If you love mixing sweet and salty, then you will love these Ham and Egg Breakfast Tostadas. They are topped with a a strawberry peach avocado smash adding some sweet into your eggy breakfast.

This is the kind of breakfast that happens when Blake “works from home.” Lucky for him, Minneapolis hosted the All-Star Game last week, so his boss told him to work from home instead of fighting the mess downtown.

There’s pros and cons of him working from home.

Pro- I have a reason to make scrumptious breakfast and not feel wasteful.

Pro- I can sleep in past 6:30 when his alarm usually goes off (I am a 1 alarm kinda girl. The thing goes off and I’m UP).

Con- I make huge messes during the day. Messes that Blake usually doesn’t see. I don’t like being “watched” while the Fit Foodie magic is happening in the kitchen.

I do want to mention his choice of attire- Camo shorts and no shirt…because duh, he’s “working form home.”

So about this breakfast. 

“Literally an explosion of flavor in your mouth,” a quote directly from Mr. Blake. The Strawberry Peach Avocado Mash really hit the spot. I love mixing sweet and salty, hot and cold…all kinds of opposites, you name it!

I started off by placing a piece of ham on top of a corn tortilla and broiling it for a few minutes until the ham began to turn golden brown around the edges.

Then, on top went a fried egg + avocado smash + cilantro + sriracha.

Now if only this breakfast could magically appear for every morning. I’m banking on technology. Give it like 20 years and you’ll be able to snap your finger and have a fresh, beautiful breakfast on your kitchen table. 

Maybe that’s called a personal chef?

I wasn’t sure how the sriracha was going to be with the sweetness from the avocado mash, but it worked. Love me some sriracha.

These drippy eggs. OH EM GEE.      

Basic Ingredients

  • ½ cup diced strawberries
  • ½ cup diced peaches (~ 1 half peach)
  • 1 avocado, diced
  • Squeeze of lemon
  • ½ teaspoon cilantro
  • 4 corn tortillas, taco-sized
  • 4 eggs, large
  • 4 pieces of ham, from the deli
  • Coconut oil cooking spray
  • salt and pepper to taste
  • sriracha, to taste

How to make Ham and Egg Tostadas with Strawberry Peach Avocado Smash

  1. First, dice 1 avocado. Then, mash it using a fork. Squeeze on ½ lemon and add cilantro.
  2. Next, dice strawberries and peaches, then add to the avocado mash and mix. Set aside.
  1. First fry up your eggs. Coat a nonstick pan with olive oil or nonstick cooking spray and turn burner to low medium. Then, crack on an egg and season with salt and pepper. Cover with a top and let cook for about 3 minutes or until the yolk is at it’s desired consistency. Set aside.
  2. Turn oven to high broil. Then put tortillas on a baking sheet and place a piece of ham on top. Broil for about 2 minutes, watching closely. Remove once the ham and tortilla begin to brown.
  3. Add a fried egg on top and about ¼ cup of strawberry peach avocado smash. Top with sriracha for some spice!

I got an email last week from a blog reader letting me know that the breakfast recipes I have on FFF has changed their life. Before they found FFF, they didn’t eat breakfast, but now it’s an important part of their day. 

Uhhhh this was like the best email to wake up to EVER.

2. BREAKFAST CHANGES LIVES. 

Especially if it’s overnight oats.

Apple Pie Overnight Oatmeal

This base of this recipe is super simple and only takes like 5 minutes to mix together.

  • Oats
  • Apple Sauce
  • Greek Yogurt
  • Cinnamon
  • Almond Milk

You know me, I am all about mixing hot and cold foods. So to make this recipe even more spectacular, I caramelized some apple pieces in coconut oil and coconut sugar. Tha best.

You could even do this the night before. Throw em in a tupperware and then reheat it in the morning, so that you get that hot/cold mixture.

Gosh I’m pumped for apple season (or inexpensive apple prices!) In Minnesota we have local apples all year round, but that’s because they have this crazy way to store them all year round. I learned about this 3 years ago at an Apple Fest Blogger Event I was invited to! 

Oh em gee, I can’t believe that was 3 years ago.

Anyways- this is what I wrote in that post about apple storage : “The most interesting fact I learned from the farmer was about apple storage.Apples are able to be put in storage with a controlled climate and atmospheric makeup, so that they stay good for up to 8 months! This is why we have local apples all year round!”

Basic Ingredients

  • 1 cup quick cooking oats
  • 1 cup vanilla Greek yogurt
  • ¼ cup almond milk
  • ¼ cup apple sauce
  • ½ teaspoon cinnamon
  • 1 large apple
  • ½ tablespoon coconut oil
  • ½ tablespoon coconut sugar
  • ½ teaspoon cinnamon

How to make Apple Pie Overnight Oatmeal

  1. Mix all ingredients together in a medium-sized tupperware. Place in refrigerator for at least 2 hours or overnight.
  2. First, chop apple into bite-sized pieces.
  3. Then, in a sauce pan. Heat ½ tablespoon coconut oil. Place the apples on top and add coconut sugar and cinnamon. Sautee on medium/high heat for about 5 minutes or until the apples turn golden brown and begin to soften.

And that moment…..when you charge your camera battery and pack up your camera up for a vacation (camping) only to realize days later that you left your camera on and the battery ran out.

#FAIL #FAIL #FAIL 

I think that means I should order a spare battery so this doesn’t happen again. Orrrr I’ll wait until it happens 2 more times and then finally splurge? 

Garden Veggie Scramble with Breakfast Sausage and Baked Eggs

The reason I share this terrible, terrible story is because the photos I did get while camping were of our Garden Scramble with Breakfast Sausage. It’s what inspired me to make this recipe in my own kitchen in the first place!

2 weeks ago Blake and I headed to Gooseberry Falls National Park in Northern Minnesota with our good friends Abbie and Jeff and their two little rascals Charlie and Kara. Blake and I are sort of amateur campers; I used to go when I was a kid and so did Blake, but it’s been years since either of us have gone and we really don’t have any gear at all. Thankfully Jeff and Abbie brought the motherload of camping gear, including a sweet camping stove. Which is legitimately the best thing ever.

We put the guys in charge of this particular breakfast. Tasted so much better than it looks 😀

Which is part of the reason I kept the eggs whole instead of scrambling. I just haven’t nailed down how to make scrambled eggs look appealing. Baked eggs it is! 

Feel free to add whatever kind of veggies your little heart desires. Especially if you have certain ones in your garden that you need to use up.

One day I will have this problem. For now- I’ll have to rely on what’s in season 😀

Ingredients

Scale
  • 1 pepper (any color)
  • 2 medium sweet potatoes, yams, or potatoes
  • 1 medium zucchini
  • ½ yellow onion
  • 1 pound breakfast sausage or Italian Sausage
  • 6–8 eggs, large
  • 1–2 tablespoons EVOO
  • 1 tablespoon minced garlic
  • 1 teaspoon basil
  • 1 teaspoon parsley
  • salt and pepper to taste

Instructions

  1. First, preheat oven to 350ºF and prep veggies.
  2. In a large oven safe sauce pan, heat 1-2 tablespoons of EVOO. Then spoon on a tablespoon of minced garlic. Next, add in sweet potatoes, onion, and pepper. Sauté for about 5 minutes. Then, add in zuchinni, season with spices, and sauté for 3-5 more minutes (making sure not to cook all the way!).
  3. Remove from heat. Take chunks of sausage and evenly spread on top of veggies. Place in oven and bake for 15 minutes.
  4. Remove from oven, crack eggs on top of sausage and season with salt and pepper. Bake for an additional 25 minutes or until the eggs are at the preferred consistency.
  • Prep Time: 15 minutes
  • Cook Time: 45 minutes

  • 2 tablespoon maple syrup
  • 1 vanilla bean
  • 1 cinnamon stick
  • pinch of salt

  1. First begin by soaking your quinoa in water. Then strain. Place quinoa in a large sauce pan, along with 3 cups of almond milk, 2 tablespoons of maple syrup, 1 cinnamon stick, and a pinch of salt.
  2. Slice your vanilla bean down the center and scrape out the inside. Spoon into sauce pan and then add in the actually vanilla bean.
  3. Bring to a boil. Then, turn to low and cover. Let simmer for about 15 minutes or until the liquid has absorbed. Next, add in about ½ cup to 1 cup of almond milk. Mix.
  4. Serve hot with additional almond milk, berries, and slivered almonds!

  3. Bring to a boil. Then, turn to low and cover. Let simmer for about 15 minutes or until the liquid has absorbed. Next, add in about ½ cup to 1 cup of almond milk. Mix.
  4. Serve hot with additional almond milk, berries, and slivered almonds!
