
Apple Cinnamon Breakfast Quinoa
In honor of the first day of Fall [and my love for quinoa and apples]:

Apple Cinnamon Breakfast Quinoa
Ingredients
- 1/4C dry quinoa
- 1/4C cow/soy/almond milk (I used vanilla soy mil)
- 1/4C water
- 1/4t cinnamon
- 1 packet of stevia
- 2T raisins
- 1T chia seeds
- 1 medium apple, finely chopped
Method
1. In a small saucepan bring quinoa, milk, and water to a boil.
2. Reduce heat and cover. Simmer on low for about 5 minutes.
3. Add in cinnamon, stevia, raisins, apple, and chia seeds. Continue cooking on low until all liquid is absorbed. Total cook time is anywhere between 8-12 minutes.

I enjoyed this breakfast warm because I cooked my quinoa this morning, but I am sure it would taste just as good cold and topped with additional ice cold soy milk. Which reminds me, this would be a genius breakfast to prepare in bulk!

I definitely liked the texture of this breakfast. I so am used to my creamy oats, but I really liked that each bite had a little bit of crunch to it. Also, the cinnamon really helped bring the sweetness out in the apple. nom nom
Another reason why this is an all-star breakfast, is because it’s gluten free! Woo Woo. With the controversy over the “gluten status” of oatmeal, this is a great alternative for people with a gluten sensitivity.

Who needs a spoon when you can use cinnamon sticks (which were just for decoration) as chop sticks?
