DIY Holiday in a Jar: Cherry Pistachio Energy Balls

Ingredients

Scale

1 cup raw almonds

1 cup pistachio nuts, divided in half

1 cup tart dried cherries (no sugar added please!)

10 medjool dates, pitted

1 teaspoon water

⅛ teaspoon sea salt


Instructions

  1. Place 1 cup of almonds in a high speed food processor and blend until you’ve created a meal.
  2. Next, add dried cherries, medjool dates, sea salt, and water into the food processor and blend for 2-3 minutes or until you’ve created a ball of dough.
  3. Add in ½ cup of pistachio nuts and pulse for 30 – 60 seconds or until the pistachio nuts are chopped and combined with the dough. Remove all contents from the food processor.
  4. Place the remaining ½ cup of pistachio nuts in the food processor and blend until you’ve created a meal. Transfer into a small bowl and set aside.
  5. Using a 1 tablespoon cookie scoop, scoop out dough and roll in between your pals to form a ball. Repeat.
  6. Finally, roll balls in pistachio meal.
  • Prep Time: 10 minutes

How is it already January 4th of 2016? Is it just me or will it take a good 2 months before you stop messing up the date?

If you know me in real life, you know that I take my love for nut butter very seriously. I keep my cabinet fully stocked (we’re talking 8+ variations at all times), I eat it at more than once a day, I travel with it, and I even keep a jar under my pillow. JK on the last one. In all honesty- it is THE PERFECT SNACK. You can spread it, you can dip things into it, you can eat it with a spoon, heck- your dog even likes it. It’s high fat, high protein, and low carb, meaning that it will keep you fuller for longer. Winning.

One of my favorite things to do is make my own nut butter. Why? Because I feel super domestic and I get to use my food processor  I also feel extremely accomplished when it’s all said and done because you literally put sooooo much work into standing there for 5-10 minutes while the almonds get pulverized into a drippy nut butter. In today’s savory almond butter recipe- all you need is 1 ingredient. SRIRACHA ALMONDS. FFF is going on year 3 partnering with Blue Diamond and they’ve legit kept me fully stocked with nuts and almond milk month after month. I never once thought to take a savory flavored almond and turn it into a butter and then it hit me. Major revelation, people.

So that’s right- all you need is Blue Diamond Sriracha Almonds and nothing else. Pop those babies into your food processor and let the magic happen.

Today I am excited to partner with PUR to bring you the ultimate tutorial on how to make the perfect cup of coffee! If you follow me on any form of social media, you know that I drink coffee all day, every day. I like to tell myself that I don’t necessarily rely on the caffeine and that I LOVE THE TASTE. It’s true though, I love the taste of coffee. Mmmm Mmmm!

But in all seriousness, there’s just something about coffee that brings people together. There is nothing like sitting with your bestie with a hot cup of joe just chatting about life. Business meeting? Coffee shop. It’s cold out? Lets get coffee. Too much to drink? Coffee will take the edge off. Can’t quite wake up? Coffee will get you through the day. 

Ok ok, you get my point. The answer is always coffee.

There are so many different ways to brew coffee and my most recent favorite has been the pour over. I am by no means a coffee expert, but I found something that works great for me. According to our research to make the perfect cup of coffee (THANK YOU LINLEY!) you need….

  • Filtered water
  • A Pour over
  • Paper filter
  • Whole coffee beans
  • Coffee grinder
  • Coffee mug

The secret to the perfect cup of coffee when using a pour over is freshly ground coffee beans, hot filtered water, and patience. Oh, and don’t forget about the circular motion when pouring!

Ingredients

  • 3 tablespoons whole bean coffee
  • 3 cups filtered water

Instructions

  1. First, filter 3 cups of water through your PUR Advanced Faucet Water Filter. Then, boil water in a kettle or on the stove top.
  2. Prep filter by running it under water to moisten and placing in the center of your pour over. Place pour over on top of coffee mug and set aside.
  3. Place coffee beans in grinder and grind until coffee is the consistency of course sugar or sea salt
  4. Place coffee grounds on top of filter inside the pour over.
  5. When water is boiling, remove from heat and let sit for 30 seconds.
  6. Pour enough water over coffee grounds to wet all the grounds, then let sit for 30 seconds.
  7. Pour the rest of the hot water over the wet coffee grounds, pouring in a circular motion.
  8. Let coffee drip and enjoy!
  • Prep Time: 5 minutes
  • Cook Time: 5 minutes

Ingredients for Healthy Peanut Butter Rice Crispy Treats

  • brown rice crisps
  • coconut oil
  • peanut butter
  • brown rice syrup
  • salt
  • dark chocolate chips

I absolutely love the coconut oil in this recipe. It makes everything so creamy and give it a great taste as well! 

I’ve tried to make this recipe before using puffed brown rice, but brown rice crisps is definitely the secret. I picked up a box of organic brown rice crisps from Whole Foods.

Feel free to add in any other nummy add-ins, such as chocolate chips, dried fruit, coconut chunks, or chia seeds. The more the merrier, right?

Ingredients

  • 2 cups brown rice crisps
  • 1/4 cup coconut oil
  • 1/4 cup peanut butter
  • 1 and ½ tablespoon brown rice syrup
  • salt, scant
  • 3 tablespoons dark chocolate chips (optional)

Instructions

  1. First, line a 9×9 pan with parchment paper. Set aside.
  2. Next, Melt ¼ cup of coconut oil and ¼ cup of peanut butter. Pour into a large bowl. Add in brown rice syrup and salt, mix.
  3. Add in 2 cups of brown rice crisps and mix until everything is fully and equally coated. Pour into pan.
  4. Using a spatula, spread mixture evenly onto pan, then press into pan so the bars are compacted.
  5. Place into freezer for about 2 hours. Then using a sharp knife, slice into squares.
  6. Optional (and necessary) dark chocolate drizzle: melt 3T dark chocolate chips and transfer into a plastic sandwich bag. Cut the tip off and drizzle on chocolate. Place back into the freeze for about 10 minutes. EAT.

Gluten Free Graham Crackers- a perfect cookie cut-out recipe for the holidays!

So Blake and I made a pinky promise that we would wake up every morning this week at 5AM, so that we could get our workout in before the day starts. I’m writing this on Tuesday night…and I’m going to make a bet we don’t get up to workout Wednesday morning (UPDATE: as I was writing this, Blake said- we’re getting up tomorrow AM, right?)

Who knows…maybe the snow goddess will come down from above and give me a little extra energy to get me outa bed! …Not that it’s suppose to snow 6-9 inches or anything. OH EM GEE IT’S WINTER! 

I am a morning workout person though! I feel so good after I do it…it jazzes me up for the day. I need to start training my body that bed time is at 9PM…and not 11PM. Once that happens, I think a 5AM wakeup call will be a piece of cake! 

Or a piece of cookie…Gluten Free Holiday Graham Crackers (aka cookies)!

I was shopping at Bed Bath and Beyond and I stumbled across THE BEST DEAL EVER. 20 cookie cutters for $9.99. What’s funny, is that they were selling singles for like $1.99. I splurged and got em all!

I topped my grahams with white chocolate and dark chocolate and then used crushed peppermints and pecans for a little more oomph. 

So crunchy and perfect. And insanely delicious dipped in coffee.

Ingredients

DRY

  •  ½ cup cashew flour (finely ground)
  • 1/2 cup almond flour (finely ground)
  • 1 and ½ cups oat flour
  • 1/4 cup white rice flour (brown rice flour would work too)
  • 5T potato starch
  • 2T organic cane sugar
  • 2t cinnamon
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/8t ginger

WET

  • 3 tablespoons coconut oil
  • 3 tablespoons molasses
  • 2 tablespoons maple syrup

TOPPINGS

  • white chocolate
  • dark chocolate
  • crushed peppermint
  • crushed pecans

Instructions

  1. First, preheat oven to 350F and line 2 baking sheets with parchment paper.
  2. In a large bowl, combine all of the dry ingredients. Make sure that the almond flour and cashew flour are finely processed.
  3. Add all of the wet ingredients into the dry and mix with a wooden spoon. Roll dough into a ball. (*note: your ball of dough should not stick to the side, so if you need to add a little more flour, use white rice flour)
  4. Lightly flour your surface (I used more white rice flour) and place ball of dough on it. Using a rolling pin, roll out dough to about ⅛th of an inch.
  5. Use your favorite holiday cookie cutters to make your graham cookies.
  6. Place each cookie on the baking sheet and cook at 350F for 10 minutes. Then flip, and cook for an additional 6 minutes.
  7. Place the graham cookies on a drying rack and let cool for at least 15 minutes before decorating.
  • Prep Time: 20 minutes

So this recipe came to me while I was laying in bed.

Why do all my good ideas come to me when I’m: running, showering, or laying in bed?

I knew I wanted to use my Gluten Free Graham Cookie Recipe to make homemade graham cracker crumbs and mix in some festive flavors like peppermint and chocolate, but I wasn’t exactly sure what I wanted to make.

Then, I brushed my teeth, put my PJs on, and hopped in bed.

And. It hit me. 

A parfait!

Good thing Target has a $1.00 section. Got 4 shot glasses for $4.00…you can’t beat that! I also got my festive striped straws from Target, too! What would the world be like without Target?

I absolutely love the mixture of tangy and sweet in this recipe. The white layer is the peppermint layer, made from Greek yogurt, low fat cream cheese, a little powdered sugar, and peppermint extract…just the right amount of tang.

The chocolate layer is Lite Cool Whip (you could sub for homemade whipping cream) mixed with cocoa powder.

Put em together with some graham cracker crumbs.

  • -1 cup nonfat Greek yogurt, plain
  • -1/4 cup low fat cream cheese (room temperature)
  • -2 tablespoons powdered sugar
  • -1/8 teaspoon peppermint extract
  • -1 cup Lite Cool Whip
  • -3T cocoa powder
  • -1 batch Gluten Free Graham Cookies, turned into crumbs

Instructions

  1. First, make your graham cracker crumbs. Place graham cookies into a food processor and process until they turn into crumbs. Set aside.
  2. Next, make your peppermint layer. Mix together Greek yogurt and cream cheese. Then, add in peppermint extract and powdered sugar and mix again. Set aside.
  3. To make the chocolate layer, mix together Coo Whip and cocoa powder.
  4. Finally ensemble your parfaits. Using a spoon, spoon the peppermint and chocolate layers into separate sandwich baggies. This is what you will use to pipe them into your glasses. First- spoon about a tablespoon of graham cracker crumbs on the bottom of your glass. The, pipe in 1-2 tablespoons of the peppermint and chocolate layers.
  5. Top with crushed peppermint, graham cracker crumbs, and dark chocolate drizzle. Serve cold.
