Not sure if it’s a good or bad thing that I’ve lost track of what day and time it is. Not to mention, I’m still going strong writing 2015 on everything. Remember when you were in high school and you had all summer to dick around and it never really mattered what time or day it was? Those were the days. It’s the same notion that my days and times are fusing together, but it’s real life and I actually have a job. I can safely say that for my job late winter and spring is just absolutey crazy! Between new partnerships, travel, and prepping for new projects…I’ve been working a lot. Mucho working.

Good news is- I’ve learned that hard work deserves hard play. Yes, I said learned. What’s the point if you don’t play hard after you’ve worked hard?

I’ve been to California many times and even lived in Northern California for a bit as a kid, but I have NEVER been to wine country. A SIN, I KNOW, A SIN. I’m leaving at the crack of dawn tomorrow morning to attend The Pulses Culinary Immersion Event. I am super pumped to meet up with some of my favorite blogger friends, some who I have met in real life and others who I haven’t. We are all ambassadors in 2016 for the Chick Pea and Lentil Council for the Year of the Pulses (more on this later).

Healthy Thai Coconut Quinoa Bowls

Ingredients


  • Roasted Veggies

    1 large sweet potato, diced

    2 cups carrots, diced

    1 tablespoon minced garlic

    2 tablespoons EVOO

    salt and pepper, to taste

    Purple Cabbage Slaw

    1 cup purple cabbage, finely chopped

    1 cup edamame

    1 small red pepper, diced

    2 tablespoons EVOO

    1 lime, juiced

    1 tablespoon maple syrup

    ¼ teaspoon garlic powder

    ¼ teaspoon ginger powder

    ¼ teaspoon dried orange peel

    Toppings

    peanut butter

    peanuts

    fresh cilantro



Instructions

  • Place diced vegetables on a baking sheet and drizzle with EVOO. Then, add in minced garlic and season with salt and pepper. Toss. Roast at 400ºF for 25-30 minutes or until you can pierce the veggies with a fork.
  1. Place purple cabbage, edamame, and red pepper in a bowl. Set aside. Make your dressing by whisking together EVOO, lime juice, soy sauce, maple syrup, ginger, garlic, and dried orange peel. Then, toss veggies in dressing.
  • Prep Time: 15 minutes
  • Cook Time: 30 minutes

How to Bake Eggs in the Oven

Bake Eggs in the Oven

Follow this guide for how to bake eggs in the oven and you will have an easy-to-make, high-protein snack with all of the hard-boiled egg goodness minus the hassle of peeling off that stubborn shell. You can eat it at home or on the go, hot or cold. Ya really can’t go wrong with learning how to bake eggs in the oven, it’s total game changer!

This is definitely my new favorite [and healthy] snack.

All you have to do is set your oven to 350F, grease a muffin tin with non-stick cooking spray, and crack your eggs into the tin. Then add some flavor with a little shake of salt and pepper. Bake for about 17 minutes and viola.

Bake Eggs in the Oven

Ingredients

  • Eggs (how ever many you want)
  • nonstick cooking spray (I use olive oil or coconut oil spray)
  • salt and pepper, to taste

Instructions for Bake Eggs in the Oven

  1. Preheat oven to 350ºF and grease a muffin tin with nonstick cooking spray.
  2. Crack eggs into tin. Season with salt and pepper.
  3. Bake for 17 minutes or until eggs reach desired texture.All you have to do is set your oven to 350F,

 It has the texture of a hard-boiled egg, but you don’t have to deal with peeling the shell off of it. They literally slide right out of the pan. These would be the perfect on-the-go egg sandwich for a quick AM breakfast. I paired mine with leftover roasted sweet potato quinoa, topped with some feta for a meatless, high protein lunch.

I ate this dish cold, but in all honesty, I never reheat anything. I had one of the eggs hot, right out of the oven and it was pretty tasty, but I prefer them cold.

I am sad and happy all at the same time that our first annual Nut Butter Cup Week has come to a close. Since the day we revamped and reposted our Healthy Peanut Butter Cup Recipe on FFF, I knew you guys were nut butter cup obsessed. Why? Well, you’ve shown us time and time again (we’re talking HUNDREDS) on Instagram. It’s been so cool this past week to see hundreds more nut butter cups made on Instagram. Keep on tagging us because it makes us so happy to see you loving our recipes.

Over the last week, we posted 6 brand new nut butter cup recipes using a variety of different nut butters and add-ins. The one thing that stayed consistent with each recipe is…COCONUT OIL. Coconut oil makes your nut butter cups silky smooth and packed with healthy fats. This is why, it’s important to always store your nut butter cups in the freezer. Below you will find a mini guide of the tools you need to make one of these recipes as well as tips and tricks to make the best nut butter cups on the planet.

Nut Butter Cup Kitchen Essentials

You don’t need much to make one of these deliciously satisfying nut butter cup recipe. Here are the staple kitchen essentials you’ll want to stock up on for our Nut Butter Cup Week recipes!

  • Nonstick muffin tin
  • Muffin liners
  • Mixing Bowls
  • Coconut oil
  • All-natural nut butters: peanut butter, cashew butter, almond butter, and coconut manna
  • Cocoa powder
  • Vanilla extract
  • Maple Syrup
  • Honey

Tips and Tricks

  • Storage: because these little bites of heaven are made from a nut butter and coconut oil base, you’ll want to store them in the freezer. Tip! Once they’ve hardened, remove them from their muffin liner and tin and transfer them into a freezer-safe gallon-size bag for later!
  • Nut Butter Swaps: As always feel free to swap any of the nut butters for one of choice. The only one that’s tricky is coconut butter, do not swap this one for anything else!
  • Sweetener Swaps: For all of these delicious nut butter cups, we used either honey or maple syrup. Feel free to use them interchangeably. We have not tested these with any other sweeteners, but if you do…please let us know!
  • Oil Swaps: Every nut butter cup recipe calls for coconut oil. We have NOT tested any other oils, but will report back if we do 🙂
  • Go Green: Because you’re going to want to make these recipes more than once (obvi), we suggest either purchasing silicone muffin tin liners OR not using muffin liners at all. If you decide not to use muffin liners, all you have to do is run warm water on the bottom of your muffin tin for a few seconds and use a knife to pop each nut butter cup out of their tin.

OR If you are someone that hasn’t thought about incorporating meal prep into their life (yet) this guide is also for you and a great place to get that meal prep ball rollin’. I’ve said it before and I’ll say it again,  meal prep is my life saver. Here at Fit Foodie HQ we always have the fridge stocked with meals and snacks that we eat throughout the week. We love to eat out, but after those long work days or when we are craving a little extra something (aka one of our delish ball recipes) between meals, our food/snacks are already prepped and ready to go.

Our pantry is always stocked with staple ingredients that we use multiple times a week. Protein-Packed Salad Recipes + Superior Hiking Trail

Anyone else feel like summer is FLYING by? It seriously feels like The 4th of July was yesterday and now it’s almost August (insert #ihatewinter emoji). I know August is still summer, but I just don’t want it to end! This past weekend my sister and 10 of her closest friends ventured up north to the Superior Hiking Trail for her bachelorette party. 1. I love that she insisted on going hiking for her bachelorette party and 2. I never want to leave Minnesota. Seriously, the northern part of this state is AMAZING. We stayed in Beaver Bay right on Lake Superior and right off the Superior Hiking Trail. We did 4 different hikes and I just didn’t want to leave!

I think we need to make her bachelorette party an annual trip 🙂 One of her best friend’s Tiff and I planned the trip and I was in charge of food. Of course, I took to the blog for some recipes. We made some FFF classics: Chicken Burrito Bowls, Banana Pancakes, and Healthy French Toast Sticks ( no sticks, just the french toast!). We wore these really cute tanks I designed for her party that say: “The North Shore is Calling and I Must Go”  with her wedding date engraved in the bear 🙂
