Skinny Chive and Cheddar Sweet Potato Cakes

These savory sweet potato cakes are full of flavor and HEALTHY. This recipe is a great way to use up leftover mash to make sure nothing goes to waste! 

Skinny Chive and Cheddar Sweet Potato Cakes

This is one of those recipes where it changed like 14 times while I was making it. I was originally going to make a sweet potato cauliflower mash….then it morphed into a sweet potato cauliflower mash waffle (which didn’t work), which then changed into a cake.

That worked and it tasted fab!

The backstory of this recipe, is that I wanted to make a creative “mashed potato recipe,” but also wanted to provide a way to use the leftover mashed potatoes in a unique way. Hence the cakes!

This waffle idea was terrible. Just terrible. I pretty much had to soak my waffle maker in order to get it clean. #dontryitathome

The cakes…well those rock!

At this point- you’ll add an egg, some cheese, chives, and more spices. 

The egg is essential. It’s what will hold everything together when it’s pan frying. Veganites- I don’t know what to tell you.

Now it’s time to pan fry. I used about 1/4 of a cup of batter per cake. Fry fry fry, flip, flip, flip.

This is kind of a time consuming recipe, but totally worth it in the end.

My cakes were topped with Greek yogurt (you can sour cream), more chives, cheese, and a sprinkle of paprika.

Now that’s how leftover mash is made into a delicious cake of heaven.

I’m sure you are wondering why I’m calling them “skinny.” Well- I used half cauliflower for a lower cal/carb option.

I’m like a super boring old lady and am not “going out” for Halloween. BUT- I did post an orange recipe today

Basic Ingredients

  • 1 head of cauliflower
  • 1 large sweet potato or yam
  • 2 tablespoons of butter
  • ½ cup almond milk, or any kind of nut milk, unsweetened
  • salt and pepper to taste
  • 1 egg
  • 1 cup cup cheddar cheese, shredded
  • ~1/4 cup fresh chives, minced
  • ¼ cup tablespoons oat flour
  • Toppings: nonfat Greek yogurt, j

How to make Skinny Chive and Cheddar Sweet Potato Cakes

  1. First, begin by steaming cauliflower. Place the florets into a large pot with a few inches of water on the bottom. Cover and bring to a boil. Turn down to medium and let steam for about 5 minutes or until you can pierce easily with a fork.
  2. While the cauliflower is steaming, cook your sweet potato. Pierce a few times with a fork and then microwave for about 3-5 minutes or until you can easily pierce with a fork. NOTE: I decided to keep the skin on, but feel free to peel the skin before microwaving.
  3. Drain cauliflower from as much water as possible and transfer the into a large food processor. Cut sweet potato in half and then in half again and place in food processor as well.
  4. Add in about ½ cup of almond milk, salt and pepper to taste, and butter, and process until combined. You may need to stop a few times to scrape the sides. It should be very similar to mashed potato consistency. Place in a large tupperware or bowl and into the refrigerator to let cool.
  5. Once cooled, prepare your cakes by adding in an egg, cheddar cheese, chives, and oat flour. This should thicken up the consistency of the mash a little bit.
  6. Using a ¼ cup scooper, create a ball in your hand and then mash into a cake.
  7. Heat a nonstick pan to medium heat and spray with nonstick cooking spray.
  8. Place cakes onto pan (I did three at a time) and let cook for about 2 minutes or until golden brown, covered. Flip cakes and let cook for an additional 2 minutes, covered.
  9. Top with nonfat Greek yogurt, jalapeños, cheddar cheese, and a sprinkle of paprika.

Davida and share a lot of things in common. We both have curly hair, have roots tied to Minnesota, take naps almost daily, and rarely wear a bra (when you work from home, it just happens). We also share an intense love for cornbread. Blake and Curt…watch out. You might get swooped by this cornbread recipe. 

Cornbread croutons are SO EASY TO MAKE! Best part is- you can use leftover cornbread to make the croutons….cough, Thanksgiving. Because let’s face it, it would be a giant SIN if you threw out the leftover cornbread after Thanksgiving. Just saying.

Gluten-Free Cheesy Cornbread Croutons

For this recipe- I used my favorite gluten-free cornbread mix from Bob’s Red Mill. It’s the same stuff I use for my quinoa cornbread recipe. Feel free to follow the directions on the back of the box…I however switched things up a little.

I used coconut oil instead of butter and almond milk instead of dairy milk. I also added some cheddar cheese for a sharp flavor

What you do is bake your cornbread. Then, you let it cool and slice it into 1-inch cubes. Back into the oven it goes, flip the croutons once..and then….

Confession time: I told myself I wouldn’t eat any bread until Thanksgiving due to our pita bread overload in Israel…that was a major fail. I’ve been back for 3 days….

Oh well

Please tell me you have a cornbread obsession! 

Basic Ingredients

  • 1 package of Bob’s Red Mill Gluten-Free Cornbread Mix
  • 1.75 cups of unsweetened almond milk (or any kind of milk)
  • 2 eggs, large
  • 1/3 cup coconut oil, melted
  • 1/2 cup of cheese (I used cheddar, but feel free to use a dairy-free cheese to keep it lactose-free!)

How to make Gluten-Free Cheesy Cornbread Croutons

  1. First, preheat oven to 375ºF. Then, rub a 12 x 9 baking dish with coconut oil (I used a 9×9 and a bread pan because my 12 x 9 was in the dishwasher!). Set aside.
  2. Next, place all ingredients in a large bowl. Mix until smooth. The batter should be thick.
  3. Transfer batter onto baking dish and evenly spread. Sprinkle with additional cheese on top.
  4. Bake at 375ºF for 25 minutes. Then, remove and let cool completely.
  5. Once the cornbread has cooled, cut into 1-inch cubes. Then, spread evenly on a baking sheet.
  6. Preheat oven to 400ºF and bake for 15 minutes. Remove and flip croutons. Bake for another 8 minutes or until the croutons begin to brown and are crunchy.

Gluten-Free Tuscan Turkey and Vegetable Soup

This Tuscan Turkey Vegetable Soup is the perfect recipe for post-Thanksgiving leftovers! It’s jam packed with vegetables and lean protein.

Time and time again I get asked…Lee, what do you use as inspiration for creating recipes on Fit Foodie Finds? My answer: EVERYTHING AND ANYTHING! Pinterest is a huge inspiration, as well as magazines and restaurants. What inspires me most are usually ordinary things for example the color combination on this Nakano Roasted Garlic Rice Vinegar Bottle. 

Purple + Green + Orange.

I knew I wanted to make some sort of soup incorporating Thanksgiving turkey leftovers, but what else should I include! I headed to the store to see what I could find using colors from the bottle.

Uhhhh purple potatoes anyone?! These things are GORGEOUS and full of flavor. I decided on a veggie packed soup with my favorite Italian seasonings and of course a few splashes of Nakano rice vinegar to really bring out the flavor of the veggies.

This soup features…

  • Kale
  • Garlic
  • Purple Potatoes
  • Carrots
  • Celery
  • Yellow Onion
  • White Beans
  • TONS of spices

PS: the roasted garlic flavor from Nakano is one of my favorites. I was at Target the other day and saw that they now carry that flavor. SCORE! The more garlic the better.

Gluten-Free Tuscan Turkey and Vegetable Soup

Hearty and delicious, just the way I like my soup! 

I even used some of my Gluten-Free Cornbread Croutons to top it off and add some texture. I could eat this soup all day every day! Best part is- you can totally mix up the meat if you’d like…you can use leftover chicken breast or you could even sauté some chicken or Italian sausage for a spicier variation!

I haven’t personally tried freezing this soup, but I have no doubt you could throw it in some freezer safe tupperware and freezer for later. This soup really does make for an easy dinner down the road!

Basic Ingredients

  • 4 celery stalks, chopped
  • 4 medium carrots, chopped
  • 1/2 large onion, diced
  • 6 small purple/red potatoes, chopped
  • 1 15 oz can northern white beans
  • 2 stalks kale, deboned and chopped
  • 3 cups of leftover turkey (white meat), chopped into bite-sized pieces
  • 1 tablespoon garlic, minced
  • 2 tablespoons EVOO
  • 2 bay leaves
  • 2 teaspoons tuscan sunset or italian seasoning
  • 2 teaspoon basil, dried
  • 2 tablespoon fresh parsley, finely chopped
  • salt and pepper, to taste (I was very generous!)
  • 48 oz chicken broth, low sodium
  • 2 tablespoons Nakano Roasted Garlic Seasoned Rice Vinegar

How to make Gluten-Free Tuscan Turkey and Vegetable Soup

  1. First, begin by prepping your vegetables. Chop celery, carrots, and potatoes into bite sized pieces, finely dice your onion and, de-stalk your kale and chop into small pieces.
  2. Next, in a large pot, heat 2 tablespoons of EVOO and 1 tablespoon of garlic to medium/high heat. Add in celery, carrots, and potatoes, season generously with salt and pepper and sauté for about 8-10 minutes to slightly soften veggies. Then, add in kale and sauté for about 3 more minutes.
  3. Chop turkey into bite sized pieces and add into pot. I used about 2-3 cups (just use what you have!).
  4. Add in the rest of your ingredients: white beans, spices, chicken broth, and rice vinegar.
  5. Bring to a boil. Then let simmer for about 30-60 minutes or until your veggies have softened.

One of my new favorite things to keep on hand is sun dried tomatoes in either whole form or paste. It’s SO GOOD and I put it on everything! Lately I’ve been getting requests for easy lunch/snack ideas. A lot of the time, I whip together delicious combos like this one, but they never make it on the blog because they are oh-so simple!

I thought I would share an all-time favorite with you today because these flavor combos rock my world and it reminds me of Summertime when I was a kid. I feel like this is the perfect thing to serve your kiddos while their at home keeping themselves busy all summer! 

Perfectly balanced and perfectly portioned. Plus, super cute!

In addition to turkey, provolone, and sun-dried tomato paste (the main stars), I added some spinach and some extra basil leaves I had laying around. The greener the better, people!

That’s the beauty about lunch in general, folks. You pretty much just throw together anything you have in your fridge and call it a day. At least that’s what I do!

  • 1 cup spinach, not packed
  • 1 slice provolone cheese, halved
  • 2 slices turkey
  • 1 large tortilla (I used a whole wheat/spinach blend)

How to make Sun-Dried Tomato Turkey Roll-Ups

  1. First, spread 2 tablespoons of sun-dried tomato paste on your tortilla. Then, top it with turkey slices and cheese. Finally add on fresh spinach and basil leaves. Roll up, slice, and enjoy!

This vegetarian brown rice bowl is packed with superfoods and an easy meal prep idea to make a week’s worth of lunches!

 As a food blogger, I get asked quite often what I eat in a day’s worth of work. 

Yeah…. about that. Most of the time I am eating what I’m cookin’ for FFF (and yes that could mean a Double Chocolate Paleo Brownie…or 2 for lunch). One thing I do know, is that if I have something prepped…I will eat it. 

That’s why I really do try and take the time to prep a whole bunch of roasted veggies, a whole grain, and sometimes chicken breasts or another meat if we have time to grill on the weekend!

I try my best not to waste any food that I purchase, by creating some sort of meal plan. This usually goes hand-in-hand with what I’m posting on FFF. Did you know…….

Sunday Posts are usually a healthy dinner (one-pot, crock-pot, etc.).

Tuesday Posts are a healthy breakfast or dessert.

Friday Posts are a snack or EASY recipe.

My Sunday posts are usually prepped over the weekend because they make the most servings and I can have some leftovers for throughout the week. Tuesday/Friday posts are prepped during the week because well…that’s when I put in most of my work hours 😀

I also try and keep recipe creation and photo shoots to just 1 or 2 days a week, instead of wrecking my kitchen 5 days per week. Sometimes I can hammer out 3 recipes, depending on the difficulty of the recipe and lighting for the photo shoot.

remember when I didn’t follow a posting schedule for FFF. Man was that stressful. It also ruined my eating groove. 

Having some sort of post schedule has really helped me with organization and goal setting. It’s also helped me create consistency with FFF.

However- I’m not really sure if readers notice that I post recipes on Sundays, Tuesdays, and Friday with an occasional workout every other Thursday.

Back to tha food.

I’ve become a HUGE fan of short grain brown rice and that’s pretty much all I ever buy these days. It’s chewier and more dense than normal brown rice. You should definitely try it if you haven’t!

For the roasted veggies- I used a mixture of what I had in my fridge at the time…sweet potato, onion, broccoli. On the side is a big grass glob of roasted red pepper hummus (not homemade) with some hemp seeds on top and broccoli sprouts on the side.

What you need for Vegetarian Brown Rice Bowl

  • EVOO
  • garlic, minced
  • large potato
  • yellow onion
  • broccoli florets

Vegetarian Brown Rice Bowl

Ingredients

Scale
  • For the Roasted Veggies:1-2 tablespoons EVOO
  • 1–2 tablespoons of garlic, minced
  • 1 large sweet potato
  • ½ medium yellow onion
  • ~4 cups of broccoli florets
  • salt and pepper, to taste
  • 1 teaspoon italian seasoning
  • For the Bowls:1 cups brown rice, cooked
  • ¼ cup roasted red pepper hummus
  • ¼ cup sprouts
  • 1 teaspoon hemp seeds

Instructions

  1. First, preheat oven to 375ºF and line 2 baking sheets with tin foil. Then, drizzle on about 1 tablespoon of EVOO onto each pan.
  2. Prep veggies, by cutting into bite-sized pieces. Then, spread onto pans, tossing in EVOO. Drizzle with more EVOO if you’d like.
  3. Sprinkle on minced garlic, salt and pepper, and italian seasoning (all to taste).
  4. Roast at 375ºF for 30-35 minutes or until the sweet potatoes are tender enough to pierce with a fork.
  • Prep Time: 10 minutes
  • Cook Time: 35 minutes

Summer Asian Noodle Salad

I have been a long time P.F. Chang’s restaurant lover, so when I got an email from this brand I was really excited to work with them. Every time I go to P.F. Changs, I start with the Chicken Lettuce Wraps and then move onto my all-time favorite main course: Beef with Broccoli. You can’t go wrong.

The head chef at P.F. Chang’s created an entire new Summer Seasonal Menu with all sorts of new ingredients including, avocado, quinoa, shallots, carrots, cilantro, etc. Today’s recipe was inspired by just that. I created my own P.F. Chang’s inspired Summer Recipe using a few of the new ingredients on their list.

Summer Asian Noodle Salad

I was going to try and incorporate quinoa, but when I saw these brown rice noodles, I had to go for a noodle bowl. This bowl is actually mostly raw and served cold, but PERFECT for summer. I also made peanut sauce dressing for the first time…easier than you’d think!

  • shredded purple cabbage
  • shredded carrots
  • chopped red pepper
  • shallots
  • cilantro
  • peanut butter
  • water
  • garlic
  • soy sauce

You know me, I love cold food. I am excited to be eating some leftover salad for lunch today. Mmm Mmm!

Ingredients

Noodle Bowl

  • 3 servings (or 6-8 ounces) of brown rice noodles (I used pad thai), cooked
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1  cup chopped red pepper
  • 1/2 cup shallots
  • 1/3 cup cilantro

Sauce

  • 1/4 cup smooth peanut butter
  • 1/3 cup water
  • 1 teaspoon garlic
  • 2 tablespoons soy sauce

Instructions

  1. Begin by cooking your brown rice noodles. Following the directions on the box. Once fully cooked, transfer to a tupperware and chill in the fridge.
  2. Next, Prepare you veggies. I purchased my carrots and cabbage pre-shredded, but if you didn’t begin by shredding and place in a large bowl. Next, chop shallots and cilantro and mix in with rest of veggies. Set aside.
  3. Prepare your sauce by heating 1/4 cup smooth peanut butter with 1/3 cup water, 1 teaspoon garlic, and a few tablespoons of soy sauce over medium/high heat. It may look like the sauce is curdling, but give it a few minutes, it will smooth out. Once your sauce is smooth, take off heat and set aside.
  4. Finally, mix together chopped veggies with cooled noodles. Then, pour sauce on top and toss. Serve chilled.
