I go in phases with food. I’ll be really into salads for a while, then gluten free wraps, then quinoa, then brown rice. I get on these sort of foodie kicks. There was a point in time, where all I loved frittatas. I made them all the time. Well- they are almost back in my life. baked eggs are essentially the half sister of frittatas. 

Yesterday for lunch I had a twist on baked eggs. I had left-over quinoa salad (1C dry quinoa that I cooked + 1 can northern white beans + 1 can stewed tomatoes + salt + pepper + italian seasoning), so I added about 1/3C to the bottom of a rameken. Then I cracked two eggs on top and poked it with a fork a few times to make sure the quinoa was full submerged in egg. As you can see, I accidentally broke of the yolks. OOPS.

This time, it took almost double to bake the eggs all the way through. I set the oven to 350F and baked it for 30 minutes.

Any kind of quinoa salad will work, as long as the quinoa is cooked. You could even just use plain quinoa. I love this because I always have extra quinoa, so instead of tossing it you can just pair it with your baked eggs!

I like making baked eggs better than scrambled because it’s a lot less work. Furthermore, the clean up isn’t as bad either!

Pomegranate Oatmeal Bake

Yesterday was one of those days that made me realize (again) how much I love my job. My morning was spent recording a new episode of Anytime Health Radio, an Anytime Fitness podcast. We’ve had Richard Simmons and the P90X guy on this show, so for me to be the interviewee was an honor!

I am really really excited to share this with you because I opened up about something that I have yet to share on FFF. I will post the link on here as soon as it is edited and up!

After the recording I did some usual work stuff. At around 3 I paused for a quick workout in the mock gym located in our building with a co-worker/friend. I am so thankful to be able to workout AT WORK, during the day.

The final part of my day that just gets me excited is a little something called #ShredFest2013. A few warriors at work created a little something called #ShredFest2013 (read Hashtag Shred Fest Twenty Thirteen) for Anytime Fitness Corp…a way for the staff to stay accountable and reach their goals, whatever they may be. To work in a company where health and wellness is a top priority just makes my philosophy on life so much easier. What I like aout this support system is that whatever your goal is (they are all different), you have until April 1st to accomplish it. ShredFest2013 doesn’t happen over night. Life changes take months to fully accomplish whether it’s losing weight, gaining muscle, changing your diet, etc.

I am still pondering of what my goal is going to be, but I know that I really want to me mindful of what I am consuming. I’ve had lots of “it’s in moderation” days lately. AKA my sugar consumption has been through the roof.  We will see

And now I shall leave you with an oatmeal bake recipe I’ve made a single serve Pomegranate Oatmeal Bake before…but here’s a recipe you can share with your family!

Ingredients

  • 2C dry oatmeal
  • 2 mashed bananas
  • 1 egg
  • 1t baking powder
  • 2C Almond Milk (I used vanilla silk, 30cal/cup)
  • ¼C honey (optional)
  • ⅓ – ½ cup of pomegranate seeds

How to make Pomegranate Oatmeal Bake

  1. Preheat oven to 350F
  2. In a medium size bowl, mash two bananas until they are liquidly. Then, add the rest of the ingredients (minus the pomegranate seeds) and mix.
  3. Finally sprinkle the pomegranate seeds on top.
  4. Bake for ~30 minutes.

I make baked eggs a lot, close to every week. Recently, I started adding quinoa to my baked eggs for a little bit more nutritional value. Quinoa + Eggs = Quinoa baked eggs After making salmon for dinner Sunday night and having lots of leftovers, I decided..”what the hell.” I added some salmon to my Quinoa Baked Eggs Recipe to get Salmon Quinoa Quiches.

…Because that’s what they are really. The quinoa is the like the crust of my quiche and well…everything else is everything else of the quiche

Plus, I got a really cute plate from Anthropologie for like $3.00 and have been waiting to show it off! Love me a good deal.

  • 6 eggs (organic and free-range preferred)
  • 1.5 cups cooked quinoa
  • 4 oz cooked salmon
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat oven to 350F and gently wipe a muffin pan with coconut oil or olive oil non-stick spray. Line the bottom of each muffin tin with quinoa about an inch deep and shred some cooked salmon on top. Then, crack an egg on top of each. Sprinkle the top of each egg with the remaining quinoa and garnish with salt and pepper to taste. Hint: you will want to use about ¼c quinoa total for each egg.Using a fork, work the egg between the quinoa to ensure that it will not fall apart. Bake for 15-17 minutes or until the egg has hardened completely.

For a little refresher…my parents moved from my hometown in Milwaukee to Cleveland, Ohio, my sister goes to law school at Colorado University and my brother is doing his undergrad at the University of Colorado. Then there is me. I live in Minneapolis. For my sister and I, Christmas was spet at our significant other’s family’s houses…a big change from normal Christmas.

Blueberry Breakfast Quinoa

One of my hands-down favorite recipes from NYNR involved two of my favorite things…quinoa and breakfast! During one of our prep days for NYNR content development at Yellow Barn Wellness, we made this recipe…so I got to taste first hand how delicious it really is.  

I’ve been making it a tad bit differently in my neck of the woods, so I’ll share my version…

This recipe can obviously be made for 1, just divide everything by 4. Why would you? it is DELICIOUS eaten cold, and I actually prefer it. I make everything in batches so that I have easy prep during the week when I am scrambling to get to work.

Other toppings or add ins that would be delicious with this recipe are….
1. Different Berries
2. Nut Butter
3. Chia Seeds
4. Different Extract
5. Raisins
6. Walnuts or Pecans

Don’t stick with my add ins, if you like blackberries better…make it your own!

Car Search Update

Last night, Blake and I did some driving around. I want to get a feel for what kind of body I like in a car. I also do a TON of online research. Like I said in yesterday’s post, I am looking into Smaller SUV’s and one of my must-have’s is great gas mileage because of my commute. What I have decided is to go with a “newly used car” because it is a lot less expensive (don’t forget I’m a recent grad!) Here are some of my top considerations thus far…

1. Nissan Rogue 

2. Hyundai Santa Fe

3. Nissan Morano 

4. Rav4 Limited

Any more recommendations would be great!

Basic Ingredients

  • 1C quinoa, dry, and rinsed
  • 2C full fat coconut milk or unsweetened vanilla almond milk (That’s what I use!)
  • 1C blueberries
  • 1T honey
  • 1t vanilla
  • slivered almonds

How to make blueberry breakfast quinoa

  1. In a medium sized pot, bring 1C dry quinoa and 2C milk to a rolling boil. Then, reduce heat to low and add honey, vanilla, and ½C blueberries.
  2. Cover, and let cook for about 12-15 minutes or until all of the liquid is gone.
  3. Serve……warm, topped with more blueberries, slivered almonds, and another drizzle of honey.
  4. Serve……cold, topped with a splash of ice cold milk, more blueberries, and silvered almonds.

Ingredients

Scale
  • 1C quinoa, dry, and rinsed

Now that NYNR is over….I get to share all of the yummy recipes I contributed to the recipe packet. This is probably my favorite one…..I bet you can’t tell why?

Blackberry Banana Pancakes

Umm, pure goodness? Food tastes so much better, when it looks absolutely scrumptious. Best part is- these are oh so healthy for you! Made with whole grains and all natural sugars….perfection! I’ll take 5.

Blackberry Banana Pancakes ingredients

  • 1C gluten free oat flour
  • 1/4C gluten free rolled oats
  • 2 fresh eggs (whisked in a bowl)
  • 1 ripe banana, medium sized
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 teaspoon cinnamon
  • 1/2c blackberries
  • 1 tablespoon coconut oil (for pan)
  • honey (optional)

Instructions

  1. In a medium size bowl, mash a banana with a fork. Then, add in eggs and mix well. Add rest of ingredients and mix. In a medium size skillet, heat 1 tablespoon of coconut oil over medium heat. Pour batter onto pan. Cook each side for about 3-4 minutes. Serve with fresh fruit, honey, or almond butter.

Make a double batch and throw the rest in the fridge for the next few days. Yes, yes, yes!

Sorry gluten free eaters…these are gluten filled…Good news though….they can be made gluten free! 

I tend to wake up like 4 hours before Blake on the weekends…He is a normal person and is actually able to sleep in, where as I am up before 6. YIKES. My treat to him for just being him is Sunday morning pancakes! 

We got some fresh beautiful Natureripe blueberries from Target that completed this recipe.

Like the title of this blogpost says…these are semi homemade pancakes. All you need is pancake mix + what ever is needed for the pancakes batter + blueberries/any kind of fruit. I had half a banana left over from my breakfast (which I had eaten 4 hours prior ;)….), which I also threw in the batter.

My favorite gluten free pancake mix is King Arther Gluten Free Pancake Mix. Blake likes Aunt Jemima, which sadly isn’t gluten free or whole wheat…but damn good! I always make enough for 2 or three sittings because they are still really appealing reheated the next day. I kill two birds with one stone…major girlfriend points!
