What do you do when you have a little pumpkin puree left in the can?

(Because of course I’m not going to throw it out…)

When you take the nuts out of the oven, they will not be crunchy at first. Let them cool for at least 20-30 minutes before eating!

I got really inspired to make something with pumpkin after yesterday’s Fit Foodie Finds Friday post. I attempted gluten free pumpkin cookies and that was an epic fail.

Ingredients

Scale
  • 3 cups almonds, raw
  • 3 tablespoons organic pumpkin puree
  • 3 tablespoons maple syrup, raw
  • 1 teaspoon pumpkin pie spice

Instructions

  1. First, preheat your oven to 350 degrees and line a baking sheet with parchment paper.
  2. Next, in a medium size bowl, mix together pumpkin puree, maple syrup, and pumpkin pie spice.
  3. Then, add in raw almonds and toss. Make sure all almonds are evenly coated.
  4. Finally, spread almonds onto baking sheet and place in oven. Roast almonds for 25 minutes, tossing at 10 minutes and 20 minutes.
  • Prep Time: 10 minutes
  • Cook Time: 25 minutes

Hi Fit Foodie Finds Readers! My name is Miriam and I write over at Bellaspire, a healthy living blog that focuses on aspiring for beauty in all aspects of life. I’m so excited to be joining you all today on one of my favorite blogs! I’ve been reading Lee’s blog for about a year and truly enjoy her perspective.

Today I wanted to talk to you about abs and the elusive six pack! What is it exactly about this body part that brings so much joy, pain, excitement and sheer frustration? Having a six pack seems to be the holy grail of fitness, especially for ladies. Our hormones, workouts, diet, and genetics (especially the thickness of the cartilage) all play an integral role, some more so than others. No matter how many crunches, planks, or sit-ups we do, the most important indication for whether or not we’ll see the fruits of our labors is our body fat percentage.

Body fat is essential for survival. Men need about 3-5% body fat while women need 8-12%.  Women need more body fat to maintain their reproductive organs, which explains why they often lose their periods if they fall below that range. While each individual differs from another, most women will see a six pack at around 12% body fat.

If there’s one take home lesson that I can share with you today it would be this: “Abs are made in the kitchen”! A clean diet consisting of lean protein, veggies, and low glycemic carbohydrates is the number one way to a flat tummy. Here are my other top tips to getting that chizzled effect ;).

1) Food prep- Just to reiterate the point above, preparing clean meals to have on hand is incredibly important!

2) Sprints- Perhaps you’ve never considered this as an abdominal exercise. Not only does sprinting recruit all of the core muscles for all out exertion, but it also kicks off a hormonal cascade. That flight or fight response can have major fat burning effects which last for hours after you finish your workout. I like to do ten 100-meter sprints twice a week.

3) Traditional Exercises- Hanging kneeling cable crunches, in and outs, leg raises, etc. You’ve got to grow that muscle so that once you’ve leaned out there’s something to show ;). Often times people focus on this aspect alone. They’ve probably got some pretty chunky abs until a layer of fat.

4) Avoid soda and limit salt- Last but not least, consider the effects that these vices may have. Bloating can add yet another layer of puffiness that can cancel out your efforts. Aim to drink green tea rather than soda and drink around 3 liters of water a day to avoid fluid retention.

Paleo Candied Bacon

It’s no secret that I eat meat. A lot of it. 

I’ve always been a meat eater, but ever since Blake and I moved in together, I eat it almost once a day (if not twice!). Lately we’ve  been grilling up a storm. Steaks, chicken breasts, chops…you name it! 

I decided to get a little creative and make a caveman treat…with MEAT.

I posted the below photo on Instagram (with no text), and 3 people said it looked like a cat.

I just don’t see it!

Then- I felt like a total nerd, because the reason they said cat…was because I said “Can anyone guess what’s happening in my kitchen right meow.” 

I see a dinosaur. But not a cat.

So yes. All you need are 2 simple ingredients to make these crunchy delicious Paleo Candied Bacon treats:

  • Bacon ( I used medium thickness)
  • Coconut Palm Sugar

It doesn’t take a Top Chef to be able to make these.

Roll the bacon around in the coconut sugar…making sure it’s all covered.

Then, place on a baking sheet lined with parchment paper (EXTREMELY IMPORTANT).

Ingredients

Scale
  • 1 pound of uncured hickory smoked bacon (no added sugar)
  • ~1/2 cup – ¾ cup coconut palm sugar

Instructions

  1. First, preheat oven to 350F and line 2 baking sheets with parchment paper. Set aside.
  2. Next, place coconut palm sugar on a large plate. Then, rub each piece of bacon in the sugar, making sure they are fully coated.
  3. Place bacon on baking sheet. Then sprinkle a little more coconut palm sugar on top if need be (you will most likely have leftover sugar).
  4. Place in oven at 35 and cook for 25-30 minutes or until desired tenderness.
  5. Let cook for a few minutes and then remove bacon. Make sure you remove bacon before completely cooled, or you will have lots of extra sugar stuck to it!
  • Prep Time: 5 minutes
  • Cook Time: 30 minutes

The second I made that paleo candied bacon, I was plotting how I was going to use it in another recipe. 

Cupcakes make the world go round. So does bacon. Put the two together and you’ve got yourself the BEST dessert on this planet.

For the record- I brought these babies to my yoga studio to eat after a class I was teaching…and MULTIPLE people gave me the two thumbs up. Good review…must share! 

These cupcakes came out surprisingly moist for having no oil in them. I also went the egg white route instead of using full eggs and I wouldn’t do it any other way.

I did want to make a note that they aren’t INCREDIBLY sweet. Feel free to add additional coconut sugar, but I actually prefer my cupcakes to be more rich than sweet. #justbeinghonest

  • almond meal
  • coconut palm sugar
  • baking powder
  • cocoa powder
  • egg whites
  • apple sauce
  • almond milk

Coconut oil spray is my best friend. You can pretty much find it anywhere these days. I know for a fact you can get it at Trader Joe’s.

I use Against All Grain’s Recipe for Coconut Whipped Cream. 2 Ingredients: full fat coconut milk and honey. simple.

If you want to get a patriotic feel with these cupcakes and you’re a non bacon eater.

Just switch out the bacon for some strawberry slices. You won’t get the same sweet n’ salt affect, but still delicious!

Ingredients

  • 2 and 1/4 cups almond meal (I use the Trader Joe’s Brand)
  • 1/2 cup coconut palm sugar
  • 1 and 1/2 teaspoons baking powder
  • 1/2 cup cocoa powder
  • 1/2 cup egg whites
  • 1/2 cup apple sauce
  • 1/2 cup unsweetened almond milk

Instructions

  1. First, preheat oven to 350F and line a cupcake tin with cupcake liners. Then spray with coconut oil spray. Set aside.
  2. In a large bowl, mix together dry ingredients. Then add in wet ingredients and mix until combined.
  3. spoon batter into cupcake tin, filling about 3/4 of the way.
  4. Bake at 350 for 23-25 minutes or until the cupcakes pass the toothpick test.
  • Prep Time: 10 minutes
  • Cook Time: 23 minutes

Healthier Banana Raisin Muffins

One thing I always purchase in obscene amounts is bananas. They are not only the food of the gods, but you can get like 10 bananas for under 2 bucks [especially when they are in season]. When it comes to  the “art of banana shopping,” I am extremely strategic about the ones I pick out. If you buy an entire bundle of 8- they brown at the same rate. This is why you need to purchase an array of ripeness.

The perfect banana in my opinion is golden yellow- just about to turn spotty. I’m not the biggest fan of the extremely ripe kind; it’s the texture that does it. I do have to say that brown banana is not always a bad thing though.

Banana bread tastes so much better when the nanners are overly ripe and spotty. The browner the banana, the sweeter the taste; perfect for no sugar added banana muffins! Healthy and naturally sweet. Now, that’s my kind of muffin!

Drizzled with agave nectar (or honey).

Yup, that was my make-shift photo sesh. I draped fabric from the light fixture. The lighting was perfectly shining through our kitchen window and I couldn’t resist! My mom walked in the kitchen a wee bit confused.

Last night the brother went to PROM! So many memories from my high school days were flowing.

What a stud.

So precious! Actually, my dress from my junior prom was recycled!

HAHA. Can you guess which one is me? That was 4 years ago exactly. At least I know my dress is still in style.  I also wanted to note how photography technology has changed. So crazy what cameras can do today.

I also ran into one of my high school friends, Angel, last night at the Prom festivities. Um seriously? Could she get any more beautiful?

Healthier Banana Raisin Muffins

Ingredients

Scale
  • 2 large bananas, exremely ripe
  • 1/2C whole wheat pastry flour
  • 1C all purpose flour
  • 1T vanilla almond milk
  • 1/4C agave nectar
  • 1 tsp baking soda
  • 1 large egg
  • 1t salt
  • 1/2C raisins

Instructions

  1. Preheat oven to 350 degrees and spray a cupcake tin with nonstick cooking spray (or line with cupcake liners).
  2. 2. In a large bowl, combine dry ingredients. Set aside.
  3. 3. In a medium sized bowl, mash 2 bananas until they become a liquid-like consistency. Combine egg and agave nectar. Then, poor liquid ingredients into dry ingredients and mix. You may need to add a little more almond milk or a another tablespoon of whole wheat pastry flour depending on the consistency.
  4. 4. Fill cupcake tins about 3/4 of the way and bake for 35 minutes (I filled 10 cupcakes). I would suggest checking your muffins after 25 minutes and rotating. Let cool for at least 15 minutes before removing, or you will have disaster.

return of the dress

This past year was the first time that I have been completely away from my family. The sister and I both did our undergrad at the U of M, so we’ve always had at least each other. However as you know, she’s a year older than me and this year ventured to Colorado to start law school, leaving me all by my lonesome (but giving me a GREAT excuse to travel) :)

After school ended, the sis came out to Minne for my graduation and stayed for a few extra days. She decided to drive back to Wisconsin for the weekend with me to surprise my parents! Boy oh boy. I couldn’t have asked for a better time at home.

Someone else was happy to see us too! PUPPY!

This weekend was Clay and Selina’s prom so we got to see them get all jazzed up and beautified. Before we get into that, let’s talk food!

The weather was absolutely beautiful today, perfect for a summery BBQ. Have you guys ever tried Crystal Light’s Mocktail line? I sipped on the margarita flavor all night. It actually wasn’t half bad!

On the menu for tonight’s grub was grilled shrimp, grilled asparagus, grilled veggies, and Grilled Strawberry Feta Quinoa Salad. Haha just kidding, I didn’t grill the quinoa salad…but that does intrigue me. Grilled Quinoa? Grilling is so easy, and so tasty. I love the charred flavor!

For the grilled veggies and asparagus, we tossed the raw veggies in olive oil, garlic, salt, and pepper and wrapped it up in tin foil. Easy. Easy.

Addicting. I may have had seconds. and thirds.

Now on to prom.

Okay, first of all. I think times are changing. I was the most awkward looking adolescent and these girls all had on stunning dresses and the boys cleaned up quite nicely. Look at how handsome my brother looks!

Dayum is right.

Selina also looked beautiful. Remember when Maggie wore my junior prom dress to her prom last year? Seli wore it too! Gosh what a great dress. Not to mention Selina looked rockin’. I’m really not the biggest fan of humongous poofy dresses (there are a select few that I like), so I vote Seli gets best dressed of the night!

Here’s a little flash back to 2007 when I wore it.

Oh high school, I’m so glad you are over.
