2 weekends ago Team Fit Foodie had a little retreat at Linley’s family’s river house on the St. Croix. If you’re from Minnesota, you know there is a debate as to which side of the St. Croix is better, Wisco or Minnesota. Being a Wisconsin girl, I’d have to vote East side on this one

Being away from city life for an entire weekend was really nice. The river house (what we call it) is nestled away in the bluffs of the river and is absolutely gorgeous. If you follow FitFoodieFinds on snapchat, you may have seen some glimpses of the property! Lin and I decided to make our Fit Foodie Retreat a mixture of work and play…insert recipe creation…and this salad.

We picked up an amazing piece of salmon from the local IGA- Ptacek’s. I love love love IGAs, especially because they are run locally. They always have THE best local meat and produce selection. YES PALEASE.

Basic Ingredients

  • ½ pound salmon, grilled
  • 2 ears of corn, grilled
  • ½ small red onion, sliced
  • 3 radishes, sliced into rounds
  • ½ medium apple, chunked
  • ¼ cup blue cheese, crumbled
  • 4 large handfuls of your favorite greens
  • squeeze of lemon
  • salt and pepper to taste
  • ½ cup plain Greek yogurt, 2%
  • 3 tablespoons EVOO
  • 1 tablespoon fresh dill
  • ⅛ teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon minced garlic

How to make Salmon Salad with Greek Yogurt Dill Dressing

  1. First, begin by preheating your grill to about 375ºF. Then, prep salmon by generously seasoning with salt, pepper, and a squeeze of lemon. Place a piece of foil on your grill and the salmon on top of it. Let cook, covered, for about 20-25 minutes. Make sure to continuously check on your salmon. Once the salmon has cooked. Let cool for about 5 minutes before shredding. Set aside.
  2. Prep salad by using a sharp knife to cut the corn kernels off 2 grilled pieces of corn. Then, slice 3 radishes into thin rounds, ½ small red onion into thin slices, and ½ medium apple into chunks.
  3. Make dressing by mixing all ingredients together. This is a thick dressing. If you’d like it thinner add more EVOO or lemon juice.
  4. Prep salad in a large serving bowl by placing greens on the bottom, then sliced veggies/fruit on top, then shredded salmon, then dressing!

I usually end up buying these at full price because quality > quantity in my opinion, but you guys know I can’t pass up a good deal which is why I’m pumped for this sale!

Why the heck am I telling you this? leave in 2 days for an 8 day long trip to Toronto and Chicago and I haven’t even thought about starting to back. I am SUPER excited to spend the next week with Davida. EEEEEEEE. She’s been going to this barre studio that I’m really excited to try out….and for someone else to cook for me. Sad, but true 

Davida and I have been friends for about a year and a half, and since then, she’s come to visit me in Minnesota like 5 times. There’s good reasoning behind it. Her other half, Curt, grew up in my neighborhood and his parents still live in the same house. Works for me

It’s really weird having your best friend live in a different country. It’s manageable, but absolutely impossible to just go grab a drink with the guys or workout together not via in the internets.

Oh the power of Skype. My favorite is when one of us is sautéing something on the stove and still able to have a conversation from hundreds of miles away.

So this smoothie.

I do have a confession.

I had a MAJOR fail with this recipe last week. 1. don’t EVER put an entire orange in your blender and think that’s a good idea. Let’s just say the smoothie wasn’t pulp free  2. Don’y try and take a photo when the sky is grey/blue and it’s snowing. No matter how many times you try and adjust white balance, it’s just not going to work.

And then there was try number 2. A slightly different recipe and much better lighting.

The coconut milk in this recipe is essential. It definitely gives the “creamsicle” aspect of this recipe! Plus- it adds a tropical punch.

This past weekend was really fun. On top of Mark being in town, so were my parents! We did what we always do together…laugh until we pee, eat delicious food, drink good beer and wine, and watch college football. This time, it wasn’t the Gophers we were watchin’…it was the BADGERS, our arch nemesis. Can I just say that I’ve never seen crazier fans than fans from Wisconsin. Both the University of Wisconsin Madison and The Packers have the most INSANE fans. They scream, they grunt, they pound, and they cheer. Truth is, Minnesota we’ve got some WERK to do.

With my family in town, it really got me excited for the holidays. This year I am heading to my parent’s new house in the Chicago-area for Thanksgiving. While we eat relatively healthy when I am with my family, I always like to bring a healthier app to share when I go to holiday parties so that I know at least one thing there is good for me 🙂

In all honesty these are the most perfect bites of heaven you will ever sink your teeth into. I love Dole Whole Pitted Dates because 1. they are pitted aka Dole does the dirty work for you! 2. There’s no added sugar 3. They are naturally sweet 4. They taste amazing wrapped in bacon and stuffed with goat cheese. In case you are wondering- these dates were still squishy when I opened the bag! This is key for an app like this. 

This recipe is pretty simple. The main ingredients are:

  • Dole Whole Pitted Dates
  • Goat Cheese
  • Bacon

You’re more than welcome to get a flavored goat cheese and/or bacon. These would taste fabulous with applewood smoked bacon, BTW. Roll those little guys up, stick a toothpick in, and pop them in the oven! Such a great app to share on game day…or heck, even for a meal prep snack!

Let cool and then remove the toothpicks. Place in a glass pyrex and into the fridge for up to 3-4 days.

Bacon Wrapped Dates Stuffed with Goat Cheese

Ingredients

Scale
  • 20 Dole California Whole Pitted Dates
  • 2–3 oz. Goat Cheese
  • 10 strips of bacon
  • fresh thyme, to taste
  • pepper, to taste

Instructions

  1. First, preheat oven to 400ºF.
  2. Then, spread open each date and stuff with ½ to 1 teaspoon of goat cheese. Then, sprinkle with fresh thyme.
  3. Cut 10 strips of bacon in half. And roll each date inside of the bacon. Seal with a toothpick. Season with pepper, to taste.
  4. Bake at 400ºF for 25-30 minutes depending on how thick your bacon is.
  • Prep Time: 10 minutes
  • Cook Time: 30 minutes

Things I’m Loving Lately – Fall Transition Style

If you read our last post, Linley really spelled out my feelings about transitioning into Fall. Grab the Kleenex, people. When the first colored leaf hits, I still get the willies that school is starting and winter is right around the corner. What a nostalgic time of year. With that said, I will give it to the state of Minnesota for having one of the most AMAZING falls in The States. We are lucky enough to have 4 legit seasons and Fall is hands down the most beautiful. Gotta love when you go to L.A. in October and people are wearing coats and boots when it’s still in the 80’s. Here in MN, we ACTUALLY have sweater weather. This makes shopping really fun…because it gives you an excuse to have 4 mini wardrobes for all of the seasons.

Here are some of my favorite style pieces for fall transition style! In this post you'll find links to jeans, tops, sweaters, accessories, and dresses!

As you know, I am basically a weather woman…and this year friends, I am predicting quite a lovely fall in Minnesota. This means us Midwesterners gotta be all about those transition pieces. How can you turn a summer outfit into something more fall-like? I want to chat about the outfit I am wearing in these photos because it really is the PERFECT transition outfit.

I want to start with the kimono because I LOVE IT SO MUCH. I feel like it can totally fall up any outfit especially classic white tea. This Kimono is BP from Nordstrom. I also picked up a white tee from Nordstrom that I’m obsessed with. It’s only $25 — the Treasure and Bond Boyfriend Tee. Moving down the outfit you’ve got some black high-rise Madewell skinnies + my new favorite booties on the planet. I actually got these during the Nordstrom Anniversary Sale, so they were a steal. So pumped to finally start wearing them this fall! They also have them in brown which I am tempted to also buy.

Places I’ve been shopping lately include Nordstrom, Madewell, JCrew Factory, Stitch Fix, and Abercrombie. I Feel like 2 of those stick out a bit– Stitch Fix and Abercrombie. It’s been a white since I shared a Stitch Fix on FFF because I was striking out every time I got a box. After like a year break, I finally decided to vie them a try again and have been loving it! I’m planning on sharing my latest fix on the blog soon. Abercrombie. Guys, this may sound weird but I have been loving A&F. Ever since Linley and I went into the Mall of America store last Spring, I’ve been keeping an eye on them and they’re clothes are 1. pretty damn cute and 2. reasonably priced. They almost always have a sale going on, so nothing is ever really full priced! I highly recommend you check it out. I just got this shirt (see below) there that everyone has been raving over on IG.

With that said, I’ve pulled some pieces that I either currently have or that are on my wish list for this year! Skinnies, boyfriend shirts, and booties…never go out of style! Please and thanks.

PANTS/JEANS

Praise the lawd that skinny mid-rise jeggings are still in because they are all I wear. For once in fashion history, I think trend jeans actually fit my body! Anyone with a booty and thighs knows that the mid-rise fit is a godsend and jeggings…need I say more?

SHOES

As I was scrolling through shoes online, I realized I was saving mostly booties and mules. I like to keep my shoes pretty neutral such as beige, browns, and blacks so that they go with everything in my closet. Here’s some of my favs right now.

TOPS/SWEATERS

When it comes to tops I’m all about comfort. I am also all about that front tuck. This year I’m planning on wearing a lot of slouchy tees, front tie blouses, and of course, plaid shirts! I’m also loving the super long cardigan look.

DRESSES/ROMPERS

Dresses that hit me at my waist are my jam. Not going to lie, dresses are tough for me because I have to figure out how to balance my boobs without making them look frumpy or buy a dress that’s skin tight (no always comfortable!). I tend to gravitate towards solid, darker dresses, but this year I want to get riskayyyy and go pattern or floral.

ACCESSORIES/BAGS

Living in Minnesota, I am all about that scarf. I almost always have on in my bag just in case it gets cold! I’m still loving blanket scarfs and ascots. As for bags, leather me up! I’ve been on the lookout for a leather backpack purse and I think I found a few contenders.

So,I have a slight obsession with coffee. Like an unhealthy obsession. Like I drink 2 cups in the morning with breakfast, one cup after my workout, and then usually another cup in the afternoon. Like like like like. I say cup, but most of these “cups” are at least 8 oz. Le sigh. I bring this up because I GOT A HEADACHE the other day and it’s because I haven’t been drinking as much coffee. You see, I don’t get headaches. AND WEB MD TOLD ME I WAS HAVING WITHDRAWALS.

I blame the fact that I work from home and I need human interaction so I go to coffee shops AND that my french press is my best friend.

At least it’s cups of coffee and not wine or hard alcohol

Man it’s been way too long since I made homemade granola. This is probably a good thing because granola is like crack to me. I JUST CAN’T STOP EATING IT OH EM GEE. Who else is with me? If I had to choose my fav granola recipe from FFF…it would be our Blueberry Orange Granola. Fun Fact: It’s is actually a Linley creation. She is the mastermind behind this recipe and I’M OBSESSED. I made a batch to bring to Milwaukee 2 weeks for the man candy and he gave it a two thumbs up. Obvi.

Seriously you need to make this granola. Then you need to dig out your mason jar (because they’re cute) and layer up your favorite Greek yogurt and fresh berries. IT’S SO PRETTY AND INSTAGRAM-WORTHY.
