
Quinoa Egg Bake

I made a GENIUS creation today for lunch. Normally, I am a sweet tooth kind of girl, but today I was craving savory/salty. I adapted an awesome egg bake recipe from a Whole Foods’ website. I modified it to my liking and changed the recipe to a serving for one!
At first when I read the directions to the recipe, I was a bit skeptical. Uncooked quinoa? I was surprised to find out that it bakes inside of the egg! *so cool*

Quinoa Egg Bake
Ingredients
- 1 whole egg
- 2T skim milk
- 1t minced garlic
- 1/4t ground thyme
- 1/4C diced onions
- 1/4C diced red pepper
- 1.5T quinoa, uncooked
- salt, pepper
Method
I just followed the step by step directions off of the recipe from Whole Foods. Bake at 350 for ~40 minutes. Give it a shake and if nothing jiggles, you are good to go!


After realizing there wasn’t enough contrast between the egg and the plate….I switched dishes.

Before I placed the uncooked egg into the over, I gave it a shake so the quinoa fell to the bottom of the ramekin to create a crust-like bottom. So good and so yummy! The quinoa really added a nice texture.

I topped it with chunky salsa.

I am definitely making this again. It’s exactly like a frittata, but better! AND the addition of quinoa umphs the nutritional value. It gives me extra protein and whole grains- yes please!
