Strawberry Vanilla Overnight Oatmeal

If I could give one piece of advice to any blogger it would be to NETWORK NETWORK NETWORK. Network with other bloggers, network with brands, network with friends and family, etc. Over the past 6 months, I have made some incredible friends, mentors, and soundboards online and close to home. I can’t tell you how important it is to have those people in your life cheering you on.

APRIL = OVERNIGHT OATS.

Anyone else with me?

You may not know this, but I eat oatmeal EVERY SINGLE MORNING (unless it’s the weekend). Oats + Banana + PB is my favorite combination. During the warmer months, I like to mix it up and eat Overnight Oats, but soaking my oats in a liquid such as almond milk, Greek yogurt, etc.

Well friends- it’s time for you to jump on the bandwagon too! 

There are a few must have ingredients when making Strawberry Vanilla Overnight Oatmeal.

  • Liquid
  • Rolled Oats
  • Chia Seeds
  • Sweetener (optional)

I like to mix Greek yogurt and almond milk for my liquid. I have found that using rolled oats gives it a much better texture. Chia seeds make everything better and add a healthy dose of Omegas to your meal. If you don’t use sweet almond milk or a flavored yogurt, I suggested a few teaspoons of honey, but that’s just my preference! 

This time around. I decided to bring strawberries center stage and puree them with Greek yogurt and almond milk. Almost like a smoothie.

When making over night oats, I try and keep the 2:1 ratio of liquid to oats. The above photo is of my magic bullet and inside was about 3 cups of liquid. This is why I added 1.5 cups of rolled oats! 

I am a toppings girl. I love mixing textures. On top of this guy I added sliced banana, strawberries, and chopped pistachios.

Oh and a giant scoop of dark chocolate almond butter. What’s oatmeal without nut butter? 

I’d say that this recipe serves 3 IF you plan on loading the toppings like I do. If you aren’t a toppings person (do they exist?! That’s the best part)- you could probably just split this recipe down the middle.

What I mean by network is MEET PEOPLE! Learn about them, tell them about you, learn from each other! I’ve play both a mentor and and metee in a relationship and every single time I learn something. You learn that you are not alone in this blogosphere and that there are more people out there that can relate to your probz.

You learn that should probably configure your blog to your Google+ Page so that your pretty face shows up when people search for you. This is something called Google Authorship. Say wahhhh. (Thank you Davida). You learn that you are paying way too much for your site’s server and web hosting (Thank youuuu Brittany). You learn that there are services out there to let people subscribe to your blog via email. It also let’s you send them emails when you have cool/interesting updates. Uh duhhhh. (Thank you Lexi). And finally- you get to learn the whole entire process of writing an cookbook (which I am going to start here pretty soon…mine will be an ebook though) because one of your blogger besties just went through it and you went on the ride with her from start to almost finish (Thank you KELL).

Strawberry Vanilla Overnight Oatmeal

Ingredients

  • -1 cup Vanilla Greek Yogurt
  • -1 cup Unsweetened Vanilla Almond Milk (or any kind of milk)
  • -1 cup Strawberries, sliced
  • -1 1/2 cup Rolled Oats
  • -3 Tablespoons Chia Seeds
  • -1 teaspoon Vanilla
  • -Toppings: Crushed pistachios, dark chocolate almond butter, sliced banana, and sliced strawberries.

Instructions

  1. First, in a blender, magic bullet, or food processor, process Greek yogurt, almond milk, and strawberries together. It will look like a strawberry milk shake!
  2. After this,place the mixture into a medium size bowl and then mix in 3 tablespoons chia seeds and 1 teaspoon of vanilla. Then, mix in rolled oatmeal.
  3. Place in refrigerator over night or for at least 2 hours. Top with sliced banana, sliced strawberries, crushed pistachios, and dark chocolate almond butter.
