Cinnamon Cashew Butter

If you don’t have a food processor. I HIGHLY recommend getting one. My baby Kitchen-Aid is my new BFF.

Ashley from The Edible Perspective has the most amazing recipes for nut butters. I sort of mixed, matched, and modified her versions to create my own.

So…here is a little nut butter tutorial.

Cinnamon Cashew Butter
-1.5 C Roasted Unsalted Cashews
-1/2 t Cinnamon, ground
-1/2 t Vanilla
*You can also add sugar/maple syrup/honey and salt.

Directions: Mix all ingredients in a small food processor and process for 5-8 minutes until your nuts become smooth and creamy! You will have to stop and scrape the sides a few times.

Pre-Processed 

After 10 Seconds

After 1 Minute

After 3 Minutes- The consistency was similar to cookie dough

After 4 Minutes

After about 6-7 Minutes

No added sugars, salt, or oil!

100% goodness.

This is officially the coolest thing I have ever made. It was so simple and easy. She tastes great on my morning oats too :)

I for sure thought someone was going to guess both of the ingredients. However, to my surprise, only one of the ingredients was guessed…Brown Rice Syrup.

I guess the real “mystery ingredient  was Chex Cereal (crunched up, of course). The closest guess was puffed rice cereal. My favorite guess was Cauliflower and Onions. LOL. Creative, I tell yah.

Peanut Butter Crunch Balls

Yes- these balls are crunchy and delicious! Brown Rice Syrup isn’t as sweet as I thought it was going to be. This is actually the first time I have ever used it in a recipe. I am sure honey would work just as well and will give your balls a sweeter taste.

The nice thing about these balls is that there is no food processor required, but you are more than welcome to try the recipe with one if you’d like! I actually just crunched the Chex cereal using a spoon, but I am sure your fingers would work just as good!

Ingredients

  • 1C Chex Cereal
  • 1/4C smooth peanut butter
  • 1/4C brown rice syrup
  • optional: cocoa for rolling

How to make Peanut Butter Crunch Balls

  1. Begin by crunching ~1C of Chex cereal into fine little pieces.
  2. Then, add the pb and brown rice syrup and mix-crunch-mix-crunch- mix! You will probably want to keep crunching the cereal at this point.
  3. Using your hands, take the mixture and compress it into a ball in your hands.
  4. EAT.

I’m pretty much hooked on pb crunch balls now. The Chex Cereal totally gives the balls some crunch, and I am a crunch person.

This time I mixed the ratio between Chex cereal and oatmeal…because I ran out of Chex! Ooops. I also used the food processor to crunch of the Chex and it was SOOOOO much easier than hand crunching.

Please tell me you all have food processors? I use mine almost every day.

Ingredients

  • 1C rice chex
  • 1/3C oats (quick or rolled)
  • 1/4C peanut butter
  • 1/4C honey
  • m&m’s or any kind of chocolate

Hiw to make peanut butter choco crunch balls

  1. In a small food processor proccess about 2T of chocolate for about a minute. You want to turn your chocolate into chocolate dust for rolling. Set aside.
  2. Then, process the Chex Cereal and oats for 15-20 seconds, turning it intto crunchy oat flour.
  3. Add the peanut butter and honey and process for about a minute, or until it becomes doughy. (You may need to add a squirt more of honey (or even water) if it is still too dry.)
  4. Using a small cookie scoop, scoop out the dough and role between your palms forming a ball. Mine were still a little crumbly so I made sure my hands were moist with water when I was rolling the balls. Set balls aside.
  5. Next, roll your balls into the chocolate dust and viola!

**You can melt some additional chocolate in the microwave for 2 minutes and transfer into a ziplock bag to add an additional dollup of chocolate to the top like I did. Or, you can simply enjoy without the added choc.

I packaged these guys up for a gift. Look at this adorable little orange box…I got a pack of 10 at Target for 3 bucks! Good job Target.

This is one of those recipes that I absolutely adore…just never got around to posting. They really are the perfect little pick-me-up.

Blueberry Corn Muffins

I have always wanted to make corn bread from scratch. I remember eating it as a kid topped with honey (mouth. is. watering). This is definitely a healthier version…made with NO BUTTER and NO REFINED SUGARS. It’s also gluten free! I got inspired to add some blueberries from one of my favorite blogger ladies, Ashley from Edible Perspective.

Blueberry Corn Muffins
Ingredients (yeilds 18 mini muffins)
-2/3C cornmeal, ground
-1/4C tapioca starch
-1/4C garbanzo bean flour
-1t xanthan gum
-1/2t vanilla extract
-1t baking soda
-1 egg, large
-1/2C milk, I used 1%
-5T agave nectar (or more, to taste)
-1/2 – 1C fresh blueberries

Method
1. Mix dry ingredients in a large bowl. Then, add wet and stir.
2. Line a mini muffin pan with muffin liners and fill each one about 3/4 of the way.
3. Bake at 325 for 12-15 minutes

These guys definitely didn’t have the buttery taste that normal corn bread does, but still have a delicious flavor.

I was going back and forth between naming these Peanut Butter Brownie Chews or Peanut Butter Brownie Balls. They are a spin off of the Raw Brownie Chews I made a few months back…but I added some peanut butter and formed them into balls!

Made with 4 simple ingredients folks! NO GRAINS, NO DAIRY, NO GLUTEN, NO REFINED SUGARS.

Healthy Peanut Butter Brownie Balls

How to make Healthy Peanut Butter Brownie Balls

  1. Place almonds in a small food process or and process for about 30 seconds or until your almonds are finely chopped like almond meal. Set aside.
  2. Next, process the pitted dates until they become like a paste.
  3. Then, add the rest of the ingredients, including the almond meal, and pulse for an additional minute.
  4. Form dough in to balls and eat! If it is having trouble sticking, add a tablespoon or 2 of honey.

Sprinkled Peanut Butter Crunch Balls

It should be a rule that Halloween falls on a weekend. On a Wednesday…REALLY?

I one, do not have plans yet for Halloween (other than work festivities) and two, do not have a costume. Last year I went as a crazy couponer and made a dress out of coupons and the year before I went as a 80’s fitness instructor. These were both day of decisions. 

Maybe I will host a Halloween Party and be a hostess. I’m pretty good at that. I’d be really good at making Halloween treats too!

Sprinkled Peanut Butter Crunch Balls

Like these peanut butter crunch balls rolled in Halloween Sprinkles! Gluten free and delicious! Festive too!

Ingredients

  • 2C Chex Cereal
  • 1/4C smooth peanut butter
  • 1/4C honey (or agave or brown rice syrup)
  • sprinkles!
