Healthy Orange Sesame Chicken

I think I finally created my new favorite Asian dish. It calls for simple ingredients, a whole lotta flava, and a double thumbs up from Blake! …I got the “THIS IS THE BEST THING YOU’VE EVERY MADE” statement from him. #winnerwinnerchickendinner 

Healthy Orange Sesame Chicken

The sauce has SO MUCH FLAVOR and I can’t even believe how little ingredients were involved. I had a little OMG moment when I realized I didn’t have cornstarch to thicken the sauce(which I ended up finding in my cabinet 2 days later), but was able to substitute flour just fine. I felt like a scientist. 

The base of the sauce is fresh squeezed orange juice. Freshly squeezed out of the oranges is kind of necessary. Plus- then you get to eat the pulp for a snack while your making dinner The sauce also calls for a few tablespoons of soy sauce (gluten free), white rice vinegar, ginger, and honey. 

Healthy Orange Sesame Chicken

I’ve never tossed my chicken breast in flour before browning and baking, but I love the texture it created. It also helped the chicken absorb the sauce better. I used Bob’s Red Mill Gluten Free Flour Mix, but feel free to use any kind or brand. You just need a light coating on the chicken before browning both sides on the stove.

Healthy Orange Sesame Chicken

To brown- you just heat a tablespoon or two of EVOO to medium/high heat and cook both sides for about 4 minutes or until golden brown. Then they go into a square baking dish, topped with your fresh orange sauce, and into the oven for about 20 minutes.

It will look like there is a whole lot of sauce…almost like your chicken breasts are taking a bath. But this is going make your chicken extremely flavorful. You may also notice that your sauce is pretty runny, things will thicken up in the oven, I promise!

Ingredients for Healthy Orange Sesame Chicken

  • oranges
  • soy sauce
  • white rice vinegar
  • honey
  • ground ginger
  • chicken breast
  • flour (I used gluten free)
  • corn starch or flour (to thicken sauce, I used flour)
  • EVOO
  • sesame seeds

Once your chicken is done. Let sit for a few minutes, slice, and top with additional sauce (which should thicken even more if you let it sit after baking), then sprinkle on some sesame seeds. 

I paired my chicken with a a simple Orange Sesame Kale Salad and Coconut Sticky Rice —> both of these recipes are below.

Ingredients

Scale
  • 3 oranges (juiced)
  • 3T soy sauce (gluten free)
  • 2T white rice vinegar
  • 2T honey
  • 1/2 teaspoon ground ginger
  • 4 large chicken breast
  • 1/4 cup flour (I used gluten free)
  • 1 tablespoon corn starch or flour (to thicken sauce, I used flour)
  • 1 tablespoon EVOO
  • 1 tablespoon sesame seeds

Instructions

  1. First, preheat oven to 375F. Next, in a large sauce pan, heat 1 tablespoon of EVOO to medium heat.
  2. Prep chicken breast by rubbing both sides with gluten free flour. Once the oil is hot, place chicken breast into pan and brown both sides. I cooked each side for about 4-5 minutes (covered), just enough so that the chicken breasts turned golden brown.
  3. While the chicken is browning, prepare sauce. Mix the juice from 3 oranges (or ½ to ⅔ cup orange juice), soy sauce, white rice vinegar, honey, and ginger. Then, add in about one tablespoon of flour (or cornstarch), and dissolve with a fork (note: it WILL thicken up as it heats in the oven).
  4. Once the chicken is done browning. Transfer to an oven safe dish. Then, pour sauce over chicken and bake at 375 for about 20 minutes.
  5. When the chicken is done cooking, remove from baking dish onto a plate. Let sauce sit for about 5 minutes (so it can cool) and pour additional sauce on top of chicken. Sprinkle on sesame seeds. Serve with coconut rice and citrus kale salad (recipe below).
  • Prep Time: 10 minutes
  • Cook Time: 45 minutes

I took your advice from the last time I used kale in a recipe, and cooked my kale in EVOO for a few minutes, and then massaged the rest of the dressing into it in order to get some of the tartness out and make it more digestible.

Citrus Sesame Kale Salad

Ingredients

Scale
  • 5 cups of chopped kale (washed and patted dry)
  • juice from ½ orange or about ¼ cup
  • 2 tablespoons EVOO
  • 1/2 cup carrots, minced and raw
  • 1 tablespoon sesame seeds

Instructions

  1. Begin by washing and patting dry kale. Next, finely chop the kale, removing the stem if desired. Set aside.
  2. In a large sauce pan, heat 1 tablespoon EVOO to medium heat. Place chopped kale on pan and sauté for about 2-3 minutes, just enough so that the kale because a darker green and is more flexible. Remove from heat, place in a large bowl and into the refrigerator to cool for about 30 minutes.
  3. Once the kale is cooled, add in about ¼ cup of orange juice, a tablespoon of EVOO, and ½ cup minced, raw carrots. Toss lightly. Finish off with a tablespoon of sesame seeds.

As for the Coconut Sticky Rice. SO SIMPLE! 1 cup of rice + 1 cup of coconut water (I used a full fat can and used only the liquid part) +  1 cup water + 1/4 cup unsweetened dried coconut. Really perfected this entire dish.

Not to change the subject abruptly, but Blake and I are actually headed to Texas tomorrow for “Spring Break.” Blakester works full time, but is also in a part time MBA program and has a week off of school. Coincidentally, so do his little sisters. So? We are going to Lake Texoma (on the Texas/Oklahoma border) for the week! Blake grew up in Kansas and will fish/hunt at any chance he gets. Well- we are going to have a full 6 days of fishing and sunshine. The weather is suppose to be in the mid/upper 60’s and we will be near a National Preserve with lots of trails. I am just pumped to be away from work for a bit and to get some Vitamin D!

So my question for you is- has anyone ever been to or near Lake Texoma? Texans- I’d love some foodie recommendations!

So,last week Blake spent the entire week visiting his family in Kansas. I stayed back in the cities GSD. And get shit done is what I did. I realized a few things. 1. I work a lot. 2. I work a lot. and 3. I lovvvvvve the show House. Blake and I started watching LOST (or re-watching because I’ve seen most of them) a few weeks ago, and I decided to be a big girl and wait to watch those episodes with him. Thus- I started watching House. House is one of those shows that can turn any frown upside-down. It reminds me of my family…all 5 of us, because we used to watch it together as a family way back when. Plus- I have a slight older man crush oh Hugh Laurie. I love the story line and most of all, I love the raunchy humor. Any other House fans out there?!

Long story longer, I realized that I work a lottttt especially when the Bster isn’t home. The first thing I do when I get up is grab for my phone and then I make me the coffee and then the oats. Then, I get right to work! I pretty much only break to workout and then I stop when I realize I need to go to bed. 

And wow 2 giant paragraphs later I realize this is just a pity fest. Enough!

So I feel bad that Blake didn’t get to try any of this recipe. He would have love love loved it! We both have a thing for Asian food. This recipe is actually inspired by one of the dishes we had on the cruise last month! We went all the way to the Carribbean to eat Asian food

I love that this dish mixes spicy and sweet all in one. It’s also great that you can modify the heat. Just add more sriracha or chili paste if you like it hot hot hot.

This makes for a great afternoon snack…just like on the ship…when Blake was on the 10 meals a day plan. Ohhhhhh the all you can eat buffet.

  • chicken breasts
  • garlic
  • sesame oil
  • green beens
  • coconut aminos
  • sriracha
  • chili paste
  • honey
  • salt and pepper, to taste
  • sesame seeds
  • optional: crushed peanuts/cashews

For you paleo frands out there…this recipe is paleo-friendly! Minus the brown rice of course. Idea. What you could do is make it with my Paleo-Fried Rice. Yes, yes. That would be a great idea. 

Speaking of paleo friends. There were some great meat-filled options on the ship as well! The carnitas were TO DIE FOR. And all the fresh fish in the restaurants was finger-lickin’ good, cooked to perfection.

Ingredients

Scale
  • 3 large chicken breasts, thinly sliced
  • 2 tablespoons of garlic, minced
  • 2 tablespoons sesame oil
  • 1 – 1.5 pounds of green beens
  • 2 tablespoons coconut aminos (or soy sauce <– not paleo)
  • 1 tablespoon sriracha
  • 1 tablespoon chili paste (or more, to taste)
  • 1 tablespoon honey (or more, to taste)
  • salt and pepper, to taste
  • 1 teaspoon sesame seeds
  • optional: crushed peanuts/cashews

Instructions

  1. First, prep chicken by seasoning with salt and pepper and slicing it into thin, bite-sized pieces. Set aside. Then, prep the green beans but cutting off both ends. Set aside. Prep stir fry sauce by mixing together coconut aminos, sriracha, chili past, and honey in a small bowl. Set aside.
  2. Next, place 1 tablespoon of sesame oil and 1 tablespoon of minced garlic in a large sauce pan or wok. Turn to high medium/high heat.
  3. Add in chicken and sauté for about 5 minutes, or until partially cooked. Remove chicken and set aside.
  4. Place another tablespoon of sesame oil and minced garlic in the pan and turn to high heat. Add in green beans and sauté for about 5-7 minutes or until they begin to soften. Add in the chicken and continue to cook for 5ish more minutes or until the chicken is cooked all the way through.
  5. Once chicken is cooked, add in stir fry sauce and reduce heat to low/medium and let cook down for a few more minutes.
  6. Add in sesame seeds and let sit for at least 5 minutes so that the sauce can thicken a bit more. Serve hot.
  • Prep Time: 5 minutes
  • Cook Time: 15 minutes

Healthy Thai Coconut Quinoa Bowls

Not sure if it’s a good or bad thing that I’ve lost track of what day and time it is. Not to mention, I’m still going strong writing 2015 on everything. Remember when you were in high school and you had all summer to dick around and it never really mattered what time or day it was? Those were the days. It’s the same notion that my days and times are fusing together, but it’s real life and I actually have a job. I can safely say that for my job late winter and spring is just absolutey crazy! Between new partnerships, travel, and prepping for new projects…I’ve been working a lot. Mucho working.

Good news is- I’ve learned that hard work deserves hard play. Yes, I said learned. What’s the point if you don’t play hard after you’ve worked hard?

Ingredients


  • Roasted Veggies

    1 large sweet potato, diced

    2 cups carrots, diced

    1 tablespoon minced garlic

    2 tablespoons EVOO

    salt and pepper, to taste

    Purple Cabbage Slaw

    1 cup purple cabbage, finely chopped

    1 cup edamame

    1 small red pepper, diced

    2 tablespoons EVOO

    1 lime, juiced

    1 tablespoon maple syrup

    ¼ teaspoon garlic powder

    ¼ teaspoon ginger powder

    ¼ teaspoon dried orange peel

    Toppings

    peanut butter

    peanuts

    fresh cilantro



Instructions

  • Place diced vegetables on a baking sheet and drizzle with EVOO. Then, add in minced garlic and season with salt and pepper. Toss. Roast at 400ºF for 25-30 minutes or until you can pierce the veggies with a fork.
  1. Place purple cabbage, edamame, and red pepper in a bowl. Set aside. Make your dressing by whisking together EVOO, lime juice, soy sauce, maple syrup, ginger, garlic, and dried orange peel. Then, toss veggies in dressing.
  • Prep Time: 15 minutes
  • Cook Time: 30 minutes

Maple Apple Caramelized Salmon

I am really excited about today’s post and recipe. I LOVE FISH…especially salmon. Sizzlefish is a home delivery supplier of pre-portioned, highquality seafood items. Which they actually specially developed for athletes. 

All of Sizzlefish’s fish (tongue twister much?) is pure and untreated. They flash freeze their items and portion each size out, which I love! I was send a giant box filled with a variety of fish called the Omega 3 Protein Mix (including: Caho Salmon, Atlantic Salmon, Sablefsh, Rainbow Trout, Catfish, Atlantic Cod, and Haddock). In today’s recipe I used the Caho Salmon because I was struck by the gorgeous color. Per serving it’s only 119 calories with 25 grams of protein. ZING.

Maple Apple Caramelized Salmon

Holy caramelization. Have you ever caramelized your fish? This recipe has the most amazing flavor and uses very seasonal ingredients: maple syrup and apple butter.

I started off by thawing 2 filets. I told myself I WOULD NOT OVER DEFROST THEM….but it happens every time. Then, I prepped my glaze: 1T maple syrup, 1T turbinado sugar, 1T apple butter, and about 1/2t salt.

I spooned the glaze right on top of my salmon and waited for my burner to heat up! Sizzle sizzle. The key to this recipe is pan frying for a minute on each side and then sticking it in the oven at 400 to finish it off!

  • frozen Sizzlefish Salmon Filets
  • maple syrup
  • turbinado sugar
  • apple butter
  • salt
  • olive oil

Look at how gorgeously colored this fish is! I can’t get over it. Also love the nutrition facts that come along with fish. Not only s salmon high in Omega 3 fatty acids, but extremely high in protein.

Per filet: 214 calories | 9g fat | 16g carbs | 25g protein | 15g sugar

  • 2 frozen Sizzlefish Salmon Filets, defrosted
  • 1 tablespoon maple syrup
  • 1 tablespoon organic turbinado sugar
  • 1 tablespoon apple butter
  • 1 teaspoon salt
  • 1/2 tablespoons olive oil

Instructions

  1. First, preheat oven to 400F. Next in a large nonstick skillet, heat up about ½ tablespoon of EVOO to medium heat.
  2. Next, prepare your glaze. In a small bowl, mix together maple syrup, organic turbinado sugar, apple butter, and salt. Then, spread glaze on top of defrosted fish filets.
  3. Once the EVOO is heated, place fish onto pan skin-side down. Cook for about 1 minute, then flip (this is where the nonstick will come into play later). Cook for another minute and flip again. Sprinkle on a little more turbinido sugar, salt, and pepper to taste.
  4. Place the entire skillet into preheated oven and cook for about 10-12 minutes. (*****Make sure your skillet does not have rubber on it…I’ve learned the hard way, twice)

This weekend I picked up a package of Gold n’ Plump ground chicken with some nice, juicy chicken burgers in mind. I love supporting Minnesota-based companies, even if that means spending a little extra dough!

Chicken burgers are relatively easy to make. All you need is some ground chicken, spices, and veggies (if you wish). You mix everything together, then roll into balls, and smash down into patties. I am always worried about the grill part, but Blake does a great job!

His trick is to throw a piece of tin foil down onto the grill and spray with some nonstick cooking spray.That way, you don’t risk your burgers falling apart! Plus- it makes for really easy clean up at the end

Along with the chicken burgers, I picked up 2 new products from Trader Joe’s that I haven’t tried yet. Their whole wheat buns and Cilantro and Chive  Yogurt Dip. Obsessed with the dip. It is absolutely delicious with crunchy rice crackers or carrots. So delicious that I decided to spread some on my bun. Best idea ever!

If you like tzatziki sauce…then you will love this!

Cilantro Chicken Burger

Cilantro Chicken Burger

Ingredients (gluten free minus the bun!)

  • 1 pound ground chicken
  • 1/4 cup yellow onion, diced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon cumin
  • 1/3 cup fresh basil, chopped
  • 1 egg
  • 4 whole wheat buns
  • 2 avocado, ripe
  • 1/2 red onion, sliced
  • handful of spring lettuce
  • cilantro and chive yogurt dip

Method

  1. First set aside a large plate with a piece of aluminum foil on top, lightly sprayed with non-stick cooking spray. Then, preheat grill to 350F.
  2. In a medium sized bowl, mix together ground chicken, spices, cilantro and egg. I used my hands to make sure things were thoroughly mixed. Separate into 4 equal parts and roll into a ball. Things may seem a little wet, but this is okay! The egg will help it all stick together.
  3. Place balls of meat onto plate and press down with fingers. My patties were about an inch thick.
  4. Transfer aluminum foil onto grill, and grill each side for about 5 minutes or until cooked all the way through.

Southwestern Chicken Casserole

What’s awesome about this recipe, is that it reminds me of one GIANT Chipotle burrito bowl.

This recipe calls for extremely simple ingredients and doesn’t take much work to make. Best part…it’s full of flavor!

I topped mine with freshly sliced tomatoes, avocado, and more cilantro! Blake was really excited I used instant white rice instead of brown (wahhhhhhh), but that’s all we had. Next time- I would FOR SURE use brown rice…the only issue with that, is you would have to cook it before hand so that it’s fully cooked when the casserole is done.

Ingredients for Southwestern Chicken Casserole

  • rice (white or brown will work)
  • onion
  • corn, rinsed
  • black beans
  • chicken breasts
  • salsa
  • cilantro, chopped
  • paprika
  • chili powder
  • cumin powder
  • onion powder

You could add other yummy things into this casserole such as bell pepper and garbanzo beans. I kept mine simple…because that’s what I had on hand at the time.

We’ve been running our food stock down to the ground because Blake and I will both be traveling over the next couple of weeks. He actually left for Brazil yesterday for 2 weeks as part of his MBA program. I AM SO JEALOUS. LIKE SO BEYOND JEALOUS. Spouses were not invited and going down a week before or after wasn’t really an option because flights are 2 grand.

Soooooooooo I go to Cleveland to visit the parents. Cleveland..Brazil….same thing.

NOT.

But- later in the week I will be headed to Ohio to stay with my parents for a week. I’ll be working mostly- but also feeding their bellies! That’s the cool thing about what I do- I can pretty much be anywhere, as long as people are hungry

Blake and I ate this for almost 3 days…he said it got better as time went on….my kinda guy! This would be really taste inside of a tortilla or even with an egg.

Southwestern Chicken Casserole

Ingredients

Scale
  • 1.5 cups quick cooking rice (white or brown will work)
  • 2 cups chicken broth
  • ¼ cup finely diced onion
  • 1 15 oz can corn, rinsed
  • 1 15 once can black beans, rinsed
  • 2 large chicken breasts evenly sliced about an inch thick (uncooked)
  • 1.5 cup salsa (mild, medium, or hot- your choice!)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon onion powder
  • Optional- ½ cup Colby Jack Cheese
  • Toppings: Shredded Colby Jack Cheese, fresh tomato, avocado, cilantro

Instructions

  1. Preheat oven to 350 and spray a large baking dish with nonstick cooking spray.
  2. In a large bowl, mix together everything but the chicken (you can add ½ cup of cheese if you are a cheese person, I did not do this step).
  3. Then, slice chicken breasts into about inch thick pieces. Place strips of chicken (uncooked) on the bottom of baking dish and top with rice mixture. Cover with aluminum foil and bake at 350 for 1 hour.
  4. Uncover and top with shredded cheese. Bake for an additional 10 minutes.
