Almond Butter Chews

March 23, 2023 by Lee Hersh Leave a Comment

Almond Butter Chews

I had one of those aha moment early this AM. I was in the process of making some almond butter chews (aka Bird Food Balls), when I realized that I was having major issues with the balls falling apart. It’s the honey! It may seem sticky, but it doesn’t really do the job holding the balls together.

Hello brown rice syrup.

Got 10 minutes? Whip up these healthy almond butter chews with just a few ingredients. Get creative with your add ins! Your options are endless.

Brown Rice Syrup really does do the trick. It keeps the balls nice and compact. I also like BRS because it doesn’t have such a powering flavor like honey does.

Got 10 minutes? Whip up these healthy almond butter chews with just a few ingredients. Get creative with your add ins! Your options are endless.

How to make Almond Butter Chews

  1. First melt your almond butter if it’s not drippy by placing it in the microwave for about 15-20 seconds.
  2. Then, transfer into a medium sized bowl and add brown rice syrup and mix.
  3. Add millet puffs and raisins and mix until it becomes one big almond chew.
  4. Taking about 1 tablespoon of “dough” into your hands, roll to form a ball. If you’re having trouble getting things to stick, add a bit more brown rice syrup 1 tablespoon at a time.

Viola…you have balls that do not crumble!

These are pretty much the perfect after workout snack: whole grains, healthy fats, and protein. I’ll take 10!

As my Papa Ray always says…3 cheers for the weekend…

Superfood Puff Balls

Superfood Puff Balls

Superfood Puff Balls

Want to know what I like about gift cards  It lets you buy that “thing,” that you just don’t want to spend your own money on for whatever reason. I helped a good friend out with some social media shenanigans and in return, he gave me a gift card to the Vitamin Shoppe. I’ve had my eye on Amazizing Grass Green Superfood Powder for a while, but didn’t want to spend the $25.00 bucks. Can you say cheap?

Well- I was actually afraid that I would spend the money and it was taste like…grass. Wrong. Get the chocolate version and it tastes like protein powder! I like this product because it is literally infused with vitamins and minerals.

More specifically, “Chocolate Green SuperFood is our premium blend of superfoods with the great taste and benefits of cacao. Chocolate Green SuperFood supports body alkalinity, boosts energy and your immune system, and is gluten free.”

Good stuff for your body, especially if you can’t get in your daily servings of fruits/veggies. Throw this stuff in a smoothie and you are good to go! Or- you can add them to nut butter balls, like I did in this recipe.

Superfood Puff Balls

I took My Almond Butter Chew recipe and tweaked it slightly.

Superfood Puff Balls

Really easy to make! The powder gave it a delicious chocolaty flavor. Believe me, this stuff tastes far from grass. I can’t stress that enough!

Alright, I have two more days of work and then I am off to Cleveland for Thanksgiving with the Blakester to see my family’s new house! I am so excited you guys

Giftcards- love em or hate em?

Single Serve Banana Cake

March 23, 2023 by Lee Hersh Leave a Comment

Single Serve Banana Cake

Whenever I ask what kind of recipes you want to see more of, I almost always get Single Serve Recipes. Today’s recipe is kind of a reinvention of one I’ve already done. I altered it just a bit to make it more cakey instead of muffiny.

Single Serve Banana Cake

What I love about single serve recipes is the portion control. It’s hard for me to make a batch of muffins or cookies and “just have one.” Hence my love for single serve!

Ingredients

  • 3T gluten free flour
  • 3T unsweetened Silk almond milk
  • 3 inches of mashed nanner or roughly 1-2T mashed nanner
  • 1/2T earth balance, melted (to make dairy free, omit and use coconut oil)
  • 1/2t vanilla
  • pinch of salt
  • 1/4t baking powder
  • 1T Dark Chocolate Chips (optional)

How to make Single Serve Banana Cake

  1. Preheat oven to 330F and spray ramekin with nonstick cooking spray. Mix all ingredients together in a small bowl and bake for 16-18 minutes.

While this recipe uses gluten free flour mix (instead of a whole grain), it doesn’t have any refined sugars! It really is a Fit Foodie Favorite.

On my agenda for this weekend is

  1. Go to bootcamp this morning at Lululemon in St. Paul!
  2. Prep a few more recipe posts for throughout the week.
  3. Pack for ski trip to Colorado!
  4. Meal plan for ski trip in Colorado to accomodate New Year New Rules habits.

Yay for weekends and travel!

coconut chia granola

March 23, 2023 by Lee Hersh Leave a Comment

coconut chia granola

Homemade Granola really is my perfect snack. I am a carb lover with a major sweet-tooth! That’s been the hardest thing for me during NYNR—cutting the sugar. I’m used to a handful or two (or three) or dark chocolate chips after dinner (and sometimes lunch).

During NYNR, it is suggested that we limit our natural sugar intake as well as cut out all refined sugars. AKA be mindful with the amount of honey, agave, and other natural sweeteners I am consuming. NYNR or not, I think I was eating way too much sugar.

This granola is perfectly crunchy with a hint of honey.

I’ve been on the look out for shredded coconut like this, the larger pieces. I think I found this bag at Cub Foods, a local grocery store chain here in the Twin Cities. It gives such a better texture than the finely shredded kind!

Ingredients

  • 2C Rolled Oatmeal, certified gluten free
  • 1C Shredded Coconut, unsweetened
  • 1/4C Chia Seeds
  • 1/4C Olive Oil
  • 1/4C Honey

Instructions for coconut chia granola

  1. Preheat oven to 350F and line a baking sheet with tin foil.
  2. In a small bowl, mix together olive oil and honey.
  3. In a medium sized bowl, mix together rolled oatmeal, shredded coconut, and chia seeds. Then pour on liquid mixture and toss.
  4. Spread evenly on baking sheet and bake for 20-25 minutes or until the coconut starts to brown.
  5. *After the granola cooled, I drizzled a bit more honey and gave it another toss to create clusters.

One of my favorite ways to eat granola is like Overnight Oats…but with the granola! I used Silk Vanilla Almond Milk. I let it soak in the fridge while I was skiing, and when I came back…Mmm Mmm Goodness!

These aren’t your ordinary doughnuts.

They’re packed with whole grains, all natural sugars, and chia power!

They’re FIT FOODIE DOUGHNUTS!

fit foodie doughnuts

I purchased a mini doughnut pan a few months ago while I was at TJ Maxx. It was on super clearance for $3.00. I’ve been meaning to make a real doughnut recipe, but nothing has really caught my eye (other than all of the drool worth photos Ashley’s posted).

On Sunday night, I began my baking fiasco with my mind set on a dense muffin. I wanted to make something that was a hearty snack, filling, and tasty topped with peanut butter

Peeling a pomegranate can be a royal pain…here are the directions I posted on the Anytime Health blog a while back

I took a bite out of one of the doughnuts and it reminded me of packman.  Nom. Nom. Nom.

Cheers to my first doughnut recipe experience(kinda). It won’t be my last!

A couple things before I let you enjoy your Sunday….I CUT MY HAIR OFF! I think I got around 5-6 inches off. It was time for a change and much needed. My hair grows like it’s no one’s business, so It’ll be long again by Summertime.

What is your favorite Smoothie? I need some new ideas!
