Please tell me that you’ve stopped over at Katie’s wonderful blog, Chocolate Covered Katie. She has tons and tons of healthy dessert recipes. What I like about her collection of recipes, is that she gives a lot of alternatives (sugar-free, gluten-free, and dairy-free) AND she is a fan of “the single-serve.” I adapted this recipe from one of hers.
This recipe is gluten-free, dairy-free, and sugar-free! Cool, eh? You can pretty much substitute for any kind of flour and any kind of milk. If you want, you can omit the dark chocolate chips for a lower-calorie muffin. However, why on Earth would you do that? I’ve also made this recipe with carob chips before and that was pretty good too!
{Single Serve} Banana Dark Chocolate Chip Muffin
- -3T Buckwheat Flour or Gluten Free Flour Mix
- -3T Milk (I use unsweetened vanilla almond)
- -3 inches of mashed nanner or roughly 1-2T mashed nanner
- -1/2T coconut oil, melted
- -pinch of salt
- -1/4t baking powder
- -2T Dark Chocolate Chips
- Preheat oven to 330F and spray a cupcake liner with nonstick cooking spray. Mix all ingredients together in a small bowl and bake for 16-18 minutes.
Viola, you have a muffin for one!
What I personally like about single serve recipes is that they help with portion control! What I don’t like about single serve recipes is that it only makes one serving. Contraction much? There’s definitely pros and cons of single-serve and I think it also depends on the situation!
I’m sure you are wondering what the heck the stuff is on top! It’s Non-fat Plain Chobani mixed with ~1t cocoa + more dark chocolate chips! I call it Cocoa Cho.
