Crock-Pot Fajita Tacos
I know Sundays have been devoted to “one-pot” meals…but I took this taco recipe to the next level by adding some deliciously garlicky sautéed peppers & some must have toppings.
I started off by making my meat inside my handy dandy crock pot. It cooked rather fast…in fact it only took 2 hours on high. So I suggest throwing the meat in mid-morning or late afternoon to have it ready for lunch or dinner.
Confession: I was planning on having this meal for dinner yesterday, but because things were cooking so rapidly…lunch it was!
Ingredients for Crock-Pot Fajita Tacos
- ground beef or ground turkey
- yellow onion
- serrano pepper
- chili powder
- cumin
- paprika
- onion powder
- garlic powder
- salt
- pepper
I sautéed some perfectly ripe peppers in EVOO, garlic, salt, and pepper. You are more than welcome to add some chili powder, cumin, and paprika for more flavor, but garlic was calling my name.
Put it all together and you have a mouthful of oh.em.gee.
Plus some gauc n sriracha….double oh.em.gee.
I didn’t use gluten free tortillas, but if you are GFREE, I suggest plain, ol’ simple corn

Ingredients
- 1 lb. ground beef or ground turkey (I used beef)
- 1/4 cup yellow onion, finely diced
- 1/2 serrano pepper, finely diced
- 1T chili powder
- 1t cumin
- 1/2t paprika
- 1/2t onion powder
- 1/2t garlic powder
- 1/4t salt
- 1/4t pepper
Instructions
- Place all ingredients in a crock-pot and turn to high. With a wooden spoon, break up the ground beef and mix with spices. Let cook for about 2 hours, stirring every half hour.
