No-bake recipes are actually the best thing ever. Especially ones that are date based! Fun fact: I think dates are gross plain, but adore them mixed with other ingredients. It’s like tomatoes and ketchup. I used to HATE tomatoes, but love ketchup. #theworldmayneverknow

I was really excited with I got Blue Diamond’s latest flavors in the mail: Honey Roasted Chipotle and Honey Roasted Vanilla. I struggled using them in a recipe because I actually almost ate both cans before I even started in the kitchen. #oops #toogoodtoputdown

Random side-note- I remember when I first met Blake almost 3 years ago…he didn’t know what a hashtag was Today, I find myself talking in hashtags more and more. Best part is…Blake does it too now!

  • Dates
  • Cocoa Powder
  • Blue Diamond Honey Roasted Vanilla  Almonds (or any of BD’s variations!) 

You could add additional flavors too like….vanilla, sea salt, chocolate chips, shredded coconut, seeds, etc!

You could totally try subbing the cocoa powder for chocolate protein powder to boost the protein content in this recipe…or even do half and half! 

Storage tip: I like to keep these in a tupperware in my freezer. I put them on a baking sheet with a piece of parchment paper, freeze them, and then transfer them to the tupperware. They will last longer if you do this, plus I think they taste better frozen…but that’s just my opinion!

 Like I said before, this recipe would be delicious with any of Blue Diamond’s almond variations (especially the mocha or honey roasted!).

Ingredients

Scale
  • 20 medjool dates, pitted
  • 2 Tablespoons cocoa powder
  • 1 cup Blue Diamond Honey Roasted Vanilla Almonds
  • 1 tablespoon water

Instructions

  1. First, place almonds in a small food processor and coarsely chop. Remove and set aside.
  2. Next, put medjool dates in food processor, and coarsely chop. Add in 1 tablespoon of water and 2 tablespoons of cocoa powder. Process until combined like cookie dough.
  3. Add in almond and pulse until relatively combined.
  4. Transfer into a large bowl, and finish combining, by kneading dough into a bowl.
  5. Lay a piece of parchment paper on your counter top and roll dough into about 1/3 of an inch thick slab. Cut into square. This recipe should make 8-10 brownies.

It just hit me that I’m only going to be able to run/walk/frolic outside for a few more months (comfortably). I really do enjoy running to the gym, lifting, and running back. Or taking a last minute stroll around Lake Harriet after dinner. I’d say summertime is the #1 reason why I love Minnesota. Winter is the #1 reason why I dislike (majorly) Minnesota.

Speaking of running to the gym. I have an awesome workout coming up later this week that I did last week I’m still sore. #toomanyreps

So I have a confession. I know I am suppose to be this “fit foodie,” but I have a huge thing for Jiff All Natural Peanut Butter. Ra ra ra ra you can tell me that it has bad stuff for you in it (and I know that!), but it’s what I grew up on! I LOVE IT and no one is going to change my mind! #momslikeyouchoosejif

I’m savoring these bad boys. I ate one of them right away and put the rest in a zip lock bag and into the freezer. That way. I don’t eat the entire batch in one day! It really does work. I still have some 3-Ingredient Brownies left Good thing Blake rarely goes in the freezer. All for me none for him.

Ingredients

Scale
  • 1 cup peanut butter, creamy
  • ⅔ cup coconut sugar
  • 1 egg, large
  • 2 scoops (1/2 cup) vanilla protein powder

Instructions

  1. First, preheat oven to 350ºF and line a baking sheet with parchment paper.
  2. Place all ingredients in a medium-sized bowl and mix until your consistency is like cookie dough. Depending on the thickness of your peanut butter, you may need to add a few more tablespoons of protein powder.
  3. Spoon out 2 tablespoons of dough into your palms and roll into a ball. Flatten between your palms and place on a baking sheet. Use a fork to create classic peanut butter cookie criss-cross marks on your cookie.
  4. Bake at 350 for 10-12 minutes or until the edges begin to turn golden brown.
  5. Let cool for 10-15 minutes so that the cookies can harden!
  • Prep Time: 5 minutes
  • Cook Time: 10 minutes

If you want to use your oven to bake this guy- I suggest using a ramekin. I did not try it this way myself, but I would guess around 18-20 minutes at 350ºF.

Description

This delicious, single serve cinnamon roll is gluten-free and vegan, filled with flavor, and made in less than 2 minutes!


Ingredients

Scale
  • 5 tablespoons gluten-free flour, all-purpose (any all-purpose mix should work!)
  • ½ teaspoon baking powder
  • 1 teaspoon coconut palm sugar
  • ¼ teaspoon cinnamon
  • 1 tablespoon pistachio nuts, salted, coarsely chopped
  • 2 teaspoons 100% maple syrup
  • 1 tablespoon applesauce
  • 1 teaspoon coconut oil, partially melted
  • 1 tablespoon almond milk, unsweetened

Instructions

  1. In a small bowl, mix together gluten-free flour and baking powder. Then, add all of the wet ingredients and form a ball of dough.
  2. Kneed dough until dough forms a ball. Flatten in your palm, creating a log about an inch thick. Set aside.
  3. Create cinnamon/pistachio filling by mixing together 1 teaspoon coconut palm sugar and ¼ teaspoon of cinnamon. Then, coarsely chop pistachio nuts. Sprinkle cinnamon sugar mixture on dough and then top with pistachio nuts.
  4. Take one end of the log and roll dough to form the cinnamon roll. Rub a large mug with coconut oil and then place the dough inside.
  5. Microwave on high for about 50-55 seconds.
  6. Drizzle with additional maple syrup. Enjoy!
  • Prep Time: 1 minutes
  • Cook Time: 1 minutes

Yes. Yes, you read that correctly. Almond Buter + Sea Salt + Dark Chocolate.

HEAVEN.

With the Pinterest success of my first Healthy Peanut Butter Cup recipe…I thought I would give it a mini twist. This recipe is a litte bit different. I didn’t use any coconut oil and I used actual dark chocolate.

It’s pretty simple to make and uses minimal ingredients. Feel free to add a touch of honey or maple syrup to your almond butter if you like it a little bit sweeter.

I filled mine about 3/4 of the way and sprinkled just a few pieces of sea salt on top. It really brings out the chocolately flavor!

It only took about 15 minutes for my cups to harden.

If you eat them right away, the almond butter should still be drippy on the inside. If you let them sit in the freezer for an hour or longer, then the almond butter will be frozen.You should be fine to store them in an air tight container in a dark, cooler place in order to have the almond butter stay melty. I kind of like it frozen though

Ingredients

Scale
  • 1.5 cups dark chocolate (I use dark chocolate disks)
  • 1/4 cup almond butter, drippy
  • 1/4 cup almond meal, all natural
  • sea salt

Instructions

  1. Place dark chocolate in a microwave safe Tupperware container and microwave for a minute. Then stir. Microwave for 20 seconds and stir again. Repeat 2 or 3 times, until all chocolate is melted.
  2. In a medium sized bowl, mix together almond butter and almond meal, set aside.
  3. Line a mini cupcake tin with cupcake liners and fill 1/4 of the way with melted chocolate (note this recipe makes 12).
  4. Then, spoon about a dime sized blob of the almond butter mixture onto the melted chocolate.
  5. Cover the almond butter with more melted chocolate, filling the liner about 3/4 of the way. Last, sprinkle a few pieces of sea salt on top.
  6. Place in freezer for about 15 minutes, or until hardened!
  • Prep Time: 10 minutes

  • Maple Sesame Roasted Cashews
  • coconut oil
  • chocolate chips
  • Sesame Seeds

All you need are 2 ingredients…why wouldn’t you make your own butter cups?!

I feel like this would be a great project to make with kids. They can help you melt the chocolate and pour it into cups, add the nut butter, and top it with more chocolate. It may get a little messy, but it’s all in good fun!

Plus- it only needs to sit in the freezer for like 10 minutes and the chocolate magically hardens.

Each year a non-profit called Kinetis, invites a handful of bloggers to show them the amazing Israeli culture first hand on a trip called Vibe Israel. This time around, the theme is wellness and they are bringing over food/health/fitness bloggers for a tour of Israel’s wellness scene. I AM SO EXCITED. 

As of right now, I do not know what the official itinerary looks like…because it’s a surprise! I do know we will be visiting Jerusalem, Tel Aviv, Northern Israel, and Southern Israel. I can’t wait to experience Israel’s foodie scene!

  • 2 cups Maple Sesame Roasted Cashews
  • 1 tablespoon coconut oil (possibly/optional)
  • 2 cups semi sweet or dairy free chocolate chips
  • Sesame Seeds, for garnish

Instructions

  1. Begin by making your cashew butter. Place roasted cashews in a small food processor. Process for about 8-10 minutes or until your cashew butter is at desired consistency. Note: you may need to add a tablespoon or so of melted coconut oil, in order to soften things up, that’s what I did!
  2. Next, line a mini cupcake tin with cupcake liners (about 10). Then, place chocolate in a microwave safe bowl and melt in the microwave.
  3. To make cashew butter cups, spoon in 1 teaspoon of chocolate, then 1 teaspoon of cashew butter, then 1 teaspoon of chocolate. Repeat.
  4. Sprinkle on some sesame seeds for garnish.
  5. Place in the freezer for about 10 minutes.
  • Prep Time: 20 minutes

One of my favorite things to do in the kitchen is to take a classic and make it healthy! I have a wee obsession with almond and cashew meal and LOVE baking with it! Fun Fact- Most of the recipes in my Single Serve Dessert E-Cookbook are made with a nut flour!

How gorgeous are those pistachios?! I love pistachios…almost as much as peanut butter.

But seriously nothing can get between me and peanut butter.

Ingredients for Healthy Thumbprint Cookies Chocolate Pistachio

  • cashew meal
  • cocoa powder
  • coconut palm sugar
  • baking powder
  • egg
  • coconut oil
  • vanilla
  • pistachio nuts
  • chocolate chips
  • sea salt

UNLESS you go to Israel for 10 days and peanut butter is nowhere to be found.  I was literally having withdrawals. They had tahini galore….but the peanut butter was scarce.

The icing on the cake for these cookies was the sprinkle of sea salt on the chocolate glob. HUBBA HUBBA.

Ingredients

Scale
  • 2 cups cashew meal
  • ¼ cup cocoa powder
  • ⅓ cup coconut palm sugar
  • 1 teaspoon baking powder
  • 1 egg
  • 3 tablespoons coconut oil, partially melted
  • 1 teaspoon vanilla
  • ⅓ cup pistachio nuts, raw
  • ⅔ cups dairy-free chocolate chips
  • Himalayan sea salt

Instructions

  1. First, preheat oven to 350ºF and line a baking sheet with parchment paper.
  2. Place all the wet ingredients in a large bowl and mix (minus coconut oil). Then, add in dry and mix until combined. Then, add coconut oil (you add it last so that the coconut oil doesn’t harden). It should be very similar to classic cookie dough consistency. Set aside.
  3. Prep pistachio nuts, but finely chopping. Place into a bowl.
  4. Scoop out about 2 tablespoons of dough. Roll into a ball. Then, roll into chopped pistachio nuts making sure 3 of the 4 sides are covered. You will have to apply slight pressure to make sure the nuts stick!
  5. Place cookie on baking sheet. Then, using your thumb, press in the middle of the cookie to create your thumbprint. Repeat
  6. Bake at 350º for 10-12 minutes.
  7. Once the cookies come out of the oven, you may need to re-thumbprint the cookies to make sure the impression is deep enough. Let cool for about 10-15 minutes.
  8. To create the chocolate center. Melt about ⅔ cups of dairy-free chocolate chips. Spoon about 2 teaspoons into the center of each cookie. Then, sprinkle on some sea salt.
  9. Place in freezer for about 20 minutes to let the chocolate set. EAT!
  • Prep Time: 10 minutes
  • Cook Time: 12 minutes
