DIY Holiday in a Jar: Cherry Pistachio Energy Balls

Ingredients

Scale

1 cup raw almonds

1 cup pistachio nuts, divided in half

1 cup tart dried cherries (no sugar added please!)

10 medjool dates, pitted

1 teaspoon water

⅛ teaspoon sea salt


Instructions

  1. Place 1 cup of almonds in a high speed food processor and blend until you’ve created a meal.
  2. Next, add dried cherries, medjool dates, sea salt, and water into the food processor and blend for 2-3 minutes or until you’ve created a ball of dough.
  3. Add in ½ cup of pistachio nuts and pulse for 30 – 60 seconds or until the pistachio nuts are chopped and combined with the dough. Remove all contents from the food processor.
  4. Place the remaining ½ cup of pistachio nuts in the food processor and blend until you’ve created a meal. Transfer into a small bowl and set aside.
  5. Using a 1 tablespoon cookie scoop, scoop out dough and roll in between your pals to form a ball. Repeat.
  6. Finally, roll balls in pistachio meal.

How is it already January 4th of 2016? Is it just me or will it take a good 2 months before you stop messing up the date?

If you know me in real life, you know that I take my love for nut butter very seriously. I keep my cabinet fully stocked (we’re talking 8+ variations at all times), I eat it at more than once a day, I travel with it, and I even keep a jar under my pillow. JK on the last one. In all honesty- it is THE PERFECT SNACK. You can spread it, you can dip things into it, you can eat it with a spoon, heck- your dog even likes it. It’s high fat, high protein, and low carb, meaning that it will keep you fuller for longer. Winning.

One of my favorite things to do is make my own nut butter. Why? Because I feel super domestic and I get to use my food processor  I also feel extremely accomplished when it’s all said and done because you literally put sooooo much work into standing there for 5-10 minutes while the almonds get pulverized into a drippy nut butter. In today’s savory almond butter recipe- all you need is 1 ingredient. SRIRACHA ALMONDS. FFF is going on year 3 partnering with Blue Diamond and they’ve legit kept me fully stocked with nuts and almond milk month after month. I never once thought to take a savory flavored almond and turn it into a butter and then it hit me. Major revelation, people.

So that’s right- all you need is Blue Diamond Sriracha Almonds and nothing else. Pop those babies into your food processor and let the magic happen.

Today I am excited to partner with PUR to bring you the ultimate tutorial on how to make the perfect cup of coffee! If you follow me on any form of social media, you know that I drink coffee all day, every day. I like to tell myself that I don’t necessarily rely on the caffeine and that I LOVE THE TASTE. It’s true though, I love the taste of coffee. Mmmm Mmmm!

But in all seriousness, there’s just something about coffee that brings people together. There is nothing like sitting with your bestie with a hot cup of joe just chatting about life. Business meeting? Coffee shop. It’s cold out? Lets get coffee. Too much to drink? Coffee will take the edge off. Can’t quite wake up? Coffee will get you through the day. 

Ok ok, you get my point. The answer is always coffee.

There are so many different ways to brew coffee and my most recent favorite has been the pour over. I am by no means a coffee expert, but I found something that works great for me. According to our research to make the perfect cup of coffee (THANK YOU LINLEY!) you need….

  • Filtered water
  • A Pour over
  • Paper filter
  • Whole coffee beans
  • Coffee grinder
  • Coffee mug

The secret to the perfect cup of coffee when using a pour over is freshly ground coffee beans, hot filtered water, and patience. Oh, and don’t forget about the circular motion when pouring!

Ingredients

  • 3 tablespoons whole bean coffee
  • 3 cups filtered water

Instructions

  1. First, filter 3 cups of water through your PUR Advanced Faucet Water Filter. Then, boil water in a kettle or on the stove top.
  2. Prep filter by running it under water to moisten and placing in the center of your pour over. Place pour over on top of coffee mug and set aside.
  3. Place coffee beans in grinder and grind until coffee is the consistency of course sugar or sea salt
  4. Place coffee grounds on top of filter inside the pour over.
  5. When water is boiling, remove from heat and let sit for 30 seconds.
  6. Pour enough water over coffee grounds to wet all the grounds, then let sit for 30 seconds.
  7. Pour the rest of the hot water over the wet coffee grounds, pouring in a circular motion.
  8. Let coffee drip and enjoy!
  • Prep Time: 5 minutes
  • Cook Time: 5 minutes

Yes. Yes, you read that correctly. Almond Buter + Sea Salt + Dark Chocolate.

HEAVEN.

With the Pinterest success of my first Healthy Peanut Butter Cup recipe…I thought I would give it a mini twist. This recipe is a litte bit different. I didn’t use any coconut oil and I used actual dark chocolate.

It’s pretty simple to make and uses minimal ingredients. Feel free to add a touch of honey or maple syrup to your almond butter if you like it a little bit sweeter.

I filled mine about 3/4 of the way and sprinkled just a few pieces of sea salt on top. It really brings out the chocolately flavor!

It only took about 15 minutes for my cups to harden.

If you eat them right away, the almond butter should still be drippy on the inside. If you let them sit in the freezer for an hour or longer, then the almond butter will be frozen.You should be fine to store them in an air tight container in a dark, cooler place in order to have the almond butter stay melty. I kind of like it frozen though

Ingredients

Scale
  • 1.5 cups dark chocolate (I use dark chocolate disks)
  • 1/4 cup almond butter, drippy
  • 1/4 cup almond meal, all natural
  • sea salt

Instructions

  1. Place dark chocolate in a microwave safe Tupperware container and microwave for a minute. Then stir. Microwave for 20 seconds and stir again. Repeat 2 or 3 times, until all chocolate is melted.
  2. In a medium sized bowl, mix together almond butter and almond meal, set aside.
  3. Line a mini cupcake tin with cupcake liners and fill 1/4 of the way with melted chocolate (note this recipe makes 12).
  4. Then, spoon about a dime sized blob of the almond butter mixture onto the melted chocolate.
  5. Cover the almond butter with more melted chocolate, filling the liner about 3/4 of the way. Last, sprinkle a few pieces of sea salt on top.
  6. Place in freezer for about 15 minutes, or until hardened!
  • Prep Time: 10 minutes

Homemade gifts are the way to my heart. Really- I think the best way to show that you care is by taking some time to make something special for someone you love. If its edible…EVEN BETTER!

Gingerbread Chocolate Chunk Granola

Granola is one of my go to gifts. It takes all of an hour from start to finish to make an entire batch of granola. Plus- it’s much healthier than the store bought kind because you know EXACTLY what is going into the recipe and how much of it.

This granola is spiced with classic gingerbread flavors and has chunks of dark chocolate. I wanted to make sure the base of the granola wasn’t too sweet because when mixed with the chocolate chunks, you don’t need it any sweeter!

I picked up this cute jar at target for like $4.99 and the granola ingredients probably caused me under $5.00 to make. That’s not even a $10.00 gift! Plus- you’ll impress the socks off of the recipient when you tell them its homemade.

I found this cute little bow in the dollar section at Target. No need for wrapping paper when you can simply spice it up with a bow!

Basic Ingredients

  • 5 cups rolled oats, gluten free
  • 5 tablespoons coconut oil, melted
  • 1/3 cup molasses
  • 1/4 cup almond butter, unsalted
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 tablespoon cake spice
  • 1 teaspoon ginger
  • 1/2 to ¾ cup of dark chocolate chunks

How to make Gingerbread Chocolate Chunk Granola

  1. Preheat oven to 350F and line 2 baking sheets with parchment paper. Set aside.
  2. In a large bowl mix together oats, salt, spices, and cocoa powder. Then add in coconut oil, molasses, and almond butter. Start off by using a wooden spoon to mix things together, then to make sure everything is fully coated, use your hands (it’s okay…get down and dirty).
  3. Once everything is fully coated, spread half of the granola on one baking sheet and the other half on the other sheet. Spread out evenly.
  4. Place granola into the oven at 350 and bake for about 20 minutes or until it begins to brown (I suggest checking granola after about 15 minutes and tossing with a spatula).
  5. Let the granola cook for a good 20 minutes, then add in the dark chocolate chunks (note: if the granola is too hot…the chocolate WILL melt).

The Seven Sunday’s story is SO inspirational for a young entrepreneurial foodie like myself. Hannah and Brady, the founders, got the idea to create a Muesli company after a trip to New Zealand. These guys turned out great! They’re super moist and flavorful (So sorry for the miscommunication earlier. I thought bircher was gluten free, but it turns out the bircher is not gluten free because it has rye in it! No worries- make these muffins with the Cherry Vanilla Pecan flavor and you are good to go for gluten free *note this product is not certified gluten free, so if you are extremely intolerant just make note of that)!

There is muesli inside of the muffins which gives them some texture. I also sprinkled some on top for a finishing touch!

Lately I have been making my muffins without a paper wrapping around them and just pour the batter straight into the pan. Make sure you spray with nonstick cooking spray or rub with coconut oil, or you’re going to have a mess on your hands.

I made these the day before I left for Ohio, so I had a big batch of muffins that I didn’t want to waste. I gave some to Sister and Sister Boy and put the rest in the freezer for later so I can enjoy these babies when I get home.

  • -1 cup gluten free flour baking mix (I used the Bob’s Red Mill Brand)
  • -⅓ cup almond meal
  • -1 teaspoon baking powder
  • -1/8 teaspoon salt
  • -1 teaspoon xanthan gum
  • -1/4 cup organic cane sugar
  • -⅓ cup Seven Sunday’s Bircher + more for topping
  • -½ teaspoon cinnamon
  • -¾ cup almond milk
  • -2 eggs, large
  • -1/4 cup Greek yogurt
  • -¼ cup vegetable/canola oil
  • -1 teaspoon vanilla
  • -1/4 cup honey

Instructions

  1. First, preheat oven to 350 F and spray a muffin tin with nonstick cooking spray. Set aside.
  2. In a large bowl, mix together dry ingredients: gf flour, almond meal, baking powder, salt, xanthan gum, organic cane sugar, Bircher, and cinnamon.
  3. Next, add in wet ingredients: almond milk, eggs, Greek yogurt, vegetable oil, vanilla, and honey and mix until combined.
  4. Transfer batter into muffin tin, filling each muffin about ⅔ to ¾ of the way full. Sprinkle with additional Bircher.
  5. Bake at 350 for 21-23 minutes. Do the toothpick test and if it comes out clean, you know they’re done!
