Vegetarian Brown Rice Bowl

This vegetarian brown rice bowl is packed with superfoods and an easy meal prep idea to make a week’s worth of lunches!

 As a food blogger, I get asked quite often what I eat in a day’s worth of work. 

Yeah…. about that. Most of the time I am eating what I’m cookin’ for FFF (and yes that could mean a Double Chocolate Paleo Brownie…or 2 for lunch). One thing I do know, is that if I have something prepped…I will eat it. 

That’s why I really do try and take the time to prep a whole bunch of roasted veggies, a whole grain, and sometimes chicken breasts or another meat if we have time to grill on the weekend!

I try my best not to waste any food that I purchase, by creating some sort of meal plan. This usually goes hand-in-hand with what I’m posting on FFF. Did you know…….

Sunday Posts are usually a healthy dinner (one-pot, crock-pot, etc.).

Tuesday Posts are a healthy breakfast or dessert.

Friday Posts are a snack or EASY recipe.

My Sunday posts are usually prepped over the weekend because they make the most servings and I can have some leftovers for throughout the week. Tuesday/Friday posts are prepped during the week because well…that’s when I put in most of my work hours 😀

I also try and keep recipe creation and photo shoots to just 1 or 2 days a week, instead of wrecking my kitchen 5 days per week. Sometimes I can hammer out 3 recipes, depending on the difficulty of the recipe and lighting for the photo shoot.

remember when I didn’t follow a posting schedule for FFF. Man was that stressful. It also ruined my eating groove. 

Having some sort of post schedule has really helped me with organization and goal setting. It’s also helped me create consistency with FFF.

However- I’m not really sure if readers notice that I post recipes on Sundays, Tuesdays, and Friday with an occasional workout every other Thursday.

Back to tha food.

I’ve become a HUGE fan of short grain brown rice and that’s pretty much all I ever buy these days. It’s chewier and more dense than normal brown rice. You should definitely try it if you haven’t!

For the roasted veggies- I used a mixture of what I had in my fridge at the time…sweet potato, onion, broccoli. On the side is a big grass glob of roasted red pepper hummus (not homemade) with some hemp seeds on top and broccoli sprouts on the side.

What you need for Vegetarian Brown Rice Bowl

  • EVOO
  • garlic, minced
  • large potato
  • yellow onion
  • broccoli florets
  • salt and pepper, to taste
  • italian seasoning
  • brown rice, cooked
  • red pepper hummus
  • sprouts
  • hemp seeds

Vegetarian Brown Rice Bowl

Ingredients

Scale
  • For the Roasted Veggies:1-2 tablespoons EVOO
  • 1–2 tablespoons of garlic, minced
  • 1 large sweet potato
  • ½ medium yellow onion
  • ~4 cups of broccoli florets
  • salt and pepper, to taste
  • 1 teaspoon italian seasoning
  • For the Bowls:1 cups brown rice, cooked
  • ¼ cup roasted red pepper hummus
  • ¼ cup sprouts
  • 1 teaspoon hemp seeds

Instructions

  1. First, preheat oven to 375ºF and line 2 baking sheets with tin foil. Then, drizzle on about 1 tablespoon of EVOO onto each pan.
  2. Prep veggies, by cutting into bite-sized pieces. Then, spread onto pans, tossing in EVOO. Drizzle with more EVOO if you’d like.
  3. Sprinkle on minced garlic, salt and pepper, and italian seasoning (all to taste).
  4. Roast at 375ºF for 30-35 minutes or until the sweet potatoes are tender enough to pierce with a fork.
  • Prep Time: 10 minutes
  • Cook Time: 35 minutes

Beet Root pink Tahini sauce

Make this beet root tahini for a delicious dip or spread that is vegan and paleo friendly! Plus- it’s pink and that’s just cool!

One of my favorite parts of the Vibe Israel Wellness Tour that I took back in November was the hands-on cooking class we got to take with Israelis Nutrition Superstar Paula Rosenberg. We made two very special recipes: Baked Falafel and this Beet Root Tahini.

I’ve had both recipes on FFF’s content calendar since I got home and they’ve been getting pushed around by other content (that’s just not nice!). I finally got around to making Paula’s wonderful Beet Root Tahini for a snack last week and nom nom nom.

I pretty much used her exact recipe, except instead of using the juice from 1 entire beet, I actually used 1/4 cup of beet puree. This girl doesn’t have a juicer, so using puree was my only option! I pulled back on the amount of beet in the recipe and you can totally tell if you compare this photo to the ones we took during the actual cooking class.

Ingredients for Beet Root pink Tahini sauce

  • beet puree
  • raw tahini
  • Himalayan sea salt
  • black pepper
  • red paprika
  • lemon

Side note: If you don’t like beets, then this recipe isn’t for you….just throwing that out there

I totally used the leftovers on some toast for a mid-morning snack. I added some avocado and goat cheese. OH BABY, was it tasty.

I’ve been thinking about upgrading my food processor, but now that I think about it, I think I just need to own two. My mini is the perfect size to make dips, hummus, and nut butters that I just can’t get rid of it! Pink Tahini Dipping Sauce

Ingredients

Scale
  • ¼ cup beet puree (should be the consistency of applesauce) OR juice from 1 beet
  • 1⁄2 cup raw tahini
  • 1.5 teaspoons Himalayan sea salt
  • 1⁄2 teaspoon black pepper
  • 1 teaspoon red paprika
  • Juice of half a lemon

Instructions

  1. Place all ingredients in a small food processor and whirl until combined and smooth. The texture of the tahini should be very similar to hummus. If it needs more liquid, add more beet puree!
  • Prep Time: 5 minutes

So yesterday I posted a photo of this beautiful breakfast on the Fit Foodie Finds Facebook page…but I called it Slow Cooked APRICOT Oatmeal. I apparently don’t know my fruits  I had to double check with Blake which fruit it actually was and it turns out I was wrong!

We picked up some beautiful peaches and nectarines (not apricots) from Jerry’s this weekend and they looked lonely in my fridge, so I decided to bake them inside my favorite breakfast…oatmeal!

I almost always microwave my oats because I am either in a hurry in the AM or because I am making breakfast at work. I worked from home yesterday and was able to do things a little bit differently. I slow cooked my oats in the oven…making them very tender. It also brought out the delicious, sweet flavor of the nectarines, which I probably wouldn’t have gotten in the microwave.

When the oatmeal came out of the oven, it was extremely hot. I poured a little extra almond milk on top to cool it down. So unbelievably nummy!

Basic Ingredients

  • ⅓ cup rolled oatmeal
  • ½ nectarine, chopped (~1/3 cup)
  • ⅛ teaspoon cake spice
  • ⅛ teaspoon vanilla extract
  • pinch of salt
  • ⅔ cup unsweetened almond milk
  • ½ tablespoon brown sugar, light
  • berries: optional

How to make Slow Cooked Nectarine Oatmeal

  1. Preheat oven to 350F.
  2. In a small bowl, mix together oatmeal, nectarines, cake spice, vanilla extract, salt, and almond milk. Then, transfer into a small ramekin and sprinkle on some brown sugar.
  3. Place ramekin in oven for about 30 minutes.
  4. Enjoy hot with a splash of cold almond milk.

Anyone else have a small obsession with Trader Joe’s? 

They really do have the best snacks, dried fruit, and nut butters. I try and limit myself to TJ’s just once a month because their prices aren’t that amazing and you can’t get “everything” when you shop there. Plus- I always walk out with more than I originally anticipated 😀

This past TJ’s trip, I picked up some of my favorite dried apple rings and pistachios nuts. Two of my favorite fall flavors!

I love combining non-traditional flavors together! Usually pistachios are paired with cranberries and apples are paired with almonds or peanuts. 

I paired them together to make the best tasting granola ever!

I love making my own granola because you can gage exactly what ingredients you use. Did you know that most granola is made with cane or table sugar? Yup. LOADS of sugar. I actually prefer my granola to only have a tiny bit of sweetness because I usually top my yogurt with it or pair it with a nut milk that already has some sweet in it.

In this particular recipe, I only used 2 tablespoons of maple syrup. For those that like a little more sweet, feel free to add 1-2 more tablespoons of mapley goodness.

Ingredients

Scale
  • Dry:2 cups rolled oats
  • 1 cup pistachio nuts, coarsely chopped
  • 1 cup dried apples chopped
  • ¼ cup coconut, shredded and unsweetened
  • 1 teaspoon cinnamon
  • pinch of salt
  • Wet:⅓ cup apple sauce, unsweetened
  • 2 tablespoons coconut oil, room temperature
  • 2–4 tablespoons maple syrup (I used 2)
  • splash of vanilla

Instructions

  1. First, preheat oven to 350ºF. Then, line 2 baking sheets with parchment paper.
  2. In a large bowl, mix together all ingredients so that everything is well combined. Evenly spread mixture onto two large baking sheets.
  3. Bake at 350ºF for about 10 minutes. Toss granola and place back in oven for 8-10 more minutes or until the oats begin to brown.
  4. Let cool. Store in an air-tight container for about a week.
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
