Homemade Chunky Guacamole
Friday! I can’t believe it is already Friday.
A lot of people have been asking how my new schedule is going now that I am no longer full time at Anytime Fitness and what I have been doing in my “spare time.” This whole transition has been absolutely surreal. I feel like I am still settling into things, but I do feel a new found boost of positive energy. On days that I don’t work in the office, I teach 6AM yoga sculpts, so I am up and at em’ by 5:15AM and done with teaching and my workout by 7:15.
I shower up, actually do my hair and make-up and throw on a cute outfit, so I can power through the day. I feel so much more productive when I am looking and feeling good. I still feel a bit unorganized, but in a good way. Blake and I have a home office, so that can be fixed with a few folders, a giant calendar, and some cute notepads.
I’ve been teaching a lot more. I picked up two more classes at Corepower and have been subbing my buns off. I love being in the studio and around people. I think that is going to be the hardest thing for me…working form home means it’s just me, myself, and I (unless I can convince Blake to get a dog).
It’s only been 2 weeks…so I’ll report back a little further down the road and let you know how I’m feeling about the whole thing!
Today’s post rocks my socks. I wish homemade guac didn’t go bad so quickly. I can usually make it about a day and a half before I have to throw the batch out.
That just means I have to eat it faster….eh?
Guac is pretty simple to make and uses easy-to-find ingredients that you probably already have at home!
You pretty much just chop everything up and mash it together. There is no right or wrong!
And- you can pretty much put it on anything and everything. Like Ahi Tuna Tacos.
Or a yummy breakfast fritatta!

Ingredients
- 2 avocados, mashed
- 1/2 cup (or 1 half large) tomatoes, sliced
- 1/3 cup (or 1/4 large) red onion, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon ground peppper
- 1 teaspoon sea salt
- 1/4 teaspoon cumin (optional)
- 1/2 lemon juice, squeeze juice
Instructions
- In a medium size bowl, using a fork, mash the flash of 2 avocado until smooth. Then, add in the rest of the ingredients and mix together.
