Red Velvet Pancakes – Recipe Contest

It’s here, it’s here! I have been waiting over a month to announce an awesome recipe contest that I was asked to be a part of for the brand Smart Balance. The winner of the contests gets [dun, dun, dunnnn] a year long ,$5,000 contract with the brand for recipe creation. Um, yes please! This would be an amazing opportunity for me to build my portfolio and I genuinely like doing recipe creation.

We were asked to use at least 1 Smart Balance Product, and I decided to go with Smart Balance Original Buttery Spread. I’ve actually only had SB Peanut Butter, so I was excited to try some of the other products.

The idea of Red Velvet Pancakes came through a brainstorming session. I wanted to mix breakfast and dessert in one meal…and this is what I came up with. The good part- it’s a lot healthier than dessert!

The chocolate sauce?

It’s actually 100% healthy. The base is made from 1 teaspoon of coconut oil and 1 teaspoon cocoa powder. If you’re feeling wild (like I was), you can even add some melted peanut butter (1 – 2 teaspoons).

Healthy Fiesta Lime Rice

Haha. just kidding. But really, it’s true. I’m sure all you poor college students can vouch for me.  When you’re home, there is just an irresistible amount of food, EVERYWHERE! I am devoting this post to a weekend of eats spent at home!

Ingredients for Brownie Batter Oats

  • 3T rolled oats

  • 2T oat bran

  • 1/4C almond milk

  • 1/2 banana

  • 1/2T Penzey’s Cocoa

  • 1/2T chia seeds

Toppings: 1/2 banana, raisins, 1T Peanut Butter (I popped it in the micro for about 30 seconds to melt it a little bit)

Okay, this tasted EXACTLY like brownie batter. Mmm. I think I’ve met my new bff. I’m envisioning a lot more of this in the near future…

Ingredients for Baked Blueberry Oat Bran

  • 1/3C Oat Bran
  • 3T vanilla almond milk
  • 1/2 mashed banana
  • 1/4t baking soda
  • 1/4C fresh blueberries
  • 1T egg white substitute
  • 3 shakes of cinnamon (or more if you’re feelin’ it)

Directions: Preheat oven to 375 degrees. In a medium sized bowl, mash 1/2 banana and mix in almond milk and egg white. Add the rest of your ingredients. The consistency should be a little thicker than cooked oatmeal. Spray a personal sized dish with nonstick cooking spray and poor in your mixture. I used a 6×6 ceramic dish that is about 3/4 of an inch deep. Even out your batter and pop it in the oven for 20-23 minutes depending on how deep your dish is. Top with sliced banana, raisins, and nut butter!

Ingredients for Baked Sweet Potato Boat

  • 1 sweet potato, washed
  • 1/3C nonfat cottage cheese
  • raisins
  • balsamic vinegar

Directions: Preheat oven to 400 degrees. With a fork, poke a few holes in your tater (this prevents it from bursting in the oven). Bake the potato for about 45 minutes to an hour, depending on how soft you like your potato. Next, slice your potato down the center and place on a plate. Top it with cottage cheese, raisins, and balsamic vinegar.

The mixture of sweet/salty was perfect; as was the cold/hot ratio. This meal is packed with protein and beta carotene…and not to mention, super cost efficient!

Ingredients Healthy Fiesta Lime Rice (Serves 2)

  • 1C cooked brown rice
  • 1/2C black beans
  • 4T fresh pico de gallo (I used store bought)
  • juice from 1 lime
  • fresh cilantro

Directions: Mix together all ingredients. Serve cold and with a dollop of plain greek yogurt. Garnish with fresh cilantro. *Note: I made a bit batch of brown rice earlier in the week, but if you are making it from scratch, the ratio of rice to water is 1 to 2. Directions: Bring rice and water to a rolling boil and then reduce heat to low and let simmer for an additional 45-50 minutes or until all of the water is soaked up. Let sit for 10 minutes before fluffing with a fork to serve.

This would be perfect paired with tortilla chips or served along side fajitas! I thoroughly enjoy beans and rice and I love cilantro so I decided to make a meal out of it

Ingredients for Chocolate Chocolate Chip Cookies

  • 1 stick of butter/margarine
  • 12 oz semi-sweet chocolate chips
  • 6 oz white chocolate chips
  • 2 large eggs
  • 1t vanilla
  • pinch of salt
  • 1t baking powder
  • 1/2C cocoa (I used Penzey’s)
  • 1 1/2C sugar
  • 1 1/4C flour

Directions
Preheat oven to 350 degrees. Begin by melting butter and 1/2C semi-sweet chocolate chips in the microwave. (I microwaved in 20 second increments until melted). Then, let butter/choco mixture sit for 5 minutes before mixing in the rest of your ingredients. Spray cookie sheet with nonstick cooking spray and use a medium sized cookie scoop to form your cookies. Bake for 12-15 minutes, or until your cookies begin to crack on the top. Let cool for about 10 minutes before transferring to a cooling rack.

I have concluded…I am a mad woman in the kitchen. I finish one recipe and I’m on to the next.

It’s nice because my family LOVES to eat!  My sister and mama are my guinea pigs and my brother is a growing boy and always willing to give a test.

Time to spend ANOTHER night in Milwaukee. Oh yah, BTW. My flight got cancelled AGAIN. I am now rebooked for tomorrow tonight. Seriously, cross your fingers. I need all the luck I can get!

I just wanted to start off by saying that- I think I’d be a millionaire if I published a smoothie recipe book with all of the amazing recipes you guys shared! It’s official, my Strawberry Vanilla Smoothie recipe was a little puny compared to some of yours! Operation: Add nut butter to my next smoothie!

I made an amazing Mango Brown Rice Salad last night for part of my dinner. I forgot how versatile a grain could be. Remember when I made my Healthy Fiesta Lime Rice? Same grain, same awesome health benefits, but a WAYYY different flavor.

Ingredients for Healthy Mango Brown Rice Salad

  • Brown Rice
  • edamame
  • mango
  • small apple
  • fresh cilantro (to taste)

Heck yes, I am THE master of shopping the sale  It keeps me creative in the kitchen. I get in weird ruts of consistently eating the same foods over and over again. Hey, when you’re on a budge and you know what keeps you full…gotta do whatcha gotta do! Really though, it is nice to have some variety in your diet every once in a while.

Time to do more studying…6 days and I’m home free!

Ingredients

Scale
  • 1C Brown Rice
  • 1/2C edamame (I used frozen, but fresh works too!)
  • 1/2 fresh mango, chopped
  • 1 small apple, chopped
  • fresh cilantro (to taste)
  • dressing: 1T EVOO, 2T honey, squeeze of lime, pinch of salt, and a pinch of pepper

Instructions

  1. Cook brown rice by bringing 1C rice and 2C water to a rolling boil. Then turn to low and let simmer for 35-40 minute or until all of the water is completely soaked.In
  2. N a small bowl, mix together ingredients for the dressing. You could also add a tablespoon or so of sugar or stevia if you want to boost the sweetness.
  3. In a large bowl, mix together edamame, chopped mango, chopped apple, fresh cilantro, and cooked rice. Toss salad in your dressing.
  4. Refrigerate for 1-2 hours before serving. I recommend serving it chilled, but room temperature is delicious as well!

Homemade Chunky Guacamole

Friday! I can’t believe it is already Friday. 

A lot of people have been asking how my new schedule is going now that I am no longer full time at Anytime Fitness and what I have been doing in my “spare time.” This whole transition has been absolutely surreal. I feel like I am still settling into things, but I do feel a new found boost of positive energy. On days that I don’t work in the office, I teach 6AM yoga sculpts, so I am up and at em’ by 5:15AM and done with teaching and my workout by 7:15. 

I shower up, actually do my hair and make-up and throw on a cute outfit, so I can power through the day. I feel so much more productive when I am looking and feeling good. I still feel a bit unorganized, but in a good way. Blake and I have a home office, so that can be fixed with a few folders, a giant calendar, and some cute notepads. 

I’ve been teaching a lot more. I picked up two more classes at Corepower and have been subbing my buns off. I love being in the studio and around people. I think that is going to be the hardest thing for me…working form home means it’s just me, myself, and I (unless I can convince Blake to get a dog). 

It’s only been 2 weeks…so I’ll report back a little further down the road and let you know how I’m feeling about the whole thing!

Homemade Chunky Guacamole

Today’s post rocks my socks. I wish homemade guac didn’t go bad so quickly. I can usually make it about a day and a half before I have to throw the batch out.

That just means I have to eat it faster….eh?

Guac is pretty simple to make and uses easy-to-find ingredients that you probably already have at home!

Ingredients

Scale
  • 2 avocados, mashed
  • 1/2 cup (or 1 half large) tomatoes, sliced
  • 1/3 cup (or 1/4 large) red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon ground peppper
  • 1 teaspoon sea salt
  • 1/4 teaspoon cumin (optional)
  • 1/2 lemon juice, squeeze juice

Instructions

  1. In a medium size bowl, using a fork, mash the flash of 2 avocado until smooth. Then, add in the rest of the ingredients and mix together.

Booty Burner Workout

HAPPY WORKOUT THURSDAY!

I absolutely love writing these posts. If you know me in real life, you know that fitness is HUGE part of my life…maybe even bigger than food (wha whattt?!). I teach yoga sculpt twice a week and in general love to sweat. I love to sweat so much, that I even make time for it while traveling…even ask Blake!

This Booty Burner Workout is great because it doesn’t require any equipment and can be done anywhere! A lot of these moves I do in my yoga sculpt class…in case you were wondering :D

Okay so- this is a circuit. There are 9 45-second rounds. Meaning that each of the 9 exercises should be completed for 45 seconds with a 15 second rest. You can do the circuit as many times as you’d like…I did it 3 times through! PS: to warm up, I did my 20’s Cardio Warm-Up (no equipment needed for that either)!

 *Note for the exercise that has 2 rounds involved, do one side for 45 seconds and then the other side for 45 seconds.

I learned how to make GIFs this week using Gimme Some Oven’s tutorial so I thought I would incorporate some in the description of each exercise. ENJOY!

Lunge with Leg Lift- Begin in a split stance. Lower down into a 90/90 lunge, making sure to keep your front knee above your ankle and chest lifted. As you exhale to stand, place the weight into your front foot and send left your back leg into airplane pose. Repeat on the same leg.

Squat with Twist (Alternating)– Start with feet hip-width distance apart. As you inhale, lower down, keeping the weight in your heels and chest lifted. As you exhale to stand up, bring opposite elbow to opposite knee creating a twist. Alternate sides.

Airplane to Front Rase– Begin standing on one leg. Hinge chest towards the ground, keeping your back flat and shoulders parallel to the ground. Extend your leg behind you. As you exhale hinge back up, sending your chest upright and your foot in front of you. Repeat on the same leg.

In-and-Out Squats (Plyo Squats)– Begin with feet hip-width distance apart. As you inhale, lower down keeping the weight in your heels and chest lifted. As you exhale, explode of the ground landing with your feet together. Jump to explode again back into your squat.

Glute Leg Lifts– Start in a table-top position with your shoulders stacked over your wrists and hips over knees. Bend one leg at a 90 degree angle. Inhale and extend the leg up and exhale bring it back down. Repeat on the same leg.

Squat Pulses– Start with feet hip-width distance apart. As you inhale, lower down, keeping the weight in your heels and chest lifted. Pulse your squat up and down (micro movement!), staying relatively low in your stance.
