Almond Butter Chews
I had one of those aha moment early this AM. I was in the process of making some almond butter chews (aka Bird Food Balls), when I realized that I was having major issues with the balls falling apart. It’s the honey! It may seem sticky, but it doesn’t really do the job holding the balls together.
Hello brown rice syrup.
Brown Rice Syrup really does do the trick. It keeps the balls nice and compact. I also like BRS because it doesn’t have such a powering flavor like honey does.
How to make Almond Butter Chews
- First melt your almond butter if it’s not drippy by placing it in the microwave for about 15-20 seconds.
- Then, transfer into a medium sized bowl and add brown rice syrup and mix.
- Add millet puffs and raisins and mix until it becomes one big almond chew.
- Taking about 1 tablespoon of “dough” into your hands, roll to form a ball. If you’re having trouble getting things to stick, add a bit more brown rice syrup 1 tablespoon at a time.
Viola…you have balls that do not crumble!
These are pretty much the perfect after workout snack: whole grains, healthy fats, and protein. I’ll take 10!
