I make baked eggs a lot, close to every week. Recently, I started adding quinoa to my baked eggs for a little bit more nutritional value. Quinoa + Eggs = Quinoa baked eggs After making salmon for dinner Sunday night and having lots of leftovers, I decided..”what the hell.” I added some salmon to my Quinoa Baked Eggs Recipe to get Salmon Quinoa Quiches.
…Because that’s what they are really. The quinoa is the like the crust of my quiche and well…everything else is everything else of the quiche

salmon quinoa quiche ingredients
- 6 eggs (organic and free-range preferred)
- 1.5 cups cooked quinoa
- 4 oz cooked salmon
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat oven to 350F and gently wipe a muffin pan with coconut oil or olive oil non-stick spray. Line the bottom of each muffin tin with quinoa about an inch deep and shred some cooked salmon on top. Then, crack an egg on top of each. Sprinkle the top of each egg with the remaining quinoa and garnish with salt and pepper to taste. Hint: you will want to use about ¼c quinoa total for each egg.Using a fork, work the egg between the quinoa to ensure that it will not fall apart. Bake for 15-17 minutes or until the egg has hardened completely.
Viola you have a Gluten Free Salmon Quinoa Quiche.
