Strawberry Cheesecake Protein Smoothie

After 4 full (FULL) days in LA I think it is safe to say that Southern California is Heaven on Earth. Legitimately. When you wake up the weather is perfect and when you go to bed the weather is perfect. The sun is somehow always shining and the birds are always chirping. It’s just perfect.

I can’t begin to tell you how amazing of an experience the Propel Ambassador Shoot was. I feel like I’ve been best friends since kindergarden with the 6 other ambassadors that went. There was an instant connection,  so much laughter, and such great energy! At the end of this recipe, there are some inside photos of the weekend- but I will have a much more thorough round-up next week with TONS of photos.

I made this smoothie the day before I left for the trip. My friend Booke made me a similar smoothie the other day after a workout and I’ve been raving about it since and decided to remake something similar. Her secret ingredient was about a teaspoon of sugar-free pudding mix and some sugar free caramel syrup.

My secret ingredients are… Vanilla Sugar Free Pudding Mix and Crushed Graham Crackers!

Graham cracker crumbs are so easy to make. All you have to do is put them in your food processor or Magic Bullet and whirl away. They are my all time favorite thing to sprinkle on top of my froyo for a little extra texture.

1 tablespoon on the inside and 1 tablespoon sprinkled on top. You could even use homemade graham crackers if you need a gluten free version or aren’t a fan of the store bought kind.

This recipe would be perfect for an on-the-go meal that’s so delicious it tastes like dessert. It’s about 340 calories but packs in more than 25 grams of protein! #ZING Now that’s my kind of shake!

Ingredients

Scale
  • 1/2 cup frozen strawberries
  • 1/2 cup frozen banana
  • 1 scoop strawberry protein powder
  • 1/4 cup vanilla/strawberry yogurt (any kind will work…I used Greek nonfat)
  • 1 teaspoon Sugar Free Pudding Mix
  • 1 tablespoon graham cracker crumbs + 1 tablespoon graham cracker crumbs (1 sheet)
  • 1 cup unsweetened almond milk

Instructions

  1. Place all ingredients in a magic bullet or blender. Blend until smooth. Then, sprinkle on 1 additional tablespoon of graham cracker crumbs. (To make graham cracker crumbs, place graham crackers in a magic bullet or food processor and mix until finely ground)

Anyone else feel like the time between Thanksgiving and Christmas is one big blur? It goes by SO FAST! I actually don’t mind December at all, weather-wise. It’s super temperate with snow here and there. Sometimes we don’t even have a white Christmas. Jan/Feb is when shit hits the fan in Minnesota. Freezing cold temps + tonza snow. I guess it just makes you appreciate how awesome May-October is, right?

I’ve been making and testing Christmas cookies for FFF since mid-November, so my mind has been in Christmas mode for a while. Fact- I am definitely a better cook than baker. I think I tested one recipe like 6 times before giving it a go —> Chewy Chocolate Ginger Molasses Cookies are coming to a blog near you in a few weeks! SO FLIPPING GOOD. Did I mention that they are gluten-free and made with no refined sugar or flour? You’d never even guess! Can’t wait for those to go live. I’ve also got a new Flourless Peanut Butter Blossom Cookie on the way, as well. Addicting. Gimme, gimme, gimme. 

If I had to pick my ALL TIME favorite Christmas cookie, it would be my Great Nona Toni’s famous Pizzelles. A pizelle is a traditional Italian waffle cookie. We have they every year at our extended family Christmas party. SO GOOD. I’ve yet to attempt to make them, let alone make them healthy 😛 One day.

I LOVE MEAL PREP.

I LOVE IT I LOVE IT I LOVE IT.

For as many recipes that I make for FFF each week, many of them are not “meal status.” While sometimes I eat a brownies for lunch, often times I crave something much heartier and more meal-like. That’s why this recipe actually rocks…because there’s actually 3 recipes in 1. First you’ve got the chicken, then the sweet potatoes, and then the rice n’ beans. 

Make these clean eating crock-pot chicken taco bowls at the beginning of the week to meal prep for the days to come! This recipe is gluten and preservative free!

How gorgeous are these purple sweet potatoes? Thank you Whole Foods! The second I saw them I knew I had to stock up on them. Why? For the photo….duh! Davida and I always laugh because we do some strange stuff….”for the photo.” If you run a food (or any) kind of blog, I think you can relate. 

What’s great about these flavor roasted sweet potatoes, is that this recipe would actually work for the vegans and vegetarians out there these guys as your main. I’d stock up on the toppings to make sure you get enough protein in there, though!

So along with your shredded chicken and sweet potatoes, I also put together a limey black beans + brown rice side. It’s sort of a sister recipe to my Copy Cat Chipotle Cilantro Brown Rice. 

In case you are wondering…I used short-grain brown rice. It’s my jam…and has a WAY better texture than long-grain. The next time you are at the grocery store, pick some up and try it! I promise you’ll never go back to long-grain.

Toppings for this Clean Eating Crock-Pot Chicken Taco Bowls included:

  • gluten-free corn tortilla chips
  • avocado slices
  • sprouts
  • fresh lime juice
  • cilantro

You could also add in some Greek yogurt/sour cream, guacamole, salsa, etc! 

If you are feeling lazy or don’t have all the taco spices for the chicken, feel free to use an all-natural taco spice pack that has as many real ingredients as possible. I know some of those packs have some preservatives in them, but I’ve also seen some really great brands!

Ingredients

Scale

For the Chicken

    • 6 large chicken breasts
    • 2 tablespoons minced garlic
    • 3 tablespoon chili powder
    • 2 teaspoon ground cumin
    • 1 tablespoon garlic powder
    • 1/2 teaspoon paprika
    • 1/2 teaspoon onion powder
    • 2 tablespoons tomato paste + 1/4 cup water
    • juice from 1/2 lime
    • salt and pepper to taste (generous)

For the Sweet Potatoes

    • 3 large sweet potatoes (or ~5 medium-size)
    • 2–3 tablespoons EVOO
    • 2 teaspoons chili powder
    • 2 teaspoons garlic powder
    • salt and pepper, to taste

For the Rice

  • 2 cups short grain brown rice
  • 4 cups water
  • 1 15 oz. can black beans, rinsed
  • juice from 1.5 limes
  • 1/2 teaspoon sea salt

Instructions

  1. For the Chicken:Place 6 large chicken breasts and 2 tablespoons of minced garlic in a large crock pot and set to high. Cook for 3.5 to 4 hours, or until the chicken is no longer pink inside.
  2. Remove chicken breasts from crock pot and use two forks to shred it. Place shredded chicken back in crock pot (leave the liquid that is in there). Then, season with chili powder, cumin, garlic powder, paprika, onion powder, salt, and pepper.
  3. Mix together tomato paste and water and place on top of chicken. Mix.
  4. For the Sweet Potatoes:First, preheat oven to 400ºF. Then, dice sweet potatoes into bite-sized pieces. Line a baking sheet with tin foil and pour on about 2-3 tablespoons of EVOO. Place sweet potato pieces on baking sheet. Then, season, and toss with your hands. Roast at 400ºF for 25-30 minutes or until desired texture.
  5. For the Rice:Place 2 cups of brown rice and 4 cups of water in a medium-size pot. Bring to a boil, then lower heat to low and cover. Let simmer until all of the water has absorbed. Once the rice has cooked, add in black beans, lime juice, and sea salt.

Notes

Feel free to omit the chicken spices and use an all-natural taco spice pack!

All I gotta say is that I’ve made this recipe multiple times and I can’t get enough!

They are a spin off of FFF’s Grain-Free Protein Peanut Butter Cookies..but this time I used less coconut sugar…and added chocolatey goodness. I am a huge fan of making a giant batch, freezing them, and eating them as you need them.

  • peanut butter
  • coconut palm sugar
  • chocolate protein powder
  • cocoa powder

Sadly, I don’t have enough self control to make them last over a week.

I am excited to explore even more with these nummy protein cookies, by using different kinds of nut butter such as almond or cashew. I’d also love to explore texture and add some whole nuts or seeds.

Ingredients

Scale
  • 1 cup peanut butter, smooth
  • 1/2 cup coconut palm sugar
  • 2 scoops (1/2 cup) chocolate protein powder (I use Designer Whey Chocolate, but feel free to use any kind)
  • 2 tablespoons cocoa powder, unsweetened
  • 1 egg, large

Instructions

  1. First, preheat oven to 350ºF and line a baking sheet with parchment paper.
  2. Place all ingredients in a medium-sized bowl and mix until your consistency is like cookie dough. Depending on the thickness of your peanut butter, you may need to add a few more tablespoons of protein powder.
  3. Spoon out 2 tablespoons of dough into your palms and roll into a ball. Flatten between your palms and place on a baking sheet. Use a fork to create classic peanut butter cookie criss-cross marks on your cookie.
  4. Bake at 350 for 10-12 minutes or until the edges begin to turn golden brown.
  5. Let cool for 10-15 minutes so that the cookies can harden!
  • Prep Time: 10 minutes
  • Cook Time: 11 minutes

You would think after a four day trip to Carmel I would be feeling refreshed and settled now that we’re home but honestly, it felt like a tease to me. I returned home with an undeniable urge to see more and immediately found myself researching different places to visit in the coming months as soon as we returned.

It’s like traveling is a drug to me, one that I can’t get enough of. Or as Brandon said to me, “you don’t get bit by the travel bug, it’s crawls it’s way inside of you and lives there.”

I think most of my excitement stems from how beautiful the weather has become now that spring is here and summer is right around the corner. The warm sunshine is begging me to get out and explore, inhale the fresh air into my lungs, and take in all that the surroundings have to offer.

For the time being, the most feasible solution is to get back into the local hiking groove for a while. It’s a great way to get a similar sense of freedom and adventure without depleting the old bank account, you know?

Speaking of, one of my favorite things to drink before a long hike on a warm day is a nice cold smoothie. It always keeps me feeling energized and ready to take on whatever the day brings.

This Almond Joy inspired smoothie is my most recent craving. When my friends over at Blue Diamond sent me their new Almond Breeze Almond Coconut Milk to try last week, I instantly thought of blending it with chocolate. I’m a little obsessed with the almond, coconut and chocolate combination as you might be able to tell from these cookies or these energy balls.

To give it a smooth and creamy texture I paired their almond coconut milk with half a frozen banana and half of an avocado blended with ice. Then I added antioxidant-packed cacao powder and a few dates for a slightly sweet, rich chocolate flavor.

Altogether it makes for an excellent source of healthy fats, vitamins, and minerals to keep you feeling great and glowing all day long. Or all night long if you want it for dessert. It’s definitely decadent enough, especially with the toppings. I love scooping out the bits of chocolate, coconut and almonds in between sips. Mmm, so good!

Ingredients

1 and 3/4 cups Almond Breeze Almond Coconut Milk

6 ice cubes

1 tablespoon cacao powder

2 dates, pitted

1/2 frozen banana

1/2 avocado

toppings: coconut flakes, chopped almonds, chopped dark chocolate

Instructions

  1. Place all ingredients in a blender and blend on high until smooth. Top with coconut flakes, chopped almonds, and dark chocolate then serve.

Happy Monday my friends! It was another beautiful weekend here in Minnesota. This warm weather is sticking around and I’m not mad about it one bit. 

I am very excited to announce a new Fit Foodie Finds brand partnership with the NC Sweet Potato Commission. As you know, my childhood nickname from my dad was Spud. I was known to order a baked potato, hash browns, and sweet potato fries all in one sitting #sorrynotsorry Really though, I love potatoes cooked all ways. More recently as I’ve aged into my mid to late twenties, I’ve been all about SWEET POTATOES. I’m sure you can see by FFF’s recipe collection that Team Fit Foodie is just a wee bit obsessed. I love sweet potatoes for so many reasons beyond just flavor (cuz that rocks, too!). They’re versatile, good for you, and most importantly– available year round. Did I mention that they are reasonably priced, too? They’re a healthy (complex) carb packed with vitamins A, C, and manganese and I almost always include them in my weekly meal plan! North Carolina is the #1 sweet potato producing state (tempted to move there) and this is where the majority of the US’s sweet potato supply comes from. WOAH. Never been to North Carolina, but now it’s one of my favorite states.

One important small kitchen gadget you will need to use for this recipe is a CHEESE GRATER. No, not to grate the cheese, but to grate the sweet potato itself! It’s really simple to do (see the video above) and this method is going to change your life. You know your sweet potato fritters are done when they begin to brown on the sides and top. Don’t forget to dress them up with some Greek yogurt and more chives. SO GOOD.

Easy Sweet Potato Fritters

  • 3 cups shredded sweet potatoes (~1 large)
  • 1 cup shredded cheddar cheese
  • 1 egg, large
  • ⅓ cup flour (any kind…we used white whole wheat)
  • 1 tablespoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 1 cup thinly sliced purple onion
  • ¼ cup chopped chives
  • salt and pepper to taste
  • olive oil, for drizzling
  1. First, preheat oven to 400ºF and line a baking sheet with parchment paper.
  2. Peel a large sweet potato and then use a cheese grater to grate sweet potato in order to form a hash. If you have multiple grate sizes on your grater, you’ll want to use the largest one.
  3. Place 3 cups of grated sweet potatoes plus all other ingredients into a large bowl and mix. Don’t be afraid to get messy and use your hands.
  4. Once everything is mixed. Use a ¼ cup scoop to scoop mixture into palms. Press together, squeezing out as much air as possible to create a patty. Place patties on lined baking sheet and drizzle with olive oil. Season with salt and pepper, to taste.
  5. Bake at 400ºF for around 30 minutes or until the tops of the fritters have firmed up and begin to turn golden brown.
