.
  • Oats are a great source of complex carbs and fiber.
  • Oats are known to help with constipation. We are all about good digestion on Team Fit Foodie and there is nothing like a big bowl of oatmeal in the morning!
  • Oats are a great exfoliant for DIY face masks! We have a DIY Oatmeal Avocado Face Mask on FFF that will make your face super smooth!

Want to know more about the different health benefits associated with oats? Check out this article Harvard School of Public Health Article for more information!

Old Fashioned Rolled Oats or Steel Cut Oats?

Old fashioned rolled oats and steel cut oats come from the same whole cereal grain. It is how they are processed that is different. However, though they are processed differently, they have about the same nutritional value.

  • Rolled Oats– Rolled oats are a bit more processed than steel cut oats. They are stripped from the grain, rolled through mills to be flattened. The break down of the rolled oats makes cook time a bit faster than steel cut oats. Rolled oats are typically easier to use in baking recipes. Rolled Oatmeal Nutrition Facts (per 1/2 cup): 150 calories, 5g protein, 27g carbs, 2g fat, 4g fiber.
  • Steel Cut Oats- Steel cut oats are also processed, but instead of being rolled, they are chopped up into pieces and tend to have a longer cook time than rolled oats. Steel cut oats also tend to have a bit more bite to their texture! Steel Cut Oatmeal Nutrition Facts: 150 calories, 4g protein, 28g carbs,  2.5g fat, 2g fiber.

The 50 Best Oatmeal Recipes on the Planet

October 9, 2023 by Lee Hersh Leave a Comment

Guess what Thursday calls for?

Uhhhhhhh, a ginormous oatmeal round-up and some GIRL TALK.

I’ve been meaning to share some personal “news” with you for a couple of months now and I guess there’s no better day to do it than today. I’m quitting the blog.

Think oatmeal is boring? Think again! Get inspired by one of these delicious oatmeal recipes. You've got 50 options, including some savory ones!

Psych.

I’m single.

While I know that I don’t owe it to anyone to share my personal life on FFF, I feel like I owe it to myself to share it with you. FFF is suppose to be a place to inspire you to be the best version of yourself. The best version of YOU or ME doesn’t come with just the good. It takes difficult times in life to really make you who you are and this breakup is one of them. After 3.5 years, Blake and I parted ways in May and it wasn’t an easy thing for either of us to do. Sometimes when you’re running a thousand miles and hour and flying by the seat of your pants, you let that little word called relationship slip away. Sometimes two people who were once so in love can grow in different directions and not even realize they’re drifting until life happens. I don’t and will never regret a single moment from our relationship because I truly believe that every single person comes into your life for a reason, for better or for worse.

I remember when we had just broken up, I felt like I was dying inside and that nothing would ever make me sparkle again. My amazing friends and family kept repeating one thing to me- TIMEEEEE. My response at the time was- FUCK YOU TIME IS BULLSHIT. Seriously though, they were right. Time is my friend and I am happy. While I spared you a lot of details, I wanted to let you know that I am doing great. Heartbreak isn’t easy. It sucks, but life is good. I am loving every single second of my new and singular life. I’ve got my own apartment and no one to worry about but my plants (which I kill on a weekly basis). I’m drinking boat loads of coffee, exploring Minnesota’s beautiful state parks, going to bed early, taking naps, laughing, and having a LOT of girl time.

Before we shift the mood to OATMEAL…Just remember, social media can make any person’s life see admirable and PERFECT and I know that I am guilty of abusing it in that way.

PS: It’s National Oatmeal Day and I didn’t even know it. #winningatlife

4 interesting ways to bake an egg

May 9, 2023 by Lee Hersh Leave a Comment

So…I am still pretty much obsessed with baking eggs in the oven. It looks like everyone else is too because “How to Bake Eggs in the Oven” has been one of my most popular posts since the day I posted it. So clever, yet so easy…and SO DELICIOUS.

I rounded up my 4 favorite eggy recipes that incorporate either a unique way of baking the egg or interesting ingredients to mix with an egg.

4 Interesting Ways to Bake an Egg
1. Salmon Quinoa Quiche —> with quinoa
2. Veggie Fritatta w/ Feta —> As a fritatta
3. Italian Egg Bake —> As a breakfast bake
4. Baked eggs —> By them-self

I’m still adding to my collection of interesting ways to bake an egg. I’ve never poached an egg…(in general) OR posted fried eggs, eggs sunny side up, or even hard-boiled eggs. I have a ways to go
before I really conquer the art of the egg.

What am I doing this week?
A lot of stuff! I teach yoga sculpt on Monday after work, Tuesday after work, and Wednesday at lunch.  Woot! Teaching is my me time…I just love the energy I can steal from my students :) What I’m most excited for is…the fact that my whole entire family is flying in on Wednesday night (Mom and Dad from Cleveland and Sis and Bro from Boulder) to spend the weekend with mwauh! I am taking Friday off to spend some much needed time with my family. The weather is suppose to be nice (in the mid 40s’

On top of the family being here, I also had my GFI (Group Fitness Instructor) prep class on Thursday night and lots and lots of recipes to make this weekend for some Designer Whey sponsored posts coming up in April.

On the back-burner and moving up the chain in rapid speeds is Team Beachbody. I am around 95% sure that I am moving forward with becoming a Team Beachbody coach and need to solidify some things before I dive deep into that with you guys :)

Happy Monday!
