
Strawberry Banana Breakfast Bread
It’s been a very long winter of paying 4-5 dollars for berries, or heck- not having fresh berries at all…not any more! Summertime is here and so are cheap berry prices. I am curious to see- if you live in the south where vegetation is lush all year round- do your produce prices ever ever get more expensive in the winter?
Today’s recipe is a delicious, flavorful, dense breakfast bread.

I grew up eating the BEST banana bread in town, thanks to my mom. So this was inspired by her
I used half and half whole wheat/all-purpose flour, so unfortunately for you gluten free eaters out there…this is gluten filled….but filled with good-for you ingredients!
Ingredients
- 1 medium size banana, mashed
- 1 tablespoon coconut oil, softened
- 1 egg, large
- 1 and 1/4 cup milk (I used unsweetend Silk Almond Milk)
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/4 cup honey
- 2 tablespoons ground flaxseed
- 1 cup diced strawberries
- coconut nonstick cooking spray
- 2 tablespoons brown sugar (optional)
How to make Strawberry Banana Breakfast Bread
- Preheat oven to 350 degrees F and spray a bread pan with nonstick cooking spray (I used coconut nonstick from Trader Joe’s).
- In a large bowl, mash banana with a fork until soupy. Then, add the egg, and coconut oil. Mix.
- Add in whole wheat flour and baking powder and mix. Then add milk and mix again.
- Add rest of ingredients and mix.
- Bake bread for 50-65 minutes. You’ll want to do the toothpick test to see if the center is cooked.

I’ve also been adding fresh strawberries, too.

So- I originally thought it would only take 45ish minutes for the bread to cook and I took it out of the oven (it looked completely cooked from the outside). I did the toothpick test and it came out fine…Well- I went to cut into it after I let it cool and it definitely needed a few more minutes. When I say a few, I mean 20. I think the strawberry really moisten things up, so it needs some extra oven time!
Yay for 3 day weekends! I don’t have any mega plans today (other than trying to clean up coffee grounds that are now dug into my carpet because I dropped them on the way to the garbage can). I lifted upper body yesterday and I am feeling it in my shoulders, so I’ll probably just go for a light run today. Tonight, we are going to Linley’s Birthday Party. Happy Birthday Lin. Also- Happy Birthday to my Daddy (I wish I could spend the day with you!!).
