Pomegranate Oatmeal Bake

Yesterday was one of those days that made me realize (again) how much I love my job. My morning was spent recording a new episode of Anytime Health Radio, an Anytime Fitness podcast. We’ve had Richard Simmons and the P90X guy on this show, so for me to be the interviewee was an honor!

I am really really excited to share this with you because I opened up about something that I have yet to share on FFF. I will post the link on here as soon as it is edited and up!

After the recording I did some usual work stuff. At around 3 I paused for a quick workout in the mock gym located in our building with a co-worker/friend. I am so thankful to be able to workout AT WORK, during the day.

The final part of my day that just gets me excited is a little something called #ShredFest2013. A few warriors at work created a little something called #ShredFest2013 (read Hashtag Shred Fest Twenty Thirteen) for Anytime Fitness Corp…a way for the staff to stay accountable and reach their goals, whatever they may be. To work in a company where health and wellness is a top priority just makes my philosophy on life so much easier. What I like aout this support system is that whatever your goal is (they are all different), you have until April 1st to accomplish it. ShredFest2013 doesn’t happen over night. Life changes take months to fully accomplish whether it’s losing weight, gaining muscle, changing your diet, etc.

I am still pondering of what my goal is going to be, but I know that I really want to me mindful of what I am consuming. I’ve had lots of “it’s in moderation” days lately. AKA my sugar consumption has been through the roof.  We will see

And now I shall leave you with an oatmeal bake recipe I’ve made a single serve Pomegranate Oatmeal Bake before…but here’s a recipe you can share with your family!

Ingredients

  • 2C dry oatmeal
  • 2 mashed bananas
  • 1 egg
  • 1t baking powder
  • 2C Almond Milk (I used vanilla silk, 30cal/cup)
  • ¼C honey (optional)
  • ⅓ – ½ cup of pomegranate seeds

How to make Pomegranate Oatmeal Bake

  1. Preheat oven to 350F
  2. In a medium size bowl, mash two bananas until they are liquidly. Then, add the rest of the ingredients (minus the pomegranate seeds) and mix.
  3. Finally sprinkle the pomegranate seeds on top.
  4. Bake for ~30 minutes.
