Healthy Rice Pudding

I think I need to rename this post to: “a dessert so healthy you an eat it for breakfast!”

Seriously. So healthfully delicious!

Healthy Rice Pudding

The best part about this recipe is that you probably already have all of these wonderful flavors in your kitchen. It makes my heart warm just thinking about it melting on my tongue.

As you read in the above recipe, I used a rice cooker. I haven’t gone a week without using that thing since I got it. You literally mix all of the ingredients in the rice cooker, turn it on, and walk away.

If you don’t have one, no fret! You can still make this recipe. All you’ll need is a medium size pot and a stove. You’ll want to use the exact same measurements as above. First, bring 1 cup of rice, 3 cups of milk, sugar, vanilla, cinnamon to a rolling boil. Then, cover and turn to low and let simmer until all liquid has absorbed. I’m guessing this will take anywhere from 45 minutes to an hour. Finally, add in an additional cup of milk and serve hot. 

Healthy Rice Pudding

If you like raisins, you and cook them right into this. Add in about 1/3 cup of raisins at the beginning and you’re good to go. Or- just add them on top like I did!

So what makes this recipe (Healthy Rice Pudding ) so healthy? I made some major swaps!

  • I used brown rice instead of white rice
  • I used almond milk instead of cream or whole milk I used no additional fats (like butter or oil)

Ingredients

Scale
  • 1 cup short grain brown rice
  • 3 cups almond milk or milk of choice + 1 cup (divided)
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • 2–3 tablespoons of organic cane sugar or coconut palm sugar

Instructions

  1. Combine all ingredients, but 1 cup of milk in a rice cooker and set timer to “brown rice.” Let cook until timer turns off or all water is evaporated. Add 1 more cup of milk and mix. Serve hot.
  • Prep Time: 5 minutes
  • Cook Time: 1 hours 5 minutes

Healthy Vanilla Almond Milk Latte Rice Pudding

This healthy rice pudding recipe is made with brown rice, vanilla almond milk, and coffee giving it the most delicious, aromatic flavor!  Plus- it’s gluten-free and vegan!

As a blogger who is constantly producing new (AMAZING…jus sayin ) content, I try and keep most of the Fit Foodie jam off of my personal facebook page. I do every once in a while link to a recipe I’m proud of or a fun workout.

Last week I asked my personal friends….”If you were going to make rice pudding but wanted to give it a unique holiday flavor…which would you choose?!”

I got over 40 responses…here are some of my favorites: 

  • Eggnog

  • Mashed Potatoes and Gravy
  • Gingerbread
  • Candy Canes and Rum
  • Turkey Broth

These responses say a lot about my friends….1. They love holiday flavors 2. They are almost always drunk (jk, but they love to drink) and 3. They are extremely creative.

My girl Emily Miner commented with Gingerbread Almond Milk Latte, which got me on the Latte train. Oo0o do I love the flavor of coffee

This shiz is SO TASTY I couldn’t stop eating it. I topped it off with some maple coconut whipped cream and ER MER GERD.

  • grain brown rice
  • coffee, brewed
  • vanilla almond milk
  • coconut palm sugar
  • vanilla extract
  • cinnamon stick
  • pinch of salt
  • coconut cream
  • maple syrup

It’s the hot plus cold that makes me swoon.

Ingredients

Scale
  • 1.5 cups short grain brown rice
  • 1.5 cups coffee, brewed
  • 2.5 cups + ½ cups divided vanilla almond milk, unsweetened
  • 6 tablespoons coconut palm sugar
  • 1 teaspoon vanilla extract
  • 1 cinnamon stick
  • pinch of salt
  • ½ cup coconut cream, chilled
  • 1 tablespoon maple syrup

Instructions

  1. Place all ingredients (minus ½ cup of almond milk) in a medium-sized pot. Bring to a boil and then cover, turn down to low and let simmer until most of the liquid is dissolved. It too about an hour of simmering. Taste the rice to see if it has softened, if it is still hard, add more milk and continue to simmer. Once the rice is at your preferred texture, add about ½ cup of almond milk and stir. It should be very thick at this point.
  1. Place coconut cream and maple syrup in a medium size mixing bowl. Then, using a hand mixer, mix for about 3-5 minutes or until it becomes fluffy like classic whipped cream.
  • Prep Time: 5 minutes
  • Cook Time: 1hours 5 minutes
