Homemade Wine Cooler

Back in college (about 2 years ago), I blogged before that I didn’t drink much alcohol and that it actually gave me anxiety. I’ve also talked before how I was 100% gluten free. Things change, my mental health changes, my happiness changes, my body changes. I drink now (occasionally). This doesn’t mean I am a binge drinker- it simply means I am comfortable around alcohol and enjoy the taste of wine.

Not sure why I had to get that of my chest, but I just did!

This has been my favorite homemade drink of the summer so far…light and bubbly.

Homemade wine coolers have been my favorite drink of the summer. You really only need a few ingredients: your favorite white wine, bubbly water (I use Peach La Croix), a splash of juice (I used white grape juice), and some chopped up fruit for presentation and little extra taste!

I am a lightweight when it comes to drinking, so by lightening up my drink, I can enjoy more of it!

I am really excited about today. It’s the SUMMER SOLSTICE. And my bosses birthday. Which means, I get the day off! She surprised us at our department meeting on Wednesday that we didn’t have to work today. The reason why I am so excited is because my sister flew in from DC last night. We are going to a wedding tonight, and now I will be able to spend the entire day with her! I am thinking a long run around the lakes + Whole Foods Hot Bar for lunch!

Best Workout Leggings – in all price ranges!

“What workout leggings do you recommend?” is a frequently asked question so we decided to turn it  into a blog post —> and try on a bajillion pairs of leggings to find the very best. Linley and I set off on an adventure a few weeks ago to find the best workout leggings on the market in all different price ranges. We hit up some of the most popular, top of the line athleisure stores (such as Lululeon and Athleta) as well as budget-friendly stores (such as Target and Old Navy) to hunt down a variety of amazing leggings perfect for all types of shoppers. We tried on almost every legging in every store and each chose 1 to talk about in this post.

Before I begin I wanted to note that we were not paid to write any of these reviews, so that all of this feedback is the 100% honest truth.

Before we just right in. I wanted to give you the low down of how we chose our favorites and least favorites. All of the leggings have been rated on a scale of 1-10, 1 being no beuno and 10 being bueno. Things we took into consideration include:

  • fabric
  • quality of craft
  • fit
  • price
  • versatility
  • stretch

Oh, and we put them to the test and actually worked out in them!  We thought we’d get the best results if Linley and I both tried on a pair from each store because we have very different body types. Linley is petite (5’2″) and has a shorter torso and I have an athletic build (5’8″ on a good day) with an extremely long torso. Yes, torsos matter 😛

Notes from Linley

If there’s one thing I need when I’m working out, it is to feel comfortable. Overheating stinks and wearing a bra or pants that squeeze you in the wrong places can make for a miserable workout. I am 5′ 2″, with a large bust, and hips that are pretty wide for my size, so finding pants that fit my legs + hips tends to be an ordeal. On the hunt for the Best Workout Leggings, my goal was to find leggings that weren’t too long, hugged my hips just right, and were breathable! Also, I have short legs and a short torso (which I love and I am very grateful for) but I have found that crop pants make me look even SHORTER! So, heads up. I tend to stick with long pants.

Gap Fit – Gfast Performance Cotton Colorblock Legging ($49.95)

This was my first very first pair of Gap Fit Pants and I just love their pattern. I don’t own very many pant length leggings because usually they are too tight on my calf or bunch at the bottom because my legs are short; these hit perfectly at my ankle. The one thing I don’t love about these pants is the fabric. They’re very much so cotton so I do find they stretch a little bit after wearing them for a while. What I love about them is how trendy they look with the current fashion.

I give these leggings a 6/10 because fabric is important to me and they are my #5 pick.

Gap Fit - Gfast cotton Color Block Legging

Gap Fit – Blackout Gfast Mesh Panel Legging ($64.95)

This was also my first pair of Gap Workout pants and I absolutely love them. This mid-range workout pant is so incredibly soft, hits my ankle right where I like it, and I was surprised, but they are a mid-rise pant. I have to say, one of my favorite things about this pant is the design. It adds a subtle design without being too much. They are SO breathable and I feel like i can do anything in these pants – yoga, circuit training, coffee shop sitting, and everything in between. They also look great with tennis shoes OR boots.

I give these pants a 10/10 for being super comfortable for any occasion. They are my #2 pick.

Gap Fit Blackout Gfast Mesh Panel Legging

Lululemon – High Times 7/8 Pant ($98.00)

For those that have followed me for a while, know that I am Lulu obsessed. They are the brand that introduced me to high-rise leggings and for that I am forever changed. I have the High Times 7/8 Plant in green, maroon, and black because this is my go-to pant for athleisure. Throw a pair of boots on and I’m out the door. While these are priced at a higher price point, they are worth every penny. The quality is insane and even after washing my maroon pair 50 times they are still like brand new! The high-rise fit is on point and they don’t give even after a few wears!

I give these pants a 10/10 for quality and fit and the #2 spot in my lineup!

Lululemon High Times 7/8 Pant

Lululemon – Wunder Under High-Rise Pant ($98.00)

Not only do LuluLemon’s High-Rise Wunder Under Pants come in ridiculously adorable patterns, but they go high enough on my hips where I am comfortable no matter if I’m doing crunches or sitting in half pigeon. They are breathable and hit my ankle at the perfect place. Seriously, I have a couple pairs of these and I wear them to workout and throughout the day with boots. I recognize that these are the highest price point pant, but they are worth every penny. Also, keep your eyes peeled for sales at Lululemon, sometimes you score big and find a pair of Wunder Under’s on sale!

I give these pants a 10/10 because they fit my body type, are great athletic AND athleisure leggings.  They are my #1 pick. 

Lululemon High-Rise Wunder Under Pant

Athleta – High Rise Chaturanga Tight ($59.99)

I have recently fallen in major love with Athleta. Ever since I realized that instructors get 30% off full price retail I knew I had to explore my options further. Turns out, Athleta is BOMB…especially in the athleisure department. Their High Rise Chaturanga Tights are my all time favorite, especially for yoga. I love the fit in the waist and that they are long enough to go over my heels (how I like to wear them). They’re also great with a pair of boots on. They do stretch a tad in the waist, but other than that they hold pretty well throughout the bum and legs.

I rate these pants a 10/10 and gave them my #3 pick…VERY close behind my #2.

Athleta High Rise Chaturanga Tight

Athleta – Metro High Waisted Legging ($79.99)

Talk about the perfect athleisure workout pant, right here people. I love Athleta’s Metro High Waisted Legging for day-to-day living. They are my go-to pant when I know I’m spending the day at Fit Foodie HQ and when I am going for an athletic look throughout the day. As you can tell, I am a HUGE fan of high rise pants and the fit of these pants are perfect. Not to mention they don’t bunch AT ALL at my ankle. Though I love these pants, I usually don’t wear them when I workout because they tend not to breath as much as I ‘d like.

I give these pants a 7/10 because they are great athleisure pants, fit great, but aren’t the most breathable pant for working out. They are my #4 pick. 

Athleta Metro High Waisted Legging

Victoria Sport – Knockout High-Rise Capri ($66.50)

After taking recommendations from Instagram about where to shop for leggings, I knew we needed to go into Victoria’s Secret. I was pleasantly surprised with what I found AND even found my new favorite pair of leggings! The Knockout High-Rise Capri is the shit and it comes in 3 different lengths. As you know, I’m a sucker for a good high-rise fit that keeps everything in snug. I gravitate towards thicker fabrics and really well made pieces of clothing. If you don’t want to spend $100 on a pair of leggings, get these! I can’t speak to how long they last because I’ve only had them for a month, but so far so good after a few workouts and washes.

I give these pants a 10/10 because I just love how they mold to my body, don’t stretch, and their thickness. They are my #1 pick.

Victoria Sport Knockout High Rise Capri

Victoria Sport – Knockout Sport Tight ($66.50)

Yes, these pants are absolutely adorable. Victoria Secret has a great selection of workout pants with sassy designs, to boot. I like how these pants look on me, but had a harder time with sizing at Victoria Secret. My body couldn’t decide between x-small, small, or medium. They all fit a certain part of my body in the right place, but never the whole body.

I give these pants a 4/10 because it was hard for me (as a shorter + curvy person) to find pants that fit me just right! They were my #6 pick.

Old Navy – Mid-Rise Melange Compression Crop ($29.94)

Who woulda thunk Old Navy had adorable workout clothes? This place is a hidden gem for affordable workout gear and I’m so glad Instagram told us to go there! I am a sucker for a good deal and if you hit up Old Navy when the entire store is 50% off you can walk out of there with a brand new workout outfit for under $30! I loved these Mid-Rise Melange Compression Crops. They are a bit thinner in fabric, but super breathable. I feel like I can do the splits in them they are so soft and malleable.

Old Navy – High Rise Compression Legging ($29.94)

How FUN is the design on this pant? You won’t miss me running down the street in these babies. They are a great, breathable pants and at this price point..you can’t beat them! I have worn them to yoga and for circuit training. I found they were perfect for circuit training, but the lack of stretch in these pants made down-dog a bit harder for me (and I need all the help I can get in down dog lol).

I give these pants a 7/10 for their breathability and design. They were my #5 pick.

Old Navy High-Rise Compression Legging

Target – Freedom Asymmetrical Capri ($24.99)

Can I just say that Target has picked up their workout gear game like WOAH. I wish I would have had all of these options when I was in college and poor! Out of all the pairs I tried on at Target, the Freedom Asymmetrical Capri was my favorite. They are priced very low at under $25 and you can definitely tell compared to all of the other leggings I tried on. What I liked about these pants was the mid-rise fit and capri length, however I feel like even after purchasing a small, they weren’t tight enough. I’m weird about tightness and there’s nothing worse than saggy workout leggings.

I give these leggings a 4/10  and fabric and fit and ranked them last, #7, out of the bunch.

Target Freedom Asymmetrical Capri

Target – Cold Weather Run Tights ($20.98)

I hadn’t bought workout pants at Target for years. I was pleasantly surprised when I tried on these Cold Weather Run Tights. They are soft, the high-rise waist fits me perfectly, and I love the design. I have worn these for yoga, circuit training, winter running, and out and about. They were great for every occasion. It is winter in MN and these are cold weather pants, but at the same time they kept me warm, I didn’t overheat in them.

I give these a 8/10 for being so versatile at such a low price point. They were my #3 pick.

Homemade Peanut Butter vs. Store Bought

Every time I make a batch of homemade peanut butter, I ask myself why I’ve been cheating my body with the store bought kind loaded with sugars and preservatives. I’m not hating on Jif (because let’s get real, that’s what I grew up eating and it tastes like candy), but check out their ingredient list…

Peanuts. check

Sugar. Uncheck

Fully Hydrogenated Vegetable Oil. Uncheck

Mono-And Diglycerides. Uncheck

Salt. Check

Now that I’ve made my own peanut butter, I can see that all you really need to make peanut butter is peanuts (plus salt and a natural sweetener if you please). The peanuts have enough natural fats in them to get creamy, where you don’t need to add additional oil. Also, if you keep it refrigerated, preservatives are unnecessary.

I wasn’t exactly sure what a Mono-AndDigyceride was, so I asked Carly:

Me: “Do you know what trigylcerides are?”

Carly: “It’s a glycerol molecule with three fatty acids attached to it. thus a mono or di-glycerides are glycerols with one or two fatty acids on it, respectively.”

Me: “So why is that added to Jif peanut butter?”

Carly: “I wouldn’t worry so much about the trigylcerides in peanut butter as the trans fat. Jif peanut butter stays congealed (and not drippy) when it has trans fat in it, which is not good.”

Me: “Trans fats aren’t listed in the ingredient list?”

Carly: “That’s probably because they contain less than 1/2 gram, but if hydrogenated oil is listed on the ingredients panel then it’s in there. That’s where you have to be careful, because most people wouldn’t know that.”

Interesting…Thus, homemade peanut butter is healthier and tastier because you know exactly what’s in it!

This jar was actually made for Blake’s mom and step dad as a token of appreciation. I made one for them and a few for myself.

It’s delicious topped on oatmeal, on bread, or just on a spoon!

Ingredients

-1.5C roasted peanuts + 1/3C

-1/4t salt, optional

-2T honey, optional


Instructions

  1. Place roasted peanuts in a small food processor and turn on. Whirl for about 4-5 minutes or until the peanut butter turns drippy. You may need to stop a couple of times and scrape the sides. Then, add in salt and natural sweetener (honey, maple syrup, or agave) to taste. Turn the food processor back on and whirl for an additional 2-3 minutes or until the peanut butter becomes drippy again. Finally, add in an additional 1/3C of peanuts and pulse for about 30 seconds to give your peanut butter some crunch!

Notes

After I added in the sweetener, the once drippy peanut butter changed consistency and needed to be re-whirled in order to get it drippy again!

Crockpot Chicken Taco

Are you ready for the easiest shredded chicken tacos recipe in town? All you need are 4 ingredients and a crockpot to get the most delicious crockpot shredded chicken tacos. Make them for a delicious meal prep chicken meal for the week. Everyone will love them.

It is no surprise that I am a taco girl. One thing you may not know is that I will take shredded chicken tacos over any other type of taco any day. I could also eat shredded chicken tacos in any form. Taco bowl? YEP. Tacos in a hard shell? Sure! Shredded chicken tacos in nacho form? You betcha.

The best part of this slow cooker chicken tacos recipe is that it is so easy to make. No seriously, it is one of the easiest recipes on FFF. Add chicken to crockpot, turn on crockpot, shred chicken, add ingredients, and eat. You can take this shredded chicken and add it to anything your little heart desires.

These crockpot chicken tacos have been one of my go-to meals forever and it is for good reason. Who doesn’t love a taco Tuesday? When I am having people over or need to feed my brother something he loves, these shredded chicken tacos are my first choice.

Ingredients for Shredded Chicken Tacos

  • Chicken breast
  • Garlic
  • Salsa
  • Black beans

Since this is your recipe, feel free to use your favorite salsa. That means it can be mild or spicy. I like to mix it up depending on what mood I’m in. If you tell me this is too spicy, it’s your own fault 😛 JK, but seriously. You get to measure the heat in this recipe which is amazing.

Ingredients

Scale
  • 4 4 oz. chicken breasts, boneless, skinless
  • 1 tablespoon garlic, minced
  • 1 16 oz. jar of salsa
  • 1 15 oz. can black beans, drained and rinsed

Instructions

  1. Place chicken breasts on the bottom of your crock-pot and rub with minced garlic. Cover and turn to high for 2-3 hours or until chicken is fully cooked and tender.
  2. Using two forks, shred chicken and salsa and black beans to crock pot. Mix and cover crock pot.
  3. Let salsa, chicken, and black beans cook for another 5 minutes. Serve in taco shells with your favorite taco fixings.

how to bake eggs in the oven

I have never in my 22 years of life…baked an egg. Ive scrambled, frittata-ed, omeletized, hard boiled, fried, over-easy-ed my eggs…but never straight up cracked an egg and baked it.

This is definitely my new favorite [and healthy] snack.

All you have to do is set your oven to 350F, grease a muffin tin with non stick cooking spray, and crack your eggs into the tin. Then add some flavor with a little shake of salt and pepper. Bake for about 17 minutes and viola.

It has the texture of a hard boiled egg, but you don’t have to deal with peeling the shell off of it. They literally slide right out of the pan. These would be the perfect on-the-go egg sandwich for a quick AM breakfast. I paired mine with leftover roasted sweet potato quinoa, topped with some feta for a meatless, high protein lunch.

I ate this dish cold, but in all honesty…I never reheat anything. I had one of the eggs hot, right out of the oven and it was pretty tasty, but I prefer them cold.

Baked Cheddar Sweet Potato Fritters

Happy Monday my friends! It was another beautiful weekend here in Minnesota. This warm weather is sticking around and I’m not mad about it one bit.

I love sweet potatoes for so many reasons beyond just flavor (cuz that rocks, too!). They’re versatile, good for you, and most importantly– available year round. Did I mention that they are reasonably priced, too? They’re a healthy (complex) carb packed with vitamins A, C, and manganese and I almost always include them in my weekly meal plan! North Carolina is the #1 sweet potato producing state (tempted to move there) and this is where the majority of the US’s sweet potato supply comes from. WOAH. Never been to North Carolina, but now it’s one of my favorite states. 

You only need a few ingredients to make these cute little baked sweet potato fritters that are packed with delicious cheddar cheese, chives, and onion! 

One important small kitchen gadget you will need to use for this recipe is a CHEESE GRATER. No, not to grate the cheese, but to grate the sweet potato itself! It’s really simple to do (see the video above) and this method is going to change your life. Just think of all the amazing sweet potato hashes you’re going to make at home now that you know how to grate sweet potato! 

You know your sweet potato fritters are done when they begin to brown on the sides and top. Don’t forget to dress them up with some Greek yogurt and more chives. SO GOOD..

Ingredients

  • 3 cups shredded sweet potatoes (~1 large)
  • 1 cup shredded cheddar cheese
  • 1 egg, large
  • ⅓ cup flour (any kind…we used white whole wheat)
  • 1 tablespoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 1 cup thinly sliced purple onion
  • ¼ cup chopped chives
  • salt and pepper to taste
  • olive oil, for drizzling

Instructions

  1. First, preheat oven to 400ºF and line a baking sheet with parchment paper.
  2. Peel a large sweet potato and then use a cheese grater to grate sweet potato in order to form a hash. If you have multiple grate sizes on your grater, you’ll want to use the largest one.
  3. Place 3 cups of grated sweet potatoes plus all other ingredients into a large bowl and mix. Don’t be afraid to get messy and use your hands.
  4. Once everything is mixed. Use a ¼ cup scoop to scoop mixture into palms. Press together, squeezing out as much air as possible to create a patty. Place patties on lined baking sheet and drizzle with olive oil. Season with salt and pepper, to taste.
  5. Bake at 400ºF for around 30 minutes or until the tops of the fritters have firmed up and begin to turn golden brown.
  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
