The high was in the 50’s here this past week. THAT SHIZ CRAY. It’s September and it already feels like October. Sigh.

Good thing I’ve been waiting to post this baby since…err, last April when I made it!

I visited my parents in Ohio over my birthday and Grandma Marie and Papa Ray drove to Cleveland from Chicago over the same weekend so we could all see each other. Insert .

My grandma is like a genie in the kitchen. Her pizza is to die for. So is this roasted chicken that her and I made together!

Guys- roasting your own chicken is way easier than it looks! It definitely takes time, but it’s SO NUMMY!

A dash of this and a dash of that. That’s how we roll in this household.

Because grandma didn’t measure, I didn’t measure. We just sprinkled? I’d say we used ~ a teaspoon of each.

Here’s a list of the spices we used:

  • Salt
  • Pepper
  • Thyme
  • Rosemary
  • Basil

The great thing about roasting your own whole chicken, is that you can use your favorite flavors. Maybe add some garlic or onion powder?

For those that don’t know- this is what basting looks like. You literally squeeze the juice from the bottom of your pan, into the baster, and squeeze it on top of the chicken. It’s like a chicken shower.

Herb Roasted Whole Chicken

Ingredients

  • Roasting Chicken (Approx 4 lbs)
  • -1 Tablespoon of olive oil (for brushing)
  • -salt and pepper, to taste
  • ~ 1 teaspoon thyme
  • ~ 1 teaspoon rosemary
  • ~ 1 teaspoon basil
  • -1/2 lemon (juice)
  • -2 cups chicken stock
  • -2 tablespoons of grass fed butter, thinly sliced
  • -1 cup white wine
  • -4 medium potatoes
  • -roasting pan
  • -meat thermometer
  • -chicken baster

Instructions

  1. Begin by preheating oven to 400ºF.
  2. Next, prep roasting chicken, by removing the innards from the cavity (usually it’s in a bag inside the cavity).
  3. Place the chicken on a roasting pan with rack. You are more than welcome to trim the fat at this point, but it creates delicious flavor if you leave it on. Prep potatoes, by cutting them into quarters and placing on the bottom of the pan around the chicken.
  4. Next, rub chicken with about a tablespoon of olive oil. Then, season chicken (and potato wedges) with salt and pepper (to taste), thyme, rosemary, and basil. Again- all of these spices are to taste. I used about ½ teaspoon – 1 teaspoon of each spice. Take a half a lemon and squeeze juice over the top of chicken. And, places 2 tablespoons of butter (thinly sliced, see photo) and a wedge of lemon on top.
  5. Pour about 2 cups of chicken stock on the bottom of your roasting pan. This will be used for basting later.
  6. Place chicken in oven at 400ºF and let roast for about 60 minutes. At this point, baste chicken with chicken stock from the bottom of pan. Place back in oven and let cook for 15-30 minutes longer.
  7. Instert meat thermometer in one of the chicken breasts. It should read ~180. If it has not reached this temperature, baste again and place back in oven to continue cooking until done.
  • Prep Time: 30 minutes
  • Cook Time: 1 hours 30 minutes

Take ten minute to prepare this Apple Chicken Sausage Quinoa Bake. It’s a healthy, one-pot meal made with root vegetables, apple chicken sausage, and quinoa!

Long time no talk, friends! I am finally home safe and sound in Minneapolis. Blake and I had a fabulous holiday in Kansas with his family. We ate tons of yummy food (including some of the BEST Mexican), spent some quality time with the fam, and even got in 2 yoga classes and a run! Woot for us!

We arrived back in Minneapolis Friday at 5PM, and 10 minutes (literally) later my parents got to our house. They drove up from Cleveland to spend the rest of the holiday weekend with us. Yesterday started off with an early morning spin class at Surge, followed by doing returns at the mall. I think I could have legitimately spent 5 hours at the mall, but we had the boys with us, which really sped things up 😉

So this recipe…



Apple Chicken Sausage Quinoa Bake with Shredded Brussels Sprouts and Sweet Potatoes

It’s all my favorite things in one dish and that’s the truth!

You really can’t beat a brussels sprouts + sweet potato combo, and the addition of quinoa and chicken sausage is ga ga ga genius. Lately, I’ve been adding a little rice vinegar to my quinoa bakes to really bring the flavors out.

Nakano Natural Rice Vinegar is my go-to.

As I was making and photographing this dish, I realized I SHOULD (…a woulda coulda) have seasoned the veggies first, to make sure everything was 100% coated with EVOO and spices. I added in the directions that I “would” have placed them into a gallon-sized bag, added in the EVOO and spices and coated them that way.

Instead I had to make shift stir everything together.

I’ve made quinoa bakes in the past with chicken sausage, and usually I use precooked sausage. This time, I used uncooked and it turned out just great! So for those that are wondering…either works! Fit Foodie tested and approved.

Any kind of chicken sausage would work, but my fav is apple 😀

Such a great meal for busy people. You could even have everything prepped the night before (or morning) and pop it in when you get home from work. I’d say this serves around 4…so if you are a single lady this would be a perfect meal to make at the beginning of the week.

Ingredients

  • 1 cup tri-color quinoa, rinsed, uncooked
  • 2 cups chicken/vegetable broth
  • 1/4 cup red onion, finely diced
  • 4 Apple Chicken Sausages, fully cooked (uncooked will work too!)
  • 2 cups shredded brussels sprouts
  • 2 small sweet potatoes or yams, peeled and diced
  • 2 tablespoons Nakano Rice Vinegar
  • 2 tablespoon EVOO
  • 1 tablespoon garlic (or more if you love garlic like me!)
  • 3 teaspoons Italian spices
  • salt and pepper, to taste (I was generous)

Instructions

  1. First, preheat your oven to 350ºF and spray a casserole dish with olive oil cooking spray.
  2. After this, prep veggies by peeling and dicing sweet potatoes, chopping onion, and shredding brussels sprouts. Place veggies in a gallon size plastic bag. Add in EVOO, spices, salt and pepper, and shake. Toss the veggies until everything is fully coated.
  3. Place quinoa on the bottom of your casserole dish. Then, add in broth and rice vinegar. Place veggies on top of quinoa followed by sliced apple chicken sausages.
  4. Bake at 350ºF for 60 minutes or until the quinoa is fully cooked.
  • Prep Time: 10 minutes
  • Cook Time: 60 minutes

Strawberry Avocado Quinoa Bruschetta with Goat Cheese

You guys know I have a MAJOR love for all things quinoa. I eat this Tuscan Chicken Quinoa Bake like it’s going out of style, I substitute quinoa  for noodles, and I even put quinoa in my dessert recipes. It’s just the best! 

One thing that I love doing during the summertime is grilling out and feeding lotsssss of people at once! I love being a hostess. The key to making sure no one gets hangry, is having lots of appetizers and munchies readily available before the main course is ready. Insert > quinoa salad + bruchetta. 

I thought I would create a fun recipe mashing two of my favorite things together! Plus, it means I get to use the grill. Love me some grilled baguette. This recipe is oh-so-simple. I’d say the hardest part is grilling the bread and not burning it. I only did that to a few of the pieces :P.

Anyone else have a finicky grill that gets really hot in the back and not so hot in the front? I DO. I DO. 

Making the quinoa salad is also really easy. If you follow my “how to cook quinoa in the microwave” tutorial, you can have all of the veggies/fruit cut up while the quinoa is cooking hands-free! If you are wondering what kind of quinoa product I use….Ancient Harvest

For this recipe- you are more than welcome to serve the quinoa warm, but I prefer the salad to be cold. I love mixing temperatures and it really enhances all of the flavors, too!

  • 1 small whole wheat baguette
  • 3–4 oz goat cheese
  • 2 cups tomatoes, finely diced,
  • 1 cup quinoa, uncooked
  • 1 cup strawberries, finely diced
  • 2 avocados, diced
  • 1.5 tablespoon honey
  • 2 tablespoons balsamic vinegar (aged if you have it!)
  • pinch of salt

Instructions

  1. First, begin by rinsing the residue off your quinoa. Then cook quinoa using my microwave method. Once cooked, chill in the refrigerator over night.
  2. Prep quinoa salad by dicing fruit and veggies. Then, place in a large bowl and add cooked quinoa, honey, balsamic vinegar, and salt. Mix.
  3. Slice up your baguette into 1 inch slices and place on grill or in the oven for just a few minutes in order to harden things up a bit and get some nice grill marks.
  4. Using a knife, spread on about a teaspoon or two of goat cheese and then top with about 1 to 2 tablespoon of quinoa salad.

Anyone else kind of depressed that it’s mid-August. Other than the fact that it’s the most amazing time of the year in Minneapolis, the month of August reminds me of back-to-school, which still gives me the heeby jeebies I haven’t been in school for over 3 years and I still get butterflies during this time of year!

My recipe today features their gluten-free pizza crust made with a brown-rice flour base (yay whole grains!). Ingredients

  • 1 Udi’s Gluten-Free Pizza Crust
  • ¼ cup pizza sauce
  • 4 oz mozzarella cheese
  • 1 large tomato, sliced
  • 8–10 basil leaves, fresh
  • 1 teaspoon EVOO
  • ¼ teaspoon garlic powder
  • fresh pepper, to taste

Instructions

  1. First, preheat oven to 375ºF.
  2. Next, prep tomato by thinly slicing and removing seeds. Use a paper towel to blot out as much moisture from the remainder of the tomato as you can. Thinly slice mozzarella cheese into thin slices.
  3. Drizzle about 1 teaspoon of EVOO onto your pizza crust and use your fingers to rub into crust. Then, pour on about ¼ cup of your favorite pizza sauce and use a spoon to spread it to the edge. Sprinkle on about ¼ teaspoon garlic powder and place sliced tomato and mozzarella cheese on top of sauce.
  4. Bake at 375 for 16-20 minutes.
  5. Remove and add fresh basil leaves. Slice into 6 pieces.
