The. Weather. Is. CRAZY right now. If you visit weather.com as often as I do, you probably noticed how insane the weather has been over the last couple of weeks! I’m addicted and I don’t care who knows it and I will continue to swoon over it on FFF. Seriously, we got a spring teaser last week in Minnesota. The sun was shinning, everyone was running around the lakes, and enjoying patio drinks because it was 60º outside. We thought 15º days with wind and snow were behind us. WRONG. 

Not only did we get snow, hail, and wind all week last week, but we had a TORNADO in Minnesota. It’s too early to be tornado season, Mother Nature…I mean HELLO. It seriously freaks me out. It wasn’t just in Minnesota either, Mother Nature seems to be very confused and really making a mess of things all over the nation. Is anyone else confused, scared, and excited all at the same time when it comes to the weather? Other than the fact that I love the weather, another thing I’m sure about is that I am totally ready for spring.

Linley and I have been scheduling new spring recipes for the season and we’ve been researching what fruits and veggies are in season. Sometimes it’s easy to forget that while Minnesota has a short growing season, there are other states that have gardens all season long. No matter where I am in the world when Spring rolls around, I am always craving berries, greens, and fresh veggies. Bring on the crunchy salads and desserts filled with berries! Can you dig it?

My diet needed a bit of a reboot after the winter and I thought yours might as well, so I thought I would try and inspire the both of us to meal-prep some spring inspired FFF recipes this week. Recipes that are fresh, healthy, and keep you looking forward to every meal you eat.

Instant Pot Review (Why You Need an Instant Pot!) – Fit Foodie Finds

Thinking about getting an Instant Pot? We love our Instant Pot but wish there were things we would have known when we bought it. Here is our Instant Pot Review on how to use an Instant Pot and why we love our Instant Pot!

We purchased a 6-quart Instant Pot from Amazon for $99.95 for the Fit Foodie Finds kitchen almost two years ago and we have never looked back. Well, maybe we looked back a little when we first bought it, because and Instant Pot can be pretty intimidating if you’ve never worked with a pressure cooker before.

My experience with pressure cookers before the Instant Pot was when someone needed to cook beans really fast in the mountains (because…you know, elevation). Otherwise, I just remember horror stories of stove top pressure cookers going wrong. The Instant Pot came along and now it’s said to be the best electric pressure cooker on the market. For us, it’s the only pressure cooker we’ve ever used, but we love every second of it.

Why does Fit Foodie Finds use an Instant Pot?

We started using the Instant Pot because we heard we could make some of our favorite meals in half the time. That turned out to be true. Here at Fit Foodie Finds we’re always striving to share healthy recipes that are accessible and easy. Our goal when using the Instant Pot remained the same. So, we rolled up our sleeves and got recipe testing. There are many different ways to use the Instant Pot because it has so many different settings. From sauteeing to steaming to baking, you can do it all! You can make steel cut oats in 10-minutes AND homemade mac and cheese in 5-minutes!

So far in our relationship with the Instant Pot, our goal has been to cook things faster than we could in a slow cooker or in the oven, but without sacrificing flavor and/or quality. We generally use the manual + high function and try our best to develop recipes that use the quick release function rather than the natural release. Why? Because sometimes the natural release can take 15-20 minutes, in addition, to cook time whereas the quick release takes less than one minute.

Commonly Asked Questions about the Instant Pot

Here are some FAQ’s and answers about the Instant Pot. 

Is the Instant Pot an electric pressure cooker? 

Yes! There is no stove involved. All you have to do is plug it in and start your recipe!

What is the best Instant Pot? 

We have two Instant Pots in the Fit Foodie kitchen. They are both 6 Quart Instant Pot Duos (one is the older version and one is the newest version).  We have not had any problems with our older Instant Pot. It is consistent, reliable, and all of our recipes turn out the same. However, we have had a couple issues with our newer Instant Pot. We receive the ‘burn’ warning multiple times with our newer Instant Pot. We still use it but have to take extra care during recipes.

This has been a common problem with newer Instant Pots. The ‘burn’ warning is usually your Instant Pot overheating. We find that if we do have a ‘burn’ warning, adding more liquid to the Instant Pot helps. Some recipes call for a “pre-heat” of the Instant Pot before cooking a recipe. They ask you to do this so that your Instant Pot is warm and then cook time is lower. If you do have a newer Instant Pot that is having the ‘burn’ issue, avoid pre-heating your Instant Pot.

How much does an Instant Pot Cost? 

The Instant Pot prices vary depending on what version and size you purchase. Please see different models of the Instant Pot below.

Is the Instant Pot Safe? 

YES! With any kitchen gadget, READ THE DIRECTIONS. Don’t try to just intuitively use the Instant Pot. Things will go wrong if you do that. Follow the directions on how to clean your Instant Pot for the first time, then do trial and error. Try steaming vegetables, practice using different settings, and do some research. It may make some loud noises, but it will not blow up. 🙂

What size Instant Pot should I get? 

It all depends on what you plan to do with it and how many people you need to feed. We like the 6 qt. because it is the perfect size to cook and meal-prep for 2-8 people!

How do I clean my Instant Pot? 

You can wipe the outside of your Instant Pot with a wet rag or some vinegar. Feel free to run the lid under hot water. If you would like to clean the inside of your Instant Pot, pour 1 cup of water, 1/2 cup of vinegar, and some lemon or lime slices into your Instant Pot. Turn on steam function for 2 minutes and you have a brand new Instant Pot!

What does it mean when my Instant Pot says ‘burn’?

It means your Instant Pot is overheating or that there may be residue on the bottom of your Instant Pot Pot. We have this issue with our newer Instant Pot. Here are a few things for you to try:

  • If the liquid is evaporating too quickly because of overheating, try to add more liquid. With our newer Instant Pot, we add more liquid than the recipe calls for.
  • We make sure to run one cup of water through my new Instant Pot before using it.
  • Make sure to wash the outside of the pot and wipe down the inside of your Instant Pot.

Principal Dancer Funnel Neck Sweater: If you’re looking for a sweater that is both comfortable and sleek, this funnel neck sweater is for you. This lunar rock color adds a little extra flare to a cozy travel outfit. Layers on layers! (wearing: size 4)

Align Joggers (28″): Who wants to sit on an airplane with uncomfortable pants? Nobody! A darker color in these align jogger can dress up any travel outfit, plus the bonus of the align joggers is the buttery fabric. You’ll be perfectly comfortable no matter how far you are traveling! Out of Range Duffel: The ideal duffel bag is a duffel bag that has a lot of space, but doesn’t bulk up too much! This out of range duffel has plenty of space for a carry on, but will still be able to fit under your seat!

All Yours Boyfriend Tee: The AYBT (as we like to call it) is probably my all-time favorite shirt to wear on the plane. It’s super soft and can be worn oversized or tied in the front or back. I have it in 5 colors and I’m not mad about it. (wearing: size 4) On the Go Poncho: This poncho comes in handy when you just don’t know what the temperature is going to be…like on an airplane! Cloudscape Jacket: This jacket takes the traditional puffy up a notch with 700-fill down and water resistant fabric. We love that it zips all the way up to your chin for colder days when you don’t have a scarf. (wearing: size 6)

Roam Far Wool Bomber: Waterproof wool, what is up! This bomber is a great transition season (ie: late Fall, early Spring) jacket with oversized pockets, and comes in this dark grey and an adorable ballet pink color. (wearing: size 6) Roam Far Wool Coat: We can’t get enough of this boxy wool trench coat! The Kansas State Fair. | My Little Celebration

Over the weekend, John and I went to the Kansas State Fair with his parents and younger siblings. It’s been kind of a tradition for them since his dad gets free tickets through work, which includes a complimentary lunch. Free food, score!

We went to the lunch first and then wandered around the fair, mostly following the kids and taking pictures as we went. By the end of the day I’d taken nearly 250 pictures. Whoops.

I guess there were 250 pictures worth of exciting things happening. That’s my justification anyways.

Lunch was buffet style and I swiped up some bbq brisket, cheesy potatoes, a mountain of green beans, some fruit which I didn’t eat much of, and a roll. It was all tasty and filling and just what I needed since I’d skipped breakfast in anticipation of eating a lot throughout the course of the day. Which I did.

I took a few more pictures during lunch before we dispersed to roam the fair grounds.

Kansas Governor Sam Brownback’s customized belt. I wasn’t going for the tush, I swear. I was going for the belt, which is pretty rad if you ask me. If I could wear a belt with my name on it I probably would. Don’t hate.

Lori and I spotted two awkwardly thin and deformed toy ponies doing a salute in the window overhead. Not sure what kid would want to play with these. That’s probably why they’re now window decor.

Right around this time I think I also swiped a mini apple turnover for John and I to split. But I didn’t take a picture of it because I ate so much sugar that if I documented it you’d all point at me and shout ‘glutton, glutton! fatty mcfatty face!” and then laugh.

And that’s mean so don’t do that.

Next came the fair buildings, which had of tons of people, lots of vendors, demonstrators and free samples. It was mostly fun just watching the kids stuff tons of things into their complimentary bags like free pencils, magnets and fake tattoos.

Bethany hopped on the ‘wiggle cars,’ which were odd. You just wiggled the steering wheel back and forth and the friction caused them to move forward. I was kind of jealous they only had infant size and I couldn’t have a ride one myself…

Too bad they were like $69. I’m sure you’ll be able to find these at garage sales for 5 bucks in about 6 months. Just sayin’.

Anna joined the fun, too. Once again, I was jealous. Big kids don’t have any fun. I’m convinced.

Then I got my wedding ring cleaned by the woman with the world’s most jewelry on 10 fingers. She also had a cast, which I can only assume became necessary after years of polishing jewelry.

note: don’t become a jewelry polisher.

A toothbrush. Only the world’s best equipment was involved.

And then I had a shiny, polished wedding back on my finger. Don’t worry. I kept close watch to make sure she didn’t switch out my real diamond with a fakey.

You just can’t trust those fair people. Shifty, if you ask me.

Weird demonstrator guy that shouted, ‘Hey! Am I going to be in the newspaper now?” To which I replied, “uh, no” and walked off.

A lady on one of those shake machines that literally just shakes your body around and claims to ‘solve all your body’s problems.’ Uh, ya right. Not for 2-thow.

“PEEEAAAA-NUTS! Get your PEEA-NUTS!!” That’s what I wanted to say.

Worms! Is it wrong that I still like these although I’m not no longer 7 years old?

Mine was obviously the best choice. Obviously.

But Bethany had the most fun at this activity.

Next was the agriculture building, which features all of the state’s TOP produce like giant ears of corn, perfectly symmetrical squashes, and beautiful bushels of milo.

And a giant wheat fountain!

What other state can boast a giant wheat fountain? NONE. That’s why we’re superior.

There were lots of interesting fair folk, like this old timer who apparently didn’t want his picture taken.

And this guy holding a stop sign, for….?

And these policemen who were pulling people over for walking too fast. [I keed, I keed.]

And this guy who was either a fair enthusiast or worker. I couldn’t really tell since he didn’t seem to be doing anything of great importance besides cutting through a field.

We did lots of walking around, gawking at rides and obscene amounts of fair food.

Turkey leg stand, which I managed to avoid. My arteries thanked me for it later by not going into cardiac arrest.

We ordered 1 regular and 1 giant size. What did we get? Two regular size, one of which was sugar free.

The attendant was apparently hard of hearing or apathetic. We couldn’t tell which.

Alex played the bowling ball game and apparently spent $5 only to win a tiny stuffed tiger, which Bethany carried around on her shoulder the rest of the fair only to leave it in the driveway once we got home.

One of my favorite parts of the fair? Watching these little girls shreek “EEEEEEEEEHH” every time the ride took its short 20 foot plummet to the ground.

We were all nearly in tears watching by the time their ride was up. Too cute.

Fudge stand, which we managed to pass up because I had my mind on ONE thing.

Ice cream.

Three gallons of it.

Kansas State University had a stand featuring their famous “Call Hall” ice cream, and John, Clark, Bethany and I indulged in a few scoops.

Bethany got a single scoop of chocolate. Does she get any cuter?

And I opted for 1 scoop of cookies n cream and 1 scoop of strawberry cheesecake. Despite its odd appearance, it didn’t disappoint.

Bethany spent a good 20 minutes working on her cone before handing it off to dad to finish off. That thing was huge! I don’t blame her.

This kid was giving it a good effort, too. He deserved a medal for the fair’s biggest ice cream beard/mustache thing.

I spotted the fair’s most hydrated employee! 10 points!

Then there were the rides, which we didn’t do because the lines were so long.

Plus, I hate spinny rides. They make me sick in like 20 seconds flat, no lie.

They should rename this one the ‘lose your lunch in 10 seconds or less’ chair.

Pretty sure that’s what would happen if I rode it.

And that about does it! There were more photos of oddball people I found and food we ate but I think I’ve already shared enough for one post. Ya think?

After the fair we piled into our cars, grabbed a coffee at Starbucks, and then headed home to relax for the evening.

I resigned to reading Book 2 of the Hunger Games Trilogy – Catching Fire – which I’m about halfway through and LOVING.

And John took a bath and tried to stave off an allergy attack he’d been enduring all day. Allergies are in full force this time of year and we’re both feeling the weight of it.

And that was it! We headed home the next day and had a pizza party that night while re-watching some episodes of The Office. It was a grand way to bring the weekend to the close.

Vitafusion Review – Fit Foodie Finds

It is a complete multivitamin with 200 percent of the Daily Value for Vitamin D3, which is the same as 3 ounces of salmon! It’s also a great source of the vitamins: C, E, B12, B6, Folic Acid, A, C, and Pantothenic Acid.

Supplement Facts

A bottle of Vitafusion Multivites is $11.50 and there is 150 count inside, which will get a female about 75 days worth of multivitamins at about $0.15/day.

After doing a little research on the product I found some interesting things out. First- this product is made in the USA. That is a big deal. I feel like everything is imported these days. Second: You can pretty much find these gummy vitamins anywhere. I get mine from Target. Third: I didn’t realize there were so many different kinds and flavors of Vitafusion products. They have gummies for: Men’s Health, Women’s Health, Multivitamins, Age 50+, Vitamin D3, Vitamin C, B Complex, B12, CoQ10, Calcium, Sleep Well, Daily Vision, Omega3, Prenatal, Fiber+Calcium, and Fiber Management. The flavors range from fruity flavors, to sour gummies, to tea flavors. YES.

When Winter roles around again, I’ll probably add in a Vitamin D due to the lack of sunshine.

So yes- I would highly recommend Vitafusion Gummy Vitamins whether you are an adult or a child. they are a great alternative to swallow vitamins (especially if you have a hard time swallowing pills).

Healthy Oatmeal Recipes

It is no surprise that we love oats here on Fit Foodie Finds! I would even go as far to say that old fashioned oats are a pantry staple that we ALWAYS have on hand. Yes, we use old fashioned rolled oats (mostly) in our overnight oatmeal recipes and stove top oatmeal recipes. It is one of our all time favorite ways to eat oats. However, oats are so versatile and offer so much more than just a tasty breakfast option!

We incorporate oats in SO many of our recipes—> healthy oatmeal cookies, apple cinnamon baked oatmeal, red curry meatballs, peanut butter energy balls, and so much more!

Benefits of Oats

Why buy oats? They are a delicious whole grain that you can incorporate into a savory or a sweet recipe. There are many benefits to using oats and by-golly they are easy to prepare and are very affordable! Some of the health benefits of oats are…

  • Oats are a gluten free whole grain. If you are gluten free, you can incorporate oats and oat flour into many recipes. Just make sure the oats you buy say ‘Certified Gluten Free’ so that there is no cross-contamination.
  • Oats are a great source of complex carbs and fiber.
  • Oats are known to help with constipation. We are all about good digestion on Team Fit Foodie and there is nothing like a big bowl of oatmeal in the morning!

Old Fashioned Rolled Oats or Steel Cut Oats?

Old fashioned rolled oats and steel cut oats come from the same whole cereal grain. It is how they are processed that is different. However, though they are processed differently, they have about the same nutritional value.

  • Rolled Oats– Rolled oats are a bit more processed than steel cut oats. They are stripped from the grain, rolled through mills to be flattened. The break down of the rolled oats makes cook time a bit faster than steel cut oats. Rolled oats are typically easier to use in baking recipes. Rolled Oatmeal Nutrition Facts (per 1/2 cup): 150 calories, 5g protein, 27g carbs, 2g fat, 4g fiber.
  • Steel Cut Oats- Steel cut oats are also processed, but instead of being rolled, they are chopped up into pieces and tend to have a longer cook time than rolled oats. Steel cut oats also tend to have a bit more bite to their texture! Steel Cut Oatmeal Nutrition Facts: 150 calories, 4g protein, 28g carbs,  2.5g fat, 2g fiber.

Classic Stove Top Oatmeal Recipe

Method: Stove top

Cuisine: American

Instructions

  1. Place all ingredients (minus 1/2 cup almond milk) into a medium sauce pan. Turn to high medium/high heat, mix, and bring to a boil.
  2. Turn heat down to low/medium and simmer for about 5 minutes, stirring consistently until oatmeal thickens.
  3. Add 1/2 cup more almond milk and mix again. Let simmer for 1-2 more minutes. We call this double whipped.
  4. Top with your favorite toppings and enjoy!
