HAPPY 4th of July!

Today marks my favorite time of the year: warm weather, long days, family and friends, and fire flies. What could be more perfect? It’s is our last day in Seaside and we are planning on doing another hike and renting mountain bikes (can’t wait to post a full review of my vacation!). 

Like Wednesday’s recipe, today’s recipe features LIBBY’S Pumpkin! This time, I mixed together a few non-traditional ingredient combinations to make the most fabulous dessert hummus ever! When attending a BBQ that I’m not hosting, I like to bring a dish or two so that I know I’ll have a healthy option to snack on! Perfect example = Healthy Pumpkin Dessert Hummus.

Ingredients

Scale
  • 1 cup chickpeas
  • ½ cup LIBBY’S 100% Canned Pumpkin
  • 2 tablespoons almond butter
  • 1/ 4 cup maple syrup
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Place all ingredients in a small food processor. Process until smooth. Enjoy with animal crackers, graham crackers, or fresh fruit!
