It’s Linley, ya’all. Writing to you as I stare out the window at the leaves that are already changing in our front yard. Though it is 86º outside today, last week weather was in the sixties, and I was wearing my Iron Ranger Redwing Boots (I seriously live in these most of the year) and wrapping myself in my favorite new fall scarf. It’s seriously my heaven. So leaves did start changing and then BAM this week it is in the 80’s again. I’m not complaining, living in Minnesota you learn to go with the flow when it comes to the weather, but I am pretty dang excited for fall this year.

Yes, I am excited for everything fall (PSL, apples, great sleeping weather, etc,) but I am especially excited for fall this year because Cole and I just moved into a new house! Our best friends moved to Europe (yes, they are pretty dang cool) and we moved into their adorable bungalow while they are away. We moved into their house (yes a house with a yard, yipee!) with our friend Britta and FRANNY. If you follow Lee and I on Instagram, you’ve met Fran the Great Dane Puppy. So, put together my favorite people, a new house, and my favorite season, and I am one happy camper. I am super excited to be in a house for the holiday season. There is nothing that beats having a yard, a nice kitchen to cook in, and an amazing space to decorate! We are pretty dang lucky (thanks Chris and Alex <3)!

Another great thing about fall? CHILI.

I love beans just as much as the next person. However, come fall there are chilis and soups that are jam-packed with beans (which I love). Sometimes it is nice to take a break from those fiber-filled morsels and give that tummy a bit of a break with a bean-less and delicious chili option. Hello, Pumpkin Turkey Chili with Roasted Poblano Peppers.

We packed this chili with all of fall’s best assets —> pumpkin, tomatoes, warm spices, and roasted veggies. Not only did we roast veggies, but we roasted poblano peppers. Can I get an AMEN. Roasting the poblano pepper gives this chili an amazing smoky flavor that isn’t too spicy. It’s just right! We threw some garlic cloves on the pan to caramelize and roast with the peppers and that really just set this chili up for greatness!

Ingredients

  • 5 cloves garlic
  • 1 large poblano pepper
  • 2 tablespoons olive oil
  • 1 small red onion, diced
  • 1 lb. 99% ground turkey
  • 1 15 oz. can pumpkin puree
  • 2 15 oz. cans diced tomatoes
  • 3 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 1/2 cup water or chicken broth (or more depending on how thick you like your chili)
  • 1 tablespoon sriracha
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika (less or more depending on how much spice you like!)
  • 1/8 teaspoon sea salt
  • pepper, to taste

Instructions

  1. First, preheat oven to 400ºF and spray a baking sheet with nonstick cooking spray.
  2. Then, place a large poblano pepper and 5 cloves of garlic on the baking sheet. Drizzle the pepper with olive oil and season with salt and pepper. Then place in the oven for 15 minutes, flipping half way.
  3. Once the poblano pepper has beautiful roasting marks on it, remove from oven and let cool for 5 minutes. After this,Use a sharp knife to cut the top off and then remove the seeds.
  4. Place the roasted poblano pepper, garlic cloves, and a can of pumpkin puree in a high-speed food processor and process until everything s pureed together. Set aside.
  5.  Prepare chili by heating olive oil to medium/high heat. Then, add in a diced small onion and sauté for a few minutes or until translucent.
  6. Add ground turkey and and sauté until full browned. Add the rest of the ingredients and mix until combined.
  7. Now Cover and let simmer for 10 minutes before serving.*
  8. Serve with avocado and white cheddar cheese!

Notes

*Depending on how thick you like your chili, feel free to add more liquid!

The one thing that I have been looking forward to doing this winter/fall is using my new blender for soup purposes! I can’t believe that I have never owned a blender until this summer. LIFE CHANGING. Making pureed soup is SO EASY and SO NECESSARY during the cold months. Seriously- this soup is the best!

Want to know something funny? Linley and I have to Google what the word “bisque “meant 😛 We were trying to decide if this was a normal tomato basil or a bisque. Apparently bisque refers to cream in soup.

We actually didn’t use any cream in this recipe at all. We substituted Greek yogurt in order to get the same creaminess. It added great flavor. The tartness of the yogurt brings out all of the sweet flavors in the tomatoes. WINNING.

What’s tomato soup without the grilled cheese?

Remember my Brie and Smashed Blackberry Grilled Cheese from years ago? We made ourselves a few of those to go with a bowl of soup. Perfect lunch if you ask me.

One thing to note- don’t throw your grilled cheese on the burner and then walk away and come back like 10 minutes later. You will char the shit out of the bread 😛 Not that that happened or anything…

How to get the perfect swirl? Mix some Greek yogurt with a little bit of water and you’ve got yourself some gold. Add some fresh basil and homemade bacon bits. You WILL NOT REGRET IT ONE BIT.

Ingredients

  • 3 tablespoons EVOO
  • 1 small yellow onion, diced
  • 2 cloves garlic
  • ½ teaspoon sea salt
  • ⅛ teaspoon fresh ground pepper
  • ¼ cup tomato paste
  • 2 28 oz. cans of diced tomatoes
  • 5 large basil leaves, fresh
  • 2 cups chicken broth
  • ½ cup Greek yogurt
  1. Place 3 tablespoons of olive oil in a large pot and turn to medium/high heat.
  2. Dice 1 small yellow onion and add to pot, along with 2 full cloves of garlic. Saute for about 5 minutes or until the onions are translucent.
  3. Place content of the pot into a high-speed blender. Then, add salt, pepper, tomato paste, diced tomatoes, basil leaves, and chicken broth. Process on high for 2-3 minutes, or until desired consistency.
  4. Transfer the contents of the blender back into the pot and let simmer for about 10 minutes.
  5. Remove from heat and add ½ cup of Greek yogurt. Stir.
  6. Serve with additional Greek yogurt on top, fresh basil, and homemade bacon bits.

I don’t think I’ve met a single person who didn’t like PF Chang’s Chicken Lettuce Wraps (vegetarians- YOU ARE MISSING OUT!). These are THE perfect  way to start a meal…or be a meal for that matter. Low carb (minus the rice, which I just had to add due to my obsession with sticky rice lately) and full of flava flavvv!

Ingredients for Copycat PF Chang’s Chicken Lettuce Wraps

  • ground chicken
  • sesame oil
  • coarsely chopped shiitake mushrooms
  • basil
  • hoisen sauce
  • teriyaki sauce
  • ginger
  • soy sauce
  • garlic
  • cornstarch

I thought I’d photograph the exact sauces I use…foreshadowing questions on brands. I usually get my Asian sauces/spices form Target or Whole Foods. These one’s in particular are all gluten free.

For this particular recipe I was going to use chicken breast and finely dice it, but I thought ground chicken would be much easier.

GREAT CHOICE.

It was SO easy.

All you do is pour on your sauce/marinade, mix, and sauté with your shrooms. Then- add a bit more sauce to thicken it up.

Stuff in a lettuce wrap and add some sticky rice and you’ve got yourself a pocket of love.

This stuff is so yummy, you might even want to ditch the lettuce all together and serve a big scoop over a bed of rice.

Ingredients

Scale
  • 1 pound ground chicken
  • 2 teaspoons sesame oil
  • 1 cup coarsely chopped shiitake mushrooms
  • 6 basil leaves
  • 1 Tablespoon + 2 Tablespoons hoisen sauce
  • 1 Tablespoon + 2 Tablespoons teriyaki sauce
  • 1/2 teaspoon + 1/2 teaspoon ginger
  • 1 Tablespoon gluten free soy sauce/tamari
  • 2 teaspoons garlic
  • 1 teaspoon cornstarch
  • *Serve with mini or large pieces of lettuce and white or brown rice

Instructions

  1. Heat about 2t sesame oil in a large sauce pan on medium/high heat.
  2. In a large bowl, mix together ground chicken, mushrooms, and basil leaves. Set aside.
  3. Prepare initial marinade sauce by mixing together 1 tablespoon hoisen sauce, 1 tablespoon gluten free soy sauce, 1 tablespoon teriyaki sauce, 2teaspoons garlic, and 1/2 teaspoon powdered ginger. Pour marinade on top of ground chicken and mix until everything is thoroughly combined.
  4. Once oil is heated, pour chicken mixture onto pan and sauté for about 8-10 minutes, or until chicken is almost cooked. Make sure to stir continuously.
  5. While the chicken is cooking, prepare sauce round two. Mix together 2 tablespoons hoisen sauce, 2 tablespoons teriyaki sauce, 1/2 teaspoon ginger, and 1 teaspoon cornstarch.
  6. Pour sauce over chicken mixture and let simmer for a few more minutes.
  7. Arrange lettuce wraps by placing chicken mixture on top of white rice. Enjoy!

Chocolate Banana Oats

Oh hey black bags under my eyes. You can leave nowwwwww! This girl hasn’t been getting enough sleep  and my body is slowly, but surely letting me know… I think I have the flu :/ You know when your body just aches? Blerggggg.

I’ve been going to bed way later than normal and waking up at the crack-o-down. I think I’m just in over my head with my schedule lately. Today, I decided negatory on the workout, hoping that a day off would help with a little rejuvenation of my mind, body, and soul. I know taking a day off is perfectly healthy. Our bodies need rest, but sometimes I have weird/awkward exercise guilt…More on that after we talk food :)


Recipe alert.

Yes, it is another oatmeal recipe. But: considering all of the amazinglyawesome feedback I have been getting on my oats, I figured one more recipes wouldn’t hurt :) Who’s with me?

Chocolate Banana Oats
-1/5C rolled oats
-1/5C oat bran
-1T chia seeds
-1/2 banana
-1T cocoa
-1/3C almond milk
-1C water
*Toppins: 1/2 sliced nanner, peanut flour sauce, a bloob of almond butter, and way too many raisins.

This tasted like chocolate dipped frozen bananas. Minus the frozen. I wish I would have enjoyed it more :/ My appetite is obsolete and my taste buds are off balanced. I’ve have never once…”not finished” my oats (sorry for the double negative) and today I really had to push myself to clear my bowl.

Anyways, I was directed by Mama Hersh not to blog tonight and to go right to bed! I am going to try and finish up by 8:00PM sharp so I can get some snooze. *I may or may not already be in bed with the lights off…

Exercise Gilt
For me, exercise is my stress reliever. It makes me feel energized and I love the adrenaline rush after an intense interval workout; I love it. Sometimes, I can be way too hard on myself on rest-days. A weird anxiety lurks in my mind about the fact that I didn’t workout. It’s not because I’m worried about the whole “burnage” of calories or that I’m going to gain weight, but it’s almost like my day is incomplete without it.

This may sound a little bit funny, but I also feel like EVERYONE knows I skipped. Really Lee?

#1: What gives?? Who cares what anyone else thinks?

#2: I don’t think it is realistic at all, for anyone who is a full time student/professional, to workout 7 days a week. (For both physical and mental health reasons!)

#3: If I don’t have time, I don’t have time. Exercise should be enjoyable and if I’m just going to rush through a workout, what’s the point?

#4 I should embrace my off-day. Once I decide I’m taking off and the decision is made, don’t turn back. Enjoy the day :)

Erg, I could go on but the clock is a-tickin’. I told myself 8:00 PM, so 8:00 it is. I hope I feel better by the AM, I have a presentation manana en espanol!

Creamy Blueberry Oats

Guess who hit the ultimate jackpot of “Breakfast Swag?” When I say I. found. swag.

Minneapolis is filled with the most fantastic boutiques. One of my favorites just so happens to be a few blocks away: Bibelot. Their products are fresh and modern and they also highlight local artists! me like. Plus, their kitchenware is just beyond adorable, like my spoons by Zak! Designs for example. I have been searching high and low for spoons just like these! I probably could have left that store $200.00 negatory, just on blog swag (kitchen linens, dishware, gizmos, etc). *one day when I’m filthy rich…*

My spoon pared my breakfast quite nicely this morning :) Gave my photos some pizzaz at least. I wasn’t in the mood for my typical nanner oats, so I went with something similar but with another twist. Instead of my oat bran/rolled oat ratio, I used just rolled oats; I used a bit more almond milk than normal to sweeten it up. Oh, yah….I added BLOOBS!

Creamy Blueberry Oats

-1/3 C rolled oats

-1T Chia Seeds

-3/4C Vanilla Almond Milk

-1/2 C Water

-1/2 banana

-1/4C blueberries

Toppings: 1/2 banana, peanut flour sauce, bloob of almond butter, and raisins

How cool is that reflection on my bowl?? *nerd alert*

I loved the flavor of this batch of oats. The banana really brought out the taste of the blueberries and the extra almond milk gave it a sweeter, nuttier taste. The one thing I do have to say, is that I missed my oat bran. Rolled oats by themselves definitely do not get as fluffly as my typical oat bran/oats do.

I wanted to switch focus for a second and wish the sister a happy birthday! You guys can probably tell from my posts that the sissy is my best friend. We do errything together.

XX—>Skiing this winter

Let me give you some background info. The sister and I are 12 months apart. *woah is right* We haven’t always been as close as we are today, but as we’ve matured and grown into young women, we’ve become extremely similar in our ways of life, morals, attitudes, etc. I remember as a child, always comparing myself, wanting to be better, smarter, and faster than Michelle. This is what happens when the bar is set high! She has always been a driven and passionate person [even as a kid] with the strongest backbone I have ever seen. School and friends came naturally to her and I have always been a bit jealous of this.

Today, we are different but alike in so many ways. I think one of the most valuable things I’ve learned from her is to be yourself and embrace it. Live your life for yourself and let it. Let life come as it comes, and go as as it goes. She brings so much positivity and spontaneity to my life and I am so lucky to have her.  🙂 So, Michelle, thanks for being you and happy 22nd :) You truly are an inspiration.
