FUN FACT- My Dad used to call me spud as a kid. As a family, we had a favorite restaurant in town (New Berlin Family Restaurant <— I grew up in New Berlin, WI) and I would order (I kid you not):

  • A Baked Potato
  • Hash Browns
  • And steal my sisters fries

The day I learned POTATOES WERE BAD FOR YOU was like the worst day ever. Then I did some researched and realized, okay they aren’t THAT bad. It’s really what you do with them and what you top them with.

Insert —> Crock-Pot Turkey Chili.

Guys.

Top your taters with something protein and fiber-filled and it will cancel out the starchiness of the potato. Uh…I think.

That’s what I do at least! I also top it with some plain Greek yogurt, a sprinkle of low fat cheese, avocado and about a cup of salsa (not pictured). 

You could also do this with sweet potatoes if that is your jam. I had to go classic this time, because a good baked potato every once in a while never did any harm!

Ingredients

Scale
  • 1 lb. Ground Turkey, extra lean
  • 2 cans Diced Tomatoes
  • 1 can Black Beans, rinsed and drained
  • 1 can Kidney Beans, rinsed and drained
  • 1 can White Beans, rinsed and drained
  • 1 small can Tomato Paste
  • 1 small can Green Chilis
  • 3 tablespoons Chili Powder
  • 1.5 teaspoons Paprika
  • ½ tablespoon Cumin
  • Salt and Pepper, to taste
  • 8 Medium-sized baked potatoes
  • Plain Greek yogurt
  • Avocado
  • Salsa
  • Low-Fat Colby Jack Cheese

Instructions

  1. Place all of the chili ingredients in your crock-pot and mix until combined. Turn to low and let cook for 8 hours OR turn to high and let cook for 4-5 hours.
  2. For the baked potatoes, you can either nuke them for 3-5 minutes each, or follow THESE DIRECTIONS on how to do them in the oven.
  3. Top with Greek yogurt, avocado, more paprika, cheese, and salsa!

Gluten-Free Asian-Style Pork chop

Make these Gluten-Free Asian-Style Pork Chops for a healthy, weeknight dinner that the entire family will love! 

So you know how I got a Costco membership last week…well I was SUPER impressed with their organic/free range meat selection. I am a huge fan of purchasing any kind of food in bulk because it will save you money in the long run. We’re talking $7.99/pound for organic bison and $5.99/pound for organic beef. 

I went home with an 11 pound pork loin that I paid $27.00 for. The best part is, we cut the loin into 26 thick pork chops making it each just just over $1.00/pound. Talk about an amazing deal.

After we cut the loin into chops, Blake and I seasoned or marinated them in sets of 4 or 5 and put them right into a freezer bag and into the freezer for later. That will make for easy and inexpensive dinners down the road. I left 5 amazing chops out just for this recipe!

I wanted to make a juicy marinade for our first batch of chops with an Asian-inspired twist. This is where the hoisen, garlic, and tamari come in.

I (aka Blake) poked holes in the pork chops and then poured the marinade on top so that they could sit overnight and soak in all the delicious Asiany goodness.

The beauty of shooting a recipe on the weekend means that I don’t have to attempt to get a pour shot on my own. Maybe next year I’ll ask for a third arm for Christmas.

Once the chops came out of the oven, I rubbed them with a little more hoisen sauce. You could also double the marinade and rub it with that once they come out of the oven or even use it as a dipping sauce! 

I paired the meat with some sesame stir fried veggies: kale + pea pods + carrots. Yumtastic.

Ingredients

Scale
  • 4–5 pork chops, thickly cut
  • 1/4 cup hoisen sauce, gluten free
  • 1 tablespoon garlic, minced
  • 2 tablespoons tamari/soy sauce
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon dried orange peel

For the Veggies

  • 1 tablespoon sesame oil
  • 1 tablespoon garlic, minced
  • salt and pepper
  • 1 tablespoon tamari
  • 1–2 teaspoons sesame seeds
  • 1/2 cup shredded carrots
  • 1 cup pea pods
  • 2 handfuls kale

Instructions

For the Pork Chops

  1. First, prep your marinade by mixing together, hoisen sauce, minced garlic, tamari, ground ginger, and dried orange peel.
  2. Then, place pork chops in a large glass or tupperware container. Pour marinade on top, making sure to cover the top and bottom. Cover and set in the refrigerator for at least 4 hours or even over night (that’s what I did!).
  3. Preheat oven to 375ºF. Then, place a piece of tin foil on a baking sheet. Arrange pork chops on baking sheet. Cook for about 30 minutes, depending on the thickness of your pork. Note that your pork will release some liquid, this is okay! Just discard it. Once the chops are done cooking, rub them with additional hoisen sauce or more of the marinade you made!

For the Veggies

  1. In a sauce pan, heat sesame oil and garlic to medium/high heat. Then, add in veggies, salt and pepper, and tamari. Sautee for about 5 minutes or until veggies reach desired texture.
  • Prep Time: 5 minutes
  • Cook Time: 30 minutes

It is no surprise that I am a taco girl. One thing you may not know is that I will take shredded chicken tacos over any other type of taco any day. I could also eat shredded chicken tacos in any form. Taco bowl? YEP. Tacos in a hard shell? Sure! Shredded chicken tacos in nacho form? You betcha.

The best part of this slow cooker chicken tacos recipe is that it is so easy to make. No seriously, it is one of the easiest recipes on FFF. Add chicken to crockpot, turn on crockpot, shred chicken, add ingredients, and eat. You can take this shredded chicken and add it to anything your little heart desires.

These crockpot chicken tacos have been one of my go-to meals forever and it is for good reason. Who doesn’t love a taco Tuesday? When I am having people over or need to feed my brother something he loves, these shredded chicken tacos are my first choice.

  • 4 4 oz. chicken breasts, boneless, skinless
  • 1 tablespoon garlic, minced
  • 1 16 oz. jar of salsa

Instructions

  1. Place chicken breasts on the bottom of your crock-pot and rub with minced garlic. Cover and turn to high for 2-3 hours or until chicken is fully cooked and tender.

So today, I present you a healthier spin on Cheesy broccoli cauliflower quinoa casserole fully equipped with quinoa!

Whenever Blake approves a recipe (by getting a second helping) I feel like it is necessary for me to share with you guys. Being that this is gluten free and meat free, I say Blake’s approval gives this a #winning status.

The ingredient that I am featuring in this recipe is Pacific Organic Mushroom Gravy. 1/3 cup of this gave this recipe the flavor that it needed! I’m not even the biggest fan of the texture of mushrooms, so having that great mushroom flavor in a gravy was PERFECT.

Other modifications or ad ins include: using non-dairy milk, less cheese, low-fat cheese, and adding beans!

Ingredients

Scale
  • 1/2 medium size yellow onion, finely diced
  • 1.5 cups cooked quinoa
  • 2 heads of broccoli or about 1 pound
  • 1 tablespoon butter (or sub 1 tablespoon olive oil)
  • salt, to taste
  • pepper, to taste
  • 1/3 cup Pacific Organic Mushroom Gravy
  • 1 cup milk (I used almond, but any kind will work)
  • 1 cup sharp cheddar shredded cheese

Instructions

  1. First, preheat oven to 350F and grease a medium size baking dish with butter or olive oil.
  2. Next, in a large sauce pan, heat 1 tablespoon of butter or olive oil. Then, add in chopped onion and sauté for about a minute. Next, add in chopped broccoli and sauté. Season with salt and pepper (about 1/2 teaspoon of each) and cook for about 3 more minutes. (Do not cook broccoli all the only, this is simply to infuse it with the flavors from the onion and to cook it about half way.)
  3. Next, add in 1/3 cup of Pacific Organic Mushroom Gravy and 1 cup of milk and stir. Slowly add in sharp cheddar cheese and stir until combined. Finally add in quinoa and stir again.
  4. Transfer mixture into baking dish and sprinkle on more cheese.
  5. Bake at 350 for about 10-12 minutes or until the top begins to brown.

Over the past few weeks, Blake has been home in Kansas, so it’s been just me here holding down the fort. I remember before I started dating Blake, I would rarely include meat into my meals. I thought it was too expensive and too many calories.

BOYYY have times changed. I eat meat every single day and I actually crave it as part of my diet! I enjoy ground turkey, chicken breast, and bison the best, but pretty much enjoy it all! 

I thought I would make a burger that mixes meat with one of my all time favorite foods – quinoa! Why? The extra protein and texture…duh! 

Make these delicious BBQ quinoa turkey burgers with just 6 main ingredients. Dress it up with all the fixins’ (including spiralized apples!) for a delicious high-protein meal.

I, of course, used my new favorite kitchen hack tutorial —> how to microwave quinoa. It saves so much time! In this recipe, I am using FFF partner, Ancient Harvest’s Traditional Quinoa. This is by far my favorite variation because it has the best texture and its just classic. 

Inside of the burger I mixed together…

  • ground turkey
  • cooked quinoa
  • organic bbq sauce
  • oat flour
  • salt and pepper

No egg was needed to hold these guys together!

Get excited for the toppings I used on this burger.

The main star is obviously spiralized apple. It pairs PERFECTLY with the BBQ flavors and adds a hint of sweetness and crunch. I also added some raw onion, kale, and avocado for good measure.

Basic Ingredients for turkey quinoa burgers

  • turkey meat
  • Ancient Harvest Traditional Quinoa, cooked
  • organic BBQ sauce
  • ground oat flour
  • minced garlic
  • onion powder
  • salt and pepper to taste
  • Toppings: raw kale, avocado, raw red onion, organic bbq sauce, and spiralized apple

  • 1 lb. organic turkey meat
  • ½ cup Ancient Harvest Traditional Quinoa, cooked
  • 2 tablespoons organic BBQ sauce
  • 2 tablespoons ground oat flour
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • Toppings: raw kale, avocado, raw red onion, organic bbq sauce, and spiralized apple

Instructions

  1. Preheat oven to 375ºF and spray a baking sheet with nonstick cooking spray. Then, place patties on baking sheet and bake at 375º for 24-28 minutes, or until cooked all the way though. Flip the patties at the 15 minute mark.
  1. Heat grill to about 400ºF. Clean and spray the grates with nonstick cooking spray. Grill patties for about 7 minutes on each side, or until cooked all the way through.
  1. Serve with raw kale, avocado, red onion, organic bbq sauce and sprialized apple.
  • Prep Time: 5 minutes
  • Cook Time: 25 minutes

Cilantro Chili Turkey Burgers

I wanted to start this post off by giving mucho credito to the wonderful Iowa Girl Eats for being my inspiration for this recipe. Kristin posted a Copy Cat Trader Joe’s Chili Lime Chicken Burger recipe earlier this week and I was pretty much sold based off of her photos. I had plans to use her exact recipe, however I did my shopping at TJ’s and I couldn’t find ground chicken and decided to go with ground turkey instead. I also completely forgot to add the lime! Hence: Cilantro Chili Turkey Burgers….

After receiving multiple requests to post more meat-based recipes, I thought a “juicy,” healthy turkey burg would be perfect! Not to mention…I’m dating a grill master. *WHAT* Lee’s dating someone? Recipe first, sappy talk second.

Cilantro Chili Turkey Burgers

Ingredients

*Makes 6-8 burgers*

  • 2 lbs. ground turkey
  • 2 green onions, minced
  • 1 red pepper, finely diced
  • 1 egg
  • fresh cilantro, chopped
  • 1/2t red chili flakes
  • 1/2t garlic salt
  • 1/2t salt
  • 1/2t pepper

Method

  1. In a large bowl, mix all ingredients together. Don’t be afraid to get messy and use your hands.
  2. Next, line a pan with tin foil and spray with non-stick cooking spray. Then, form your burger batter into patties. Mine made 6 medium-large burgers.
  3. Transfer your tin foil onto the grill. The tinfoil prevents the burgers from sticking to the grill racks. The temperature of the grill should be roughly 375F. Cook each side for about 6-7 minutes covered. This will depend on the thickness of your burger.
  4. Serve on a bed of spinach for a gf version, or on a toasted bun for you gluten lovers out there.

Okay, okay. Enough about food…on to the juicy stuff. I am sure you have been wondering who this cute Blake guy is. I’m pretty sure I’ve talked about him in almost every post for the last few months. Well, he is someone very special to my heart. He’s actually my first EVER “official” boyfriend. I’ve dated quite a bit, but never nothing has ever turned into anything serious.

I’ve actually almost told you guys about Blake 4 or 5 times now, but didn’t know how to do it. At one point, I was going to name a post: “I’m dating someone,” but I thought that was a little too awkward. Not sure why I chose tonight, but what the hell.

We were actually “set up” by our mutual friend, Linley, back in October, but I was kinda-sorta seeing someone else and I’m not really in to dating multiple people at once. The first time we met was at a happy hour, but I didn’t really give Blake the time of day. I was definitely playing the “I don’t want to be anything more than friends” card. Anyways, long story short, Blake and I kept in touch for the next few months and he finally won my heart over (I was single at the time of course). I guess you could say we’ve been dating since the first of the year and became “official boyfriend/girlfriend” on Valentine’s Day (1, 2, 3 *awwwww*) and have been falling hard ever since.

How could I not be attracted to someone who 1.) likes quinoa 2.) works out 3.) is a Kansas boy 4.) likes to clean 5.) loves his family 6.) genuinely likes his job and 7.) doesn’t think I’m crazy for taking pictures of the things I eat. Blake is extremely supportive and thinks FFF is the greatest thing and that just makes me happy. Plus, he will pretty much eat anything I make  Anyways, I could go on and on about Blake, but I’ll let you get to know him through my future posts.

It was nice to finally get that off my chest. I feel like I’ve been lying to you!
