The Paleo Cashew Butter Cookies are gluten-free and free of oil they are made using coconut sugar to provide the sweetness. They are exactly as Tollhouse Chocolate Chip Cookies!

Paleo Cashew Butter Cookies

It is almost always something frozen and baked product in my freezer no matter the item. I’m frequently asked how I use all the meals I prepare (because I cook lots of it). My answer is that most of my baked items are put in bags that are frozen and put in freezers for future use. A few things, such as fresh citrus and herbs are thrown away however I would not allow delicious paleo-friendly treats to be wasted, trust me!

You’re not kidding me I’ve made 10 attempts to come up with the perfect grain-free chocolate chip biscuit.

If, at first, you do not get it right, you can do it another time.

Boom baby. I created two batches of these and gave them away to my fitness-conscious acquaintances to try. I received two thumbs-up from everyone!

If I love something so is so much, I’ll put them into a bag and conceal them in the frozen berries, so that they aren’t discovered by the thief. #moreformelessforyou #sorrynotsorry

For those who aren’t able to access cashew butter (I purchase mine at Trader Joe’s or make my own), )…no concerns! I’ve tried this recipe using almond butter, and it worked perfectly. I’ll not forget that the nut butters I used were extremely slippery. In other words, they were so they were drippy that I could pour the nuts on my oatmeal. Be aware of this while following the recipe. The goal is for to have your “dough” to appear and feel like cookies would. If it’s dry or dense then add a couple of tablespoons of almond milk. If the liquid is too thick gradually add additional coconut flour (we’re talking about teaspoons at one interval).

Whip up this easy coconut flour mug cake for dessert in just a couple of minutes. It's paleo, grain-free, and refined sugar-free!

Ingredients

Wet Ingredients

  • 1 cup of creamy cashew butter unsalted (if it’s salted butter, eliminate salt addition from the recipe)
  • 2 eggs, large
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 2/3 cup coconut palm sugar
  • 1.5 teaspoons Coconut flour
  • 1 tablespoon baking soda
  • Sea salt pinch
  • 1/2 cup chocolate chip that is dairy-free

Instructions

  1. The first step is to heat the oven to 350oF. After that, cover the baking sheet with parchment sheet.
  2. Put wet ingredients into an appropriate size bowl, then whisk them until they are well combined. After that, mix the dry ingredients, and mix. The result should be like “cookie dough.” The oiliness will depend on how thick the cashew butter you use (mine was very oily) it is possible to add a couple of spoons of almond milk.
  3. Put the dough in the refrigerator for 15 to 20 minutes, or until get firm.
  4. Use a 1-inch cookie scoop, shape dough into a small ball between your palms and put it onto a the cookie sheet. Make use of your palms to gently make it more flat. Repeat
  5. Bake them at 375oF for about 10 minutes, or until they start to change color and turn to a golden brown.
  6. Allow to cool at least 5 minutes prior to removing from pan.
  • Prep Time: 20 minutes
  • Cook Time: 10 minutes

Grain-Free Pumpkin Brownies

Looking for a fall treat made with REAL ingredients? Make these delicious grain-free pumpkin brownies that are decadent, chewy, and irresistible! 

These brownies are legit the most amazing dessert I’ve ever made…and I’ve made a lot of dessert. Linley and I tested these babies 4 times before getting it JUST right. I based the recipe off of Davida’s Avocado Brownies, but there’s no avocados involved. When I was in Toronto a few months ago (I can’t believe it’s already been a few months since I as in the TO), I had the pleasure of eating her Avo Brownies first hand and huzzzzzah….they were delicious! 

These brownies are made with a coconut flour base, making them grain-free. They’re made sans dairy, gluten, and refined-sugar making them paleo-friendly! “Hey mama.”

Gonna throw it out there….yah need the eggs for these babies! I didn’t attempt a vegan variation because most of the liquid from this recipe comes from the eggs. The eggs also help bind everything together and make they “fudgy.”

Eggs = good.

Ingredients for Grain-Free Pumpkin Brownies

  • eggs
  • maple syrup
  • pumpkin puree
  • vanilla extract
  • coconut flour
  • cocoa powder
  • coconut sugar
  • baking powder
  • dark chocolate chips

I sweetened the brownies with part maple syrup and part coconut sugar. Maple syrup has been my bestie lately. It screams all things fall. Yerp.

  • 3 eggs, large
  • ½ cup maple syrup
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract

Dry

  • ½ cup coconut flour
  • ½ cup cocoa powder
  • ¼ cup coconut sugar
  • 1 teaspoon baking powder
  • ½ cup dark chocolate chips

Instructions

  1. First, preheat oven to 350F and GENEROUSLY spray a 8×8 inch cake pan with coconut oil cooking spray. Set aside.
  2. Next, place wet ingredients in a large bowl and mix together until smooth. Then, add dry ingredients to the same bowl and mix until combined.
  3. Pour batter into pan and use a spatula to spread out evenly.
  4. Bake at 350º for 40-45 minutes.
  • Prep Time: 5 minutes
  • Cook Time: 40 minutes

Healthy Salted Caramel Cups, it’s a real thing! All you need are 4 simple ingredients to make this decadent dessert that’s paleo and vegan-friendly! 

Last week, Linley and I made our way to Costco to get ingredients for FFF’s b-day party. MAN, can you find some good deals at that place. Side note: we went to Costco at 1PM on a Thursday and I kid you not, there wasn’t a single parking space available. We had to walk about a mile. and a half. What the what. Everyone and their grandma (literally) was at that place. Our finds included lots of BALL ingredients in bulk (obviously): almond, honey, all-natural PB, dried cherries, and DATES.

Well these will not disappoint you. Why? Because their center is a big blog of salted date caramel.

  • dark chocolate
  • coconut oil
  • medjool dates, fresh
  • Himalayan sea salt, to taste

Seriously though these are HEAVEN. 

The best part is…you can eat like 14 of them and not feel bad for a second.

Ingredients

  • 3 cups dark chocolate (or dairy-free)
  • 1 tablespoon coconut oil
  • 10 large medjool dates, fresh (the squishier the better!)
  • Himalayan sea salt, to taste

Instructions

  1. First, prep date caramel by placing dates in a high-speed food processor. Process on high for about a 2 minutes, stopping to scrape the sides a few times. If you are having problems getting the dates to form a paste, add water by the ¼ teaspoon.
  2. Using a ½ teaspoon, scoop out date caramel into your hand and roll into balls. You’ll want to make 24 and will most likely have some leftover date caramel. I like to wet my hands first so that it’s easier to roll into balls. Set aside.
  3. Next, melt chocolate. You can either do this by microwaving for about a minute to a minute and a half, or by melting over the stove. Once the chocolate has completely melted, add in coconut oil and stir.
  4. Place 24 cupcake liners on the bottom of a mini cupcake tin. Then, pour in the first layer of melted chocolate. I used a teaspoon of chocolate. Then, put a ball of date caramel on top and cover that with another teaspoon of melted chocolate.
  5. Sprinkle with Himalayan sea salt and then place in the freezer for at least 30 minutes before serving!

I am currently sitting in the back seat of my parents Jeep en route to Chicago for the Thanksgiving holiday. One of the best parts about my job, is that I can do it anywhere. One of the worst parts about my job is that I can do it anywhere. You get my drift? AKA…disconnecting from work stuff when I’m on vacation is harder than it looks when you have everything at your finger tips at all times. 

I really hope that I am laying in a hammock in Tulum, Mexico right now WITHOUT my phone in hand. This girl needs a major technology break and that’s my plan this week while I’m in Mexico! Most of the “vacationing” that I do is usually Fit Foodie Finds related, so it’s really not letsdisconnectfromlifeandbepresent vacationing. This trip however, is not sponsored by anyone but myself. I’ll still be sharing on social media here and there so I can rub it in your face that I’m drinking daiquiris all day. JKJKJKJK.

Before I left for my 2 week excursion, I consulted with my sister about what books I should read while I’m away. The woman is a book master. I mean, she is on her 28th book of 2015. I’ve read a total of 1 (Elanor and Park). Hopefully by the end of this trip that number will be at least doubled. Shell told me to bring Me Before You and Landline, but unfortunately I didn’t have time to go to Barnes and Noble. Instead- I brought Water for Elephants I know it’s been out for a while, but obviously I haven’t read it yet. Duh.

So this hot chocolate. If you are sick of tea or don’t like coffee…you need this in your life. Like stat.

Peanut buttttttttter cookies are my all time favorite! My mom is a genie when it comes to making pb cookies…ask anyone in my family! We make them all year round and around Christmas-time, we stick a Hershey’s Kiss in the middle for a little extra love.

Hey! One time…Davida and I filmed a video at her house making her famous Peanut Butter Cookies. So much love for pb cooks! 

GRAIN-FREE PEANUT BUTTER BLOSSOMS

This recipe is kind of a mash-up of a few grain-free cookies I already have on Fit Foodie Finds: my Paleo Cashew Butter Cookies and my Grain-Free Protein Peanut Butter Cookies. They’re made with no refined-sugars, no gluten, no flour, and no oil! Technically if you switched the peanut butter for cashew or almond butter, you could call them paleo.

In my mind…they’re paleo.

They’ve got eggs in them and they need eggs in them. Lo siento vegans!

  • 1 cup creamy peanut butter, unsalted (if you’re using salted, omit additional salt from recipe)
  • 2 eggs, large
  • 1 teaspoon pure vanilla extract
Dry
  • ⅔ cup coconut palm sugar
  • 1.5 tablespoons coconut flour
  • 1 teaspoon baking soda
  • pinch of teaspoon sea salt
  • 20 dark chocolate Hershey’s Kisses

Instructions

  1. First, preheat oven to 375ºF and spray a cookie sheet with coconut oil cooking spray.
  2. Place peanut butter, eggs, and vanilla extract in a large bowl and mixed until combined.
  3. Then, add in dry ingredients and mix until combined.
  4. Using a tablespoon cookie scoop, scoop out a HEAPING scoop of dough and roll between your palms. Place on cookie tray and press down flatting the cookie just a bit.
  5. Bake at 375 for 11-13 minutes or until the cookies begin to brown on the sides.
  6. Remove from oven and immediately place a Hershey’s Kiss in the center of the cookie and sprinkle with some sea salt. Let cool for at least 30 minutes
  • Prep Time: 5 minutes
  • Cook Time: 12 minutes

These are best eaten straight out of the freezer or fridge. If you eat them frozen, they are like an ice cream bar and if you eat them partially thawed from the fridge, they’re more like cheesecake! It’s all about preference people.

What’s my choice? FREEZER.

Raw Lemon Coconut Cheesecake Bars

Ingredients

Scale

For the Crust

  • 2 cups pitted medjool dates, packed (~20)
  • 2 cups raw unsalted cashews
  • ⅛ sea salt (or more, to taste)

For the Lemon Coconut Filling

  • 2 cups raw cashews, soaked
  • 1 cup coconut cream
  • 2 tablespoons coconut oil
  • 2 tablespoons honey
  • juice from 1 lemon (~1/3 cup)
  • pinch of sea salt

Instructions

  1. First, place two cups of cashews into a medium/large size bowl and cover them with boiling water. Let them soak for 4-6 hours or over night. These cashews are for the filling.
  2. Next, place crust ingredients (pitted dates, raw unsalted cashews, and salt) into a high-speed food processor and process until crumbly.
  3. After ingredients are blended, spray a 9×9 inch pan with coconut oil cooking spray. Gently press crust evenly into the bottom of the pan. Set aside.
  4. Once cashews have soaked for the appropriate amount of time (cashews should be soft and squishy) place all ingredients for the lemon filling (except coconut oil) into a high-speed food processor and blend until smooth.
  5. When ingredients are mixed well and the filling is a smooth consistency, add coconut oil and mix one more time.
  6. Pour filling contents on top of crust. Spread evenly with a spatula and place pan into the freezer for 1-2 hours to set.
  7. When bars are hard and ready to eat. Remove from freezer, top with shredded coconut and lemon zest.

Notes

*Store bars in the freezer for more of an ice cream bar texture or un the fridge for more of a cheesecake texture.
