I was going back and forth between naming these Peanut Butter Brownie Chews or Peanut Butter Brownie Balls. They are a spin off of the Raw Brownie Chews I made a few months back…but I added some peanut butter and formed them into balls!

Healthy Peanut Butter Brownie Balls

How to make Healthy Peanut Butter Brownie Balls

  1. Place almonds in a small food process or and process for about 30 seconds or until your almonds are finely chopped like almond meal. Set aside.
  2. Next, process the pitted dates until they become like a paste.
  3. Then, add the rest of the ingredients, including the almond meal, and pulse for an additional minute.
  4. Form dough in to balls and eat! If it is having trouble sticking, add a tablespoon or 2 of honey.

It should be a rule that Halloween falls on a weekend. On a Wednesday…REALLY?

I one, do not have plans yet for Halloween (other than work festivities) and two, do not have a costume. Last year I went as a crazy couponer and made a dress out of coupons and the year before I went as a 80’s fitness instructor. These were both day of decisions. 

Maybe I will host a Halloween Party and be a hostess. I’m pretty good at that. I’d be really good at making Halloween treats too!

Sprinkled Peanut Butter Crunch Balls

Like these peanut butter crunch balls rolled in Halloween Sprinkles! Gluten free and delicious! Festive too!

Sprinkled Peanut Butter Crunch

Ingredients

  • 2C Chex Cereal
  • 1/4C smooth peanut butter
  • 1/4C honey (or agave or brown rice syrup)
  • sprinkles!

How to make Sprinkled Peanut Butter Crunch Balls

  1.  Begin by crunching ~2C of Chex cereal into fine little pieces. I used a food processor, but you can do it by hand as well.
  2. Then, add the peanut butter and honey and mix-crunch-mix-crunch- mix! 
  3. Using your hands, take the mixture and compress it into a ball in your hands. I make sure my hands are wet (with water) so the mixture sticks together.
  4. Then, roll balls into Halloween colored sprinkles! 
  5. EAT.

I had one of those aha moment early this AM. I was in the process of making some almond butter chews (aka Bird Food Balls), when I realized that I was having major issues with the balls falling apart. It’s the honey! It may seem sticky, but it doesn’t really do the job holding the balls together.

Got 10 minutes? Whip up these healthy almond butter chews with just a few ingredients. Get creative with your add ins! Your options are endless.

Brown Rice Syrup really does do the trick. It keeps the balls nice and compact. I also like BRS because it doesn’t have such a powering flavor like honey does.

How to make Almond Butter Chews

  1. First melt your almond butter if it’s not drippy by placing it in the microwave for about 15-20 seconds.
  2. Then, transfer into a medium sized bowl and add brown rice syrup and mix.
  3. Add millet puffs and raisins and mix until it becomes one big almond chew.
  4. Taking about 1 tablespoon of “dough” into your hands, roll to form a ball. If you’re having trouble getting things to stick, add a bit more brown rice syrup 1 tablespoon at a time.

Viola…you have balls that do not crumble!

These are pretty much the perfect after workout snack: whole grains, healthy fats, and protein. I’ll take 10!

Want to know what I like about gift cards  It lets you buy that “thing,” that you just don’t want to spend your own money on for whatever reason. I helped a good friend out with some social media shenanigans and in return, he gave me a gift card to the Vitamin Shoppe. I’ve had my eye on Amazizing Grass Green Superfood Powder for a while, but didn’t want to spend the $25.00 bucks. Can you say cheap?

Well- I was actually afraid that I would spend the money and it was taste like…grass. Wrong. Get the chocolate version and it tastes like protein powder! I like this product because it is literally infused with vitamins and minerals. 

More specifically, “Chocolate Green SuperFood is our premium blend of superfoods with the great taste and benefits of cacao. Chocolate Green SuperFood supports body alkalinity, boosts energy and your immune system, and is gluten free.”

Good stuff for your body, especially if you can’t get in your daily servings of fruits/veggies. Throw this stuff in a smoothie and you are good to go! Or- you can add them to nut butter balls, like I did in this recipe.

Ingredients

  • 1/4C almond butter or peanut butter
  • 1/4C brown rice syrup
  • 2 scoops of Chocolate Green SuperFood
  • 3/4C millet puffs
  • 2/4C puffed brown rice

Instructions

  1. First, melt your almond butter (if need be).
  2. Then, transfer into a medium sized bowl and add brown rice syrup and mix.
  3. Add millet puffs, puffed brown rice, and powder and mix until it becomes one big almond chew.
  4. Roll dough between your palms to form balls.

Whenever I ask what kind of recipes you want to see more of, I almost always get Single Serve Recipes. Today’s recipe is kind of a reinvention of one I’ve already done. I altered it just a bit to make it more cakey instead of muffiny.

Single Serve Banana Cake

What I love about single serve recipes is the portion control. It’s hard for me to make a batch of muffins or cookies and “just have one.” Hence my love for single serve!

Ingredients

  • 3T gluten free flour
  • 3T unsweetened Silk almond milk
  • 3 inches of mashed nanner or roughly 1-2T mashed nanner
  • 1/2T earth balance, melted (to make dairy free, omit and use coconut oil)
  • 1/2t vanilla
  • pinch of salt
  • 1/4t baking powder
  • 1T Dark Chocolate Chips (optional)

How to make Single Serve Banana Cake

  1. Preheat oven to 330F and spray ramekin with nonstick cooking spray. Mix all ingredients together in a small bowl and bake for 16-18 minutes.

While this recipe uses gluten free flour mix (instead of a whole grain), it doesn’t have any refined sugars! It really is a Fit Foodie Favorite.

  3. Pack for ski trip to Colorado!
  4. Meal plan for ski trip in Colorado to accomodate New Year New Rules habits.

I purchased a mini doughnut pan a few months ago while I was at TJ Maxx. It was on super clearance for $3.00. I’ve been meaning to make a real doughnut recipe, but nothing has really caught my eye (other than all of the drool worth photos Ashley’s posted).

On Sunday night, I began my baking fiasco with my mind set on a dense muffin. I wanted to make something that was a hearty snack, filling, and tasty topped with peanut butter

Ingredients

Scale
  • 1.5C quick cooking oatmeal
  • 1 medium banana, mashed
  • 1t baking powder
  • 1 egg
  • 1.5 liquid (water, almond milk, cows milk, etc.)
  • ½C pomegranate seeds
  • ½C blueberries
  • 1.5t chia seeds
  • 1T coconut oil, melted
  • 1T honey (optional)

Instructions

  1. Preheat oven to 375 degrees and line a muffin tin with muffin cups and spray with nonstick cooking spray OR spray a doughnut pan with nonstick cooking spray.
  2. In a large bowl, mash banana with a fork until its liquidly. Then, whisk in the egg and mix. Next, add in oatmeal, baking powder, chica seeds, water, and coconut oil, and mix again. Finally add in blueberries and pomegranate seeds and mix.
  3. Fill muffin cups or doughnut holes about ¾ of the way.
  4. Bake at 375 for 20-25 minutes
