Thank you so much for taking the time to vote yesterday on which recipe I should submit into the recipe contest to win a 5k contract with [a brand that I can not share yet!] The cupcakes came in second and the landslide of a winner was the Red Velvet Pancakes.

I didn’t LOVE this cake recipe…because I used 100% whole wheat flour and the cupcake was really dense. I made them pretty by adding homemade buttercream frosting and and fresh blueberries.

A day after I made the cupcakes, I discovered a new healthier/organic cake mix at Whole Foods. Have you heard of or tried Dr. Oetker Organic Vanilla Cake Mix? There are minimal ingredients AND it uses 100% whole wheat flour. I highly recommend trying it!

For the vanilla buttercream frosting I used: 1 cup (2 sticks) unsalted butter, at room temperature, 2½ cups powdered sugar, and 1½ teaspoons vanilla extract.

I have been having mega problems with my Kitchen Aid Hand Mixer I bought a few weeks ago from Target. The mixing hands will not stay tightly secured in their holes. AKA every 5 seconds I have to stop and fix them. I am thinking about bringing it back to Target to see if I can get my money back. Any recommendations on a new hand mixer?!

Told yah they turned out dense. My homemade recipe was still delicious, but I am glad I didn’t use this one in the competition. It could use some mega fluff. They are still pretty though. I do have to credit myself for that 🙂

Last, but not least…who is excited about instagram having video!? It’s one of my favorite apps on my DROID and now its my favorite favorite app (along side the Fitbit app)!
