Very Cherry Overnight Oats

Every morning should start out like this: Oatmeal + Seasonal Fruit (+ summer + warm weather + flowers + coffee, ok I’ll stop now…)

Mmm! Oats are back on the bloggie! It was a nice change up for my normal, boring banana over night oats! After picking up some fantastic sweet cherries at the grocery and I knew exactly what I was going to do with them! Oh by the way, if you ask me, cherries are WAY underrated!Very Cherry Overnight Oats

Very Cherry Overnight Oats ingredients

  • 1/4C instant oats (we didn’t have any rolled)
  • 1/4C oat bran
  • 1/2t vanilla
  • 1/2T chia seeds
  • 1C water
  • 1/4C vanilla almond milk
  • pinch of salt
  • 10 fresh cherries
  • -optional: sliced banana- I couldn’t resist!

I used a new method to create my overnight oats this morning! Instead of eating completely raw oats (solely soaking), I threw them in the micro for a minute and then mixed in a little more liquid. More volume = happy Lee!

Method

  1. In a bowl or tupperware mash 5 cherries (you will need to de-pit them first)
  2. Combine oats, oat bran, vanilla, chia seeds, water, salt, and mashed cherries. Microwave on high for about a minute.
  3. Add an additional 1/4C liquid (I used almond milk) and throw in the refrigerator over night.

*In the morning I stirred in another splash of almond milk before topping with more fresh fruit (and nut butter which isn’t pictured!)

I concluded that the reason why I am addicted to Banana Oats is because the banana not only sweetens it up, but infuses flavor! Cherries do the same exact thing. Unlike blueberries or strawberries, cherries are a fruit that are extremely sweet and full of fllavor! *bam*

I’m going to leave it at that! I have to pack up all my stuff- and then I’m off to Minne! Talk to you in MSP!

I did this recipe for Designer Whey’s TLC360 Program in partner with the amazing Larysa Didio. I’ve actually been waiting about 3 weeks to share this recipe. I used Designer Whey French Vanilla. You really can’t go wrong with vanilla or chocolate and those are my two favorite DW flavors.

Also, I have been a little bit obsessed with these adorable straws I got from Target a few weeks ago. I think they add so much to a photo (even if you don’t necessarily need to use a straw!).

Wild Raspberry Vanilla Overnight Oats

What more could you ask for on a 95 degree morning, than a big ol’ bowl of overnight oats? It’s true, overnight oats are my staple summer breakfast because it’s quick and refreshing!

Last night I stayed at my friend Linley’s River House over on the St. Croix River, which is actually located in Wisconsin! This place is pretty much paradise. There’s the river, trees, wildlife, flowers, animals, a beautiful house, etc.

After a tranquil night of girl talk on the dock, we decided to make OO before going to bed. Of course it was fully equipped with wild raspberries that we hand picked!

Wild Raspberry Vanilla Overnight Oats

The recipe is pretty simple… 1/3C oats + 1/3C milk + ~2T water + vanilla + cinnamon + ~1/3C mashed raspberries. Feel free to use what ever kind of milk you choose!

I used Vanilla Rice milk, for a sweeter flavor. I personally like to use sweetened almond/rice/soy milk because then I don’t need to add additional sweetener to my breakfast, but it’s all up to you!

The vanilla extract and cinnamon help bring out all the natural flavor of the raspberries! If you’ve never used Penzeys Spices…you are missing out. I am a huge Penzeys Lover.

And boom…In the morning it’s thick and delicious. I topped it with some non-fat vanilla Chobani and some additional whole raspberries.

Bake Eggs in the Oven

Follow this guide for how to bake eggs in the oven and you will have an easy-to-make, high-protein snack with all of the hard-boiled egg goodness minus the hassle of peeling off that stubborn shell. You can eat it at home or on the go, hot or cold. Ya really can’t go wrong with learning how to bake eggs in the oven, it’s total game changer!

This is definitely my new favorite [and healthy] snack.

All you have to do is set your oven to 350F, grease a muffin tin with non-stick cooking spray, and crack your eggs into the tin. Then add some flavor with a little shake of salt and pepper. Bake for about 17 minutes and viola.

Ingredients

  • Eggs (how ever many you want)
  • nonstick cooking spray (I use olive oil or coconut oil spray)
  • salt and pepper, to taste

Instructions for Bake Eggs in the Oven

  1. Preheat oven to 350ºF and grease a muffin tin with nonstick cooking spray.
  2. Crack eggs into tin. Season with salt and pepper.
  3. Bake for 17 minutes or until eggs reach desired texture.All you have to do is set your oven to 350F,

 It has the texture of a hard-boiled egg, but you don’t have to deal with peeling the shell off of it. They literally slide right out of the pan. These would be the perfect on-the-go egg sandwich for a quick AM breakfast. I paired mine with leftover roasted sweet potato quinoa, topped with some feta for a meatless, high protein lunch.

I ate this dish cold, but in all honesty, I never reheat anything. I had one of the eggs hot, right out of the oven and it was pretty tasty, but I prefer them cold.

It usually works out in my favor, because Lee and Cole usually eat something sweet in the morning, so there always tends to be a bit of sharing.

I know adding a vegetable into your morning oats sounds a little crazy, but pumpkin is that much of a rockstar that it works! Plus- you can get an entire serving of vegetables in your first meal of the day!

Ingredients

  • 1.5 cups quick cooking oatmeal (gluten free, if gluten sensitive!)
  • 1/4 cup shredded unsweetened coconut
  • 2 Tablespoons ground flax seed
  • 1/2 cup Libby’s Pumpkin Puree
  • 3 cups milk (almond or coconut or cow’s)
  • 1 teaspoon vanilla
  • 2 Tablespoons honey

Instructions for Pumpkin Coconut Hot Cereal

  1. Place all ingredients in a medium size sauce pan. Bring to a boil and then turn down to low. Cook for about 3-5 minutes or until the cereal thickens.

Pumpkin mixed with coconut is DELICIOUS. The combination of flavors and the texture form the flax is incredible. Plus- with a scoop of almond butter, you’ve got yourself one heck of a breakfast.

Confession: I made 2 big batches of this recipe, put my leftovers in a tupperware and ate it the next morning for breakfast…COLD. Sort of like overnight oats.
