I have been all about mixing {simple} flavors lately…and really enjoying the fact that pomegranates are everywhere…and sometimes even pre-peeled (THANK YOU TJ’s)

Whenever I go to Whole Foods for their hot/cold bar, I look forward to eating their pearled cous cous salad. Pearled cous cous is kind of like a cross between rice and pasta; I love the texture. *Note it is NOT gluten free, for those of you that are sensitive to gluten. It is however, available for purchase at Trader Joe’s.

So are all of the ingredients in this salad for that matter…

Like I said. I kept this side salad simple…

  • Greens (I used kale but you could use any kind)
  • Pearled cous cous
  • Pomegranate Arils
  • Walnuts
  • Goat Cheese
  • Easy Pomegranate Vinaigrette

Instead of dumping dressing all over the entire salad. I massaged my kale with it. I learned this trick from YOU GUYS! It helps make kale more digestible by softening it up and infuses the flavor.

I mentioned this the last time I used kale in a recipe..but I’m still getting used to it. Going to be completely honest- I am still a fan of spinach over kale. Yeah I said it.

I’ve mentioned that one of my goals this year is to share more stories and life-happenings on the blog. I feel like as FFF has evolved, I’ve sort of stopped sharing a lot of the things that I do outside of blogging.

Blake and I decided to keep it low-key this Valentine’s by going out of a realllllly casual dinner and watching New Girl. We actually celebrated 2 years of dating this year on 2/14 :D. We planned a fun day trip to Taylor’s Falls the day after Valentine’s for a little breath of fresh air, snow shoeing, and lunch at the cutest diner EVER.

We rented snow shoes from a local sporting goods shop for about $34 buck (for 2 pairs). If you go about 6 times, you pay for a pair of snow shoes, so I am highly considering purchasing my own pair because 1. it will force me to go more and 2. they will eventually pay for themselves if I keep renting.

If you live in Minneapolis and have never been to Taylor’s Falls- get your butt there right now! I went a few years ago during summer-time when it is GORGEOUS, but it’s just as beautiful during winter! This little town sits nestled on the St. Croix River. There’s state parks everywhere you look, bluffs, a beautiful river, and the nicest people you’ll ever meet!

Blake and I are already planning a weekend getaway this summer. Bed and breakfast + canoeing = dreamy.

I have been a carb queen lately. 

Oats, Pasta, Rice, Quinoa, Cous Cous…you name it I’ll eat it!

I wanted to make a dish using simple ingredients that has a whole lot of flavor. Oh, and that doesn’t take a lot of time to make. IE: Pancetta Pasta!

Yes, you saw that photo correctly…I added spinach. Me eating sautéed spinach? I know you must think the world is ending, but it was actually really good 

 Probably because it was smothered in garlic. #winning

I’ve also been on a pea kick lately. Peas and sea salt are like the best thing ever. So are steamable vegetable bags that you buy frozen.

Ingredients for Peasy Pancetta Pasta

  • brown-rice pasta
  • EVOO
  • minced garlic
  • pancetta, finely diced
  • peas, frozen
  • handfuls of spinach
  • cherry tomatoes, cut in half
  • salt and pepper to taste

Pancetta. This was my first time experimenting with pancetta..a very close relative to bacon (pork). I got it pre-diced from Trader Joe’s. Make sure you COOK IT BEFORE YOU EAT IT. I couldn’t tell for the life of me if it was pre-cooked or not, but after some research on Sir Google I found that it was uncooked.

So- I sautéed it in some EVOO and garlic before adding the rest of the veggies and pasta.

Topped with some slices of parmesan cheese and you’ve got yourself one delicious dinner!

I always find it extremely fascinating to compare my before and after images of the photos I take. There is so much that goes into play for a photo- the lighting (whether it is cloudy, snowy, sunny, etc.), time of day, food composition, etc.

Easy Peasy Pancetta Pasta

Ingredients

Scale
  • 2.5 cups gluten free, brown-rice pasta (or whatever pasta you want)
  • 1 tablespoon EVOO
  • 1 tablespoon minced garlic
  • 3/4 cup pancetta, finely diced
  • 1 cup peas, frozen
  • 2 handfuls of spinach
  • 1 cup cherry tomatoes, cut in half
  • salt and pepper to taste

Instructions

  1. Begin by cooking pasta. Follow the directions on the box.
  2. While the pasta is cooking, heat a tablespoon of EVOO and 1 tablespoon of minced garlic in a large non-stick skillet to medium/high heat. Then, add in pancetta and sauté for about 5 minutes. Add in peas and cherry tomatoes and continue to sauté for about 5 more minutes. Finally. Add in 2 handfuls of spinach and sauté for an additional 2-3 minutes. Season with salt and pepper.
  3. Once the pasta has cooked, drain water and add pasta directly into pancetta mixture. Mix, so that the pasta is fully coated.
  4. Serve with freshly grated parmesan cheese.
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes

Lately I find myself making meals that require minimal ingredients, but a whole lot of flavor. Like yesterday’s Pancetta Pasta. 7 ingredients. Today’s Avo Pom Grilled Cheese- 5 ingredients (including real butter). 

This combo is KILLER. And really pretty.

I bought a beautiful chunk of fresh mozzarella the other day, had some ripe avo, needed to use up the last of my pomegranate arils, and was craving grilled cheese (don’t ask). Lone behold this crazy combination.

Ingredients

Scale
  • 4 slices of whole wheat bread (or gluten free)
  • -4 think slices of mozzarella
  • -2 tablespoons of pomegranate arils
  • -1/2 avocado
  • -1 tablespoon butter

Instructions

  1. In a large pan, heat about 1 tablespoon of butter to medium heat.
  2. Prep sandwiches (serves 2) by placing 2 thin slices on mozzarella, 1 tablespoon of pomegranate arils, and ½ avocado on top of a slice of bread. Repeat. Then, place another slice of bread on top.
  3. Cook each side of the sandwich, COVERED with a lid, for about 2 minutes, or until it begins to turn golden brown and the cheese melts.

30 Minute Parmesan Rice- 2 ways!

30 Minute Parmesan Rice

30 minute meals are the best. What usually  happens, is that I come home from yoga or from running errands and I am absolutely famished. My first instinct is to grab a peanut butter ball or 2 or even a handful of granola and EAT, spoiling my dinner. No bueno.

This 30 minute meal is easy to make, vegetarian (minus the shrimpies), and flavorful!

With half the rice, I added a twist. Some mashed sweet potato to give it a spike of sweetness and a pretty orange color!  

Side note- My mom told me that when I was a baby, frozen peas were one of my favorite foods! It’s been a while since I’ve had peas and I just bought 2 more huge bags of them because they really are a yummy snack! 

30 Minute Parmesan Rice

The  pureed sweet potato definitely adds great flavor and texture. 

With this particular dinner, I sautéed some shrimpies in garlic and EVOO. They paired perfectly with the rice.

Ingredients for 30 Minute Parmesan Rice

  • onion
  • EVOO
  • minced garlic
  • white or brown rice
  • frozen peas
  • chicken or vegetable broth
  • parmesan cheese
  • -salt/pepper to taste
  • fresh parsley, minced

Lake Texoma 2014

Blake and I got home yesterday after 6 days in Texas. We stayed north of Dallas in a cabin on Lake Texoma. It was really nice to spend time with his family and be away from life for a few days. We at lots of fried fish, fished, hiked, shopped, sat around a campfire, and WORE SHORTS. 

Lake Texoma in general is the lowest it’s been since the 60’s. It was really cool to explore the habitat of the shoreline with Blake’s little sisters…who know SO MUCH about science. I’m starting to think I should go back to elementary school. 

The weather was nice. It was super windy the first couple of days, but we did get 2 days out of the 6 hitting almost 80 degrees! I ran twice and took the rest of the days off from organized workouts because we did lots of hiking. It was also nice to give my body a break from physical activity. Here are a few photos from the week!

Ingredients

  • -1/4 large onion, finely diced
  • -2 tsp EVOO
  • -2 tsp minced garlic
  • -2 cups white or brown rice
  • -1/2 cup frozen peas
  • -4 cups chicken or vegetable broth
  • -1 cup parmesan cheese
  • -salt/pepper to taste
  • -2 tablespoons fresh parsley, minced
  • -OPTIONAL 2: 1 pureed sweet potato

Instructions

  1. In a large sauce pan, heat about 2 teaspoons of minced garlic in 2 teaspoons EVOO over medium/high heat. Then, add in finely diced onions and sautee for a few minutes until they are translucent.
  2. Add in 2 cups of rice and 4 cups of broth. Bring to a boil then reduce heat to low and cover for about 15ish minutes (or longer for brown rice), or until most of the liquid is absorbed. Add in frozen peas, parmesan cheese, fresh parsley, and salt and pepper (to taste). Stir and finish cooking until all liquid is absorbed.
  3. At this point, you have the option to add in 1 cup of pureed sweet potatoes or serve as is!

Nutrition

  • Serving Size: 1 cup cooked rice

The recipe I chose is a sprintime favorite of mine that I like to pair with chicken breast of as a dinner side salad. Strawberry Arugula Salad with Poppyseed Dressing. It’s gluten free and grain free I share my favorite poppyseed dressing at the end of the post!

  • 5-10 sliced strawberries
  • 1 tablespoon slivered almonds
  • 1 oz. gorgonzola cheese, shredded/crumbled

  • 1 tablespoon poppyseed dressing

I didn’t say this in the recipe, but I have been adding a fresh squeeze of lemon to EVERYTHING lately. So fresh and so clean.

I always get these ideas to make something fabulous and then half way through it turns into something WAY MORE FABULOUS…usually on accident.

Hot diggity dawg. This is all of my favorite things in one dish.

A long, long time ago, back when FFF was in its prehistoric age, I made Zucchini Quinoa Lasagna. It was damn good, but I had no clue how to take a photo. I’ve been telling myself that I should remake that meal because is tasty as ever and that post could use some new photos.

Well. I sorta did that?

Eggs on top of this is actually genius. I LOVE BAKED EGGS.

Next time I make this, I am adding some meat into the sauce (maybe ground turkey or ground beef if Blake is lucky). 

Love this before and after.

  • marinara sauce
  • onions, diced
  • garlic, minced
  • EVOO
  • eggs
  • zucchini
  • ricotta chees
  • basil
  • salt and pepper, to taste
  • quinoa
  • vegetable broth (or water)

Seriously. I threw this guy in a tupperware and ate this all week. Now that’s my kind of Sunday meal prep. I didn’t tell Blake about this because I wanted the leftovers all to myself…shhh He saw me writing this post and was like…”WHAT IS THAT SLASH WHERE IS THAT?”

I’m sitting here watching the squirrels play in my backyard. Oddly enough, it’s making me really happy. The sun is shining, the grass is starting to change from a poop brown color to a poop green color. Spring is finally approaching. Life is good!

Ingredients

  • -1 jar marinara sauce (any kind will work!)
  • -1/2 cup onions, diced
  • -1/2 Tablespoon garlic, minced
  • -1 Tablespoon EVOO
  • -6 eggs, large (or more if you can fit them!)
  • -1 large zucchini, thinly sliced
  • -3/4 cup (or more) ricotta cheese
  • -1 teaspoon basil, fresh or dried
  • -salt and pepper, to taste
  • -1 cup quinoa, uncooked
  • -2 cups vegetable broth (or water)

Instructions

  1. In a large oven safe sauce pan, heat 1 tablespoon of EVOO. Then, sauté 1 tablespoon of minced garlic and ½ cup diced onions until onions become translucent.
  2. Next, pour on marinara sauce. Then place thinly sliced zucchini on top of sauce.
  3. Crack 6 eggs on top of the zucchini. Then, season with salt and pepper (to taste) and basil.
  4. Finally, spoon on ricotta cheese. I used about ¾ cup and spooned on about 1 tablespoons at a time, but feel free to use more!
  5. Bake at 350 for 35 to 40 minutes or until your eggs are at the desired texture.
  6. While your eggs are baking, prepare quinoa by placing 1 cup of quinoa and 2 cups vegetable broth in a medium size pot. Bring to a boil. Then cover and turn down to low. Let simmer for about 15 minutes or until all of the water has absorbed.
  7. Serve Zucchini Lasagna with Baked Eggs over a big scoop of quinoa!
  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
