Roasted Brussels Sprouts and Quinoa Salad

If someone gave me the reigns to plan an entire Thanksgiving meal, I have no doubt that at least half of the recipes would have quinoa in it. It’s not my fault. It goes so well with everything. It adds such great texture and color too!

I Get this photo a few weeks ago and it got a lot of interest. Ya either love or hate brussels sprouts and I have a feeling that a lot of FFF readers LOVE EM. I actually did this recipe as part of the 2nd annual Anytime Fitness e-book. Last year the Anytime Fitness writers did a holiday cookie book, and this year it’s theme is Thanksgiving. 

I am very excited with how the ebook turned out. Props to my friend and- co-worker Amanda for doing the design and layout of it! It looks fab.

Back to the quinoa. I am such a nerd when it comes to grocery stores. I could wander and wander and never get bored. One thing that I always do is seek out the quinoa in both the bulk section and prepackaged section to compare prices. This may sound contradicting, but the cheapest quinoa I can find is at Whole Foods. Plus- they have an array of different kinds: normal, tri, black, and red. 

That’s where I got the black quinoa for this recipe….from the Whole Foods Bulk Section. Black quinoa is more expensive than regular, so I only got what I need. Great way to save money!

Roasted Brussels Sprouts and Quinoa Salad

Ingredients

Scale
  • 1 lb brussels sprouts
  • ½ large red onion
  • 1 tablespoon minced garlic
  • 2 tablespoons extra virgin
  • olive oil (EVOO) + 1
  • tablespoon
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ cup garbanzo beans,
  • canned and rinsed
  • ¼ cup quinoa, dry
  • ½ cup chicken broth or
  • water
  • ½ teaspoon red pepper
  • flakes (optional)

Instructions

  1. First, preheat oven to 400°F and line a baking sheet with foil.
  2. Next, prepare vegetables. Now Wash Brussels sprouts and pat dry. Then, cut them in half hot dog style and place on baking sheet. After this Thinly slice half of a red onion and spread evenly on the baking sheet. Drizzle on 2 tablespoons of EVOO and toss with fingers.
  3. Season veggies with 1 tablespoon of minced garlic (or more if you’re a garlic lover), salt, and pepper.
  4. Place veggies into oven at 400°F for 20-25 minutes or until the Brussels sprouts begin to brown.
  5. While the vegetables are cooking, prepare quinoa. Bring ¼ cup of quinoa and ½ cup of liquid (such as chicken broth) to a rolling boil. Turn heat down to low, cover, and let simmer until all water is absorbed (about 20 minutes).
  6. Once the veggies are done, let cool for a few minutes, then transfer into a large bowl. Add in about ½ cup of garbanzo beans and mix. Then, add in cooked quinoa and toss again. Finally season with one more tablespoon of EVOO and ½ teaspoon of red pepper flakes for some heat.
  • Prep Time: 15 minutes
  • Cook Time: 30 minutes

Remember that one time.

Just last week.

When I caramelized 2 beautiful pieces of salmon? Well- I may or may not have also caramelized the brussels sprouts that went along with that meal in the same exact glaze.

These are too good not to share and just in time for T-giving.

A few Friday’s back when I made this recipe, I actually had a full day of baking in preparation for a series I am doing in December with my mentee, Rachel, from the University of Minnesota. Rachel is in the college of Nutrition and asked me to be her mentor (heck to the yes!) because she is interested in food styling and recipe creation. Mentors have been a huge part of Fit Foodie Find’s success and I couldn’t imagine a day without having strong women (and men) to help me conquer business, blogging, entrepreneurship, etc. As part of the program, the mentees are suppose to shadow their mentor for an entire day…so I made sure we’d have an action filled one! 

Rachel and I made this meal during our baking extravaganza, and I do have to give her some credit for this combo. And for letting me use her hands in the photography 

We started off by chopping the brussels sprouts in half drizzling with EVOO, salt, and pepper and roasting them at about 400 for 20ish minutes.

Once they got their beautiful golden brown color, into a frying pan they went along with some of that delicious maple apple glaze we put on the fish.

Ingredients

  • 1 lb. brussels sprouts
  • 1.5t EVOO
  • 5T minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1T maple syrup
  • 1T apple butter
  • 1T organic turbinado sugar

Instructions

  1. First, preheat oven to 400°F and line a baking sheet with foil.
  2. Next, prepare vegetables. Wash Brussels sprouts and pat dry. Then, cut them in half hot dog style and place on baking sheet. Drizzle on about 1.5 tablespoons of EVOO and toss with fingers.
  3. Season veggies with ½ tablespoon of minced garlic (or more if you’re a garlic lover), salt, and pepper.
  4. Place brussels sprouts into oven at 400°F for 20-25 minutes or until the Brussels sprouts begin to brown.
  5. While brussels are cooking, make your glaze. Mix maple syrup, apple butter, and turbinado sugar.
  6. Once the brussels are done, transfer them into a frying pan and pour on glaze. Sautee on medium heat for about 3-5 minutes.
  • Prep Time: 10 minutes
  • Cook Time: 25 minutes

Sweet mother of potatoes. 

Did you know: as a kid my Dad used to call me spud? Ever once in a while my family would go out for dinner at our favorite Family Restaurant (and I kid you not) I would order a baked potato, hash browns, and fries. 

Not sure why my parents let them happen Thankfully I’ve grown to love sweet potatoes, a much healthier and tastier option.

This recipe only calls for 2 main ingredients: sweet potatoes and cheese. What could you not love about it! I cooked them in my cupcake pan, which makes for easier clean up.

My original plan was to make normal sized sweet potato stacks, but I could only find a few big ones. The rest were skinny with a small diameter. If you do find honkin’ sweet potatoes, use them! Just make sure you bake them in a baking dish because they won’t fit in a cupcake tin.

Thanksgiving Appetizer Recipe: Itty Bitty Sweet Potato Stacks

Ingredients

Scale
  • 4 skinny, large sweet potatoes
  • 1 pound of cranberry cheddar cheese (you probably won’t use it all)
  • nonstick cooking spray (I used nonstick coconut oil spray- it gave it a great flavor!)
  • salt, to taste
  • -pepper, to taste
  • *Cheese grader
  • *Muffin Tin

Instructions

 

  1. First, begin by preheating your oven to 400F and spray a 16 cup muffin tin with nonstick cooking spray. Set aside.
  2. Next, finely grate your cheese. Start off by doing half and if you need more, come back to it! Set aside.
  3. Slice your sweet potatoes as thin as you can.
  4. To make stacks, place on sweet potato sliver onto the bottom of your muffin tin and layer with cheese. Repeat 3-5 times per stack. *Do not sprinkle cheese on top, we will do this later.
  5. Lightly spray each stack with more nonstick cooking spray and season with salt and pepper.
  6. Place in oven at 400 for 20 minutes. Remove cheese from oven and sprinkle cheese on top. Place back in oven for about 5 minutes or just enough to melt the cheese on top.
  7. Before serving clean up the bottom of your stacks. Some of the cheese may have burned a little or become a darker cover, so just use a knife to cut all of the excess cheese off.
  8. If you are using bigger sweet potatoes, you may want to cook them a little longer to ensure they are cooked all the way through!
  • Prep Time: 15 minutes
  • Cook Time: 20 minutes

The ooey gooey cheese I used on top was from Byerly’s (a local Minnesota grocery chain). They source a lot of their products local, and I am happy to say that the Cranberry Cheddar cheese I purchase was made in Edina…the town over from me!

If you can’t find cranberry cheddar in your local grocery story, I’d recommend brie…something that will bring out the sweetness of the potatoes.  

On top of the stacks you can really add whatever your heart desires. My original plan was apple smoked bacon, but I thought it would be fun to make an easy cranberry relish sweetened with honey and a splash of OJ.

  • 1–2T honey (to taste)

  1. Place all ingredients in a small food processor and process on high until finely chopped. Mine only took a few seconds!

My kind of lazy is me crocheting while simultaneously watching TV or editing a photo while I should be taking a nap. It’s hard for me to just sit on the couch and do absolutely nothing. BUT I know that lazy days are absolutely necessary when you are a work-a-holic.

On days when I try to be lazy (which is hopefully once a week) I always try and stay lazy in the kitchen too. This is why I ALWAYS have a plenty of canned beans and frozen meat on hand…so that at any moment I can throw it all in the crock-pot  and let it simma. Without me doin a thang.

Don't have a lot of time? Get lazy with this Lazy Girl Turkey Salsa Chili and have a healthy dinner ready in a flash!

I call this batch of chili, my Lazy Girl Turkey Salsa Chili. Because it’s just that!

There is no definite recipe- so you can mix and match your favorite beans and meats. In this recipe I used what I had on hand: frozen ground turkey, black beans, kidney beans, white northern beans, diced tomatoes, and salsa. There is no chopping involved.

This past weekend (Thanksgiving) was spent in Kansas with Blake’s family…who I adore. This year we decided to do Thanksgiving in Kansas with Blake’s family and Christmas in Chicago with my family. It was my first Thanksgiving away from the Hershes. It felt weird and not weird at the same time. Thanksgiving is a time of thanks and family and I am truly thankful for Blake and the support he brings to my life. The man is my backbone, my listener, my partner, and best friend. These photos have reminded me that the more pretty colors in a meal, THE BETTER. I have been majorly slacking in the fruits and vegetable department lately. Why? Because I haven’t been putting enough time and energy into prepping food in order to have easy access.

That is about to change! 

Super Food Detox Salad

I bought kale for the second time ever in my life. The first time I put it in a smoothie and this time…I’m eatin’ it raw. The day I’m content eating cooked greens is the day I stop eating peanut butter. NEVER!

Really though. I can’t do cooked greens…especially spinach. I don’t know what it is, but spinach is suppose to be eaten raw now wilted!

I made a nummy homemade, simple dressing for this Super Food Detox Salad:

  • Extra Virgen Olive Oil
  • Lemon Juice
  • Honey
Honey Lemon Vinaigrette

Just superb.

Inside the salad is:

  • Raw Kale
  • Cooked Quinoa
  • Fresh Blueberries
  • Slivered Almonds
  • Poppy Seeds
Honey Lemon Vinaigrette

Easy, peasy, lemon squeezy. 

And in this case. Literally. 

Since this was the first time I handled kale in a recipe, I kept things simply. I washed it thoroughly, patted dry, and then cut the stalks off, leaving the crunchy leaves, which I then chopped into bite sized pieces.

want this salad at every meal from now on. I actually thought about throwing half of it in a blender and making a Super Food Detox Smoothie. I bet it wouldn’t be half bad! Just add a frozen banana and a little almond milk. Pure bliss.

Ingredients

Scale
  • 4 stalks of kale, raw
  • 1/2 cup blueberries
  • 1/2 cup cooked quinoa
  • 1/4 cup slivered almonds
  • 1 teaspoon poppy seeds
  • 1 large lemon, juiced
  • 1 tablespoon EVOO
  • 1/2 tablespoon honey

Instructions

  1. First, prepare honey lemon vinaigrette. Juice 1 lemon into a small bowl. Then add in EVOO and honey and whisk with a fork. Set aside.
  2. Next, thoroughly wash raw kale and then pat dry with a paper towel. Using a sharp knife, cut the kale leaves off of the hard center. Then chop into bite size pieces.
  3. Place kale, ½ cup of blueberries, ½ cup of cooked quinoa, and ¼ cup of slivered almonds in a large bowl or tupperware.
  4. Then, pour vinaigrette on top of salad and toss, making sure to coat everything. Finally, add in poppy seeds and toss one final time.
  • Prep Time: 10 minutes

Broiled Grapefruit Spinach Salad

I am consciously trying to eat more salads and green foods in general. I have said this multiple times lately, but I have SERIOUSLY been slacking in my fruits/veggies department. 

Lee- peanut butter is not a food group and should only be consumed in normal portion sizes.

This is a super easy salad with some of my favorite salad toppers! 

I experimented with broiled grapefruits…and I actually really enjoyed it! Broiling the grapefruit halves with a little coconut sugar sprinkled on top brings out some sweetness. And eating warm grapefruit wasn’t as weird as I thought it was going to be

I also added my favorite cheese ever- goat cheese, with slices of avocado, and walnuts. If I had grilled chicken, that would be on here too…but there’s no way I’m taking out the grill in sub zero conditions

I remember as a kid eating grapefruit and sugar. That’s the way my mom did it I’m not the biggest sour fan, but I really do enjoy the flavor of grapefruit…so for me some sort of sugar/sweet is necessary.

Ingredients

Scale
  • 1/2 grapefruit
  • -1/2 teaspoon coconut sugar
  • -2 handfuls of fresh, baby spinach
  • -1/2 avocado
  • -1 oz. goat cheese
  • -1 tablespoon pecans

Instructions

  1. First, preheat oven to broil on high. Then, cut a grapefruit in half and place a grapefruit (sliced side facing up) on a cookie tray. Sprinkle with coconut sugar and and broil for 3-5 minutes. Watch carefully. You just want to melt and caramelize the sugar on top.
  2. Next, use a knife to cute the grapefruit meat out of the skin. The easiest way to do it is to cut around the skin and then slice each individual section.
  3. Prepare salad by mixing the rest of the ingredients together. Pour some of the excess grapefruit juice on top of salad instead of dressing!
  • Prep Time: 5 minutes
  • Cook Time: 5 minutes
