Linley and I were chatting the other day. Wait, let me get that right…we were singing back and forth because we thought it would be legit if people only sang to each other instead of talking…when we came to a realization. We have NEVER shared our go-to overnight oat recipe that we make at least once a week. We have so many amazing OO variations on FFF, but have never shared our plain Jane, “what we make all the time” variation. 

Some people may think it’s boring to eat the same thing for breakfast every day, but NOT SO FAST. We may eat the same base…but we change up the toppings. We’re women…we can be in the mood for something VERY different than the day before. So what did we do for this post? First, we made a HUGE plate of our favorite toppings and then went to town on some combinations.

My fav? Anything with peanut butter, duh. I also really LOVE the blueberry + granola + honey combo. SWOON.

5 Ways to Top Your Overnight Oats + Vanilla Bean Overnight Oat Recipe

Ingredients

Scale
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • ½ cup vanilla Greek yogurt
  • 1 cup milk, any kind (I used unsweetened almond milk)
  • ½ vanilla bean, paste
  • 1 tablespoon honey

Instructions

  1. First of all,Place all ingredients into a bowl and mix until combined. Place in the refrigerator, covered, for at least 2 hours or overnight. Serve cold.

Notes

Feel free to double this recipe.
**It should stay good refrigerated for up to 3-4 days.
**Depending on how thick you like your overnight oats, you may add a splash of almond milk before serving.

Uhhhhhhh, a ginormous oatmeal round-up and some GIRL TALK.

I’ve been meaning to share some personal “news” with you for a couple of months now and I guess there’s no better day to do it than today. I’m quitting the blog

I’m single.

While I know that I don’t owe it to anyone to share my personal life on FFF, I feel like I owe it to myself to share it with you. FFF is suppose to be a place to inspire you to be the best version of yourself. The best version of YOU or ME doesn’t come with just the good. It takes difficult times in life to really make you who you are and this breakup is one of them.

After 3.5 years, Blake and I parted ways in May and it wasn’t an easy thing for either of us to do. Sometimes when you’re running a thousand miles and hour and flying by the seat of your pants, you let that little word called relationship slip away. Sometimes two people who were once so in love can grow in different directions and not even realize they’re drifting until life happens. I don’t and will never regret a single moment from our relationship because I truly believe that every single person comes into your life for a reason, for better or for worse.

I remember when we had just broken up, I felt like I was dying inside and that nothing would ever make me sparkle again. My amazing friends and family kept repeating one thing to me- TIMEEEEE. My response at the time was- FUCK YOU TIME IS BULLSHIT. Seriously though, they were right. Time is my friend and I am happy. While I spared you a lot of details, I wanted to let you know that I am doing great. Heartbreak isn’t easy. It sucks, but life is good. I am loving every single second of my new and singular life. I’ve got my own apartment and no one to worry about but my plants (which I kill on a weekly basis). I’m drinking boat loads of coffee, exploring Minnesota’s beautiful state parks, going to bed early, taking naps, laughing, and having a LOT of girl time.

Before we shift the mood to OATMEAL…Just remember, social media can make any person’s life see admirable and PERFECT and I know that I am guilty of abusing it in that way.

PS: It’s National Oatmeal Day and I didn’t even know it. #winningatlife

Greek Yogurt and Steel Cut Oatmeal Parfait

Make yourself this protein packed Greek yogurt and steel cut oatmeal parfait for an easy week day meal that will keep you full all morning!

Raise your hand if you love oatmeal.

I think it’s pretty clear that I have a MAJOR obsession with oatmeal. When I first started FFF almost 5 years ago, all I ever posted was oatmeal recipes…and for a great reason! Oatmeal is my go-to breakfast and it has been since college. I love the taste, texture, and fiber content. Plus it’s the perfect match for peanut butter, my bestie. I typical only cook with rolled or quick cooking because it’s the easiest and fasted way to make my breakfast. However- I much prefer steel cut over all variations because of it’s wholeness. The only issue with steel cut, is that it takes forever and ever to cook. Sometimes you’re so hungry that you just can’t wait 

Insert. Luvo! 

Luvo’s Steel Cut Oatmeal is not only super convenient, but deeeeeeelish. It’s mixed with quinoa and fruit for a naturally sweetened, texture-filled breakfast. I love that they only use real ingredients in their products and that everything is flash frozen! 

I love Luvo’s brand philosophy:

“We want to make it easy to make good choices by creating wholesome, nutritious meals that taste amazing. For this recipe, I layered hot steel cut oats with Greek yogurt to satisfy my hold + cold love. I also added some fresh berries to the top of mine.

Chocolate Banana Oats

Oh hey black bags under my eyes. You can leave nowwwwww! This girl hasn’t been getting enough sleep  and my body is slowly, but surely letting me know… I think I have the flu :/ You know when your body just aches? Blerggggg.

I’ve been going to bed way later than normal and waking up at the crack-o-down. I think I’m just in over my head with my schedule lately. Today, I decided negatory on the workout, hoping that a day off would help with a little rejuvenation of my mind, body, and soul. I know taking a day off is perfectly healthy. Our bodies need rest, but sometimes I have weird/awkward exercise guilt…More on that after we talk food :)


Recipe alert.

Yes, it is another oatmeal recipe. But: considering all of the amazinglyawesome feedback I have been getting on my oats, I figured one more recipes wouldn’t hurt :) Who’s with me?

Chocolate Banana Oats
-1/5C rolled oats
-1/5C oat bran
-1T chia seeds
-1/2 banana
-1T cocoa
-1/3C almond milk
-1C water
*Toppins: 1/2 sliced nanner, peanut flour sauce, a bloob of almond butter, and way too many raisins.

This tasted like chocolate dipped frozen bananas. Minus the frozen. I wish I would have enjoyed it more :/ My appetite is obsolete and my taste buds are off balanced. I’ve have never once…”not finished” my oats (sorry for the double negative) and today I really had to push myself to clear my bowl.

Anyways, I was directed by Mama Hersh not to blog tonight and to go right to bed! I am going to try and finish up by 8:00PM sharp so I can get some snooze. *I may or may not already be in bed with the lights off…

Exercise Gilt
For me, exercise is my stress reliever. It makes me feel energized and I love the adrenaline rush after an intense interval workout; I love it. Sometimes, I can be way too hard on myself on rest-days. A weird anxiety lurks in my mind about the fact that I didn’t workout. It’s not because I’m worried about the whole “burnage” of calories or that I’m going to gain weight, but it’s almost like my day is incomplete without it.

This may sound a little bit funny, but I also feel like EVERYONE knows I skipped. Really Lee?

#1: What gives?? Who cares what anyone else thinks?

#2: I don’t think it is realistic at all, for anyone who is a full time student/professional, to workout 7 days a week. (For both physical and mental health reasons!)

#3: If I don’t have time, I don’t have time. Exercise should be enjoyable and if I’m just going to rush through a workout, what’s the point?

#4 I should embrace my off-day. Once I decide I’m taking off and the decision is made, don’t turn back. Enjoy the day :)

Erg, I could go on but the clock is a-tickin’. I told myself 8:00 PM, so 8:00 it is. I hope I feel better by the AM, I have a presentation manana en espanol!

Creamy Blueberry Oats

Guess who hit the ultimate jackpot of “Breakfast Swag?” When I say I. found. swag.

Minneapolis is filled with the most fantastic boutiques. One of my favorites just so happens to be a few blocks away: Bibelot. Their products are fresh and modern and they also highlight local artists! me like. Plus, their kitchenware is just beyond adorable, like my spoons by Zak! Designs for example. I have been searching high and low for spoons just like these! I probably could have left that store $200.00 negatory, just on blog swag (kitchen linens, dishware, gizmos, etc). *one day when I’m filthy rich…*

My spoon pared my breakfast quite nicely this morning :) Gave my photos some pizzaz at least. I wasn’t in the mood for my typical nanner oats, so I went with something similar but with another twist. Instead of my oat bran/rolled oat ratio, I used just rolled oats; I used a bit more almond milk than normal to sweeten it up. Oh, yah….I added BLOOBS!

Creamy Blueberry Oats

-1/3 C rolled oats

-1T Chia Seeds

-3/4C Vanilla Almond Milk

-1/2 C Water

-1/2 banana

-1/4C blueberries

Toppings: 1/2 banana, peanut flour sauce, bloob of almond butter, and raisins

How cool is that reflection on my bowl?? *nerd alert*

I loved the flavor of this batch of oats. The banana really brought out the taste of the blueberries and the extra almond milk gave it a sweeter, nuttier taste. The one thing I do have to say, is that I missed my oat bran. Rolled oats by themselves definitely do not get as fluffly as my typical oat bran/oats do.

I wanted to switch focus for a second and wish the sister a happy birthday! You guys can probably tell from my posts that the sissy is my best friend. We do errything together.

Let me give you some background info. The sister and I are 12 months apart. *woah is right* We haven’t always been as close as we are today, but as we’ve matured and grown into young women, we’ve become extremely similar in our ways of life, morals, attitudes, etc. I remember as a child, always comparing myself, wanting to be better, smarter, and faster than Michelle. This is what happens when the bar is set high! She has always been a driven and passionate person [even as a kid] with the strongest backbone I have ever seen. School and friends came naturally to her and I have always been a bit jealous of this.

Today, we are different but alike in so many ways. I think one of the most valuable things I’ve learned from her is to be yourself and embrace it. Live your life for yourself and let it. Let life come as it comes, and go as as it goes. She brings so much positivity and spontaneity to my life and I am so lucky to have her.  🙂 So, Michelle, thanks for being you and happy 22nd :) You truly are an inspiration.

Chia Oatmeal with Sprinkles on Top

I love that I fell asleep at 7:00 PM last night (Apparently I was tired?) 

and woke up 4 hours later only to realize I was wide awake.

I love that Ashley crept in my room 10 minutes later (“Are you awake too??”)…

and we giggled until 1:00 am like it was a grade school sleepover.

I love that I proceeded to wake up at 7:00 AM.

and make oatmeal that was actually more like chiameal.

Last but not least, I love that sprinkles were involved.

and that I don’t even care!

I was totally that kid who overate sprinkles. I used to put em’ on everything. I knew that sprinkles are made basically from pure sugar, but it’s something about the pretty colors and plastic-like flavor that just   kept me coming back.

This morning’s breakfast needed to be a celebratory one for three reasons.

1. No reason at all

2. As of Monday night, I am Yoga Sculpt Certified!!!!

3. My interview at Anytime Fitness Corporate yesterday was a success…Say hello to Anytime Fitness’ new Social Media and Wellness Intern!!

Chia Oatmeal with Sprinkles on Top
Ingredients
1/2C rolled oatmeal
1T chia seeds
1/4t vanilla
~2 Cups of water or milk
1 packet of stevia (or any kind of sweetener)

I just love that chia seeds expand. The more the merrier, right?

Confession: The reason my oatmeal is that color, is because I decided it would be a good idea to cook the sprinkles with the rest of the ingredients, and their colors bled and faded together.

Don’t stop me now.

I topped this guy with sun flower seeds, Love Grown Chocolate Granola, and SPRINKLES!

Woo! I can already tell today is going to be a good day. Here’s my new theory…when feeling down, just add some sprinkles to your life.

More deets on the internship later. Now I am off to utilize this adrenaline in a sweat session!
