Sunday’s high was 40F. Which means….compared to a few days ago, it was a whole 40 degrees warmer! Thaz crazy. Minnesota, you crazy. I did a nice little 4.5 miler. It felt good to just run, the treadmill is getting old, fast….ALSO, I have been noticing some soreness in my right ankle. Dang treadmills. Looks like I’m going to have to take a break for a while.Anywho…I am really excited about today’s recipe. So easy. So inexpensive. and SO HEALTHY.

Balsamic Curry Roasted Chickpeas
Whatcha Need
-2 cans of chickpeas, rinsed and drained
-1/4C balsamic vinegar
-1-2t curry powder
-1t ground cumin
-1/4t ground pepper


How to Make it
1. Preheat oven to 400F.
2. Spray a baking sheet with nonstick cooking spray or drizzle with olive oil. Then evenly spread out the chickpeas.
3. Next, pour on the balsamic vinegar and toss. Then sprinkle on the spices and toss again.
4. Let the chickpeas bake for 15-20 minutes.

Back to my outdoor run. One thing that I love about winter is the cool running gear I get to wear!

Today, I wore my a Nike headband, a Nike vintage-esk running jacket, and Nike running pants. Nike pretty much rocks my world when it comes to athletic wear. Good stuff.

Hokay time for some Spring cleaning. Ashers and I are having a mini dinner party tonight with some friends :) We are making a fajita bar!
