Is it me or does anyone else actually crave a smoothie after a workout? Even when its -50 degrees out, I crave smoothies post gym.

Speaking of weather. Most think it’s cliche to talk about the weather, but growing up I wanted to be the weather man. Legitimately. 

I secretly watch the weather channel all the time because I am obsessed with how it all works. Just think, 100 years ago radars didn’t exist. Um…every time there was a thunderstorm I’d probably go hide in my basement. 

Basic Ingredients for Creamy Strawberry Chia Smoothie

  • 1/2 cup strawberries, frozen
  • 1/2 cup sliced bananas, frozen
  • 1/2 cup kefir or Greek yogurt
  • 1 tablespoon chia seeds
  • 1/2 cup almond milk, unsweetened
  • splash of vanilla extract

How to make Creamy Strawberry Chia Smoothie

  1. Place all ingredients in a blender or Magic Bullet and blend until smooth! Let sit for a few minutes so that the chia seeds can do their magic (expand and get slimy). Enjoy!

Today I am excited to be partnering with Minnesota brand —> Yoplait! A lot of people don’t realize this, but Minneapolis/St. Paul is home to many of America’s Fortune 500’s including General Mills. Minnesota made is my jam. Yoplait yogurt is actually what I grew up on and ate all the time as a kid! Now that I am a Greek girl, I was excited when they came out with their Greek 100 line. What makes me even more excited is the progress Yoplait has made over the last 3 years to reduce sugar, remove high fructose corn syrup, and get rid of aspartame.

Say “I” if you’ve had the sniffles at least once this winter. ME ME MEEEE! I’ve actually been really lucky in the sick department (knock on wood) and have only really had one minor cold. I hope I didn’t just jinx myself. I like to credit my active lifestyle and the fact that I’ve been eating copious amounts of vitamin c. It’s really not hard to do, especially if you throw everything in a smoothie like this one. Slerp.

Place all ingredients in a high-speed blender and mix until smooth.

One of the best ways you can prevent or cure a cold is by eating as many immune-boosting foods as possible. We’re talking…

Thus- I threw everything in my blender and whirled away. A smoothie isn’t a smoothie without some Greek yogurt to smooth things out (and add protein!) and a frozen banana for good measure. No added sugar is necessary (ever). Vanilla is definitely my favorite flavor to add to smoothies. Fun fact- did you know that a cup of Yoplait Greek 100 Vanilla has 13g of protein in it. YASSSS.

Talk about a tropical party in your mouth. Seriously, this smoothie is on point. That citrus, though. In general this smoothie is a great healthy snack and an easy way to get a serving of fruit AND vegetables in. We all know we could use a little more of those in our lives.

Dark Chocolate Peppermint Protein Shake

Protein smoothie turned decadent treat? I think yes.

I’ve been really in to smoothie drinking ever since I started my recipe creation partnership with Designer Whey (through Fitfluential) about 8 months ago. Each month I create 4 recipes for DW, 2 of which are smoothies (yes, I am compensated). They sent me about 8 giant jugs of Designer Whey Protein Powder to work with, so I literally put it in everything.

You’d never guess that the base of this smoothie is frozen banana. The Dark Chocolate DW Protein Powder mixed with finely ground cocoa powder and a touch of peppermint extract, takes this protein smoothie to the next level.

On top I made some homemade whipping cream, by just whipping cream with my hand mixer. I then shaved some dark chocolate on top for a little more oomph.

As 2013 comes to a close I wanted to re-share some of my favorite DW recipes that I have done throughout 2013. Disclaimer: I was NOT compensated for this post, I am sharing these recipes because I WANT to.

Basic Ingredients Dark Chocolate Peppermint Protein Shake

  • 1 large banana, frozen
  • 2-3 large ice cubes
  • 1 cup non dairy milk of choice
  • 1 scoop Designer Whey Gourmet Chocolate Protein Powder
  • 2 tablespoons cocoa powder (high quality)
  • Pinch of sea salt
  • 1/4 tsp pure peppermint extract
  • optional add In: 1 tablespoon dark/vegan chocolate chips optional
  • toppings: homemade whipping cream, vegan whipped topping, or Greek yogurt

This Healthy peanut butter cup smoothie is packed with protein and even has a full serving of greens in it. Best part is, it’s healthy and tastes exactly like a peanut butter cup!

I don’t know about you, but this is the most delicious-looking (and tasting!) smoothie I have ever seen. I thought I would mix two of my favorite foods, peanut butter and chocolate, together for a post-workout, high-protein smoothie.

Insert. GENIUS.

Seriously though, you HAVE to make this smoothie. It’s like drinking a peanut butter cup…but healthy for you!

I actually made two different smoothie recipes and swirled them together to make sure you get some chocolate and peanut butter in every bite. Then I topped it with some vegan coconut whipped cream and an actual chunk of peanut butter cup. 

Ingredients for Healthy Peanut Butter Cup Smoothie and What’s in each layer?

Peanut Butter Layer

  • Banana
  • Peanut Flour OR Peanut Butter
  • Vanilla Extract
  • Silk Vanilla Almond Milk
  • Pinch of Salt

Chocolate Layer

  • Banana
  • Cocoa Powder
  • Spinach
  • Silk Vanilla Almond Milk

I love the addition of Silk Almond Milk to smoothie because it keeps things dairy free and makes them OOBER smooth. I usually buy the unsweetened variation because it goes perfectly with my banana-base smoothies. 

The whipped cream on top…A necessity!

Healthy Peanut Butter Cup Smoothie - high protein and dairy-free!

I decided to use peanut flour for this recipe to keep things lower fat and boost the protein powder. If you do not have peanut flour, feel free to use any kind of peanut butter (or nut butter for that matter). 

And because the smoothie was actually peanut BUTTER-less, I added a little drizzle on top to finish off the perfection.

That’s right. A healthy shake. It’s totally possible.

If you’re anything like me…you crave sweets after dinner…almost every night. I am notorious for convincing Blake that a DQ stop is absolutely necessary because I NEED to eat my vanilla cone with crunch on top. Errrrr. I don’t really need it. And while soft serve isn’t THAT bad for you (lower in calorie)…it’s still loaded with added sugar.

Operation- make myself a healthy dessert that I don’t feel bad eating.

I call this: My Favorite [healthy] Banana Shake topped with The Healthiest Peanut Butter Chocolate Sauce You’ll Ever Eat.

I had to add some fat free whipped cream for a little kick…plus it makes the photos pretty

What’s in the shake?

1 Frozen Banana. 1 Cup Unsweetened Almond Milk. And a secret ingredient: a little scoop of Peanut Butter.

Protein Powder is optional. I actually ended up adding 1/2 scoop Vanilla Designer Whey.

And“The Healthiest Peanut Butter Chocolate Sauce You’ll Ever Eat” you ask?

1 teaspoon Coconut Oil. 1 teaspoon Peanut Butter. 1 teaspoon Cocoa Powder.

On a smoothie note- after this month, I am going to hold off on posting any Designer Whey Recipes (I am on contract to create 4 recipes for the DW brand each month) until the end of the month so that I can share them all at once. DIY Maple Sea Salt Pistachio Butter

I la la love pistachio nuts. I know they are expensive, but sometimes you have to treat yourself and buy a bag so that you can make some creamy, greeny pistachio nut butter! Get your food processorsout and get ready to whirl!

The above photos were 1. before processing, 2. after 1 minute of processing, and 3. after 10 minutes of processing.

For this batch, I used salted dry roasted pistachio nuts which I got from Trader Joes, which I realized was sort of a bad idea. Dry roasted means a lot of the natural oils are sucked out of the nut, so it’s hard for the nuts to get creamy. NO FEAR- I added about 2-3 teaspoons of coconut butter and it smoothed right up.

You can use raw pistachio nuts, but you will want to roasted them for 5-10 minutes at around 350. I’ve tried making nut butter without roasting the nuts first, and it has never worked for me (maybe I’m just cursed!).

I love this stuff! A spoonful of this is such a good snack or even better on top of oats!

  • pistachio nuts
  • maple syrup
  • sea salt
  • coconut oil

I’d say the sea salt is pretty essential. It brings out the maple syrup and the natural sweetness of the nuts.

I store my nut butter in a small mason jar. I keep it in a cool place or even in the fridge.

Ingredients

Scale
  • 2 cups of roasted pistachio nuts (preferably NOT dry roasted)
  • 1–2 tablespoons maple syrup (to taste)
  • a pinch of sea salt
  • 1–3 tablespoons coconut oil (if needed)

Instructions

  1. Place 2 cups of pistachios nuts and a pinch of sea salt in a small food processor. Process on high, frequently stopping to scrape if needed. Process nuts anywhere from 4-10 minutes or until smooth and drippy. If you nuts have a hard time releasing their natural oil (getting the mixture to be drippy), add 1 to 3 tablespoons of coconut oil. Once the pistachios are smooth add in maple syrup or your sweetener of choice.
