VIDEO: Baked Cheddar Sweet Potato Fritters

March 4, 2023 by Lee Hersh Leave a Comment

I can’t wait for you to make your holiday guests these Baked Cheddar Sweet Potato Fritters made with a base of grated sweet potato and sharp cheddar cheese.

I can't wait for you to make your holiday guests these Baked Cheddar Sweet Potato Fritters made with a base of grated sweet potato and sharp cheddar cheese.

Happy Monday my friends! It was another beautiful weekend here in Minnesota. This warm weather is sticking around and I’m not mad about it one bit.

I am very excited to announce a new Fit Foodie Finds brand partnership with the NC Sweet Potato Commission. As you know, my childhood nickname from my dad was Spud. I was known to order a baked potato, hash browns, and sweet potato fries all in one sitting #sorrynotsorry Really though, I love potatoes cooked all ways. More recently as I’ve aged into my mid to late twenties, I’ve been all about SWEET POTATOES. I’m sure you can see by FFF’s recipe collection that Team Fit Foodie is just a wee bit obsessed. We’re talking….

  • roasted
  • pureed
  • hashed
  • spiralized
  • grilled
  • stuffed
  • casseroled
  • burgered

I love sweet potatoes for so many reasons beyond just flavor (cuz that rocks, too!). They’re versatile, good for you, and most importantly– available year round. Did I mention that they are reasonably priced, too? They’re a healthy (complex) carb packed with vitamins A, C, and manganese and I almost always include them in my weekly meal plan! North Carolina is the #1 sweet potato producing state (tempted to move there) and this is where the majority of the US’s sweet potato supply comes from. WOAH. Never been to North Carolina, but now it’s one of my favorite states.

Today’s recipe is 1 word: EPIC

You only need a few ingredients to make these cute little baked sweet potato fritters that are packed with delicious cheddar cheese, chives, and onion!

I can't wait for you to make your holiday guests these Baked Cheddar Sweet Potato Fritters made with a base of grated sweet potato and sharp cheddar cheese.

One important small kitchen gadget you will need to use for this recipe is a CHEESE GRATER. No, not to grate the cheese, but to grate the sweet potato itself! It’s really simple to do (see the video above) and this method is going to change your life. Just think of all the amazing sweet potato hashes you’re going to make at home now that you know how to grate sweet potato!

I can't wait for you to make your holiday guests these Baked Cheddar Sweet Potato Fritters made with a base of grated sweet potato and sharp cheddar cheese.

I can't wait for you to make your holiday guests these Baked Cheddar Sweet Potato Fritters made with a base of grated sweet potato and sharp cheddar cheese.

You know your sweet potato fritters are done when they begin to brown on the sides and top. Don’t forget to dress them up with some Greek yogurt and more chives. SO GOOD.

Easy Sweet Potato Fritters

  • 3 cups shredded sweet potatoes (~1 large)
  • 1 cup shredded cheddar cheese
  • 1 egg, large
  • ⅓ cup flour (any kind…we used white whole wheat)
  • 1 tablespoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 1 cup thinly sliced purple onion
  • ¼ cup chopped chives
  • salt and pepper to taste
  • olive oil, for drizzling
  1. First, preheat oven to 400ºF and line a baking sheet with parchment paper.
  2. Peel a large sweet potato and then use a cheese grater to grate sweet potato in order to form a hash. If you have multiple grate sizes on your grater, you’ll want to use the largest one.
  3. Place 3 cups of grated sweet potatoes plus all other ingredients into a large bowl and mix. Don’t be afraid to get messy and use your hands.
  4. Once everything is mixed. Use a ¼ cup scoop to scoop mixture into palms. Press together, squeezing out as much air as possible to create a patty. Place patties on lined baking sheet and drizzle with olive oil. Season with salt and pepper, to taste.
  5. Bake at 400ºF for around 30 minutes or until the tops of the fritters have firmed up and begin to turn golden brown.

I can't wait for you to make your holiday guests these Baked Cheddar Sweet Potato Fritters made with a base of grated sweet potato and sharp cheddar cheese.

PS: we first came up with this recipe about 4 weeks ago and Lin and I have both made these twice ourselves because they are THAT GOOD.

The post is sponsored by the NC Sweet Potato Commission. I was compensated and all opinions are my own. Thank you for making this blog possible and supporting my love for sweet potatoes.

Jump on the meal prep train and save yourself some time and energy in the morning. Prep all of your breakfasts on Sunday so come Monday morning, you can sip your coffee with ease. Meal prep is great way to start your morning off with a nutritional meal and a little less stress.

Two of my favorite things are breakfast and meal prep, so you can imagine how much fun I had looking for recipes for this round-up. Last month I put together a meal-prep post that included all meals + snacks. You people went crazy, so I took that as a sign that every Sunday needed to be a meal-prep post. #duh

Not only do I think breakfast is the tastiest and most beautiful meal of the day, but I love that I don’t have sacrifice time or taste when taking the time to meal prep my breakfasts for the week. My meal prep day of the week is usually Sunday, but honestly- any day works!

When you are choosing recipes for the week, remember to choose recipes that:

  • Keep for 4-5 days
  • Are easy to reheat
  • Can be separated into single-serve containers
  • Include whole ingredients

Vegan Dark Chocolate Coconut Pies

March 4, 2023 by Lee Hersh Leave a Comment

One of my all time favorite desserts is chocolate pie, better known as French Silk pie. There’s just something about the way the decadent, creamy chocolate melts in your mouth that seems to make all of your worries wash away.

Vegan Dark Chocolate Coconut Pies

But of course, like most prepared foods that I take the time to investigate, the ingredient list is usually full of unrecognizable ingredients. In attempt to make a somewhat healthier version, I set out to bake my own chocolate pie at home. Then as I paged through all of the traditional recipes, I found that most recipes use raw eggs, loads of butter, sugar and heavy cream.

I honestly can’t tell you the last time I bought butter or heavy cream and the thought of eating raw eggs makes me gag a little. Feeling defeated, I decided I will save those cravings for the next time I’m out to eat at a nice restaurant or bakery, where I can tell myself that they use all natural ingredients and ignore the thought of raw eggs.

Then recently, I found myself perusing Marin Mama’s site and saw a recipe for a dark chocolate pie made with a coconut crust that stopped me in my tracks. As a lover of dark chocolate and coconut, I absolutely had to make this happen in my kitchen. Jackie’s recipe didn’t have any added sugar or raw eggs; just heavy cream and butter which I could easily replace with vegan margarine and coconut cream.

coconut

Somehow after moving through three different states, I managed to lose my pie dish but the recipe worked fine as mini pies made in my muffin tin.

The tricky part is that the coconut can burn pretty easily, so you have to get fancy and cover the parts on the edges with tin foil so that they don’t burn in the oven.

foil

I cooked mine for ten minutes with the foil on and then five more without the foil but I’m sure you could cook it less or more depending on how crispy you like the coconut.

Vegan Dark Chocolate Coconut Pies

The crust comes out with slightly crunchy edges but the inside still has that delicious soft and chewy coconut texture.

Vegan Dark Chocolate Coconut Pies

And I think the chocolate filling speaks for itself. It’s not as light and airy as French silk pie but it’s still creamy and chocolately enough to satisfy the craving.

Vegan Dark Chocolate Coconut Pies

Ingredients

6 tablespoons Earth Balance

2 tablespoon unrefined coconut oil

32 ounces sweetened shredded coconut

12 ounces dark chocolate

1 can regular coconut milk, chilled overnight

Instructions

  1. Start by preheating the oven to 350°F and grease a muffin tin.
  2. Place 1 cup of the coconut into a food processor along with the Earth Balance and coconut oil. Pulse for thirty seconds until the Earth Balance appears well-blended with the coconut.
  3. Remove the mixture and place it into a large bowl with the remaining coconut. Combine everything with your fingers until it is all mixed together well.
  4. Taking a few tablespoons of the mixture at a time, press it into the muffin tin, shaping it up the sides to form a crust. Continue until you have used all of the mixture which should make ten mini pies.
  5. Cover muffin tin with a sheet of tinfoil and then feel for the center of each one and poke a hole with a sharp knife. Pull the tinfoil back so that hole is about 2 inches in diameter.
  6. Place muffin tin in the oven and cook for ten minutes and then check to see if it is starting to brown on the edges. If so, then remove foil and cook for another five minutes until light golden brown. If not, cook for another five minutes before removing the foil and cooking uncovered for five minutes. The coconut can burn if you don’t keep an eye on it, so be sure to stay in the kitchen while you’re baking the crust.
  7. You can start making the filling while the crust is cooking by heating a sauce pan over medium heat. Pour off the liquid from the top of the coconut milk then pour the remaining cream into the pot. It’s okay if the cream isn’t completely solidified, just pour the liquid in the pot and heat until it starts to bubble. Chop your chocolate with a knife or break it apart with your fingers then add it to the saucepan. Turn the heat to low and stir until chocolate and coconut cream are well-combined. Remove from the heat and set aside.
  8. Pour about 1/4 cup of the chocolate mixture into each muffin tin and then put it in the refrigerator to chill for at least 2 hours.
  9. When you are ready to remove them from the muffin tin, you will have to use a butter knife to release the edges.

Notes

Adapted from Marin Mama Cooks

Store in an airtight container in the refrigerator or cool room temperature for up to one week. They can also be frozen for up to 3 months.

Vegan Dark Chocolate Coconut Pies

I almost added almond pieces to the filling but in the end, I decided to keep it simple. Next time, I want to try making the crust from almonds and unsweetened coconut to see how that turns out. Oh, and have an extra can of coconut milk for coconut whipped cream on top. I really wanted to have that for the pictures but alas, I was too lazy to go the store.

Well, Halloween is tomorrow {err, today} and the only plans I have are to go to the dentist! Is that a sign I’m getting old? It sure sounds like it.

I hope your Halloween is spooktacular! Muawuahahaaha. {By the way, I’m really glad you can’t hear how that sounds in person.}

What are your plans for Halloween? Are you dressing up?

Looking for a festive holiday gift to make your friends and family this year? Make this easy Peppermint Bath Salt to sooth your sore muscles. It’s flavored with essential oils and colored with pomegranate juice!

Looking for a festive holiday gift to make your friends and family this year? Make this easy Peppermint Bath Salt to sooth your sore muscles. It's flavored with essential oils and colored with pomegranate juice!

All I have to say is that Davida’s puppy Rhett gives me MAJOR puppy fever. He is the cutest, most snugglyest, well-behaved pup I’ve ever met! I am and have always been a dog person. Growing up my family had 2 dogs- Lady and Zoe. Lady was an Australian Shepherd/Lab mix and Zoe was a Black Lab. Today- my parents have two dogs: Matza and Sasha. Matza is a German Shepherd Mix and Sasha is a Yellow Lab. Even though I don’t live with my parents, I consider their dogs my sisters. Why? Because I truly believe that Sasha is me in dog form 😛

After the breakup this summer, I thought long and hard about getting a dog of my own. Thennnn I realized my travel schedule is out of control and that it’s probably in my best interest to let life settle down a bit before biting the bullet and becoming a puppy mommy. Le sigh. Just because I’m not going to get a dog RIGHT NOW, doesn’t mean that I have stopped brainstorming what I’m going to name my first born dog 😀 #mylipsaresealed

Sooooooooo let’s talk BATH SALTS. Guys- this is FFF’s first true DIY post that isn’t food! I’ve got a solid collection of Aura Cacia Essential Oils that I use for different purposes and I thought it would be fun to create a DIY in a jar gift idea this holiday season that incorporates an essential oil. Insert —> peppermint. Here’s a $1.00 off coupon for ANY Aura Cacia Essential Oil. DO IT.

Looking for a festive holiday gift to make your friends and family this year? Make this easy Peppermint Bath Salt to sooth your sore muscles. It's flavored with essential oils and colored with pomegranate juice!

If you or anyone you know has sore muscles from tough workouts- then you HAVE to make this bath salt! I try and take at least one bath a week so that I can let my muscles let go and relax a bit. I love adding both epsom salt and essential oils to my bath to help sooth my sore muscles. YES PLEASE.

This recipe only calls for 4 ingredients: peppermint essential oil, epsom salt, coarse grain sea salt, and pomegranate juice (for the color!). That’s right, ditch the food coloring and use juice in order to get festive!

Holiday DIYs in a Jar (3): Peppermint Bath Salt

  1. In a large bowl, mix together 3 cups of epsom salt, 1 cup of sea salt, and 20 drops of Peppermint Essential Oils. Then, remove half from the bowl and place in another bowl.
  2. Add 2 teaspoons of pomegranate juice to one of the bowls and mix. If you want it darker, add another teaspoon.
  3. Layer 2 jars with white and pink all the way until you reach the top of both jars.

*This makes 2 18 0z. jars
**Store in the refrigerator for up to 1 week. This recipe IS perishable because of the pomegranate juice!

You need this in your life.

And so do all of your workout buddies.

Looking for a festive holiday gift to make your friends and family this year? Make this easy Peppermint Bath Salt to sooth your sore muscles. It's flavored with essential oils and colored with pomegranate juice!

If you are a dog mama or auntie…head on over to The Healthy Maven and get your bake on! How freaking adorable are these Grain-Free Sweet Potato Dog Treats? I’m totally making a batch of these bad boys for Matza and Sasha. I might have to eat on myself 😛 #sorrynotsorry

Treat your pup with these Grain-Free Sweet Potato Dog Treats made from just 5 wholesome and healthy ingredients. Your dog will love eating them as much as you enjoy spoiling them!
