Single Serve Paleo Vanilla Cupcake

I am so excited to be sharing another recipe from my Single Serve Dessert eCookbook launching on June 21st! I have 25 delicious and diverse recipes down….with 15 more to go! 

If this is the first time you are hearing of my eCookbook, I wrote a post on it last month with more details. To make a long story short, I am writing my first eCookbook all focused on healthy single serve desserts. There will be gluten free, paleo, and vegan options inside! 

It’s been a lot of fun and really tasty coming up with all of these recipes Last week I developed a Single Serve Paleo Cupcake and I just HAVE TO SHARE.

Single Serve Paleo Vanilla Cupcake

Paleo baking is not the easiest. You’re dealing with NO GRAINS…..say whaaaa. If any of you are paleo, I’m sure you agree with this! So, when I nailed this recipe after testing it about 6 times…I did a happy dance and pretty much haven’t stopped since.

I’ve tested both cashew meal and almond meal….which I purchased from Trader Joe’s. I prefer the cashew meal for this because it’s a bit lighter, but almond works!

Ingredients for Single Serve Paleo Vanilla Cupcake

  • cashew meal
  • coconut sugar
  • baking powder
  • vanilla
  • honey
  • egg whites
  • applesauce
  • cocoa powder
  • chocolate protein powder
  • coconut sugar
  • honey
  • milk

For some natural sprinkles- I used hemp seeds.

Because I’ve been using hemp seeds on everything lately! And they actually resemble sprinkles.

The frosting that i made is actually insane. It’s made from cocoa powder, your favorite chocolate protein powder, coconut sugar, honey, and non-dairy milk. 73 calories and 6 whole grams of protein in a single serving! DAYUM.

I’ve been going back and forth on if I should make the “baked goods” in the eCookbook all microwave friendly. I have come to the conclusion that everything baked in the oven is 100 times better. Things cook more evenly, they are much more moist, and overall just better. I have a few microwave desserts in the book, though. So- don’t fret!

Ingredients

Scale

For the Cupcake

  • 3 Tablespoons cashew meal, I used Trader Joe’s brand
  • 2 teaspoons coconut sugar
  • 1/8 teaspoon baking powder
  • splash of vanilla
  • 1 teaspoon honey
  • 2 Tablespoons liquid egg whites
  • -1 Tablespoon applesauce

For the Frosting

  • 1 tablespoon cocoa powder
  • 1 tablespoon chocolate protein powder, I used Designer Whey Soy
  • 1 teaspoon coconut sugar
  • 1 teaspoon honey
  • 2 Tablespoons non-dairy milk, I used cashew

Instructions

For the Cupcake

  1. First, preheat oven to 350 F and line a muffin tin with one muffin liner. Spray with nonstick cooking spray.
  2. Next, in a small bowl, mix together wet ingredients. Then, add in dry ingredients.
  3. Transfer batter into cupcake tin.
  4. Bake at 350 for 23-25 minutes or until the middle is fully cooked.
  5. Let cook completely and top with Chocolate Protein Frosting

For the Frosting

  1. Mix all ingredients together in a small bowl until it
  2. becomes the desired consistency.

This recipe is paleo, meaning it’s dairy free, gluten free, grain free, and refined sugar free. 

So- it’s sweetened with frozen banana. I used almond milk for the base and non-dairy chocolate chips.

For the Shake

  • 1 medium size banana, frozen
  • 1/2 cup cherries, pitted
  • splash of vanilla extract
  • 1 tablespoon non-dairy chocolate chips
  • 1 cup dairy free milk, I used unsweetened almond milk

For the Whipped Topping

  • 2 Tablespoons coconut cream, I used Trader Joe’s Brand

For the Magic Hardshell Chocolate Topping

  • 1 teaspoon coconut oil, melted
  • 1 teaspoon cocoa powder
  • 1 teaspoon honey

Instructions

For the Shake

  1. Place all ingredients in a magic bullet or blender and mix until smooth.

For the Whipped Topping

  1. Place the coconut cream in a medium size bowl and whip with a hand mixer for 30 seconds to a minute, or until fluffy.

For the Magic Hardshell Chocolate

  1. First, melt coconut oil, then add in cocoa powder and honey and mix until combined. The mixture should be drippy. When the mixture is poured on top of something cold, it will harden like magic hardshell!
  • Prep Time: 5 minutes

The best thing I can do for my dessert habit is make my own and keeping em’ stocked…or I will somehow convince myself that Dairy Queen multiple times a week is okay.

Speaking of DQ- more often times than none I have to convince Blake to just go with me to DQ even though he refuses to order anything because apparently he was born without a sweet tooth.

These brownies are the perfect sweet treat post-dinner. They aren’t the classic American XXL version, rather just a little something sweet to kick your sweet tooth goodbye. Plus- they are made with wholesome ingredients, so even if you have two it’s no biggie!

Ingredients

Scale
  • ¼ cup buckwheat flour
  • ½ cup cocoa powder
  • ¼ cup coconut palm sugar
  • ½ teaspoon baking powder
  • ½ cup almond milk, unsweetened
  • 1 egg, large
  • 1 egg white, large
  • 2 tablespoons coconut oil
  • ¼ cup maple syrup
  • ½ teaspoon vanilla
  • ½ cup dark chocolate chips, melted
  • 2 tablespoons peanut butter, melted

Instructions

  1. First, preheat oven to 350ºF. Then spray a muffin tin with coconut oil cooking spray and set aside.
  2. Next, in a microwave safe dish, melt dark chocolate chips. Then, in a large bowl, mix together wet ingredients, incorporating the melted dark chocolate last.
  3. Add in dry ingredients and mix until smooth.
  4. Using a tablespoon cookie dough scooper, scoop 2 tablespoons of batter into each muffin tin, filling it just under half the way full.
  5. Next, melt 3 tablespoons of peanut butter until drippy. Using a spoon swirl on about ½ teaspoon of melted peanut butter on top of each brownie.
  6. Bake at 350ºF for about 22-24 minutes.
  • Prep Time: 10 minutes
  • Cook Time: 22 minutes

I can’t tell you how often I get asked the question: Do you eat everything you make?! 

My answer: Of course I test and eat everything I make! BUT- sometimes It goes a little like this: Breakfast is pancakes for next week’s blog post, lunch is left over’s from tomorrow’s blog post (which I prepped the day before) and dinner is a protein shake. Sometimes I even eat JUST brownies for lunch…because, well, that’s what works for me! 

Intuitive eating has played a huge roll in my career change.

PS: Did you know, that this month marks a full year since I decided to go full-time with Fit Foodie Finds? Remember that post I wrote back on July 14 of 2013? CRAZY how fast time flies. I can’t even believe it’s been a full 365 days. I couldn’t be in a happier place with my life. I wake up happy and I go to bed happy.

Not only do I love what I do, but I love WHO I am surrounded by. I wouldn’t be doing what I am doing if it weren’t for my sister who suggested I start a blog almost 4 years ago. For my parents who haven’t doubted me for a second. For Blakester who is my partner in crime and Fit Foodie Fan Boy constantly challenging me to be my best. For my little brother who makes me laugh until I pee (laughter is key people). For my friends who think it’s normal to take selfies and pictures of food everywhere I go (seriously, no judgement…not for a second!). For my mentors in the fitness and blogging community who paved the way showing young females like me that it is possible to be your own boss and build your own business from the ground up. 

I am mocking up big plans to give back to the female blogging industry. You just wait. 

Three-Ingredient Blueberry Mint Frozen Yogurt

I wanted to post a little something that isn’t so extravagant, but very familiar to my tummy. Just because I’m a “food blogger” doesn’t mean I go all out for everything I eat. Come to think of it, a lot of what I eat only consists of 2 or 3 ingredients and I am totally okay with that. Less is more

This fro-yo is perfect after a workout or as a late night snack.

You’ll need for Blueberry Mint Frozen Yogurt:

  • frozen blueberries
  • vanilla Greek yogurt 
  • fresh mint

Mix it all together and you’ve got yourself a frozen dessert that is mm mm good.

I also want to make a note that this serves 1-2. I got these little mason jar shot glasses the other day…and it filled about 4 of them. Just because it fills 4 shot glasses doesn’t mean it’s 4 servings. Let’s face it- I did it for the photo.

Do you know how hard it is to make a mug cake look pretty?

Like real hard.

Nonetheless I think my attempt is pretty good. Well, it tastes pretty damn good, and that’s what really matters.

Here are my top 10 reasons why this mug cake rules the world. 

  1. It takes less than 5 minutes to prepare.
  2. It only makes 1 serving, so when your significant other asks you for a bite you tell them to make their own.
  3. You could eat mug cake for breakfast and no one would know because they’d think you were drinking your coffee with a fork. 
  4. The different variations are endless, so you pretty much can’t ever get bored.
  5. This mug cake will easily (and sneakily) satisfy your late night sweet tooth fix. 
  6. It’s made with no oil or butter. 
  7. It’s naturally sweetened.
  8. It’s actually magic. You can watch the cake grow in the microwave from a wet batter to CAKE in less than a minute. Now that’s what you call real live magic.
  9. After you slice and pit the cherries that go into the batter you feel like the king of the world. 
  10. Cake > every other meal of the day. 

Sometimes I wish I could just stick a straw in the batter and eat my mug cake that way. Is that gross?

  • oat flour
  • cocoa powder
  • baking powder
  • coconut palm sugar
  • cherries
  • chocolate chips
  •  egg
  • almond milk
  • applesauce

Minus the egg white, of course.

I have a secret. I actually cheated and used a ramekin instead of a mug. I find I get more of a cake-shape and more evenly cooked cake if I use a ramekin. Mugs can get a little wonky because they often times have a skinny base and wide mouth. 

My advice to you- use a ramekin. 

I topped my mug cake with some vanilla Greek yogurt and more chocolate chips. 

Cake needs to be topped with something. If your cake has no frosting of sorts, it’s not cake. It’s a muffin.

  1. First, place the dry ingredients in a small bowl. Then, add in the wet ingredients and mix.
  2. Spray a small ramekin or coffee cup with nonstick cooking spray. Then pour the batter into you cup.
  3. Microwave on high for about 60-65 seconds.
  4. Top with Greek yogurt, more cherries, and chocolate chips!
