Turkey Lurkey

Mama Hersh decided to name to the turkey “Turkey Lurkey,” and lets just say she is-a-roastin’ in the oven as I blog.

I got up extra early this morning to help… aka watch… my mom and grandma prepare Mrs. Turkey Lurkey. I made breakfast while they stuffed and stitched that bad boy.

Banana Cocoa Oats
*Serves 2

Turkey Lurkey

  • 1/4 C oat bran
  • 1/2 C Old Fashioned Oats
  • 1 Sliced Nanner
  • 2 C Water

Toppings

  • 1 T PB
  • Handful of Raisins

Pomegranate Baked Oatmeal

Man is it good to be home. I don’t realize how much I miss this place until I’m actually back. I arrived home in New Berlin yesterday afternoon and spent most of my day catching up with the Parents and brother. We went out for a family dinner, in celebration of Selina’s (our foreign exchange student from Switzerland..you will meet her in a later post) 16th birthday! Afterwards, the sis and I went bar hopping. Me…bar hopping, I know right! In my town it has become a tradition that the night before Thanksgiving, all high school graduates meet at Lee’s Pub. Come on now. Wisconsin = Beer. Plus, the Pub we went to has the most beautiful name I have ever heard It was so great to see everyone. I was surprised at how good everyone looked and seemed.

Anyways…moving on to more important matter. Breakfast

Pomegranate Baked Oatmeal

Hot Diggity Dog. 1) I love not being the first one up in the morning. 2) And the fact that there is always a big grass pot of coffee waiting for me 3) ANDDDD that there was a ripe, juicy pomegranate sitting in the fruit bowl screaming my name.

Pomegranate Baked Oatmeal

Ingredients

  • 1/3C quick cooking oatmeal
  • 2/3C water
  • 2T pomegranate juice
  • 1/4C pomegranate seeds
  •  packet of stevia
  • 1 large egg white
  • pinch of salt
  • 1/4t baking soda

Method

  1. Preheat oven to 325F.
  2. In a medium sized bowl, mix together all ingredients. (extremely hard, I know).
  3. Grease a small ramekin with nonstick cooking spray (don’t forget this step of you will be sorry!) and pour in batter. I filled mine about 3/4 of the way.
  4. After this,Bake for ~35 minutes or until the top begins to brown
  5. Serve with greek yogurt, agave nectar, and more fresh pomegranate seeds.

I was a little bit nervous that this bake wouldn’t be sweet enough. It was perfect. I glad I decided to add stevia at the last minute. The agave on top was genius.

Kind of embarrassing to admit, but the whole de-seeding of the pomegranate was an epic battle. It looked like I had just returned from battle. Maybe I should have googled it?OH YEAH…I almost forgot.

Bloggies, meet my new baby sister, Sasha. She is a 13 week old yellow lab that my parents got a few weeks ago…Get ready for puppy overload of FFF because everything this little one does is just way to stinkin’ cute.

Time for a butt kickin’ workout and then it’s Turkey Lurkey Time…I love today!

Pomegranate Lemon Sparkling Water

I love sparkling water with lemon and I also love pomegranate juice so what a perfect combination to combine the two?! I love putting my drinks in mason jars because it makes it convenient for on the go drinks! This is also a great healthy drink to boost your immune system especially during this flu season.

All you need to do is:
Fill a large mason jar three quarters with sparking water, then fill the rest with pomegranate juice. Squeeze the juice of one lemon and refrigerate until chilled! Enjoy all throughout the day.

Apricot Orange Chicken

This is one of the easiest chicken dishes I have ever made! Today was my first day at my new job, so I didn’t have a whole lot of time to make dinner. Luckily, I was able to whipped this up just within minutes, and you can too! I had broccoli in my fridge I needed to use up so I just ate mine over broccoli but you can certainly use any type of rice or quinoa. You can save your money and calories from ordering this chinese take out dish and make your own homemade version thats even better!

Yield: 4

Ingredients:
5 chicken breasts; cut into bite sized pieces
Sprinkle of salt
Sprinkle of pepper
2 Tbsp olive oil
3 cloves garlic; chopped
1/4 cup orange juice
1/2 cup honey
2 tsp rice vinegar
1/4 cup apricot jam
1/4 cup soy sauce
3 Tbsp corn starch
1/2 tsp ground ginger
Zest of one orange

Steps:
1. Season bite sized chicken with salt and pepper in a medium sized bowl. After this,Heat a large pan on medium heat with olive oil.

2. In a small bowl, whisk together garlic, orange juice, honey, apricot jam, soy sauce, cornstarch, ginger, and the zest of an orange.

3. Add chicken to pan and cook until browned but not cooked completely. Pour in apricot orange sauce and let it come to a boil (so it can thicken). Cook for 2-3 minutes until sauce completely covers chicken and chicken is cooked. Serve over broccoli, rice, or quinoa and garnish with chopped green onions and sesame seeds. Homemade chinese food in minutes!

How to Boil the perfect egg

My mornings always seems so frantic when I come through the kitchen so I usually just grab a granola bar or banana, throw it in my purse and eat it while I’m driving or at least try to. No matter what, mornings just always seem so rushed to me and I am always trying to get out of the door! I also love hard-boiled eggs for breakfast and I finally came across a way to make them perfect. Hard-boiled eggs are something that can seem to be really simple and easy to make but they aren’t. I always tend to over cook my eggs leaving the yolk too dry to eat. If you have a little more time in the mornings, try a poached egg instead. Boil your eggs at night to make the perfect grab and go nutritious breakfast in the mornings! Especially since breakfast is the most important meal of the day! :)

Boiling eggs literally seems like the easiest thing in the world but its perfecting the yolk that makes all the difference. All you do is bring a medium sauce pan with water to a boil. Once boiled, gently place eggs in water and make sure the water covers them completely! Now…this is totally up to you depending on how you want your eggs.

For soft-boiled, boil eggs for 6 minutes
For medium-boiled, boil eggs for 9 minutes
For hard-boiled, boil eggs for 12 minutes

Rice Krispy Treats dipped in white chocolate

I made these treats when I when I went to go visit my girlfriends in my college town, Fresno a few weeks ago. Every time I make a trip I love bringing my friends a tasty treat to get us through our fun filled weekend! These simple rice krispy treats have a festive Valentine’s Day twist! You can always alternate the M&M colors for any season! Plus, I dipped the bottom of them in white chocolate so they make the perfect holiday treat. These are so easy to make, kids can even do it too!

Yield: 12

Ingredients:
6 cups rice krispy cereal
2 Tbsp butter
1 16 oz bag of mini marshmallows
1 cup of M&M’s
1 cup white chocolate ‘candy melts’
Sprinkles (optional)

Steps:
1. In a microwavable safe bowl, microwave marshmallows and butter for 1 1/2 minutes.

2. Measure cereal and M&M’s and put in a large bowl. Once marshmallows are melted, add to large bowl and mix with a spatula until cereal and M&M’s are completely coated with marshmallows.imageimage

4. Lightly grease a 9 by 13 inch pan and pour rice krispy mix. Top with sprinkles and refrigerate for 20 minutes.

5. Once rice krispy treats are cool, cut into 12 squares. In a medium bow, melt white chocolate ‘candy melts’ and dip one side of rice krispy treats. With a butter knife, scrape off access chocolate. Place dipped treats onto a cooling rack. Top with more candy or sprinkles, its completely up to you and let cool.
