Blueberry Breakfast Quinoa

One of my hands-down favorite recipes from NYNR involved two of my favorite things…quinoa and breakfast! During one of our prep days for NYNR content development at Yellow Barn Wellness, we made this recipe…so I got to taste first hand how delicious it really is.  

I’ve been making it a tad bit differently in my neck of the woods, so I’ll share my version…

Blueberry Breakfast Quinoa

This recipe can obviously be made for 1, just divide everything by 4. Why would you? it is DELICIOUS eaten cold, and I actually prefer it. I make everything in batches so that I have easy prep during the week when I am scrambling to get to work.

Other toppings or add ins that would be delicious with this recipe are….
1. Different Berries
2. Nut Butter
3. Chia Seeds
4. Different Extract
5. Raisins
6. Walnuts or Pecans

Don’t stick with my add ins, if you like blackberries better…make it your own!

Car Search Update

Last night, Blake and I did some driving around. I want to get a feel for what kind of body I like in a car. I also do a TON of online research. Like I said in yesterday’s post, I am looking into Smaller SUV’s and one of my must-have’s is great gas mileage because of my commute. What I have decided is to go with a “newly used car” because it is a lot less expensive (don’t forget I’m a recent grad!) Here are some of my top considerations thus far…

1. Nissan Rogue 

2. Hyundai Santa Fe

3. Nissan Morano 

4. Rav4 Limited

Any more recommendations would be great!

Basic Ingredients

  • 1C quinoa, dry, and rinsed
  • 2C full fat coconut milk or unsweetened vanilla almond milk (That’s what I use!)
  • 1C blueberries
  • 1T honey
  • 1t vanilla
  • slivered almonds

How to make blueberry breakfast quinoa

  1. In a medium sized pot, bring 1C dry quinoa and 2C milk to a rolling boil. Then, reduce heat to low and add honey, vanilla, and ½C blueberries.
  2. Cover, and let cook for about 12-15 minutes or until all of the liquid is gone.
  3. Serve……warm, topped with more blueberries, slivered almonds, and another drizzle of honey.
  4. Serve……cold, topped with a splash of ice cold milk, more blueberries, and silvered almonds.

Blueberry Breakfast Quinoa

Ingredients

Scale
  • 1C quinoa, dry, and rinsed

Instructions

Now that NYNR is over….I get to share all of the yummy recipes I contributed to the recipe packet. This is probably my favorite one…..I bet you can’t tell why?

Blackberry Banana Pancakes

Umm, pure goodness? Food tastes so much better, when it looks absolutely scrumptious. Best part is- these are oh so healthy for you! Made with whole grains and all natural sugars….perfection! I’ll take 5.

Blackberry Banana Pancakes ingredients

  • 1C gluten free oat flour
  • 1/4C gluten free rolled oats
  • 2 fresh eggs (whisked in a bowl)
  • 1 ripe banana, medium sized
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 teaspoon cinnamon
  • 1/2c blackberries
  • 1 tablespoon coconut oil (for pan)
  • honey (optional)

Instructions

  1. In a medium size bowl, mash a banana with a fork. Then, add in eggs and mix well. Add rest of ingredients and mix. In a medium size skillet, heat 1 tablespoon of coconut oil over medium heat. Pour batter onto pan. Cook each side for about 3-4 minutes. Serve with fresh fruit, honey, or almond butter.

Make a double batch and throw the rest in the fridge for the next few days. Yes, yes, yes!

Sorry gluten free eaters…these are gluten filled…Good news though….they can be made gluten free! 

I tend to wake up like 4 hours before Blake on the weekends…He is a normal person and is actually able to sleep in, where as I am up before 6. YIKES. My treat to him for just being him is Sunday morning pancakes! 

We got some fresh beautiful Natureripe blueberries from Target that completed this recipe.

Like the title of this blogpost says…these are semi homemade pancakes. All you need is pancake mix + what ever is needed for the pancakes batter + blueberries/any kind of fruit. I had half a banana left over from my breakfast (which I had eaten 4 hours prior ;)….), which I also threw in the batter.

My favorite gluten free pancake mix is King Arther Gluten Free Pancake Mix. Blake likes Aunt Jemima, which sadly isn’t gluten free or whole wheat…but damn good! I always make enough for 2 or three sittings because they are still really appealing reheated the next day. I kill two birds with one stone…major girlfriend points!

Baked French Toast

I say this over and over again..but recipe creation is by FAR my favorite part of my job at Anytime Fitness Corporate. BY FAR.

Today’s recipe is a twist on a childhood favorite…baked french toast! For this I used whole wheat bread …and you can absolutely use gluten free, if necessary. The eggs I used were straight from Blake’s Dad’s house in Kansas. They have a huge free range chicken coop with like 50 chickens!  Click HERE for the recipe!

I get a lot of questions about what I do at AF. Well- I recently did a little position shift. For the past 6 months I was the social media community manager…Yes I helped managed all of AF’s social (facebook, Twitter, IG, Pinterest, etc.)!  Who would have ever thought that social media would be a 2+ man job. So if you ever tweeted at AF…that was me who responded. I am actually still managing the Twitter and Pinterest accounts as we search fo my backfill. Furthermore, I still (and always will) create content (recipes, workouts, etc.) for the Anytime Health blog…because I love it!

Today- I am a marketing campaign coordinator. I still wear a lot of hats, but am really liking what I do. Here is what I do (copied from my LinkedIn)

-Support the development and execution of all marketing campaigns, by promoting member acquisition for thousands of Anytime Fitness franchisees through direct mail, digital, and other activities.
– Facilitate and track enhanced direct mail buys for franchisees during key promotional periods.
– Manage Warrior Dash partnership by coordinating marketing materials with Anytime Fitness franchisees and fostering a relationship with Red Frog Events.
– Assist in campaign development/marketing material creation and manage social media platforms for Waxing The City.
-Coordinate Anytime Fitness Corporate Staff Wellness Program (Ingredients), by scheduling and managing 3-5 events/month that promote team-building and well-being.

That’s sort of what I do in a nut shell.

Oh yes…how could I forget. I teach yoga sculpt to the corporate staff every Wednesday at lunch (out of the goodness of my heart). Like yesterday…I had 27 students in my class! I just love the energy a big class brings.

I made a quesadilla with no cheese..is that legal? I could call it an Almond Butterilla, but I don’t think that translates into Spanish very well 😀

Fer reals…I got this mmagnificentidea from one of my blogger friends Monique from Ambitious Kitchen who recently moved away from Minneapolis (who is going to be my Lake Calhoun walking buddy?!?!) to Chicago. She made a Peanut Butterilla with strawberries and bananas. SWOON.

You guys- HAVE to try this. The warm banana melts in your mouth and the almond butter oozes…Oh, have mercy (Full House anyone?!). 

Make these Almond Butter Pomegranate Quesadilla for a fun, afternoon snack that's healthy, fiber packed, and naturally sweetened!

I used a whole wheat tortilla, but you could use corn or a gluten-free variation if you want! 

Such a great afternoon pick-me-up or breakfast. 

Side note: Sister boy and sister were giving me a hard time about pomegranates because I told them that they are “in season right now.” They said…how do you know? And I said…because I’m a food blogger, duh.

I guess I converted him to being an almond butter fan. YESSSSS! Speaking of almond butter…I finally caved and got myself a Costco membership. BEST DEALS EVER ON ALMOND BUTTER. My all time favorite brand of almond butter is Maranatha and they seriously have the best deal I’ve ever seen on AB – $9.99 for a giant, 24 oz. jar of it.

I’ll take 97, please.

If you don’t have a Costco membership you could always get some Maranatha or Justin’s off of Amazon. 

In case you were wondering how I made my quesadilla…I only put fruit on one side and then folded it over.

Basic Ingredients for Almond Butter Quesadillas with Pomegranate

  • 2 large tortillas (I used whole wheat, but you can use any kind)
  • 6 tablespoons almond butter
  • 1 large banana, sliced
  • ⅓ cup pomegranates
  • coconut oil cooking spray

How to make Almond Butter Quesadillas with Pomegranate

  1. First, preheat a large non-stick pan to medium/high heat. Rub with coconut oil.
  2. Then, prep quesadillas by spreading on about 3 tablespoons of almond butter on each tortilla (make sure to leave about an inch to the side so it doesn’t ooze almond butter everywhere when you close it.
  3. Top HALF (see photo below) quesadilla with sliced banana, pomegranate seeds, and cinnamon. Then, fold the tortilla in half.
  4. Cook quesadillas for about 3 minutes on each side or until the tortilla begins to brown.
