This recipe brought me back to the good ol’ days of after school snacks. Once a snacker, always a snacker. I remember getting off the bus, or home from soccer practice just famished. It was like I didn’t eat for the past 8 hours.

Apples and peanut butter was my all time favorite. At the time is was more like an apple and half a jar of peanut butter. Who am I kidding, I’m still the same way with nut butter 😛 Freals. It’s the perfect snack!

Basic Ingredients for Apple Nachos

  • 3 large apples, thinly sliced

That’s right. For the next 7 days you’re going to get an overnight oat recipe each day + a fun fact about yours truly. Why did I choose overnight oatmeal for this series? Because I am an oatasauras rex.

No but freals, ask any of my friends what I’m passionate about and oatmeal will be in my top ten…right behind peanut butter. Oats are something I eat daily. I love their versatility, their power to make me poop (yes, I said it), and their minimal cost! One of my all time favorite things to do during summertime is make overnight oats!

If you’ve never heard of overnight oats, it’s a way to eat oatmeal without ever cooking the oats! You let your oats and mix-ins soak overnight so that it’s easy to digest in the morning. Cold oats? Uh- it actually rocks. Once you try OO, you’ll never go back…until it’s the dead of winter and you need something warm to warm your soul.

I am kicking off this magnificent series with MOOSE TRACKS OVERNIGHT OATS.

As part of this series, I decided I was going to share one interesting fact with you guys each day.

Fact #1: I HATE staying up late.

Let me rephrase that. I’m a morning person 😀 When I was younger, I was always the first one up in the Hersh household. Did you know that normal TV programming doesn’t start until 6AM and all you’re going to get until then is infomercials. Let’s just say I had a long list of items I wanted to buy one day such as Oxyclean, Hairagami, and the Magic Bullet (which I actually own). Even throughout college, I was always the first one asleep. My roommates would be throwing a raging party and I’d hit the pillow at like 10:30PM #sorrynotsorry. To this day I can’t stand staying up late. It’s the worst when your friends want to meet up at 10PM. PEOPLE, can’t we just shift our night 3 hours so we can all be home in our footy pajamas sleeping at 10PM? I love having the morning to myself though. Blake sleeps in on the weekend, so Saturday mornings from 6AM – 9AM are so peaceful.

Basic Ingredients for Moose Tracks Overnight Oats

For the Overnight Vanilla Oats

  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • ½ cup vanilla Greek yogurt
  • ¾ – 1 cup milk, any kind (I used skim)*
  • ½ teaspoon vanilla extract

For the Fudge

  • 1 tablespoon almond butter
  • ½ teaspoon cocoa powder
  • ½ teaspoon honey
  • ½ teaspoon coconut oil, melted

How to make Moose Tracks Overnight Oats

For the Overnight Oats

  1. Place all ingredients in a medium-size tupperware and mix until combined. Place in refrigerator for at least 2 hours or overnight!
  2. In the morning, check the consistency of your oats. If you like things a little less thick, add a few more tablespoons of milk. Then, swirl with fudge and top with Healthy Cookie Dough Bites.

For the Fudge

  1. Mix together all ingredients in a small bowl.

I am a sucker for anything peanut butter. I mean let’s get real…like 50% of the recipes on FFF are peanut butter related. Sorrynotsorry.

This recipe has a peanut butter base and an extra oomph of protein made with…

  • rolled oats
  • vanilla almond milk, unsweetened
  • chia seeds
  • vanilla protein powder (I used whey)
  • creamy peanut butter

I  used whey protein in this recipe, but feel free to try a plant-based version, in case you’re looking for a vegan-friendly recipe! Just note that you made need to add a few more tablespoons of almond milk because plant-based protein powder is a bit more dense!

The “jelly layer” is a mixture of real life strawberries and some all-natural preserves. 

I’m the type of girl who doesn’t like to mix my layers. My sister on the other hand- is a mixer. I remember growing up we would make sundays…and she’d mix it all together. Me? No thank you! I like to keep em’ separate. 

If you are anti-jelly (I know you people exist), feel free to just use fresh strawberries!

Fun Fact #3: I’m a DD…and hate it. 

Yah, I went there. You guys know I am all about body positivity, but often times I find my boobs bringing me down and getting in the way (literally). I know, I know. Most people would love to have a huge rack, but not me! I was a late bloomer and didn’t get my period until I was 16, which meant I was pretty much flat-chested until my senior year of high school. Entering college, my chest was a solid C cup, which was propionate for my body. When I went through my eating disorder, my boobs were the last thing to go and the never fully went. Long story short, when I gained my weight back, a lot of it went to my chest…even more than before! Today, I am a DD and hate it. I can’t remember the last time I wore a real bra because I prefer to smash them into my chest and make them look as small as possible. They get in the way when shopping for clothes and working out. Anyone with large breasts knows that flowy tops don’t really work because they make you look “frumpy.” For me, the tighter the shirt the better….but I’m pretty conservative with how I dress and hate tight shirts. As for working out….jumping jacks. Enough said.

The worst part is- it’s really hard for me to find proper sports bras because I am 34 inches around, but my cup size is huge. Usually what happens is that I find a great cup size, but then the inches around is way too big. Fail. Anyways- As you can see, I’m still working on being okay with “my new friends,” and how they make my body look. I’m not asking you to feel bad for me…because that’s just how my body is and I’m working on loving my top half for the way it is 😀

PS: I don’t mean to be so negative, but I wanted to share my true feelings on being a DD.

Basic Ingredients for PB and J Overnight Oats

For the peanut butter oats

  • 1 cup rolled oats
  • 1 cup vanilla almond milk, unsweetened
  • 1 tablespoon chia seeds
  • ½ scoop (or 2 tablespoons) vanilla protein powder (I used whey)
  • 2 tablespoons creamy peanut butter

For the jelly layer

  • 2 tablespoons all-natural strawberry preserves (I used sugar-free strawberry)
  • 4 large strawberries, diced

How to make PB and J Overnight Oats

I have mad love for lattes, especially made with coconut milk.

it was the best and worst day ever when Starbucks announced they were now serving coconut milk. AKA coconut milk with a whole lotta shit in it.

I’ve recently found a love for full-fat coconut milk. It’s creamy and luscious and full of fat. Seriously though, don’t be afraid of fat! For a long long longggg time, I didn’t eat anything that was full-fat. Man was I missing out! Full-fat coconut milk is packed with HEALTHY fats that have oh-so many health benefits for us humans. The best part is- full-fat coconut milk is going to keep you fuller longer…unlike the fake stuff

Got 5 minutes? Whip up these delicious coconut latte overnight oats for an easy, fiber-filled breakfast that are oh-so delish!

In this recipe, I used a can of full-fat coconut milk, but refrigerated it to separate out the cream from the water. I used most of the water from the can as part of the liquid in this recipe and then a tablespoon or so of the cream.

Then, I whipped the cream with a little cinnamon and maple syrup to make coconut whipped cream, which I dolloped on top. Yum.

It’s drinking your coffee and eating your breakfast in one. Kinda.

For the coconut water and coconut cream, I used a refrigerated can of full-fat coconut milk, which separate into solid and liquid when chilled. Scrape the cream out of the can to access the water at the bottom of the can.

I’m sure you’re dying to know fact #5.

Fact #5: I have depression.

Not sure why I’ve never talked about this topic on FFF but…I have depression! Why do I say it with such excitement? Well- I’ve got it under control and I really don’t let it define me. Way back when during my ED days, I was diagnosed with depression and anxiety. Depression is a mental illness and as you know, can be difficult to control. Eating disorders + depression + anxiety all sort of go hand in hand became one GIANT mental illness.

I get a lot of questions on how I recovered from my eating disorder and while a lot of it was due to changes in my lifestyle…I am also on an antidepressant, which has helped monitor my hormone levels. I’m not going to lie, taking that first pill was one of the scariest days of my life. I remember sitting in my room holding the bottle in my hand just bawling. I didn’t want to be that crazy person who had to rely on drugs her whole life. Well people, I got over that quickly because they really did help bring my anxiety level down and chill me the eff out. 

The fact that I have depression is really no surprise. I have a family history of it, and even suffered from it a bit as a kid. One day I hope to ween myself off of my meds, but for now, lots of things in life are a-changing and my stress levels are high. Keeping things how they are are just fine for me at the moment. Plus- I am who I am who I am…not because of the meds i take.

Basic Ingredients Coconut Latte Overnight Oats

  • 1 cup rolled oats
  • ¼ cup coconut water*
  • ¼ cup + 1T brewed coffee
  • ¼ cup + 1 T almond milk (I used Almond Breeze 60 calorie)
  • 1 tablespoon maple syrup or honey**
  • 1 tablespoon coconut cream*
  • dash of cinnamon

How to make Coconut Latte Overnight Oats

  1. First of all,Place all ingredients in a medium size tupperware and mix.
  2. Then, transfer the tupperware into the fridge for 2 hours or overnight.
  3. The next morning, add a few more tablespoons of almond milk

So. I think this is my favorite OO recipe out of all the that are part of this series. Why? The flavor is UNREAL. You guys- this recipe rocks my world. It’s not only made with chocolate protein powder, but a little bit of high-quality cocoa powder to give it such amazing chocolatey flavor. On top of that, the strawberries I got from Costco were Ah.May.Zing. The little chunks inside of the chocolatey oats are the perfect burst of flavor.

I just can’t get enough.

I  remember in college, I would go back and forth between making myself chicken fajitas and shrimp stir-fry for dinner. They’re two dishes where I know I’m gonna get my veggies, protein, and a good amount of carbs. Plus, they’re really easy to make and I love Mexican and Asian flavors! It’s been a while since I’ve made anything Mexican, so I figured I’d take the challenge of using Gold’n Plump Tex Mex Chicken Patties in the most creative way possible —> In a fajita casserole! 

I know you all love casseroles because my highest viewed posts are either peanut butter related or casserole related. Hey, I don’t blame you. They’re my favorite too!

For this easy casserole, all you have to do is chop your favorite fajita vegetables into bite-sized pieces. I used a green pepper, red pepper, purple onion, and jalapeño pepper in my mixture. Feel free to get really creative and use what’s in season or in your garden!

Next, it’s time to thaw your chicken patties. These chicken patties actually come separated into 2 packs of 3 (individually frozen and vacuum sealed for freshness). For this recipe, I used 1 pack of 3 patties so you can keep the other one for later. You can either let them sit on the counter for a few hours or thaw them in the microwave for a few minutes. I only let mine get about 2/3 of the way thawed.

Speaking of these patties. They have SO MUCH FLAVOR! I made them a few weeks ago and ate them like normal burgers and instantly knew they would be delicious in a breakfast recipe! They’re made with boneless skinless chicken thighs and add-ins such as hot pepper cheese, diced green chiles and jalapeños, and other authentic Tex Mex seasonings. #allmyfavoritethings Search Gold’n Plump’s map to see where their products are available near you! .

Next, it’s time to line your baking dish with the patties. Mine fit two long just fine. Then, I cut the 3rd one in half and fit them snug next to the full ones! On top of the chicken patties goes the vegetable mixture! I simply tossed the veggies in some EVOO, salt, pepper, and fajita seasoning. Nothing fancy, but tons of flavor!  

Don’t forget to spray the bottom of your casserole dish with some cooking spray! I use coconut oil cooking spray.

Finally, to finish off the casserole I cracked 10 eggs on top (that’s how many fit). The beauty about this dish, is that depending on the size of your casserole dish, you can add in another chicken patty or use more/less eggs. 

Place the casserole in the oven, uncooked, for around 45 minutes and boom, you’ve got yourself breakfast and leftovers! This seems like the perfect brinner if you ask me.

You will most likely have some excess liquid form after baking. Simply spoon or dump the liquid out.

Basic Ingredients for Chicken Fajita Breakfast Bake

  • 3 Gold’n Plump Tex Mex Chicken Patties, thawed
  • 1 green pepper, diced
  • 1 red pepper, diced
  • ½ medium red onion, finely diced
  • ½ jalapeño pepper, finely diced
  • 1.5T EVOO
  • ½ tablespoon garlic powder
  • ⅕ tablespoons fajita seasoning
  • 10 eggs, large
  • salt and pepper, to taste
  • coconut oil cooking spray

How to Chicken Fajita Breakfast

  1. First, preheat oven to 375ºF. Then, spray a casserole dish with coconut oil cooking spray and set aside.
  2. Begin by thawing 3 Gold’n Plump Tex Mex Chicken Patties ALMOST all the way through.
  3. While the chicken is thawing, prep veggies. Dice 1 green and 1 red pepper into bite sized pieces. Finely dice a red onion and a jalapeño pepper. Then, place all veggies into a medium-size bowl. Pour in EVOO and sprinkle on fajita seasoning, garlic powder, and salt and pepper. Give it a good mix.
  4. Assemble your casserole by placing the Gold’n Plump Tex Mex Chicken Patties on the bottom. You may need to slice them depending on the size and shape of your dish. Then, pour in the veggie mixture. Finally crack 8-10 eggs on top.
  5. Place casserole dish in the oven and bake at 375ºF for 45 minutes or until the eggs have cooked all the way through.
