Healthy Strawberry Pancakes

November 17, 2023 by Lee Hersh Leave a Comment

Healthy Strawberry Pancakes

They’re not gluten free and they’re not dairy free. But they’re damn good.

Healthy Strawberry Pancakes

At least I thought so. *story time*

So, I made these strawberry pancakes for the kids I nanny for thinking they’d gobble them down. negatory. Do not- I repeat DO NOT tell a child that whatever you are cooking is “healthy” or made with whole wheat flour. They will instantly have preconceived notions about it and maybe even say: “these taste like my grandma’s pancakes.” Don’t be hatin’ on grandma kids.

I guess this means less for you and more for me? I thought they tasted fluffy and delicious. Maybe my palate is just a little more developed than theirs. *hmph*

Healthy Strawberry Pancakes

Healthy Strawberry Pancakes

Ingredients (servings-4)

  • 1 C whole wheat flour
  • 1 C white flour
  • 1/4 C ground flax seed meal
  • 1/2 t baking soda
  • 1T agave nectar (optional)
  • 1 large egg
  • 1 1/4C milk (I used skim)
  • 1 medium banana, mashed
  • 1 C diced strawberries
  • 1T canola oil

Method

  1. In a medium sized bowl, mash the banana until it becomes liquidy. Then, mix in the other wet ingredients (egg, milk, canola oil, and agave nectar).
  2. In a separate medium sized bowl, mix together dry ingredients (fours, flax seed meal, and baking soda). Then, combine the dry ingredients into the wet ingredients. You may need to add either more milk or more whole wheat flour depending on the consistency. Finally, add in the chopped strawberries.
  3. Spray a medium sized skillet with nonstick cooking spray. Use a 1/4 measuring cup to scoop the batter into the skillet. Cook each side on medium-high heat for 1-2 minutes.
  4. Top with agave nectar/maple syrup and more slice strawbs.
Healthy Strawberry Pancakes

Yah, I don’t know what they were thinking either.

Fresh and delish.

Healthy Strawberry Pancakes

My feelings were hurt for all of five minutes and I still adore them like no other. I realize a lot of children associate the word healthy with gross, icky, tasteless, and blah. I’m just glad they tried something different! When I was their age, I pretty much ate bananas and peas. *okay okay, that’s a bit of a stretch*

Triathlon Talk: Food
I have been thinking a lot about what I am going to eat as my pre race meal. Most of the articles that I have read have been fairly consistent with recommending that triathletes should eat around 2-3 hours prior to the race’s start so that you can fully digest. What varies from article to article is the types of foods that I should be eating.  Some say not to eat and to make a protein smoothie, some say to eat carbs, but not a lot, some say to eat a protein bar, etc. I am in a pickle. My original plan was to just eat my normal breakie: banana oatmeal with peanut butter just because that is what my body is used to. Now that I have read multiple articles stressing the importance of nutrition and triathlons, I have been rethinking my pre-race meal. Here’s where you come in…

What has worked best for your pre-race meal?

Can you recommend any triathlon/endurance nutrition articles?

Quinoa Egg Bake

November 17, 2023 by Lee Hersh Leave a Comment

Quinoa Egg Bake

Hello from Mr. Froggy.

I made a GENIUS creation today for lunch. Normally, I am a sweet tooth kind of girl, but today I was craving savory/salty. I adapted an awesome egg bake recipe from a Whole Foods’ website. I modified it to my liking and changed the recipe to a serving for one!

At first when I read the directions to the recipe, I was a bit skeptical. Uncooked quinoa? I was surprised to find out that it bakes inside of the egg! *so cool*

Quinoa Egg Bake

Quinoa Egg Bake

Ingredients

  • 1 whole egg
  • 2T skim milk
  • 1t minced garlic
  • 1/4t ground thyme
  • 1/4C diced onions
  • 1/4C diced red pepper
  • 1.5T quinoa, uncooked
  • salt, pepper

Method

I just followed the step by step directions off of the recipe from Whole Foods. Bake at 350 for ~40 minutes. Give it a shake and if nothing jiggles, you are good to go!

After realizing there wasn’t enough contrast between the egg and the plate….I switched dishes.

Before I placed the uncooked egg into the over, I gave it a shake so the quinoa fell to the bottom of the ramekin to create a crust-like bottom. So good and so yummy! The quinoa really added a nice texture.

I topped it with chunky salsa.

I am definitely making this again. It’s exactly like a frittata, but better! AND the addition of quinoa umphs the nutritional value. It gives me extra protein and whole grains- yes please!

Goodbye from Mr. Froggy.

What websites do you use for recipe inspiration?

I was more of a rollie pollie/earth worm kind of kid.

What sort of critters did you used to catch as a child?

Apple Cinnamon Breakfast Quinoa

November 16, 2023 by Lee Hersh Leave a Comment

Apple Cinnamon Breakfast Quinoa

In honor of the first day of Fall [and my love for quinoa and apples]:

Apple Cinnamon Breakfast Quinoa

Apple Cinnamon Breakfast Quinoa

Ingredients

  • 1/4C dry quinoa
  • 1/4C cow/soy/almond milk (I used vanilla soy mil)
  • 1/4C water
  • 1/4t cinnamon
  • 1 packet of stevia
  • 2T raisins
  • 1T chia seeds
  • 1 medium apple, finely chopped

Method
1. In a small saucepan bring quinoa, milk, and water to a boil.
2. Reduce heat and cover. Simmer on low for about 5 minutes.
3. Add in cinnamon, stevia, raisins, apple, and chia seeds. Continue cooking on low until all liquid is absorbed. Total cook time is anywhere between 8-12 minutes.

Apple Cinnamon Breakfast Quinoa

I enjoyed this breakfast warm because I cooked my quinoa this morning, but I am sure it would taste just as good cold and topped with additional ice cold soy milk. Which reminds me, this would be a genius breakfast to prepare in bulk!

Apple Cinnamon Breakfast Quinoa

I definitely liked the texture of this breakfast. I so am used to my creamy oats, but I really liked that each bite had a little bit of crunch to it. Also, the cinnamon really helped bring the sweetness out in the apple. nom nom

Another reason why this is an all-star breakfast, is because it’s gluten free! Woo Woo. With the controversy over the “gluten status” of oatmeal, this is a great alternative for people with a gluten sensitivity.

Apple Cinnamon Breakfast Quinoa

Who needs a spoon when you can use cinnamon sticks (which were just for decoration) as chop sticks?

Cinna-butts

Well I obviously had way too much fun taking these pictures this morning. That’s what happens you don’t have class on Friday’s

I’m off for a morning yoga-session to clear my mind. If you follow me on Twitter, you probably know that my childhood pup passed away yesterday :/ Zoe was the best dog any girl could dream of

RIP Zo Zo. I’ll always remember your smiling face when I scratched your butt and your love for baby pools.

Happy Friday

Pomegranate Parfait

November 16, 2023 by Lee Hersh Leave a Comment

Pomegranate Parfait

Remember when I was on a pomegranate kick back in November (Pomegranate Baked Oatmeal and Pom Protein Smoothie)? Well, I hard time opening the pomegranate. AKA I got red juice EVERYWHERE. I finally figured out that there is a science to prying these bad boys open! Head on over to AnytimeHealth.com to check out my latest blog post: 5 Simple Steps to Peeling a Pomegranate…It also has the recipe for this gorgeous Healthy Pomegranate Parfait:

Pomegranate Parfait

Anyways, I feel like I haven’t updated you on my life in a while. For starters…the semester ends TOMORROW! Oh em gee is right. Classes will officially be over and then it’s finals week. I however, do not have any final exams. Mine are all paper based, which is why I am heading home to Milwaukee on FRIDAY! Hopefully I can stay on track and write my three finals papers before I start on this list of things…

Lee’s epic plan for winter break is as followed:
1. Read Hunger Games
2. Find a good recipe for Gluten Free Pizza
3. Go to Chicago for Christmas and Hanukkah
4. Go skiing in Michigan post Christmas
5. Redesign my blog
6. Update my resume
7. Take an annoying amount of pictures of my parent’s new puppy
8. Practice teaching Yoga Sculpt x1000 times
9. Burn off all of the holiday food I will consume over the next 3 weeks
10. Spend quality time with my family

I am not sure if I have ever shared with you guys, but….I get to celebrate Christmtmukkah. (fact: my sister and I made up this word LONG before The OC) My dad’s side is Jewish and my mom’s side is Catholic…hence why my family celebrates both. Notice how I say celebrate. To me, the “holiday season” aka Christmukkah is more about being with my family, being thankful, and happy, than about anything else. I am going to leave it at that

Anyways, I also wanted to share some of my favorite holiday food’s that I am looking forward to! My mom’s side is Italian, and so every year we make homemade pizzas at my grandparents. This year, I am going to attempt a GF crust, so if you have any good recipes, let me know! I am also excited about Pizzelle (not gf, but damn good) Cookies. They were my Italian great grandmother’s specialty, so each year my grandma makes them in memory of her. Last but not least, I can not wait for our Christmas Eve dinner. We celebrate it with The Feast of 7 Fishes.

Quinoa Crusted Veggie Egg Bake

November 16, 2023 by Lee Hersh Leave a Comment

Quinoa Crusted Veggie Egg Bake

Wobble Wobble Wobble Wobble Wobble. That is how my legs feel right now. I just did one of the most intense HIIT workouts I have ever done. 4 miles in under 31 minutes! Pat on the back Lee, GOOD JOB!

Check out my recovery fuel. Lunch..

Quinoa Crusted Veggie Egg Bake

Ingredients

  • 1/2C egg whites + 1 egg
  • 1C sauteed veggies (I used onion, tomato, and green pepper)
  • 1/3C quinoa, uncooked
  • EVOO
  • spices: salt, pepper, garlic

Method

  1. Preheat oven to 375F and spray a small ramekin or a muffin tin (only need to spray ~4-5) with nonstick cooking spray
  2. In a medium sized pan, begin by sautéing chopped veggies in in a clove of garlic and a drizzle of olive oil. Season with a little bit of salt and pepper.
  3. Next, in the ramekin/muffin tin evenly pour in the uncooked quinoa; this will act as your crust. Then transfer the cooked veggies on top of the quinoa.
  4. Finally, pour in the egg.
  5. Bake for 20-25 minutes depending on the size. I recommend rotating the pan about 10 minutes in to ensure that all of the muffins cook evenly.

I loved the texture of these! The quinoa really gave it optimal crunch!

Nummy Nummy Nummy. These little guys are packed with TONS of good stuff and protein galore. I actually ended up baking batch number 1 (see above) in a muffin tin and then made a second batch using just egg whites in a Ramekin. It definitely took a little bit longer for the bigger one to cook all the way through. I think I liked it bette too because the extra time gave the quinoa a little bit more time to cook and ended up a softer than the first batch.

Ashley made a big pan of this the other day and she was my inspiration to make some baby ones of my own. PS: I absolutely love living with someone who makes interesting food and isn’t afraid to try something different. Plus, it’s always easier to cook for 2 as opposed to 1.

On a sweeter note….head on over to AnytimeHealth.com. I posed a no-bake, gluten free holiday dessert recipe. I call these Healthy Coconut Pecan Pie Bites. Made with whole foods and just three simple ingredients. *get in my belly* is right!

I am off to finish my last final paper. I knocked two of em of my list today! Get it!

Healthy Gluten Free Oat Pancakes

Healthy Gluten Free Oat Pancakes

Healthy Gluten Free Oat Pancakes

I really wish you guys knew my brother on a personal level. The kid is the epitome of hilarious. Carly and I decided we wanted to make oat pancakes this morning for breakfast, so when Clay walked downstairs and saw what was up, he instantaneously referred to Step Brothers…”Boats and Hoes” but changed the saying to Oats and Hoes. Hence my post title

PS: I am in fact in Milwaukee for the weekend! A nice little weekend get away from school. And why yes, that is breakfast looked like this morning. Jealous much?

These pancake are all sorts of good-for-you. They are gluten free, oil free, and whole grain. Plus, they are a nice change up from my daily bowl of oatmeal. Get in my belly!

Healthy Gluten Free Oat [and hoes] Pancakes

***Serves ~3

Ingredients

  • 2/3C certified gluten free oat flour (food process oats)
  • 2/3C certified gluten free quick cooking oats
  • 1 whole egg
  • 1C almond milk
  • 2t baking powder
  • 1/2t baking soda
  • 1/4t cinnamon
  • 1/4t nutmeg
  • 1/4t vanilla
  • toppings: greek yogurt, almond butter, banana, and raisins

Method

  1. Mix all ingredients in a medium sized bowl.
  2. Spray a large skillet with nonstick cooking spray and heat over low/medium heat (a low temperature is crucial because you want your oats to cook all the way through!)
  3. Then pour in batter. Let cook on each side for about 1-2 minutes.
  4. Top with all sorts of yummy things like nut butter, fresh/dried fruit, greek yogurt, etc.)

absolutely love cooking with Carly because she is a nutrition major and knows a lot about food

science. She informed me that because these are gluten free, it was very probable that the batter wasn’t going to stick together very well. The first batch didn’t turn out so well because the heat was too high. However, batch number two was a success because I turned the heat all the way down to low and really let them cook before flipping. Carly got batch #1, very organic looking :)…

Carly topped hers with nanner, walnuts, almond butter, and honey. Nonetheless, still tasty

Speaking of tasty, the first bite is always the best bite…

Healthy Gluten Free Oat Pancakes

So true. Today Carly and I have plans to run a 6 miler, go on a few dog walks, and just catch up on homework while the Brother and Selina are at school. Get ready for an influx of amazing recipes
